Poultry Industry Trends and Consumer Analysis in Korea: Native Korean Chicken and Processed Chicken

  • Poultry is one of the three major meats in Korea and is a representative source of protein. The annual per capita consumption of chicken has been showing steady growth trends, with an increase of approximately 89% in 2018 compared to that of 2005. In this study, we investigated the domestic chicken production and consumption, and conducted an overall study on the domestic chicken industry. By using consumer panel data, we analyzed the characteristics of consumers buying chicken. Specifically, poultry was categorized into two types: traditional raw chicken and processed chicken, which emphasizes convenience. The purchase of raw chickens has generally been on the decline. From these, however, the proportion of native Korean chicken and chicken cuts is on the rise. Processed chicken, on the other hand, continues to grow, especially online. After examining the consumption characteristics of consumers who buy chicken, it was found that the purchase share increased with increasing age of native Korean chickens, whereas the purchase share increased with decreasing age of processed chicken. Based on these results, we confirmed that it is necessary to establish differentiated marketing and promotion strategies for each consumer target for the growth of chicken market.

Growth performance of Korean crossbred domestic chickens for 12 weeks after post hatching

  • This study was conducted to investigate the growth performance between six different Korean crossbred native chickens. A total of 312 one-day-old male chickens from the same paternal line with six different maternal lines were allocated into six groups (1A, 2A, 3A, 4A, 5A, and 6A) to give four replicate cages (13 birds per cage). Corn soybean meal based diets were provided as a starter (0 - 5 weeks: 20% crude protein [CP] and 3,050 kcal/kg metabolizable energy [ME]), grower (5 - 8 weeks: 18% CP, 3 and 100 kcal/kg ME) and finisher (8 - 12 weeks: 17% CP and 3,150 kcal/kg ME) diet. Chickens were able to access their respective feed and water ad libitum. In week 2, 2A had a lower body weight (p < 0.05) than that of the other groups. In contrast, in weeks 4 and 8, 2A had a higher body weight (p < 0.05). Similarly, in week 6, 2A had a higher body weight (p = 0.76) than that of the others. However, no difference (p > 0.05) was observed in the body weight after week 10. Meanwhile, 2A had a lower feed conversion ratio (FCR) than that of the other groups (p < 0.05) and a higher average daily feed intake (ADFI; p < 0.05) compared to the other groups in week 6. In conclusion, crossbred 2A had a lower growth performance in week 2; however, in weeks 4 and 6, 2A had a higher growth performance than that of the other groups. Based on this conclusion, we can use those results as a basis for further study.

Effects of feed intake and water hardness on fluralaner pharmacokinetics in layer chickens

  • Background: Fluralaner is a novel drug belonging to the isoxazoline class that acts on external parasites of domestic animals. It is used systemically via drinking water, especially against red poultry mite in layer chickens. Fluralaner is frequently used in layers infected with D. gallinae. However, no study to date has investigated the effects of feed intake and water hardness. Objectives: This study aimed to investigate the effects of variable water hardness and feed intake on the pharmacokinetic profile of fluralaner. Methods: Layer chickens were divided into four groups (n = 8): fed + purified water (Group 1), feed restricted + purified water (Group 2), feed restricted + hard water (Group 3), and feed restricted + soft water (Group 4). After administering a single dose of the drug with drinking water, the blood samples were collected for 21 days. Fluralaner concentrations in plasma samples were determined by liquid chromatography/tandem mass spectrometry. The maximum plasma concentration (Cmax), time to reach maximum plasma concentration (tmax), area under the concentration-time curve values (AUC0-21d), half-life (t1/2), and other pharmacokinetic parameters were calculated. Results: Although the highest maximum plasma concentration (Cmax) was determined in Group 1 (fed + purified water), no statistically significant difference was found in the Cmax, tmax, t1/2, MRT0-inf_obs, Vz/Fobs, and Cl/F_obs parameters between the experimental groups. Conclusions: It was concluded that the feed intake or water hardness did not change the pharmacokinetic profile of fluralaner in layer chickens. Therefore, fluralaner could be used before or after feeding with the varying water hardness in poultry industry.

