포장재 및 포장방법이 저장곶감의 품질에 미치는 영향 (Effect of Packaging Materials and Methods on the Storage Quality of Dried Persimmon)

  • 곶감을 장기유통 하기 위해서는 포장재와 포장방법을 달리해서 저장기간에 다른 품질평가를 한 결과는 다음과 같다. 폴리에칠렌 필름 시험구는 저장 $1{\sim}3$개월만에 부패되었으나 나일론 적층 시험구는 가스 치환 포장 후 상온저장시 1.5개월, 저온저장시 약 5개월 후에도 맛과 조직이 좋았다. 알루미늄 포일 적층 시험구는 상온저장시 5개월, 가스충진 저장시 8개월, 저장 후에도 품질이 좋았다. 따라서 곶감의 적정 저장조건은 상대습도 75%, 수분함량 37% 내외에서 저온저장해야 한다고 판단되었다.

Taiwanese consumers' preference for dried persimmons related to the Korean wave

  • This study did an empirical analysis using consumer survey data to determine whether Taiwanese consumers' preference for the Korean Wave affects their preference for Korean dried persimmons. There were 158 effective respondents used for the analysis, and the effects of the Korean Wave was estimated using ordered logit regression. The main results of this study were as follows. First, females more preferred Korean dried persimmons compared to men. Second, it was found that the housewife variable had a statistically significant positive effect at a significance level of 1% indicating that the degree of preference for Korean dried persimmons was higher compared to other occupations. Third, when the main place for purchasing dried persimmons was a department store or a large discount store, the analysis result showed a positive effect at a significance level of 1%. Finally, the Korean wave effect was found to have a statistically significant positive influence at a 1% significance level. In particular, it is worth noting that as the Taiwanese consumers' preference for the Korean Wave increased, the preference for Korean dried persimmons increased, which could be useful information for companies wishing to export Korean dried persimmon products to Taiwan. As a promotional plan for revitalizing Korean dried persimmons in Taiwan, conducting promotional events in conjunction with the Korean Wave, such as K-pop contests, and promoting persimmons that reflect Korean traditional culture should be considered.

곶감의 지방산 및 아미노산 조성과 저장성 (The Compositions of Fatty Acid and Amino Acid and Storage Property in Dried Persimmons)

  • This study was performed to determine chemical compositions of dried persimmons stored with plastic film at low temperature and the effect of film packaging on dried persimmons during storage. The moisture contents of dried persimmons were 30 to 36% and alcohol contents were 264 to 318 mg/100g and acetaldehyde contents were 25 to 40mg/100g. Total lipid contents of dried persimmon were 626 to 869mg/100g and oleic, palmitic, linolenic, and palmitoleic acid were major fatty acids in total lipids. Major amino acids were glutamic acid, arginine, cystine and aspartic acid. From the result of storage experiment, non-packed group was that hardness was high as decreased in moisture content. In case of film packed groups stored at 5$^{\circ}C$, self life was longer than non-packed and packed groups stored at room temperature. But, it need to develop available packing material and storage method.

수종한국상용식품중(數種韓國常用食品中)의 Tryptophan 및 Available lysine 함량(含量)에 대(對)하여 (A Study on the Contents of Tryptophan and Available Lysine in Korean Foods)

  • In order to observe the contents of some essential amino acids in Korean foods, total and free tryptophan, and available lysine in fifty kinds of Korean foods were analyzed by the sfectrophotometry. The results obtained are summarized as follows : 1) The tryptophan contents per 100g of soybean, wet green laver and skim milk were over 250 mg, and the contents Per g nitrogen in ginger, dried persimmon and chestnut were over 150 mg. 2) The free tryptophan contents per 100 g of soybean, small red bean, dried persimmon, ginseng stem were over 100 mg, ana the contents per g nitrogen in dried persimmon was over 150 mg. 3) The available lysine contents Per 100g of soybean, wet green laver and skim milk, fish(auchovy), dried yeast, casein and silkworm pupa were over 1000 mg, and the contents per g nitrogen in potato, perilla(wild sesame), red pepper, sausage and skim milk were over 300mg. 4) The contents of tryptophan and available lysine in soybean, green laver and skim milk were higher than in other samples. 5) In general, the contents of tryptophan and available lysine were abundant in seaweeds.

