Effects of Extrusion Conditions on the Physicochemical Properties of Extruded Red Ginseng

  • The effects of variable moisture content, screw speed and barrel temperature on the physicochemical properties of red ginseng powder extrudates were investigated. The raw red ginseng powders were processed in a co-rotating intermeshing twin-screw extruder. Primary extrusion variables were feed moisture content (20 and 30%), screw speed (200 and 250 rpm) and barrel temperature (115 and $130^{\circ}C$). Extruded red ginseng showed higher crude saponin contents (6.72~7.18%) than raw red ginseng (5.50%). Tested extrusion conditions did not significantly affect the crude saponin content of extrudates. Increased feed moisture content resulted in increased bulk density, specific length, water absorption index (WAI), breaking strength, elastic modulus and crude protein content and decreased water solubility index (WSI) and expansion (p<0.05). Increased barrel temperature resulted in increased total sugar content, but decreased reducing sugar content in the extrudate (p<0.05). Furthermore, increased barrel temperature resulted in increased amino acid content and specific length and decreased expansion and bulk density of extrudates only at a higher feed moisture content. The physicochemical properties of extrudates were mainly dependent on the feed moisture content and barrel temperature, whereas the screw speed showed a lesser effect. These results will be used to help define optimized process conditions for controlling and predicting qualities and characteristics of extruded red ginseng.

Changes of Chemical Compositions and Ginsenoside Contents of Different Root Parts of Ginsengs with Processing Method (인삼의 가공방법에 따른 일반성분 및 Ginsenoside 함량 변화)

  • This study was carried out to determine changes in general chemical composition, free sugars, physicochemical properties of extract, and ginsenoside contents depending upon processing methods. Ginseng roots harvested from the same field were employed for the processing into white ginseng (WG), taegeuk ginseng (TG), red ginseng A (RGA, steamed one time), and red ginseng B (RGB, steamed three times). The fat content decreased by increasing duration of treatment and number of steaming treatment. On the other hand, there was no significant variation in contents of ash and carbohydrate depending on processing methods. Contents of sucrose and maltose was higher in Taegeuk and red ginseng than those of white ginseng. Steamed ginseng root (taegeuk and red ginseng root) showed higher amount of water extractable solid than the unsteamed white ginseng, but the variation of crude saponin content was not distinctive depending on processing methods. The contents of total ginsenosides increased by the order of white, taegeuk, red A, and red B root. In summary, chemical composition and total ginsenoside content were different according to part of root and processing methods, thus implies the importance of quality control as well as pharmacological activity of ginseng root.

Study of the Efficacy of Korean Red Ginseng in the Treatment of Androgenic Alopecia (고려 홍삼의 탈모증 개선 효과에 대한 임상 연구)

  • Alopecia is a common form of hair loss in both male and female, affecting approximately ten million Koreans. Although medical treatments have been developed to treat alopecia, these treatments still have limitations due to complications that come with these treatments. In contrast, Korean red ginseng has been shown to have a stimulating effect on hair follicle and it has already been added to hair treatment products as a safe ingredient. This study was conducted to objectively evaluate the efficacy of Korean red ginseng in the treatment of alopecia. 40 patients suffering from androgenic alopecia were recruited and randomly divided into the experimental (20 patients) and control (20 patients) groups. The experimental group took Korean red ginseng extract (3,000 mg/day) for 24 weeks while the control group took a placebo. The changes of hair counts, thickness, and density were evaluated with Folliscope$^{(R)}$. Patient satisfaction was evaluated through a questionnaire, and clinical photographs were rated by dermatologists. The result of the study showed that Korean red ginseng effectively increased hair density and thickness. Patient satisfaction and evaluation of photographs by dermatologists also confirmed the effectiveness of Korean red ginseng in the treatment of alopecia.

