A Study on the Improvement and Preference of School Lunch Program of A School child in Yong-in city (용인시내 초등학생의 급식선호도와 급식개선에 관한 연구)

  • This study was conducted to investigate the improvement of primary school lunch program. For this study, status of school lunch program. opinions of students of primary school in Yong-in city were surveyed by anquettes. The results are as follows. Menus of school lunch program were contained main dishes(cooked rice with soybean, cooked barley, cooked sorghum etc.). soups(soy paste soup. soy bean curd etc.) and side dishes(fried chicken, salad, fish cuttlet etc.). Students preferred Chinese and American style food such as Zazang rice Tang su youk, fish cuttlet. Many students disliked Korean style food such as dried radish salad. stir fried mushroom, soybean stew and spinach salad. One-line food service was better than separate food service for school feeding system by opinion of students. In conclusion, present manues of school feedings were not satisfied to students. it is desirable the several type of manue rather than unique manue were served to students.

  • We live seeing, touching, or throwing on considerable textile in our life consciously and unconsciously. Since a Korean-style house is a dwelling space in life style of sitting on the floor with ondol(Korean floor heater), use of textile is limited to bedding goods. However, as western life style takes firm root, use of textile for interior design is increasing. As well, as apartments and foreign style houses have gotten lodgment since 1980, life style is being changed rapidly. So, textile became required factors in dining space where little textile existed. Through literature, history of textile is considered and design image concept is created based on the consideration. In addition, the created concept can be applied to various textile design, which can be a good tool to express eating culture of the country as well as the country's image.

Globalization of Korean Cuisine through Korean Sauces - Focusing on the Success of World-wide Sauces - (한식 소스류를 통한 한국음식의 세계화 방안 - 세계적인 소스류 성공사례를 중심으로 -)

  • The study sought ways to promote the global recognition of Korean food items. The Korean cuisine is one of the healthiest and well-balanced foods in the world. There are world-wide sauces in the United States, China, Japan, Thailand, Vietnam and Cambodia, Singapore, Indonesia, India, Australia, British, France and Italy. The above mentioned countries have good sauces and marketing strategies. In contrast to those countries, the internalization of Korean-style sauce has not yet been carried out. In this study, globalization plans for Korean cuisine through Korean-style sauces are divided as follows: promotion of the existing Korean-style sauces such as soybean sauce, Gochujang, Doenjang and Ssamjang, to chefs in foreign countries; development of derivative sauces, based on Gochujang, Doenjang, and Ssamjang; overseas promotion of Korean-style sauces through foreign chefs in Korea; and overseas promotion of the existing Korean-style sauces. Development of indigenous sauces by Korean food manufacturers and processors is one route in the promotion of Korean cuisine. Korean franchising restaurants could also aid in export of Korean food items. The food manufacturing/processing sectors must work in concert with the Korean government to globalize the Korean cuisine. The government should play a leading role in fostering star chefs, holding Korean cuisine seminars along with promotional efforts in foreign countries and foreign cooking schools (such as the 'Taste Korea' campaign).

Study on Preferences and Perception of Koreans and Non-Koreans Residing in Korea Regarding Globalization of Korean Foods (한식 세계화를 위한 내국인과 국내 체류 외국인의 한국음식 선호도와 한식에 대한 인식)

  • The purpose of this study was to assess comsumer preferences and perception of Korean foods in Koreans and non-Koreans residing in Korea. Exactly 79 customers (28 Koreans, 51 non-Koreans) were surveyed with questionnaires in English and Korean. Data were analyzed using the SPSS statistical package (21.0) and ${\chi}^2$-test. Subjects were of various nationalities, including China (37.3%), Philippines (19.6%), Japan (17.7%), USA (11.8%), Uzbekistan (3.9%), Nepal (2.0%) and Nigeria (2.0%). The representative food was Kimchi and favorite Korean foods were Kimchi, Bulgogi, Bibimbap, Galbijjim etc. Koreans reported that the main advantages of Korean food were its 'home-made style', but non-Koreans reported 'health functionality'. In terms of disadvantages, non-Koreans consumers ranked 'unsanitary eating style without individual plates' as the biggest problem while Koreans ranked 'table setting at a time'. Factors 'complicated cooking method', 'spicy taste' and 'salty taste' were also reported disadvantages. Survey participants were asked what was the most important for the globalization of Korean food. Most non-Korean participants listed 'health functionality' and 'traditionalism' (p<0.05).