감과피와 대추로부터 분리한 식이섬유의 포도당, 담즙산 , 카드뮴 투과 억제에 관한 in vitro 연구 (Retarding Effect of Dietary Fiber Isolated from Persimmon Peels and Juubes on in vitro Glucose, Bile Acid, and Cadmium Transport)

  • Retarding effects of the dietary fibers from persimmon peels (PTDF ; total dietary fibers, PIDF ; insoluble dietary fibers, PSDF ; soluble dietary fibers) and dried jujubes (JTDF ; total dietary fibers, JIDF ; insoluble dietary fibers, JSDF ; soluble dietary fibers) on glucose, bile acid and cadmium transport were evaluated by in vitro dialysis sack method. These effects were compared with those of commerical citrus pectin, CM-cellulose (CMC) and $\alpha$-cellulose. Yields of PTDF, PIDF and PSDF on wet weight basis were 14.04% , 11.61%, 1.76%, respectively, and those from dried jujubes were 14.80%, 9.98% and 2.80%, respectively. The amount of soluble fibers in JTDF was higher than PTDF. Soluble fibers had the retarding effects on glucose transport but insoluble fibers did not have. CM-cellulose showed the greatest retarding effect, which was followed by citrus pectin and JSDF. Among the soluble fibers, PSDF had the lowest retardig effect. Retarding effect of TDF was dependent upon the amount of SDF in TDF. Regarding bile acid dialysis , insoluble dietary fibers as well as soluble dietary fibers showed the retarding effects, among which JSDF had the greatest retarding effects, among which JSDF had the greatest retarding effect, followed by citrus pectin. Among the extracted fibers, dietary fibers from dried jujubes were more effective than these from persimmon peels, and SDF seemed to show higher retarding effects than IDF and TDF. On cadmium transport retardation , all dietary fibers except $\alpha$-cellulose had the retarding effects and PSDF showed the greatest effect which was followed by PIDF and CMC, The extracted fibers showed higher retarding effect on Cd transport than glucose and bile acid transport, and dietary fibers from persimmon peels showed higher retarding effects than those from dried jujubes.

떫은 감의 품종별 수확시기에 따른 물리화학적 특성 (Physicochemical Characteristic of Astringent Persimmons according to Cultivar and Harvest time)

  • 품종별 수확시기에 따른 떫은 감의 품질변화를 분석하고 이를 이용한 곶감제조를 통해 고품질의 곶감 생산을 위한 곶감의 식품학적 특성을 분석 하였다. 고품질의 곶감 생산을 위해서는 품종별 떫은 감의 적절한 선택과 적정숙도를 갖춘 과육을 선별하는 것이 매우 중요하다. 미숙과의 경우 수분함량, 색도값이 적숙과 및 완숙과에 비해 낮은 값을 보인 반면 경도는 높게 나타났다. 고품질의 곶감의 생산하기 위해서는 최소한 적황색 혹은 녹황색인 적숙과 이상의 떫은 감을 사용해야 한다.

