A Study on the Effects of Food-related Style for Purchase and Willingness-to-Pay of the Meal-kit (식생활스타일이 밀키트 구매의사 및 지불의사금액에 미치는 영향)

  • This study analyzed the willingness to pay for meal kit products of Millefeuille Nabe and Gambas al-Ahiyo, and willingness to pay and purchase intentions according to various characteristics to suggest a meal kit marketing strategy that reflected consumer preference. It was found that the price of meal kits is higher than the price of individual ingredients and lower than the price of meal kits in the current market. The willingness to pay for Millefeuille Nabe is higher in the group that pursues quality and taste, and the more satisfied with the certification system, the higher their willingness to pay for both Millefeuille Nabe and Gambas al-Ahiyo. In addition, the higher the satisfaction with the pleasure, taste, and price of the meal kit, the higher the intention to purchase in the future. Therefore, to increase the willingness to pay and purchases intentions in the future, the quality of meal kit ingredients must be carefully revised and supplemented, and various products are developed and reflected in the marketing strategy.

Qualitative Consumer Preference Studies on Korean-style Kimchi in Chinese Living in Korea (한국 거주 중국인을 대상으로 한 한국 김치에 대한 정성적 기호도 조사)

  • The objective of this research was to determine the current consumer interest toward Korean Kimchi and identify the preferred sensory characteristics of Kimchi using qualitative consumer studies on Chinese consumers. Five different sessions of focus group interview (FGI) were conducted (n=39). The FGI session was designed to determine 1) current knowledge and interest as well as usage level of Korean-style Kimchi, 2) interests toward different Korean Kimchi based on appearance and tasting evaluation. Based on the results, radish was the most accepted ingredient for Kimchi among Chinese consumers, as it resembles the sensory characteristics of Chinese-style Kimchi. The sensory characteristics driving consumer preferences towards radish-based Kimchi included crunchy texture, and just-about-right sweet and spicy flavor. Thinly sliced radish was the most accepted shape of radish-based Kimchi. The current study provides practical information for product development of Kimchi targeted for Chinese.

Relationship among Life Stress, Dietary Behaviors and High-fat Snack Intake in High School Students in Gyeonggi Area (경기지역 고등학생의 고지방 간식 섭취 및 생활 스트레스와 식행동 간의 관계)

  • Objectives: Stress during adolescence is related to undesirable nutritional intake and negatively affects the growth and development. This study was performed to investigate the relationship among life stress, dietary behaviors and the intake of high-fat containing snacks in male and female high school students in Gyeonggi-do area. Methods: The subjects were 700 high school students (350 males, 350 females) in Gyeonggi-do from July to September 2014 and the survey was performed by using questionnaire that included general characteristics, dietary behaviors, high-fat containing snacks intake, and daily life stress. Results: There was a gender difference in health-related life style and dietary behaviors, and the life stress was significantly higher in female students than in male students. For health-related life style, exercise frequency, hours of sleep and conversation time with parents had significantly negative correlations with life stress, while smoking and perceived stress had significantly positive correlations with life stress. For dietary behaviors, the frequency of eating-out had a significantly negative correlation with life stress, while the changes in amount of meal intake under stress had a significantly positive correlation with life stress. The fat intake of 'high-stress group' was significantly higher and high-fat containing snacks consumed by this group consisted of cookies, honey bread and fried foods. Conclusions: It is necessary to develop appropriate programs for the emotional stability and stress relief of adolescents that provide continuous nutrition education focused on proper snack intake, desirable dietary behaviors and nutritional aspects.

Survey of Life and Dietary Styles on Patients with Gastroesophageal Reflux Disease (역류성 식도질환 환자의 생활습관 및 식습관 조사연구)

  • Objective: It was surveyed how to help patients get better treatment for their disease by making complements based on the survey outcomes when the pharmacists guide how to administer medicine. Methods: A total of 142 gastroesophageal reflux disease (GERD) patients answered the self-answering questions consist of 15 items about their general characteristic, lifestyle and dietary style. The frequency of survey materials was analyzed to find out specific figures of surveyed patient's general characteristic, lifestyle and eating habits. Results: Based on the outcomes on analysis there was no difference between female and male patients. The characteristic based on the age group, as ones grow older, the number of GERD patients also increased. In case on the characteristic in lifestyle, many patients had improper habit to treat GERD. The items were smoking habits, stress control habit, sleeping postures and the way in wearing outfits. In case of postures after having a meal, they had right lifestyle. Patients had improper habit in eating food. They enjoyed pungent food and drinks which can hinder the treatment. In case of the time of having meal, eating habit of meat and vegetables and eating food less than an hour before go to bed, this research showed that they have the right lifestyle. Conclusion: This research indicate that pharmacists give guidance GERD patients to stop smoking that is causative of GERD and guide patients have mental stability, and patients avoid pungent food and drinks such as coffee, soda, chocolates and mint candies.

