Changes of Organic Acids and Volatile Flavor Compounds of Traditional Andong Sikhe (전통안동식혜의 유기산 및 휘발성 향기성분의 변화)

  • The changes in life style these days appear in many ways. Many housewives turn away from home preparation of the time consuming traditional foods, such as Andong Sikhe. The importance, however, of succeeding the traditional cuisines is getting appreciated widely now a days. A traditional Andong Sikhe in Korea, was prepared and fermented at $5^{\circ}C$ in order to analyze the taste and flavor compounds. Major flavor components were identified as camphene, sabinene, 1-(1,5-dimethyl-4-hexyl)-4-methyl-benzene, ${\alpha}-zingibirene$, farnesene, 2,6-bis(1,1-dimethylethyl)-4-methyl-phenol, ${\beta}-sesquiphellandrene$, calalene, tetradecanoic acid, hexadecanoic acid and 9,12-octadecanoic acid by GC and GC/MS. Lactic acid and increased from 0.49 mg/100 g in the initial stage to 19.37 mg/100 g at the 6 days of storage. The pH of product decresed to 3.7 from 5.4 after the 6 days of storage but the total acidty reached to 0.41% during fermentation and storage at $5^{\circ}C$.

Life-Style and Eating Behaviors of the Stomach Cancer Patients in Daegu and Kyungpook Area in Korea (대구.경북지역 위암환자의 일상 생활 패턴 및 식행동)

  • The purpose of this study was to investigate the lift-style and eating behavior of stomach cancer patients in the Daegu and Kyungpook area, and to collect basic data for nutrition education designed to prevent stomach cancer in this community. The subjects of the study were 102 patients who were recently diagnosed as having stomach cancer at the Kyungpook National University Hospital. The control subjects were 105 persons who did not have any gastrointestinal disease, and included patients from the Department of Orthopedic Surgery and healthy volunteers. The survey, which covered the personal characteristics and eating behavior of the subjects, was conducted by individual interviews using questionnaires. It was found that the stomach cancer patients (case group) had experienced a significantly higher level of stress in their daily lives than the control group. A significantly higher proportion of the case group subjects recognized their personality as pessimistic, and had family histories of cancer, compared with the control group subjects. The cancer patients had higher preferences for salty and hot tasting foods, and tended to ingest meals faster without enough chewing, compared with the control subjects. The level of nutritional knowledge of the case group was lower than the control group, and there was a positive correlation between subjects' nutritional knowledge scores and nutritional attitude scores. Subjects' estimates of their food intake frequencies during the decade before the cancer was diagnosed revealed that the case group consumed significantly higher amounts of pickled fish, soybean paste soup and stew, cooked vegetables, beef and pork, charcoal broiled meat and alcohol, while consuming significantly lower amounts of green tea than the control group. In summary, the results of the study suggest that the stress of daily life, a family history of cancer, and a pessimistic personality might be the risk factors for the development of stomach cancer. Dietary factors which were suspected as risk factors for stomach cancer in the present study included strong preferences to salty and hot lasting foods, poor eating habits, and frequent consumption of pickled fish, soybean paste soup, cooked vegetables, beef and pork, charcoal broiled meat and alcohol. A high consumption of green tea seemed to be a protective factor against stomach cancer. The results of the study appear to provide useful data for nutritional education focussed on the prevention on stomach rancor in local residents.

Effects of Service Quality Characteristics of Dessert Cafes on Consuming Behaviors according to Dietary Life Style (식생활 라이프스타일에 따른 디저트 카페의 서비스 품질 특성이 소비행동에 미치는 영향 연구)

  • This study verified the effects of the quality characteristics of dessert cafes by business start-ups according to dietary life styles of consumer. Data was collected over 15 days starting from April 15, 2016 from 218 customers who visited dessert cafes. In brief, the research results are as follows. First, in order to verify the influence of service quality of dessert cafes according to dietary life styles, 3-kinds of variables, namely taste-pursuing type, convenience-pursuing type, and health-pursuing type, were set up for the lower variables, and 2-kinds variables, specifically credibility and sympathy, were established for service quality as dependent variables. The results of the regression analysis showed that, taste-pursuing type (${\beta}=.371$, p<.001), convenience-pursuing type (${\beta}=.401$, p<.001), health-pursuing type (${\beta}=.474$, p<.001), all 3-kinds of dietary life style, had a significant, positive(+) corelation ton the credibility of service quality. in addition, regression analysis revealed that the sympathy type of service credibility and, all 3 dietary lifestyle types, taste-pursuing type (${\beta}=.145$, p<.001), convenience-pursuing type (${\beta}=.208$, p<.001), health-pursuing type (${\beta}=.236$, p<.001), showed a significant, positive (+) corelation. Second, as a result of verifying the effects of service quality on customer consuming behaviors at dessert cafes, it was determined that there was a significant, positive (+) corelation with credibility and sympathy in consuming behaviors such like credibility (${\beta}=.313$, p<.001), sympathy (${\beta}=.228$, p<.001).