Comparison of Stress Response in Diallel Crossed Korean Domestic Chicken Breeds (토종 종계를 이용한 이면 교배조합 계통 간 스트레스 반응정도 비교 분석)

  • To establish a new synthetic Korean meat chicken breed, we tested $5{\times}5$ diallel cross mating experiment with domestic chicken breeds. Comparing stress responses among diallel crossed chicken breeds, we analyzed telomere length, DNA damage and expressions of heat shock protein genes (HSPs) as the markers of the stress response. The telomere length was measured by quantitative fluorescence in situ hybridization on the nuclei of lymphocytes. The expression levels of HSP-70, $HSP-90{\alpha}$ and $HSP-90{\beta}$ genes were analyzed by quantitative real-time polymerase chain reaction in lymphocytes. The DNA damage rate of lymphocytes was quantified by the comet assay known as the single cell gel electrophoresis. In results, there were significant differences in the values of the stress markers such as telomere length, HSPs and DNA damage rate, and also were significant differences in viabilities and body weights among the $5{\times}5$ diallel crossed chicken breeds. The telomere shortening rate, expression values of HSPs and DNA damage rate were significant low in W and Y crossed chickens compare to the others, but GG pure breed showed the highest values in the 25 crossed chickens. Estimating correlation coefficient, the survival rate positively correlated to telomere length, but negatively correlated to the expression levels of HSP-70, $HSP-90{\alpha}$, $HSP-90{\beta}$ genes and to the value of % DNA in tail as DNA damage rate. The expression levels of HSP-70, $HSP-90{\alpha}$ and $HSP-90{\beta}$ genes of dead chickens had significantly higher than those of survival chickens. According to the results on the stress marker analysis, it would be considered that the crossed breeds had more stress resistant than the pure breeds, and the crossed chickens with a light strain such as W or Y were relatively resistant to stress, but the crossed chickens with a heavy strain such as G, H, F were susceptible to stress.

Studies on the Marketing of Broilers (육계의 유통에 대한 조사연구)

  • This studies were carried out to obtain the information on the establishment of marketing of broilers. The data for these studies were collected from 16 whole sale traders, 25 retail stores, 12 supermarkets and 3 direct-sales stall located at the suburbs of Seoul, Daejon, Gwangju and Busan. 1. Chickens were generally sold and named for a Spring chicken(0.6-0.9kg), a Boiled chicken of ginseng (1.0-l.3kg), a Semi-bro (1.3-l.7kg) or High-bro(1.8-2.1kg) by their body weight, However, those names were not uniform. 2. Since 47.5% of High-bro chickens, 60.0% of Spring chickens and 16.7% of Semibro chickens were used for domestic use and 66.7% of Semi-bro chickens was taken by butchers, it seemed that most chickens except Highbro and Spring chicken were distributed via butchers. 3. In most cases(75%) when the carcasses were sold a exact measurement was taken, but in some cases(18.8%) eye measurement was still used. 4. For the standardization of carcasses, 37.5% of the answered were for that and 50% of them wanted a gradual standardization and 66.5% of the answered wanted chicks sold by parts.

Survey of Coccidia in Domestic Animals and Poultry (가축(家畜)과 가금(家禽)의 콕시디아 조사(調査))

  • A preliminary survey for classification of coccidia isolated from domestic animals and poultry was broadly conducted by the morphological aspects of the $o{\ddot{o}}cysts$. The number of animals and birds used in this survey were 762 chickens, 30 rabbits, 37 goats, 18 swine, 39 cattle, 8 dogs, 132 ducks, 23 deer and 15 horses. The species classified in each animal and bird were six species in chicken, nine in rabbits, nine in goats, six in swine, six in cattle, one in dogs and negative in ducks, deer and horses. The coccidial species in each animal and bird were as follows: In chicken: Eimeria acervulina, E.maxima, E. mitis, E. necatrix, E. praecox, and E. tenella. In rabbits: Eimeria irresidua, E. magna, E. media, E. neolepolis, E. perforans, E. piriformis and E. stiedae. In goats: Eimeria ahsata, E. arloingi, E. crandalis, E. faurei, E. granulosa, E. intricata, E. ninakohlyakimovae, E. pallida, E. perva. In Swine: Eimeria deblieki, E. perminuta, E. palita, E. scabra, E. scrofae and Isospora suis. In Cattle : Eimeria bovis, E. bukidonensis, E. cylindrica, E ellipsoidalis, E subspherica and E. Zurnii. In dogs: Isospora bigemina.

Characteristics of Salmonella species isolated from domestic poultry and environmental samples in Korea (우리나라의 가금과 환경에서 분리한 Salmonella species의 특성)

  • This study was conducted to investigate the isolation prequency, serotypes, and related epidemiological properties of 341 Salmonella spp from domestic poultry and environmental samples during the period 1993-1995. A total of 1,918 samples was collected during the three years period in nationwide. Most of Salmonella spp were isolated from the intestinal contents of poultry, especially cecal(46.0%) and rectal(35.8%) contents. Among the tested samples, rat(28.5 %) was the most predominant Salmonella reservoirs and followed by duck(24.8%), broiler(18.8%), layer(14.8%) and feed(7.1%), in order. More than twelve Salmonella serovars were identified among the 341 Salmonella isolates. The most prevalent serotypes isolated from non-human sources were S enteritidis (22.3%) and S pullorum (21.9%), S muenchen (13.9%), S typhimurium (12.6%), S gallinarum, S meleagridis, S heidelberg, and S senftenberg were followed, in order. In layer chickens, S pullorum (26.0%) was the most predominant serotype but S muenchen (33.0%) was in broiler chickens, S enteritidis (28.4%) was in ducks, and S typhimurium (60.0%) was in rats, respectively. As a results, S enteritidis was identified as the most prevalent serotype in non-human Salmonella isolates in Korea during the period 1993-1995. A preliminary study on the phage typing of 19 S enteritidis selected from the nationwide scale was shown that S enteritidis phage type(PT) 4 was the most predominant PT, and SEPT 1, SEPT 6a, SEPT 7 and SEPT 7a variant were also found in the same period.

