Food adaptation and nutrient intake of female immigrants into Korea through marriage (결혼이주여성의 식생활 적응 및 영양소 섭취실태)

  • The purpose of this study was to investigate Korean food adaption, eating behavior and dietary intakes of married female immigrants by age, number of residence years in Korea and level of income. The survey included 67 female marriage immigrants attending the Korean language class at the multicultural family support center within the northern part of Kyonggi province from October 2010 to July 2011. General characteristics, Korean dietary life adaptation, and eating behavior were collected and dietary intakes were assessed using 24-hour recall. The home countries with regards to all subjects were Vietnam (40.3%), China (23.9%), Japan (11.9%), Philippines (7.0%), and Mongolia (3.0%). Total energy intake was 1432.5kcal and there were significant differences in nutritional intake concerning vitamin B1 and vitamin B2 by age (p < 0.05). More than 50% of subjects did not meet estimated average requirements for calcium (56.7%), zinc (52.2%), vitamin C (55.2%), and folic acid (76.1%). Food adaptation scores were significantly correlated with general characteristics (age, residence year, drinking alcohol and acquisition of nationality), total scores of eating behavior, and nutritional intake (energy, protein, fat, fiber, calcium, phosphorus, sodium, potassium, niacin, vitamin E, and zinc). These results might suggest that the better their Korean food adaptation, the more desirable their eating behavior and nutritional status.

From Corridors to Intercity Networks : The Role of the Emerging Urban System in Building Regional Networks in Northeast Asia

  • This paper is concerned with analyzing the role of Northeast Asia intercity networks in Northeast Asia in creating regional networks. For the purpose of this paper, we have followed Choe's (1996) definition of Northeast Asia which includes the Russian Fat East, the Northeast region of China, South Korea, North Korea and Japan. The central hypothesis of the paper is that the geopolitical conditions of Northeast Asia compared for example with Southeast Asia, favor bilateral rather than multilateral linkages between nation states. In these circumstances, it is our hypothesis that cities will play an important role in developing a "local image" of regio-nalism and intercity networks. In order to analyze this hypothesis, the paper is divided into three parts. Part A analyzes the emerging urban system of the Northeast Asia region using Choe's concept of the BESETO corridor and updating his data from the late 1980s to the mid 1990s just prior to the financial crisis. This analysis is further supported by the analysis of economic and transportation linkages within the urban system of the region with some discussion of emerging urban nodes. Part B looks at the specific case studies of the region including the Bohai Sea region, the Japan Sea and case studies of Sapporo, the Japan Sea and case studies of Sapporo, Pusan and Shandong province cities. Part C summarizes this preceding analysis and that the development of regionalism and servicing urban nodes is move likely to emerge from a myriad of linkages developed between the region's cities than from a supra-regional role of nation states. This finding has important implications for regional policy formation suggesting that there should be considerate national support for international linkages between cities.en cities.

Inhibition of Adipocyte Differentiation by Methanol Extract of Zanthoxylumschinifolium Leaves Through Inhibition of Reactive Oxygen Species Generationand Inactivation of Phosphatidylinositide 3-kinase Signaling Pathway (ROS 생성의 저해와 PI3K/Akt 신호계의 불활성화를 통한 산초나무 잎의 메탄올 추출물의 지방세포 분화 억제)

  • Zanthoxylum schinifolium Siebold et Zuccarini, which belongs to the Rutaceae family, has been widely used as a spice and medicinal herb in East Asian countries, such as Korea, China, and Japan. In this study, we investigated the anti-obesity mechanism of the methanol extract from the leaves of Z. schinifolium (MEZS). Using the 3T3-L1 pre-adipocyte model, our findings showed that MEZS significantly inhibited adipocyte differentiation and fat formation induced by adipocyte differentiation inducer in a dose-dependent manner. MEZS' anti-obesity effects could be attributed to their ability to block the expression of adipogenic transcription factors, including peroxisome proliferator-activated receptor γ, CCAAT/enhancer binding protein α (C/EBPα), and C/EBPβ, and adipocyte-specific genes, such as adipocyte-specific lipid binding protein, leptin, and fatty acid synthase. MEZS also attenuated the activation of the phosphatidylinositide 3-kinase (PI3K)/Akt pathway, and when the PI3K/Akt pathway was artificially blocked, the inhibitory effect of MEZS on adipocyte differentiation and fat formation was further enhanced. Furthermore, MEZS blocked the generation of reactive oxygen species in differentiated adipocytes, which was associated with the activation of the nuclear factor (erythroid-derived 2)-like 2 (Nrf2) and induction of Nrf2 downstream proteins, such as heme oxygenase 1 and NAD(P)H quinone oxidoreductase 1. Although analysis of the physiologically active substances contained in MEZS and validation in animal models are required, the results of this study suggest that the extract of Z. schinifolium leaves has excellent potential as a food or pharmaceutical material with anti-obesity effects.

