Analysis of Useful Components for Freeze-Dried Persimmon Flower Powder by Cultivar (품종별 감꽃 동결건조 분말의 유효성분 분석)

  • This study was carried out to analyze useful component in freeze-dried persimmon flower powder made from six cultivais. The cultivais were Dogunjosang, Kojongsi, Kabjubaeknok, Chalang, Weolhasi and SangjuDungsi. Powder of persimmon flower was prepared by milling after freeze drying at $-70^{\circ}C$. Crude lipid was the highest in Dogunjosang (57.26%). Major free sugars of the persimmon flowers were fructose ($95{\sim}310mg%$), glucose ($75{\sim}281mg%$) and sucrose ($7{\sim}28mg%$). Major organic acids were malic acid (225 mg% in Kabjubaeknok (Jun. 4th)) and tartaric acid (189 mg% in Kabjubaeknok (Jun. 4th)). Predominant free amino acids were hydroxy-L-proline(25.33 mg% in Weolhasi), L-citrulline (58.83 mg% in SangjuDungsi (May 280)) and L-threonine (11.88 mg% in SangjuDungsi (May 280)). Major phenolic compounds in the persimmon flowers were caffeic acid ($1,946{\mu}g/100 g$ in Kabjubaeknok (Jun. 4th)), p-hydioxybenzoic acid($418{\mu}g/100 g$ in SangjuDungsi (May 29th)) and protocatechuic acid($181{\mu}g/100 g$ in Kabjubaeknok(Jun. 1st)). The results suggest that persimmon flowers be potential materials as useful food ingredients.

Purification and Characterization of Anti-Coagulant Activity Fraction from Persimmon Stem (감꼭지로부터 혈액응고저해물질의 정제와 특성)

  • Persimmon has been considered to have therapeutic values for various diseases in Korea. Dried persimmon has been applied to wounded parts for anti-inflammatory and analgesic activities. Anti-coagulant fraction from Persimmon stem was purified through gel filtration, phenyl Sepharose, DEAE-Sephadex and additional gel filtration column chromatographies. Its molecular weight was estimated to be 130,000 ∼ 180,000. By element analysis, its main components were C, H, and O. The anti -coagulant was heat- stable and completely inhibited after periodate oxidation, indicating that it was a complex carbohydrate.

Improved Quality Properties of Low-Fat Meat Patties Containing Sweet Persimmon Powder during Freeze Storage (단감분말을 함유한 저지방 돈육 미트패티의 냉동 저장 중 품질 변화)

  • Pork patties were made containing hot air dried sweet persimmon powder (T1: 3%, T2: 6%) and freezer dried sweet persimmon powder (T3: 3%, T4: 6%). The control (C: no addition) and each treatment were stored for 40 days at $-18^{\circ}C$. The pH value decreased (p<0.05) in all products over 30 days of storage but slightly increased thereafter. There was no significant difference in WHC between the control and treatment groups. Cooking loss and meat color (CIE L, a, b) increased significantly (p<0.05) as storage increased. The cooking loss of meat patties containing sweet persimmon powder were significantly (p<0.05) higher than the control. The L value of the control increased significantly (p<0.05) relative to the treatment groups, however the a and b values were slightly higher in meat patties containing sweet persimmon powder. In all products, the reduction ratio of diameter increased (p<0.05) with storage time. With regard to microorganisms, all samples were in good condition, containing below 4.20 log CFU/g based on total plate counts through 40 days, though total plate counts and coliform plate counts of the control were lower (p<0.05) than T3 and T4. The VBN values of T4 was significantly higher than those of other products at 15, 30, and 40 days of storage. The TBARS values of meat patties containing sweet persimmon powder were significantly (p<0.05) higher than those of the conlIol. Sensory panels determined that meat patties containing sweet persimmon powder had a higher (p>0.05) preference score for overall acceptability.