The relation between a practical life and a bone mineral density for college students (일부대학생의 생활습관과 골밀도의 관계)

  • The bone mineral density built in adolescence and college term is formed to the highest level between 25 years old and 35 years old and the formed bone mineral density is decreasing in the middle years and senescence. Decrease of the bone mineral density causes Osteopenia and an increase of dangerousness of a bone fracture which become social health problems. This research is to give guidance for the right living style by surveying the relation between the bone mineral density and college students' life. The result is like below. First of all, most objects of the research were insufficient of quantity of motion and the diet they have was consisted of instant food. It was far from the right living habit and exercise and the bone mineral density was also low. Second of all, male students showed more osteopenia than female students in this research and the smokers' bone mineral density was lower than nonsmokers, which proved that smoking in adolescence was related to the bone mineral density. Finally, the opportunistic eating and living style and the excessive diet and unequal caloric intake caused by the notion of preference for a slim person are considered to be the main reasons for the decrease of the bone mineral density.

  • The land under Japanese-type names remains in the Korean cadastral record as an official register due to land exploitation, land and field survey programs, and the forceful name-changing system of Japan during its colonial era. This research aims to find a measure to survey and organize such land. Research details are as follows. First, this research put together the purpose and status of land exploitation in the Japanese colonial era. Japan wanted to reduce its population through agricultural emigration of the Japanese and increase food supply by producing more crops in Joseon. Therefore, land of three southern provinces, the breadbasket of Korea, was intensively plundered. Secondly, this research organized how Joseon people changed their surnames into Japanese-style ones. The initially voluntary name-changing system became mandatory and about 3.22 million households (79.3%) reported the change of their names. Thirdly, this research established a process to survey land under Japanese-style names. Fourthly, this research yielded visible outcomes as a result of the pilot program. Especially, it revealed 718 lots as land under Japanese-style names and 8 lots as land under the names of Japanese. Fifthly, this research presented internal & external collaboration and cooperation measures for surveys.

Revision of a Questionnaire to Assess Health Behaviors in Obese Children (비만 아동에 대한 설문지의 분석과 재구성)

  • Purpose: The prevalence of childhood obesity has increased dramatically. It is important to know about life style and dietary habits of the obese children because the treatment of childhood obesity focuses on using behavioral modification techniques. We aimed to develop a questionnaire for the purpose of providing convenient and useful guidance to pediatricians who evaluate and treat obese children. Methods: Previously developed questionnaire was given to 94 obese children and their parents who had visited clinic for obese children and adolescents. We analyzed response rates on questions and reliability between children and their parents. Results: The response rates on questions were somewhat high. Agreement of paired questions of both parents and children was also moderately high (63~92%). It is acceptable to complete questions by either parents or children alone. Items for hours of playing video games or computer, maternal job, kind of consuming beverage and food outside home were added. Conclusion: We concluded that some questions are not needed to be given to both parents and their children. It would be better to have parents record life style of their children and to have children record their food intake with physical activity outside home.

Stability and Optimization of Crude Protease Extracted from Korean Kiwifruits (국내산 키위에서 추출한 protease 조효소액의 안정성과 최적화에 관한 연구)

