  • The widespread pursuit for the thin physique may have detrimental impact on the wellbeing of the young generation, especially females. This study aimed to determine the effect of wanting very low body weight on dietary habits and psychological factors of female adolescents. Participants were 619 girls from 5 high schools in Kyeonggi, Korea. Information on dietary behaviors, psychological factors as well as current heights and weights and the desired weight for current height were obtained by questionnaire. Of total subjects, 38.1%, 35.5%, and 26.5% desired weights corresponding to normal (10~85 percentile), low (3~10 percentile) and very low BMI (< 3 percentile), respectively. The subjects who wanted to be very low weight had the average BMI of 18.57 kg/m2, which was significantly lower than $21.21kg/m^2$ of those who wanted to be normal weight (p < 0.001). The subjects who desired very low weight had significantly higher scores for depression symptoms (p < 0.05), while there were no differences in obsession to lose weight and obesity stress. Moreover, more subjects in this group had undesirable dietary habits such as eating fast foods more than weekly (p < 0.05). These findings suggest that the desire for extreme thinness may lead female adolescents to have not only unreasonably similar obesity stress and obsession to lose weight but also higher depression symptoms, along with undesirable dietary habits. The findings suggest the potential harm from excessive weight concerns of female adolescents; thus efforts to teach this group about healthy weights are urgently needed.

  • To investigate the relationship between eating behavior and the prevalence of adolescents drug abuse and smoking, this survey was conducted among 349 male students(mean age ; 16.0 $\pm$0.9yrs) at technical high schools in Kyunggi-Do. It was shown that 58.7% of total subjects were smoking and 11.2% were abusing drugs. Drug abusers weighed Less than non-abusers especially, student smokers were 2.7kg lighter than non-smokers despite the same height. Although parents' education showed no relationship with drug abuse, educational level of student smokers' fathers was significantly lower than that of non-smokers' fathers. Drug abusers and smokers showed significantly higher incidence of runaway from home, absence from school without notice, and parents' divorce than non-abusers and non-smokers. Drugs abused were sleeping pills(n=20), bonds and butane gas(n=9), marijuana(n=3), tranquilizer(n=3), morphine and cocaine(n=2), and pep pills like amphetamine(n=2) 76.9% of the drug abusers had their first experience in junior high school and 81% of the smokers stared smoking as early as in junior high school. Also, 44% of the smokers reported that they smoke daily. The drug abusers tended to have more irregular eating habits than the non-abusers. The smokers showed irregular mealtime, ate either too fast or too slow, and especially, often skipped lunch or dinner. The drug abusers and smokers took little vegetable in their meals and often ate bread or noodles instead of rice for staples. In addition, they preferred taste to nutrition when they had meals. The smokers tended to ingest smaller amount of calcium source such as milk or dinner food and fish with bone although they consume more volume of total foods than the non-smokers. All subjects took less in calorie, calcium, iron, vitamin A, vitamin E, riboflavin, and folic acid than the Recommended Dietary Allowance Those findings suggest that drug abuse and smoking cause bad eating habits that influence unbalanced nutritional state. Therefore, nutrition education should be provided to the adolescents so that they can recognize the disadvantages of drug and smoking and its relation to dietary relation. • To study the factors related to childhood obesity, 75 subjects were selected as an obese group and 75 subjects were selected as a control group according to their obesity index and BMI among the 583 children of 5th and 6th grade in elementary school in Seoul. For each subject, skinfold thickness was measured, information on the characteristics of family, nutrient intake and activity time of the subjects were obtained by questionnarie. The results were summarized as following: 1) Parents' obesity indices of obese group were significantly higher than those of control group(Father's Obesity Index : P<0.01, Mother's Obesity Index : P<0.05). 2) Questions about eating rate and behavior showed that subjects in obese group were significantly faster in their eating rate(p<0.05) and always more eager to eat food(p<0.001) compared to control group. 3) Dietary intake data showed that average daily intake of all the nutrients exceeded Korean recommended dietary allowances for the age group. In female children, fat intakes of obese group were significantly higher than control group(P<0.05). There was no such significant difference in male subjects. 4) Activity time record of subjects reveal that there was a trend for males to spend more time in moderate and high activity and less time in light activity compared to females. Subjects in obese group spent significantly more time for light activity(P<0.001) and significantly less time for moderate activity (P<0.001) compared to subjects in control group. The difference of activity was more pronounced in male subjects. 5) Correlation matrix of the variables showed that obesity index, BMI, and skinfold thickness of the subjects were highly correlated with each other. These indices were positively correlated to parent's obesity indices and the time spent for light activity, but negatively correlated to the time spent for moderate activity. Nutrient intakes were not significantly correlated to obesity indices. Form the results shown above, although both obese and control groups are from high socioeconomic class, obese children tended to come from family with fat parents. They eat fast and are always eager to eat. They tend to eat more fat but are very different from controls in nutrient intake. Obese children are significantly lower in their actinity compared to controls. So, for the prevention and treatment of childhood obesity, it seems to be more important to increase their activity levels.

