한국산 마의 지질 성분의 분리 및 분석 (Fractionation and Quantitative Analysis of Lipid Components in Korean Yam (Dioscorea) Tubers)

  • 한국산 마의 주요 품종인 Dioscorea batatas, D. aimadoimo and D. japonica 3가지 품종의 시료들을 동결건조하여 분말로 만든 다음 지질의 추출, silicic acid column chromatography에 의한 지질의 분획, thin layer chromatography에 의한 지질의 분리 및 gas chromatography에 의한 지방산 조성 등을 행하였다. 총지질의 함량은 D. japonica가 다른 마에 비해 적은 편이었으며, 지질을 분획한 결과 3가지 품종 모두 중성지질이 가장 많았고 그 다음 당지질, 인지질 순으로 나타났다. 분획한 각 지방의 구성 지질로는 중성지질이 sterolester, triglyceride, 1,3-diglyceride, 1,2-diglyceride 및 monoglycerid였고, 당지질에서 acylsterylglycoside, sterylglycoside, digalactosyldiglyceride 및 sulfolipid였고, 인지질에서 phosphatidylethanolamine, phosphatidylcholine 및 phosphatidylinositol 이었다. GC에 의한 총지질의 지방산 조성은 팔미트산과 리놀레산이 가장 많은 부분을 차지하였고 불포화지방산 함량이 포화지방산 함량보다 많았다. 또한 중성지질, 당지질 및 인지질의 지방산 조성도 총 지질을 구성하는 지방산 조성과 같은 양상을 보여 주었다.

  • (1) 분할마를 심은지 30일 후에 3, 5, 7, 9, 12g씩 분할한 절편의 발아율은 60.3, 80.5, 85.3, 98.6 및 99.3%를 나타냈다. (2) 하우스재배에서 분할 절편에 따른 괴경 비대는 3, 5, 7, 9, 12g에서 66, 87, 98, 120, 140g을 나타냈다. (3) 노지재배에서 분할 절편에 따른 괴경 비대는 3, 7, 12, 18, 23g에서 35.2, 124.7, 142.7, 174.8, 200,7g을 나타냈다.

The Contents of Heavy Metals (Cd, Cr, As, Pb, Ni, and Sn) in the Selected Commercial Yam Powder Products in South Korea

  • Yam (Dioscorea) has long been used as foods and folk medicine with the approved positive effects for health promotion. Although consumption of yam products is increasing for health promotion, reports for the metal contamination in commercial yam powder products to protect the consumers are lacking. In this study, we aimed to assess whether the commercial yam powder products were heavy metal contaminated or not using the yam products from six commercial products from various places in South Korea. The contents of heavy metals (Cd, Cr, As, Pb, Ni, and Sn) in yam powder products were measured and compared to national and international food standard levels. Also, the metal contamination was monitored during the food manufacturing steps. The study results showed that the contents of heavy metals (Cd, Cr, As, and Pb) in yam powder products are similar to those in national 'roots and tubers' as well as in various crops. In comparison to three international standard levels (EU, Codex and Korea), Cd content in yam powder products was lower but Pb content was 5 times higher. Also, Pb, Ni, and Sn may have the potential to be contaminated during food manufacturing steps. In conclusion, the level of heavy metals (Cd, Cr, As, Ni, and Sn) except Pb is considered relatively safe on comparison to national and international food standard levels.

Two Species of Penicillium Associated with Blue Mold of Yam in Korea

  • During 2007 survey of post-harvest diseases of yam performed in May and June, severe tuber loss caused by blue mold was observed in Iksan, Cheonbuk Province. Two species of Penicillium were isolated from the infected tubers. Based on $\beta$-tubulin gene sequence analysis, and cultural and morphological characteristics, the isolates were identified as Penicillium sclerotigenum and P. polonicum. P. sclerotigenum, which is a novel to Korea, is presently described and illustrated.