Analysis of Body Composition, Dietary Behaviors and Life style of 30~50 year old Women Living in Seoul (30~50대 여성의 연령별 신체조성분과 식행동, 생활습관 관련 요인 연구)

  • This study was carried out to investigate the distribution of body composition, and to analyze its relationship to dietary behaviors and life style. The study subjects were divided into 3 age groups; 30' years (n = 78) 40' years (n = 71) and 50' years (n = 44). The data was collected by physical measurement (Inbody 230) and questionnaires. The rate of disease and general characteristics were higher in the 50 year old group than in the other groups. Average amount of body water, protein, mineral and body fat were 29.0 kg (50.4%), 7.7 kg (13.4%), 2.8 kg (4.8%), 18.7 kg (31.5%), respectively. The rate of menopause was significantly different with increasing age. Menopause was 1.3%, 9.1%, 79.6% by age respectively. Body fat percent was significantly increased and body water decreased with age (p < 0.01). The fat composition was higher and the mineral content was lower in 50' year old group. Dietary behavior scores of 30' year old group was significant lower than in the other two groups (p < 0.001). The means of salty eating, skipping meals, fruit intake and food habits total point were significantly higher in the 50 year old group than in the other groups. There were significant positive correlations between age, BMI, waist hip ratio respectively (p < 0.01). There were significant negative correlations between age and body water, body mineral, skeletal muscle (p < 0.01, p < 0.05, p < 0.01). The results of this study suggested that nutritional management and education for adult women differ by age group.

Effect of Resin Material on Molding Characteristics of Disposable Tray for Korean Food (재질이 도시락 용기의 성형 특성에 미치는 영향)

  • The molding characteristics, hardness and overall quality of the Korean style disposible food tray made from the low and medium density polystyene sheets were investigated and the results were obtained as follows. The volume difference of 8 sectional trays was 56.4% between the two materials, and that of 5 sectional trays was 41.8%. The more the sectional number of the tray, the larger the volume difference. Medium density polystylene tray had the better solid characteristics and overall acceptance than the low density polystlene tray.

  • Takju is a traditional alcoholic beverage that has been prepared by fermenting the cooked rice and Nuruk (Korean-style bran koji). During fermentation. bacterial contamination is a problem which inhibits the growth of yeast and thus lowers the ethanol production from starch of rice, and causes souring. Major contaminants were known to be gram-positive acid producers at the early stage of fermentation. This problem would be solved if the contaminated bacteria could be controlled. Nisin, a GRAS-grade preservative, was added at the level of 500 iu/g as it retards the growth of the gram-positive bacteria. It was possible to control acid and ethanol production during fermentation. This process increased the ethanol production by 2 % comparing with control.

  • JOMONG is the period of the primitive economy of collection in Japan. YAYOI and KOBUHG is the period of beginning of rice farming and the period of introduction of many culture from Korea that made influence to food culture in Japan. In the period of JOMONG, people ate foods that became sooty. In the period of YAYOI and KOBUNG there were methods of steaming, boiling, roasting, broiling. At that time Koreans introduced Japanese the brewing and Japanese developed it. In the period of JOMONG, people used the earthenware of Jugu style(originated from Japan) and in YAYOI and KOBUNG, they used TOSAGI & SEHAEGI. (infuluced by KAYA period in Korea)

Survey on Consumer Concept and Acceptability of Convenient Ginger Product (생강에 대한 소비자 인식 및 편의제품 선호도 조사 연구)

  • The consumers' concept and the acceptability of ginger and its processed product were surveyed by premade questionnaire. A total of 447 questionnaires were collected from housewives, restaurant managers and related processors at 7 regions in Korea. The 40.6% of total responsors reacted ginger as spice was necessary for food preparation by flavor(87.5%). The most difficulties of using ginger were peeling and washing(89.8%). The raw ginger purchased for their use was only utilized less than 70% of 46.5% and 50% of 21.3% of total responsors respectively. The processed and convenient style spices including ginger were accepted by 72.8% of qestionnaires and 76.9% of them hoped to have ginger paste. Such a convenient ginger products were more welcomed by younger generation than older.

Evaluation of Korean Noodle Quality of Korean Winter Wheat over Years and Locations

  • Noodle texture parameters of Korean style wet and dry noodles and relationships between noodle quality and flour characteristics were evaluated for two years, 1997 and 1998, and at two locations, Suwon and Deokso, using Korean winter wheat cultivars and lines. No significant difference for chewiness was found between cultivars over locations. Noodles made from flours from 1997 showed significantly higher chewiness than those from 1998. Chewiness of cooked noodles showed positively significant correlations with protein content and SDS sedimentation volume and negatively significant correlations with starch peak viscosity and flour swelling volume. Korean winter wheat cultivars, except for Gobunmil, Keumkangmil Tapdongmil, Suwon 265 and Suwon 280, showed chewiness of cooked noodles similar to commercial flours used for noodle making in Korea and Japan.