  • There are two kinds of commercially available ginseng root, red ginseng and white ginseng processed from fresh ginseng root Those ginsengs are primary product from fresh ginseng root and have the characteristic of keeping their original root shape Processed ginseng products are made from either red ginseng or white ginseng by way of complicated process of pulverization. Extraction. Condensation, fettering, sterilization, etc. Among them there are extracts. extract powder, powder, capsules tablets, Candy, drinks, nectar, jelly, gums. chicken soup. tonic. etc. to meet the demand for consumer's pretheronce . The 200 kinds of processed secondary products are approximately produced in the form of 20 kinds of ginseng products by about 60 domestic companies. In spite of about 213.000 million won of domestic market in 1993. it seems like that the ginseng market of the future has not a good prospects The total market sale of white ginseng in Korea has been continuously decreased since 1991 And 963 tons of white ginseng was consumed in domestic market in 1993 The domestic market sales of white ginseng in origina1 root shave. was 90, 000 million won in 1993 and market price of the fine root used as a source of processed products has not been changed in these ten years. The total market sale of red ginseng and its processed products was 58, 000 million won in 1993 9.800 mi11ion won of red ginseng in original root shape and 48.000mi11ion of processed red ginseng product. Ginseng products such as extracts, drinks, teas and tonics etc atre mostly exported to south-east Asia. And the total exports of ginseng pi.oducts (extracts, drinks teas) decreased to 54 million dollars in 1994, compared with 85 million dollars in 1992. Despite of extensive knowledge about ginseng little is still known about the development of new processed ginseng pl.oducts because of "Know-How". Some papars have presented the effects of extracting method(amounts of solvent. time. temperature, equipment. etc.) on the quality and yields of ginseng extr acts. Also. some researchers have carried out a few studies on the poriflcation of the extracts and the amounts of precipitation in the drink at variotas pH during the storage for preventinly drink from precipitation. A fell studies on the preservation of Korean ginseng powder. tea. Extract powder by irradiation and ozone treatment have been reported by some researcher for the improvement hygienic quality of ginseng products There are also some reports about the effects of ginseng components on the acid production by lactic acid bacteria or acetic acid bacteria. and alcohol production by yeast for the development of new ginseng products processed by fermentation. To make ginseng more able to contribute to the health of mankind in the future. consistent and considerable efforts should be focussed on improving the taste of ginseng and developing various new product as a health food or a function food.tion food.

The Effects of Red-ginseng Intaking on Free Radical Produced During Aerobic Exercise in the Elderly (홍삼복용이 노인들의 유산소 운동시 발생된 활성산소에 미치는 영향)

  • This study was performed to investigate the effect of 12 weeks red-ginseng intaking on MDA(malondialdehyde) produced during aerobic exercise in the young and elderly women. Sixteen volunteers agreed to participate and were placed in 2 groups: in the young(20-25 yrs), red-ginseng intake group(n=8), in the elderly(60-69 yrs), red-ginseng intaking group(n=8). The subjects who joined this study were asked to take 2.7g of red-ginseng powder capsule per day before the meal for 12 weeks(3 times/day). MDA(from blood samples) were collected at rest, just after the submaximal exercise, and 30 minutes after the exercise(cycle ergometer riding) at the beginning and the end of the 12-weeks program. After 12 weeks of red-ginseng intaking, young and elderly groups showed the decreased MDA significantly at rest(41.57%, 28.59%), just after the exercise(45.96%, 40.74%). and 30 minutes after the exercise(37.37%, 32.68%). These results indicate that red-ginseng intaking, as an antioxidant, may be useful for removing MDA produced during aerobic exercise in the elderly.

Analysis of the Extraction Condition of Soluble Acidic Polysaccharides from Ginseng Marc (인삼박으로부터 수용성 산성다당체의 추출 조건 분석)