Terrestrial Insect Fauna of Persimmon Plantation in Sangju Dried Persimmon Agricultural Area, National Important Agricultural Heritage System (국가중요농어업유산 상주 곶감농업지역 감재배지의 육상곤충상)

  • This study was conducted to build basic terrestrial insect data for the management of the persimmon plantations in the Sangju dried persimmon agricultural area. The survey identified terrestrial insect species were 7 orders, 77 families, and 1,925 individuals of 177 species. And the number of species that appeared in each village was in the order of Seoman II Village in Naeseo Township > Seoman I Village in Naeseo Township > Soeun Village in Oenam Township. Hemiptera and Coleoptera predominated throughout the site due to the characteristics of the cultivated land. The special species were 13 Korean endemic species, 2 vulnerable (VU) species, 22 least concern (LC) species, 42 not-evaluated (NE) species on the national red list, and 2 species of ecosystem disturbance wildlife. A result of the cluster analysis identified the Ectmetopterus micantulusas the dominant species and Ceutorhynchus albosuturalisas the subdominant species. The species diversity (H') was 1.1636-1.6022, evenness (J') was 0.6748-0.7611, and dominance (D) was in the range of 0.2389-0.3252.

Shelf-Life Extension of Rice Cake by the Addition of Persimmon Leaf Tea Powder

  • Antimicrobial activity of persimmon leaf tea methanol extracts on Klebsiella pneumoniae and Staphylococcus aureus was examined through paper disk diffusion bioassay. K. pneumoniae and S. aureus showed 87.64 and 99.35% growth inhibitions by addition of steamed tea methanol extracts (10 mg/ml), respectively. The number of microorganisms in rice cakes was significantly reduced when leaf tea powder was added during production of rice cakes. Addition of 1% steamed leaf teas to rice cakes decreased the number of microorganisms by over 50%, and over 70% reduction was observed when final 2% (dried weight w/w) steamed leaf tea was added, whereas no significant effect was observed over 2%. These results indicate that different microorganisms were detected from persimmon leaf and rice cake, and persimmon leaf can inhibit normal microbial growth in rice cake.

Effect of Dietary Dried Persimmon By-product on Broiler Performance and Fatty Acid Contents in Chicken Meat (곶감 부산물의 급여가 육계의 생산성 및 계육의 지방산 조성에 미치는 영향)

  • This experiment was conducted to compare the influences of dietary dried persimmon by-product(DPB) on performance, blood cholesterol and fatty acid composition in broiler chicks. Diets contained 21.5 and $19\%$ CP for the starting and finishing period, respectively. The ME was 3,100kcal/kg in diets for both starter and finisher diets. One hundred sixty chicks were assigned to 4 treatments with 4 replicates at different levels of dried persimmon by-product. Treatments were consisted of 0(control), 1(T1), 3(T2) and $5\%$ (T3) DPB. Body weight gain was higher in treatment groups fed the starter diet but was the lowest in T3 for finishing period. Feed efficiency was not significantly different. In proximate composition, crude fat of chicken meat were increased in diets by addition of DPB than control, but moisture and crude ash was no significantly different. The total cholesterol, HDL, and triglyceride of treatment groups was higher than control. The LDL of control was higher than treatment groups. In fatty acid composition, oleic acid contents of treatment groups were higher than control, whereas stearic, linoleic acid contents lower in meat composition than control. In conclusion, dietary supplementation of DPB at $3\%$ level tended to improve growth performance of broiler chicks.

Quality Characteristics of Bread Prepared with the Addition of Persimmon Peel Powder (감피 첨가 식빵의 품질 특성)

  • The quality characteristics of bread prepared with the addition of dried persimmon peel powder(PPP) were investigated. Visco-elastic characteristics of dough and texture of bread added PPP was examined by rapid visco-analyzer and texture analyzer. The maximum viscosity of the dough with PPP was lower than that of control at 90$\^{C}$. Final viscosity after cooling to 50$\^{C}$, viscosity of control increased to 134 B.U., but that of the dough with PPP showed 13∼37 B.U. As more PPP was added, gluten formation and mixing time dough were longer. Adhesiveness, springness, cohesiveness and chewiness gradually increased as PPP content increased, while the hardness decreased. Lightness value decreased but redness and yellowness values increased with the addition of PPP, especially, the bread made by 15% PPP treatment showed dark brown color. In sensory evaluation of bread, score of color decreased significantly as more PPP was added but overall acceptability was not significant different(p<0.05) between control and 5% PPP treatment. It is considered that the addition of 5% was appropriate for bread making with PPP.