  • Several our studies have focused recently on the mass production of the freshwater Cladoceran Moina macrocopa which can substitute Artemia nauplii for the culture of larval marin fish. A 6 weeks experiment was conducted to investigate the effects of enrichment on the fatty acid composition of Moina macrocopa through feeding Schizochytrium sp. containing highly unsaturated fatty acids and to study the impacts of n-3-HUFA enriched Moina on improving survival rate and fatty acid compostion of larval rockfish Sebastes schlegeli. After feeding for 6 weeks, the Moina-fed fry resulted in a higher survival rate of 99.2% compared to the Artemia-fed fry 12.8%. In addition, the Moina-fed fry had the fast growth rate 45.6mm compare to the Artemia-fed fry 25.7 mm at the end of the experiment. The Moina-fed fry showed significantly higher level of 16.47% DHA than their Artemia-fed fry counterparts of the level of 3.97% with respect to DHA. PL, the cell membrane components in living food organisms, constituted 63.8% of the Moina, which was significantly higher than in the 40.1% of the Artemia. The present study indicate that Moina macrocopa can be used as Artemia substitute and improving the survival rate rockfish larvae through enchriment Schizochytrium sp.

  • Atopic dermatitis is a chronic relapsing inflammatory skin disease. In the past years, numbers of children with atopic dermatitis has increased all over the world. Objective of this study was to evaluate awareness of students in atopy-friendly elementary schools about environmentally-friendly grown agricultural products and their practice levels for dietary guidelines. This study was conducted by using a questionnaire on 116 students from three atopy-friendly schools in Jin-an, Jeong-eup, and Gwang-ju and 124 students from general elementary schools. According to the results, the numbers of children who suffer from atopic dermatitis between atopy-friendly schools and general schools were not significantly different. Among, students with atopic dermatitis, more students in atopy-friendly school, compared to general school, restricted foods. Since different school feeding services have been provided, students in atopy-friendly schools generally get more information about the environmentally-friendly agricultural products through nutrition education. However, most results did not show differences in knowledge levels and practice levels for dietary guidelines for children between students in atopy-friendly schools and general schools about environmentally-friendly produces. However, students in atopy-friendly schools less frequently eat cookies, soda drinks, or fast foods. In conclusion, appropriate program for nutrition education should be provided to elementary school students with atopic dermatitis.

  • The Monascus azaphilone (MAz) pigment is a well-known food colorant that has yellow, orange and red components. The structures of the yellow and orange MAz differ by two hydride reductions, with yellow MAz being the reduced form. Orange MAz can be non-enzymatically converted to red MAz in the presence of amine derivatives. It was previously demonstrated that mppE and mppG are involved in the biosynthesis of yellow and orange MAz, respectively. However, ${\Delta}mppE$ and ${\Delta}mppG$ knockout mutants maintained residual production of yellow and orange MAz, respectively. In this study, we deleted the region encompassing mppD, mppE and mppG in M. purpureus and compared the phenotype of the resulting mutant (${\Delta}mppDEG$) with that of an mppD knockout mutant (${\Delta}mppD$). It was previously reported that the ${\Delta}mppD$ strain retained the ability to produce MAz but at approximately 10% of the level observed in the wildtype strain. A chemical analysis demonstrated that the ${\Delta}mppDEG$ strain was still capable of producing both yellow and orange MAz, suggesting the presence of minor MAz route(s) not involving mppE or mppG. Unexpectedly, the ${\Delta}mppDEG$ strain was observed to accumulate fast-eluting pigments in a reverse phase high-performance liquid chromatography analysis. A LC-MS analysis identified these pigments as ethanolamine derivatives of red MAz, which had been previously identified in an mppE knockout mutant that produces high amounts of orange MAz. Although the underlying mechanism is largely unknown, this study has yielded an M. purpureus strain that selectively accumulates red MAz.