  • This study was carried out to investigate the optimum conditions for extraction of soluble acidic polysaccharides from ginseng marc. Method of carbazole-sulfuric acid was applied to determine the amount of acidic polysaccharides in ginseng marc. The amounts of soluble acidic polysaccharides in water extract of ginseng marc were increased with increasing extraction temperature. The contents of acidic polysaccharides were not significantly different despite the extraction time increasing from 0.5 hours to 6 hours. To estimate the rehydration rate of the freeze dried polysaccharide, the extracted acidic polysaccharide fraction powder was determined the amount of soluble acidic polysaccharides by carbazole-sulfuric acid method again. The rehydration rate of acidic polysaccharides from water-extract of red ginseng marc at room temperature was 100%. On the other hand, the rehydration rate of acidic polysaccharide of red ginseng marc at boiling temperature was about 50%. The rehydration rate of acidic polysaccharides from water-extract of white ginseng marc at room temperature was 50%. The rehydration rate of acidic polysaccharide of red ginseng marc at boiling temperature was about 40%. The rate of soluble acidic polysaccharide of Red Ginseng is higher than that of White Ginseng. We can find out the maximum extraction method of soluble acidic polysaccharide from ginseng marc.

Anti-diabetic Mechannism Study of Korean Red Ginseng by Transcriptomics (전사체 프로파일을 이용한 고려 홍삼의 항당뇨 기전 연구)

  • This study was designed to investigate the anti-diabetic effect and mechanism of Korean red ginseng extract through transcriptomics in C57BL/KsJ db/db mice. The db/db mice were randomly divided into six groups: diabetic control group (DC), red ginseng extract low dose group (RGL, 100 mg/kg), red ginseng extract high dose group (RGH, 200 mg/kg), metformin group (MET, 300 mg/kg), glipizide group (GPZ, 15 mg/kg) and pioglitazone group (PIO, 30 mg/kg), and treated with drugs once per day for 10 weeks. At the end of treatment, we measured blood glucose, insulin, hemoglobin A1c (HbA1c), triglyceride (TG), adiponectin, leptin, non-esterified fatty acid (NEFA). RGL-treated group lowered the blood glucose and HbA1c levels by 19.6% and 11.4% compared to those in diabetic control group. In addition, plasma adiponectin and leptin levels in RGL-treated groups were increased by 20% and 12%, respectively, compared to those in diabetic control. Morphological analyses of liver, pancreas and epidydimal adipose tissue were done by hematoxylin-eosin staining, and pancreatic islet insulin and glucagon levels were detected by double-immunofluorescence staining. RGL-treated group revealed higher insulin contents and lower glucagon contents compared to diabetic control. To elucidate an action mechanism of Korean red ginseng, DNA microarray analyses were performed in liver and fat tissues, and western blot and RT-PCR were conducted in liver for validation. According to hierarchical clustering and principal component analysis of gene expression Korean red ginseng treated groups were close to metformin treated group. In summary, Korean red ginseng lowered the blood glucose level through protecting destruction of islet cells and shifting glucose metabolism from hepatic glucose production to glucose utilization and improving insulin sensitivity through enhancing plasma adiponectin and leptin levels.

Effects of Non-Saponin Red Ginseng Components on Multi-drug Resistance

  • Multi-drug resistance (MDR) is a major problem in cancer chemotherapy and has often ended up with termination of the therapy. The aim of this study was to identify any fractions of Korean red ginseng that would be effective in modulating for MDR. Although ginsenosides have been reviewed as possible MDR modulators, the MDR modulation activity of the other component is unknown. Therefore, a red ginseng was extracted with methanol, ether, ethylacetate, and n-butanol, followed by several fractionations by silica gel chromatography. And the activity of MDR modulating for these fractions was examined via sulforrhodamine B assay. We have found that several ether fractions, as nonsaponin components are effective on MDR modulation. We have expect that these results helpful to improvement of cancer chemotherapy.

Effect of Shading Net Colors on the Growth and Saponin Content of Korean Ginseng (Panax ginseng C.A. Meyer) (해가림 피복물의 색상이 고려인삼의 생육 및 Saponin 함량에 미치는 영향)

  • This study was conducted to define the effects of color of polyethylene (P.E.) net shading on the meteorological conditions under the shading growth status, photosynthesis and saponin contents of ginseng plant. Red and blue polyethylene net shading (4 fold) showed a good light intensity of ginseng growth, but red one not only increased air temperature but also resulted in early defoliation. Photosynthetic rate of ginseng leaves was increased in order of red, blue and black shade, Root yield and saponin contents were significantly increased red and blue net as compared with those of common straw shading. Blue color appeared to be most recommendable.