  • 마 재배에 있어서 트랜쳐를 이용한 심경재배 효과와 트렌치 깊이에 따른괴경의 형태적 특성 및 수량성의 변화를 자주식 보행형 트렌쳐인 "NF-827H"를 공시하여 검토한 결과를 요약하면 다음과 같다. 트렌처를 이용한 심경으로 마를 재배하면 관행 경운에 비하여 괴경의 크기가 커지면서 모양이 좋아지고 상품성이 높은 괴경의 수량이 크게 증가되었다 트렌치에 의한 심경재배 효과는 단마보다 장마에서 크게 나타났으며, 괴경의 크기와 모양 및 수량성을 고려할 때 단마는 60cm 이상, 장마는 80cm 이상으로 트렌치하는 것이 좋다.

Effect of Flooding and Soil Salinity on the Growth of Yam (Dioscorea batatas) Transplanted by Seedling of Aerial Bulblet in Saemangeum Reclaimed Tidal Land

  • The effect of flooding and soil salinity on the growth of yam (Dioscorea batatas) were studied on the experimantal site temporally established in the south-eastern part of Saemangeum Reclaimed Tidal Land (near Gwanghwal myun, Gimjae-gun, Jellabukdo, Korea). Yam seedlings planted by using aerial bulblet as alternative of sliced tubers, were grown for 20-days and transplanted in black-vinyl mulched ridges (about 20 cm in height) at 70cm interval by $20{\times}60cm$ spacing in the $4^{th}$ of May, 2010. Soil salinity was maintained at lower than 1.2 ds $m^{-1}$ during the growing period and did not result to salt injury in all plants. However, flooding injury very seriously led to plant death and plant mortality rates at $67{\pm}21$ and $82{\pm}9%$ of yam plants in the compost and no compost treatment, respectively, died by heavy flooding during the rainy summer season. The main reasons of the flooding injury included the decreased rainfall acceptable capacity (RAC) after the rising of water table and a slowdown of water infiltration rate after the formation of an impermeable soil crust in the furrow bottom with continuous and heavy downpour during the rainy summer season. The effect of compost treatment was not statistically observed because of the severe spatial difference caused by wet injury, although yam tuber yield was higher at 30 kg $10^{-1}$ in the compost treatment than in the no-compost treatment at 20 kg $10^{-1}$. However, the size of tuber ranged at 1.23 to 1.60 cm in diameter and 3.7 to 5.0 cm in length in all both treatment, which means they are still reproducible for the next cropping season. Conclusively, proper counter-flooding measure and soil salinity control critically important for successful yam production in Saemangeum Reclaimed Tidal Land.

열대산 도입마(Dioscorea alata L.)의 생육과 괴경비대 (Studies on the growth and enlargemet of tuber in tropical yams (Dioscorea alata L.))

  • 도입 마(Dioscorea alate L.) 계통 중 품질이 우수하고 이 용 가치가 기대되는 열대산 마(D. alata)를 우리나라에서 재배 시 그 가능성과 제 기관의 생육특성을 밝히기 위하여 실시하였다 D. alata. 및 D. opposita의 생육패턴 및 수량성을 비교 도입 재배 가능성을 시험하였다. 1. 4월 하순에 정식한 마의 지상부는 70일까지는 완만한 생육을 보였으나, 그후에 급격히 생장하여, 200일 이후 지상부의 하부가 낙엽지며 감소하였다. 생육은 D. atara, 단마 순이였다. 2. 도입마(D. alate)의 형성은 정식 50일 정도에서 일어났으나, 그 후 비대생장이 늦어서 150일 이후에 급격 히 비대하였다. 3. D. alata(도입마)의 일반성분은 D. opposita(단가) 보다 단백질, 섬유, 지방의 함량이 낮았다. 4. D. alata의 경도를 보면 2696.2로 D. opposita 4946.9 보다 약 2배정도 낮고, 색도 중 명도(L)는 D. alata가 73.99으로 D. opposite 보다 높았다.