  • In the study, the protease activity of kiwifruit (Actinidia deliciosa Planch) cultivated in Korea was estimated, with specific examination of proteolytic effects on myofibrilar protein. The crude protease extract of kiwifruit was prepared in two ways; one in which the kiwifruit was homogenized with buffer followed by centrifugation, and the other were the supernatant was precipitated by saturated ammonium sulfate followed by dialysis. The former had 21.23 mM/mL of protease activity, which corresponded to 112.28 mM/g kiwifruit utilized, and the latter had 11.58 mM/mL and 45.80 mM/g of kiwifruit. The crude protease extract of the kiwifruit showed high specificity for casein substrate followed by bovine serum albumin, egg white, collagen, and elastin, in order. The enzyme lost proteolytic activity in acidic conditions such as pH 2-3, and at high temperatures over $60^{\circ}C$. It showed optimal activity in both pH 3.0 and pH 7.5 as well as at $40^{\circ}C$ for casein substrate and at $50^{\circ}C$ for myofibrilar protein substrate. The proteolytic activity toward casein was high with up to 0.5M salt, followed by a sharp decrease beyond this concentration. On the other hand the proteolytic activity for myofibrilar protein decreased steadily with increasing of salt concentration. Kiwifruit has been used as a for meat tenderizer for in home cooking and these results support the its tenderizing effectiveness of kiwifruit especially for Korean style marinating of meat for cooking.

Volatile Flavor Components in Mash of Takju Prepared by Using Different Nuruks (누룩 종류를 달리하여 담금한 탁주 술덧의 휘발성 향기성분)

  • Volatile flavor components in the mash of takjus prepared by using different nuruks such as Mucor racemosus nuruk, Rhizopus japonicus nuruk, Aspergillus oryzae nuruk, Aspergillus kawachii nuruk and nuruk (Korean-style bran koji), were identified by using GC and GC-MS. Twenty alcohols, 26 esters, 10 acids, 10 aldehydes and 6 others were found in the mash of takju after 16 days of fermentation. Takju by Aspergillus oryzae nuruk had the most various components of volatile flavor. Fifty-four flavor components including ethanol, 2-methyl-1-propanol, 3-methyl-1-butanol, 1-hexanol, 2,3-butadienol (D,L), benzeneethanol, acetic acid ethyl ester, succinic acid diethyl ester, butanoic acid monoethyl ester, acetic acid and benzene acetic acid 4-acetyloxy-3-methyl ethyl ester were usually detected in all the treatments. The relative peak area of volatile components was as follows: alcohol $(71.28{\sim}90.23%)$, ester $(0.66{\sim}9.05%)$, acid $(0.2{\sim}0.6%)$ and aldehyde $(0.02{\sim}0.09%)$. Specially, 1-pentanol and hexanoic acid ethyl ester were high in takju made of nuruk (Korean-style bran koji). 1-Hexanol, 1-dodecanol, acetic acid and 1,2-benzene-dicarboxylic acid diprophenyl ester were high in takju made of Mucor racemosus nuruk. 4-Acetyloxy, 3-methyl benzeneacetic acid phenyl ester, 2-methyl-1-propanol, 3-methyl-1-butanol, succinic acid diethylester, butanoic acid monoethyl ester and butanoic acid were higher content in takju by Rhizopus japonicus nuruk. Acetic acid ethyl ester, pentanoic acid and 3-methyl butanoic acid were high in takju that was made of Aspergillus oryzae nuruk. 1-Butanol was high in takju by Aspergillus kawachii nuruk.

Actual Status of Constipation and Life Factors Affecting Constipation by Diagnosis of Rome in Female University Students in Korea (일부 한국여대생의 로마진단기준에 의한 변비 실태조사 및 변비에 영향을 미치는 생활요인)

  • This study investigated the actual status of constipation. In total, 978 female students in Korea participated. We identified the relationship among constipation and life style, clothing patterns, housing patterns, dietary habits, and dietary intake in a constipation symptom group and a normal group. The actual constipation rate based on the Rome II criteria was 27.0% (n = 264). Body weight (p < 0.05) and body mass index (p < 0.05) in the constipation group were significantly higher than those in the normal group. The incidence of functional bowel disease and irritable bowel syndrome in the constipation group were significantly higher than those in the normal group. The discomfort of wearing underwear was significantly higher in the constipation group than that in the normal group. The constipation group revealed a significantly higher rate of irregular dietary habits than those in the normal group. The dietary diversity score of the normal group was 4.22 (p < 0.05), which was significantly higher than that of constipation group (4.12). No significant difference in life style factors was observed. It is necessary for university female students to correct their dietary habits, maintain food intake of three times per day, and select diverse foods. Furthermore, it is necessary for university female students to wear comfortable clothing to lessen symptoms and improve constipation rates.