열풍건조에 의한 건조기간 동안 '반시'와 '고동시'의 품질 특성 변화 (Changes in Quality Characteristics of Dried 'Bansi' and 'Godongsi' Persimmon During Drying Period by Hot-air Drying)

  • 본 연구는 열풍건조 시 건조기간 동안 '반시'와 '고동시' 건조감의 품질특성을 구명하고자 수행되었다. 두 품종을 과실 무게에 따라 각각 4등급(2L, L, M, S)으로 구분하여 건조기간별 중량감소율, 경도, 가용성고형물함량 및 수분함량을 측정하였고, 각 항목간의 상관분석을 실시하였다. 중량감소율의 경우, 품종 간 차이는 없었으며 건조기간에 따라 유의하게 증가하였고(p<0.05), 경도는 품종에 관계없이 후숙과정 중 감소하였다가 이후 건조과정에서 유의하게 증가하는 추세를 보였다. 가용성고형물함량은 두 품종 모두 초기 19.6%에서 건조 12일에 55.3%까지 증가하는 것으로 나타났으며, 수분함량 또한 품종에 관계없이 건조기간에 따라 유의하게 감소하였다. 품종에 관계없이 반건시(수분함량 기준 45~55%) 생산을 위한 건조기간은 4일, 건시(수분함량 기준 25~35%) 생산을 위한 건조기간은 8~10일로 나타났다. 본 연구결과는 열풍건조방법을 이용한 품종별 고품질의 건조감 생산에 기초자료로 활용될 수 있을 것으로 사료된다.

약선(藥膳)의 과학적 원리를 통한 상주곶감 소비촉진 방안 연구 (A Study on Promoting the Consumption of Sangju-Dried Persimmons as Functional Food through Scientific Inquiry)

  • Sangju, a city in the North Gyeongsang Province, is well known as "Three Whites", representing its three main agricultural products: rice, silkworm, and dried persimmons. Therefore, development of a variety of dishes or products that can promote the consumption of dried persimmons is an urgent requirement for this region. This study was designed to provide fundamental information for revitalizing community-based specialized agriculture through scientific inquiry into medicinal foods and to develop a medicinal food menu based on the results of previous research and pre-survey. The pre-survey results and incompatibility revealed that palatability influenced people's decision to consume dried persimmons far more than pharmacological functionality. Therefore, palatability played an important part in the development of dried persimmon puddings with acceptable texture. These dishes are in high demand as they suit the tastes of variety of consumers. The inclusion of various additives lowered the sugar content in the developed foods and made the products alkalescent (pH > 7), thereby improving functionality. Unique color and flavor additives were also important criteria that determined the selection attributes of the developed medicinal foods. In addition, the additives had a positive effect on the fragrance and texture of the foods. In conclusion, the results suggested that use of additives provides significant advantages in promoting the consumption of Sangju-dried persimmons by improving both functionality and palatability.

곶감으로부터의 오염미생물 분리 및 동정 (Isolation and Identification of Contaminated Organisms on Dried Persimmon)

  • 상주 지역 곶감의 제조 및 저장 중의 품질열화를 방지하기 위한 기초 연구로서 상주 곶감으로부터 오염균을 분리하여 동정을 실시하였다. 7종의 배지를 사용하여 곶감으로부터 오염균을 분리한 결과 배지 종류별로 오염균수가 $5.18{\times}10^2{\sim}2.31{\times}10^4$ CFU/g으로 나타났다. 곰팡이에 의해 오염된 곶감의 경우 배지 종류에 따라 오염균수가 $1.17{\times}10^6{\sim}1.68{\times}10^7$ CFU/g으로 나타났다. 곶감의 주요 오염균을 조사하기 위해 우점종으로 존재하는 균수를 확인한 결과, 분리된 3종의 곰팡이 중에서 푸른 곰팡이 K2-1이 가장 많은 비율을 차지하여 곶감 오염에 있어 주요 원인균으로 판단하였다. 다음으로 크림색 효모와 연보라색 효모가 많이 상재하고 있는 것으로 나타났다. 분리한 15종의 균주 중 주요 오염 원인균으로 판단되는 푸른 곰팡이 K2-1에 대한 균주 동정을 실시한 결과Penicillium sp.으로 동정되었으며, 곰팡이 K-1과 K-3는 각각 Caldosporium sp.와 Aspergillus sp.으로 동정되었다.