  • The impact of freshwater discharge on plankton was investigated in a semi-closed Cheonsu Bay during the rainy season. Field observations for environmental factors (seawater temperatures, salinities, chlorophyll a concentrations and nutrient concentrations) and zooplankton sampling were carried out from June 27 to September 1, 2012 at about 10 days interval. The relationship between the measured parameters and estimated values of zooplankton abundance were examined. After freshwater discharge, nutrient concentrations increased up to about twice and resultant increase of chlorophyll a followed within about 10 days. Both positive and negative impacts on zooplankton were observed. Positive one was the numerical response of zooplankton on this increased food supply, and negative one was the increased mortality caused by sudden changes in salinity. Maximum mortality of copepods was found to be up to 40%, although fast sinking of carcass made it difficult to estimate reliable mortality caused by salinity shock.

  • Purpose: The purposes of this study were to check the obesity of middle and high school students in the nation and identify factors influencing their obesity. Methods: The present study is a secondary analysis research that obtained permission to use the primitive data of 10th (2014) Online Survey on Adolescents' Health Behaviors by the Korea Centers for Disease Control and Prevention and analyzed the primitive data according to the purposes. Results: The findings show that the BMI of middle and high school students in the nation was $20.7kg/m^2$ with the obesity and non-obesity group recording $27.0kg/m^2$ and $19.9kg/m^2$, respectively. Factors influencing the obesity of adolescents include gender, grade, educational background of parent, school grades for the last 12 months, satisfaction with sleep, fast food consumption, ramen consumption, intense and muscle exercise three times a week or more, subjective sense of health, stress, suicidal ideation, and hours of Internet usage per week. Conclusion: For the management of adolescent obesity, there is a need for obesity management programs taking the characteristics of male students into consideration. The possibilities of obesity grow according to the grades, which means that both the teachers and parents should offer more guidance on weight control in upper grades. The adjustment of adolescent obesity requires psychological health management including stress and suicidal ideation as well as diet control and exercise. It is also needed to apply a stepwise obesity management program according to the hours of internet usage and dependence on the internet

  • Purpose: This study aims to propose a method for fast geographical origin discrimination between domestic and imported rice using a visible/near-infrared (VNIR) hyperspectral imaging technique. Methods: Hyperspectral reflectance images of South Korean and Chinese rice samples were obtained in the range of 400 nm to 1000 nm. Partial least square discriminant analysis (PLS-DA) models were developed and applied to the acquired images to determine the geographical origin of the rice samples. Results: The optimal pixel dimensions and spectral pretreatment conditions for the hyperspectral images were identified to improve the discrimination accuracy. The results revealed that the highest accuracy was achieved when the hyperspectral image's pixel dimension was $3.0mm{\times}3.0mm$. Furthermore, the geographical origin discrimination models achieved a discrimination accuracy of over 99.99% upon application of a first-order derivative, second-order derivative, maximum normalization, or baseline pretreatment. Conclusions: The results demonstrated that the VNIR hyperspectral imaging technique can be used to discriminate geographical origins of rice.

  • The purpose of the present study is to develop a simple, fast and sensitive LC/MS method for simultaneous separation and the determination of an active component in the oriental medicinal mushroom Cordyceps militaris. Based on this work, the contents of cordycepin in Cordyceps militaris fruiting cultivated on various media were determined and compared. And also, the nutritional components such as minerals and vitamins were determined in order to provide useful information to consumer as a food material. The analysis methods of nutritional components were chosen on the basis of AOAC. The optimum separation for cordycepin was achieved using a solvent gradient consisting of the mixture of 0.1% formic acid in methanol (solvent B) in a background of 0.1% formic acid in water (solvent A) as a mobile phase and a 3.0${\times}$150 Waters XTera column. Selective ion monitoring (SIR) mode ([M+H]+ at m/z 252) was used for quantitative analysis of cordycepin. The cultivated Cordyceps militaris on various media contained 1~14 /g of cordycepin, 0.65~1.08% of thiamine, 0.86~7.17% of riboflavin, and 3.01~5.26% of niacin. The content of mineral components varied on categories, especially contained 500~3500% of potassium as a major mineral. Cordycepin, niacin and potassium were found much higher in the fruiting cultivated with soy power media (gold 10) than other media.