Effect of Pruning on the Yield and Fruit Quality of 'Godongsi' Persimmon (전정처리가 감나무 '고동시'의 수확량과 과실품질에 미치는 영향)

  • This study aimed to obtain basic data on high-quality fruit production and efficient cultivation of persimmon cultivar "Godongsi". In the second year of pruning, the number of fruits per tree according to the number of fruit-bearing mother shoots (300, 400, 500, and 700 [control] treatments) was 676.3, 786.0, 866.7, and 1238.7, respectively. Persimmon cultivar "Godongsi" had a decrease in number of fruits per tree and increase in fruit weight as the pruning intensity increased. The average fruit weight in the 300 treatment group was 212.2 g, which was 1.5 times heavier than that in the control. For a high-quality dried persimmon processing, the rate of grade L fruits (170 g<x≤200 g) and over according to the number of fruit-bearing mother shoots was 86.9%, 48.6%, 33.5%, and 8.1%, respectively. The fruit grade of the pruned treatment group was significantly higher than that of the control. Based on the selling price of dried persimmon, the production amount was significantly higher in the 300 treatment than that in the control. When there were many fruits per tree, there was a decrease in quality and increase in cost of harvesting and processing. In conclusion, pruning is essential to increase the fruit quality (fruit weight and grade) of persimmon cultivar "Godongsi". Moreover, the suitable number of fruit-bearing mother shoots was 300.

Studies on Valuable Components and Processing of Persimmon Flesh and Peel (감과육 및 껍질의 유용성분 및 가공이용에 관한 연구)

  • This study was conducted to derive consumption of persimmon by the expansion of utilization of the persimmon flesh and peel. The valuable components were investigated in persimmon flesh and peel. Crude protein and fat contents in persimmon peel were higher than flesh but soluble sugar was more higher in flesh (with 71.3%) than peel (with 54.2%). Major free sugar in persimmon peel were glucose and fructose, the composition was similar to flesh. Major total amino acids in persimmon peel were glutamic acid, proline, methionine and aspartic acid. Proline, arginine, valine and alanine were relatively high in free amino acid. Oleic acid, linoleic acid and palmitic acid were the major fatty acid in persimmon peel, and the content of unsaturated fatty acid was more higher than flesh. Sugar cookies were processed using persimmon flesh and peel, when these powder were mixed with $5{\sim}10%$ to raw materials, the preference score was increased. Steamed rice cakes with persimmon were processed using persimmon flesh and peel, when sliced-dried persimmon was mixed to $10{\sim}20%$, the preference was increased, but persimmon peel was not. The quality of gruel which processed using persimmon flesh powder improved when mixed with flesh powder of 3%, rice powder, glutinous rice powder and skimmed milk, but persimmon peel was not suitable for gruel processing.

Changes in the Antioxidant Potential of Persimmon Peel Extracts Prepared by Different Extraction Methods (고종시 감껍질의 추출조건에 따른 항산화 활성)

  • Background: Astringent persimmon (Diospyros kaki Thunb. cv. Kojongsi) peels are by-products of dried persimmons. This study aimed to evaluate the antioxidant activities of Kojongsi persimmon peel (KPP) extracts prepared by 15 different extraction methods: 5 heating durations (0.5 - 2.5 h) at 3 heating temperatures (50, 70, and $90^{\circ}C$). Methods and Results: An increase in heating temperature increased the antioxidant effect of KPP extracts. Those prepared by heating at 1 h had the highest total phenol content, regardless of the heating temperature. In addition, the 2,2-diphenyl-1-picrylhydrazyl (DPPH) radical scavenging activity and cell-protective effects against $H_2O_2-induced$ oxidative stress were dependent on the total phenol contents of the extract. However, the KPP-induced increased in catalase expression was dependent on heating temperature and duration. Conclusions: These results suggest that extraction by heating at $90^{\circ}C$ for 1 h may enhance KPP's antioxidant effects, which mainly involve non-enzymatic antioxidant systems.