貯藏溫度와 充塡材料가 마의 貯藏과 品質에 미치는 影響 (Effect of Storage Temperature and Keeping Materials on Storability and Quality of Chinese Yam)

  • 최근 한방(韓方)의 생약제(生藥劑) 또는 생식용(生食用)으로서 마의 소비량은 급격히 증대되고 있어 년중(年中) 출하(出荷)를 위한 안정적인 저장방법이 설정되어야 할 것이다. 본 시험은 마의 저장에 관한 정보를 제공하고자 저장온도와 충전재(充塡材)에 따른 저장 또는 상품성과 관련된 형질의 변화를 조사하였던 바 그 결과를 요약(要約)하면 다음고 같다. 1. 충전재(充塡材)에 따른 건전개체율은 상온저장과 저온저장 모두 vermiculite를 이용할 경우 가장 높았고 상온저장에서는 흙, 저온저장에서는 PE film을 이용할 경우 가장 낮았다. 한편 중량감소율은 상온과 저온저장 모두 타충진재(他充塡材)에 비하여 PE film과 vermiculite를 이용할 경우 가장 낮았다. 2. 충전재과(充塡材科)에 따른 저장 후 상품성(商品性)과 관련된 명도(明度)와 수분함량(水分含量)은 저온저장에 비하여 상온저장에서 낮았으며, 충전재(充塡材)는 저온저장에서 PE film을 이용할 경우 명도 및 색도 a값이 높고 색도 b값이 낮은 반면, vermiculite를 이용할 경우 PE film과는 상반된 결과를 보였다. 3. 충전재료별 저장 후 상품수량은 건전개체율 또는 수분함량과 정(正)의 상관(相關)을 보인 반면, 부패정도가 $30\sim60%$, 60% 이상인 것, 중량감소율 또는 색도 b값과 부(負)의 상관(相關)으로 분석되었다.

Properties of Starches in Chinese Yam, Dioscorea oppsita Thunb. Irradiated with Proton Beam

  • The survival rate and thermal, crystal, and physicochemical properties of starches in chinese yam tubers irradiated to proton beam were determined. Survival rate was decreased with increased proton beam irradiation. Amylose content of D. opposita starches from different proton beam ranged from 13.2% to 17.8%. D. opposita starch at 5 Gy showed the highest ${\Delta}H_{gel}$ values (12.0 J/g) while D. opposita starch at 25 Gy showed the lowest values (10.1 J/g). Several parameters such as PKV (peak viscosity), HPV (Hot peak viscosity) and CPV (Cooling peak viscosity) decreased with the increase in irradiation dose. The degrees of crystallinity of the D. opposita starches at 5, 10, 15, 20 and 25 Gy were 37.2, 38.3, 38.9, 39.2 and 39.9%, respectively. It might be deduced that proton beam irradiation causes changes of starch, especially at high dose irradiation.

수확시기와 저장방법에 따른 마의 塊根重과 품질변화 (Tuber Yield and Characteristics of Chinese Yam as Affected by Harvesting Date and Storage Condition)

  • To give some information on the harvest and storage of Chinese yam (Dioscorea opposita), the experiment was done to examine the effect of its harvesting date and storage method on tuber weight, tuberrelated characters during the storageor at the end of storage. The yam tubers harvested 4 times at 20 days interval from Oct. 15 were stored with different storage methods(pit, room and cold temperature) and on Mar.15. all the characters were measured. Fresh weight of the tuber harvestedafter Nov. 5 and stored were greater than that done on Oct. 15 while dry tuber weight did not have any difference between the harvesting dates. The fresh weigth done directly from the field on Mar. 15 was higher compared to the other harvesting dates owing to its higher moisture content. The rate of sound tuber stored at room or cold temperature condition was higher than that at the field at which the rate was greater at the harvest after late nov. compared to the earlier harvests. Although the two storages were similar at sound tuber rates and marketable yield, the tuber weight was more reduced when stored at room temperature than when done at cold temperature . Brightness and value 'b' of chromaticaity realted to the tuber coloring and sugar content were higher but moisture content was lowerwhen harvested on Oct. 15 than the other havesting dates. All the characteristics realted to the marketability after storage were nearly same when stored at room and cold temperature. Value 'a' of chromaticity and sugar content were higher when harvest on Mar. 15 than when harvested before Dec. 15 but the 'b' value and mositure content were reverse results.