  • The purpose of this study is to research consumer's action style. and then to make a marketing strategies. The strategic plan to consumer's action style on the fast-food industry were as follows; First, the group that coefficient of utilization is so frequent and an age is young are requested concentrative or discriminative marketing as the price discrimination and market segementation, the price value of the products value has to manage effectively, Second, establishment of corporate image and improvement of products image are requested. The result of this study, fast-food industry will be needed marketing activities that are discriminative strategies, positioning strategies, education training, and customer management. And system construction that is equivalent to customer needs, and the continuous coustomer studies are requested.

Relationships of Food Habits & Life Style and Skin Health of Young Females (젊은 여성의 식습관 및 건강관련 생활습관과 피부건강과의 관련성 연구)

  • This study was performed to investigate the effects of food habits and life style on the skin health of young Korean females in their late teens and twenties. The study focused on facial skin and used a self-administered questionnaire survey, an examination of skin type, and pH tests. More than half of the females had combination skin type or pH level higher than 5.8 which is regarded as normal. The variables that turned out to significantly (p<0.05) effect their facial skin types were body mass index (BMI), the type of residence, the amount of water intake, whether or not they intake drinks, the frequency and amount of alcohol drinking, favorite foods as side dishes at meals, intake frequency of fruit, the dairy, seaweed, and fast food, the frequency of washing their faces per day, the method of how they used water during face washing, whether or not they had professional skin care, and whether or not they wore color make up. The variables of the females' age, BMI, the amount of alcohol drinking, the frequency and duration of exercise, the controlling methods of stress, their favorite foods as side dishes at meals, and the intake frequency of soy products or animal foods significantly affected their facial pH levels (p<0.05). The results of this study indicate that some food habits and life styles are significantly related with facial skin health. More importantly BMI and favorite foods as side dishes during daily food intake could have remarkable effects on facial skin health.

A Study on Life Style and Eating Habits Correlated with Constipation of Working Women in Kangwon Provicne (강원지역 직장여성들의 변비 관련 생활습관 요인)

  • In this study we included 298 working women in Kangwon province to investigate the life style and eating habits related to constipation. The subjects were divided into 3 groups according to Roman II criteria as follows : normal, mild constipation and constipation groups. For the result, 48.4%, 42.7%, 27.2% and 28.6% of the subjects had constipation in the order of 20's, 30's, 40's, and 50's, respectively. Constipation group had low frequency of bowel movement per week and irregular visit to toilet compared to normal and mild constipation groups. There were higher percentage of people with reading habit while sitting on a toilet, in the constipation group compare to other groups. Constipation groups had difficulty having bowel movement when sleeping outside of their home. There was a significant difference in water consumption per day among the 3 groups. But there was no significant difference in the amount of meals consumed and the number of meals with snacks per day. For the food frequency, there was lower frequency of yogurt and vegetables consumption in the constipation group. But there was no difference in how to eat fruits. From these results, we concluded that in order to treat the constipation, it is recommended to take enough water and dietary fiber, and to have physical activities for the working women.

Breakfast Patterns and Preferences of Elementary School Students in the Chung-nam Area (충남 일부 지역 초등학생의 아침식사 관련 요인 및 선호도 조사)

  • We examined breakfast patterns and preferences in 420 elementary school students (216 boys, 206 girls) in the Chung-nam area. About thirty percent of the subjects had breakfast irregularly. The main reasons for skipping breakfast were having a 'poor appetite' and being 'busy'. The person who prepared breakfast was the 'mother' in both groups. Subjects were satisfied with 'Korean style' menu but dissatisfied with 'rice porridge-style'. Multiple regression analysis indicated that the 'frequency of having breakfast' was positively related to the subject's 'frequency of having breakfast with their mother'. On the other hand, the frequency of having breakfast was negatively related to feeling obligated to have breakfast. The multiple regression analysis also indicated that a Korean style 'breakfast preference' was positively related to the mother's age and negatively related to their 'wake-up time'. A 'breakfast preference for bread and milk' was positively related to 'bed time' and negatively related to the 'age of the father'. Our results will provide critical information for the nutritional education of elementary school students.

Food preferences of foreigners residing in Korea (주한 외국인의 한국 식당의 음식 및 써비스에 대한 의견조사)

  • The purpose of this study was to investigate foreigners' preferences in Korean foods as served in Korean restaurants. A questionnaire was constructed for this study and sent to foreigners residing in the Seoul area. The study showed that when they have a chance to choose a restaurant for eating out, the decision to choose a Korean-Style restaurant is made on the basis of the special flavor of Korean food as well as the desire to experience Korean traditional food culture. Korean style barbecue, mixed vegetables, and dumplings are preferred by most foreigners. Beef rib stew and pibimbab were also selected frequently. Muk, maeuntang, rice cakes, cold noodles and sea weeds were not preferred.