A Study on Antibacterial Activity and Seroprevalence of Ornithobacterium rhinotracheale Isolated from the Domestic Chickens (국내 사육 닭에서 분리된 Ornithobacterium rhinotracheale (OR)균의 약제 감수성 및 항체보유율에 대한 연구)

  • Ornithobacterium rhinotracheale (OR) is a recently described gram-negative rod-shaped bacterium associated with respiratory tract infection in poultry. In order to investigate current occurrence of OR infection and to evaluate antibiotic susceptibility, the prevalence of OR antibody in domestic chickens were examined and the minimal inhibitory concentrations(MICs) of 8 antibiotics for 11 OR isolates was determined. All isolates tested were mostly susceptible to three antibiotics, ampicillin (MICs ranging from 0.38 ${\mu}g$/ml to 2 ${\mu}g$/ml), tetracycline (MICs 0.094~3 ${\mu}g$/ml) and doxycycline (MICs 0.047~4 ${\mu}g$/ml) but resistant to genatmicin. Ciprofloxacin, norfloxacin, enrofloxacin, and ofloxacin gave most isolates inhibition only in case of a higher concentration (MICs ranged in most cases from 3 ${\mu}g$/ml to 48 ${\mu}g$/ml). Out of 188 chicken flocks including broilers, broiler breeders, and layers, seropositive flock to OR were detected in 5 broilers (4%), 17 broiler breeders (50%), and 16 layers (55.2%), using commercial OR enzyme-linked immunosorbent assay(ELISA) kits. It suggested that OR infection was widespreaded in poultry farms in Korea.

Epidemiological Studies of Avian Paramyxovirus Type 4 and 6 in Commercial Chicken Flocks in Korea

  • Avian paramyxovirus (APMV) type 4 and 6 were isolated during an avian influenza (AI) surveillance program of wild birds. This study also conducted experimental infection of wild-bird-origin APMV type 4 and 6 in specific pathogen free (SPF) chickens to study pathogenicity and transmission within domestic flocks. In addition, serological prevalence data of APMV type 4 and 6 in domestic fowls was conducted with chicken sera collected from 2007 to 2009 in order to understand infection status. The results of the animal experiment showed that APMV type 4 and 6 had the ability to infect chickens with sero-conversion and to transmit the virus from infected birds to contacted birds, but showed low pathogenicity. Serological tests revealed that APMV type 4 was widespread in the poultry industry, especially in layer flocks, but the positive rate for APMV type 6 was very low. This study concluded that wild bird-origin APMV type 4 and 6 could infect the chickens by inter-species transmission and the seroprevalence of APMV type 4 was quite high in Korean poultry. However, since almost all the chicken flocks had a high level of antibody titer against APMV type 1, there was possibility of cross reaction between APMV type 1 and 4, which made the interpretations more complicated. In order to understand infection status in the natural environment, additional study is necessary regarding the seroprevalence of APMV type 4 and 6 in the wild bird population.

Screening of Bacteriocin-producing Bacillus Strains Isolated from Domestic Animal Feces for Antagonistic Activities against Clostridium perfringens

  • The purpose of this study was to isolate and characterize bacteriocin-producing bacteria against Clostridium perfringens from domestic animals to determine their usefulness as probiotics. The feces of cattle and chicken were used as sources to isolate bacteriocin-producing bacteria using the spot-on-lawn method. In total, 900 bacterial stains were isolated from domestic animal feces, and 19 strains were finally selected after determining the inhibitory activity against the pathogenic indicator C. perfringens KCTC 3269. Eighteen strains of Bacillus subtilis and one strain of Brevibacillus parabrevis were identified by 16s rRNA sequencing. Most of the bacterial strains isolated were resistant to 0.5% bile salts and remained viable after 2 h at pH 3.0. Additionally, some B. subtilis strains showed strong inhibitory activity against Listeria monocytogenes. We isolated and screened B. subtilis strains CB 153 and CB 189 from cattle and B. subtilis MSC 156 and B. parabrevis MSC 164 from chickens using probiotic selection criteria such as inhibition activity against C. perfringens and tolerance to acid and bile salts. The isolated bacteriocin-producing bacteria and/or bacteriocin have the potential to be used as probiotics in the livestock industry.