Physicochemical Properties of Buckwheat Starches from Different Areas (산지가 다른 메밀전분의 이화학적 특성)

  • Physicochemical properties of crystalline-structured buckwheat starches cultivated and harvested in Taiwan, China, Korea, and USA were compared. X-ray diffraction pattern showed that all starches were type A as are most natural starches. Moisture contents of starches were 6.30-9.58%, and crude protein contents of Taiwanese and Chinese buckwheats were higher than those of Korean and American ones, whereas Korean and Chinese buckwheats had higher fat contents. Blue-value of Chinese buckwheat was highest at 0.39 and that of Korean buckwheat was lowest at 0.32. Amylose content of American buckwheat was highest at 27.6 and that of Korean buckwheat was lowest. Highest water-binding capacity was shown in Taiwanese buckwheat and lowest in American one. Higher amylase contents in Chinese and American buckwheats reduced expansion and solubility. Highest values of viscosity measured by RVA, breakdown indicating process stability, and setback closely connected to retrogradation of American buckwheat resulted in relatively hard gel.

A Comparative of Satisfaction for Body and Perceived Body Types in Accordance with Clothes Preference between Korean and Chinese Female College Students (한국과 중국 여대생의 의복 선호도에 따른 인지 체형 및 신체 만족도 비교 연구)

  • The purpose of the study is to figure out the difference in preference of clothes between Korean and Chinese female college students, who share similar ethnic traits despite having different sociocultural backgrounds and environment, and see the differences in their body image and body satisfaction. The questionnaire-based survey for the study was conducted for about a month and a total of 449 copies of the questionnaire were collected for the final research. For the research method, we examined the differences in clothes preference and fit between Korean and Chinese students, and then the corresponding differences in body image and body satisfaction. The result showed significant differences in the categories of skirt length, pants length, upper garment fit, and lower garment fit. Korean students preferred slim fit clothes, while their counterparts preferred natural fits. A comparison of body image between Korean and Chinese female students showed that the Korean students had lower body satisfaction levels, and viewed themselves as fat even though they were slimmer than their counterparts. The conclusion of the analysis was that compared to Korean students the Chinese students pursued a more comfortable and casual style, preferring unique and diverse designs instead of simply following a fashion trend.

Comparative Assessments of Dietary Intake of Korean-Chinese and Koreans (중국 연변 조선족 성인과 한국 구리지역 성인의 영양소 및 식품섭취 비교 평가)

  • This study was conducted to assess dietary intake and quality obtained by 24-hour recall method between Korean-Chinese in Yanbian, China(Korean-Chinese) and Koreans in Kuri, Korea(Koreans). The subjects consisted of 730 Korean-Chinese and 696 Koreans. Mean daily energy intake of Korean-Chinese was 1,788kcal and that of Korean was 1,844kcal. Proportions of energy intake from carbohydrate, fat, and protein were 62.6: 16.9: 14.2 for Korean-Chinese and 65.4: 16.3: 14.4 for Koreans. Nutrient intake levels of Koreans were higher than those of Korean-chinese in most nutrients. Calcium and vitamin $B_2$ intakes as percent of Korean RDA were less than 60% in Korean-Chinese. Koreans consumed calcium and vitamin A in the level less than 80% of Korean RDA. Iron intake level of Korean females was less than 75% of Korean RDA. Korean-Chinese consumed 90.4% of food from plant origin, and Koreans consumed 82.5% of food from plant origin. Mean dietary diversity score(DDS) of Korean-Chinese, $3.00{\pm}0.39$, was significantly lower than that of Koreans, $3.73{\pm}0.76(p<0.05)$. Mean dietary variety score(DVS) of Korean-Chinese, 13.6, was significantly lower than that of Koreans, 20.1(p<0.001). According to these results, some adults in the both Korean-Chinese and Koreans did not consume enough nutrients, especially calcium and vitamin $B_2$ intake for Korean-Chinese and calcium and vitamin A intake for Koreans. Dietary qualities of Korean-Chinese subjects and Korean females were not adequate. In the future, further research to promote dietary quality of Koreans including Korean-Chinese must consider the results of this study.

Anti-hyperlipidemic Effect of Insamsansa-eum in Mice

  • Hypolipidemic effect of Insamsansa-eum (ISE, Ren-Shen-Shan-Zah-Yin in Chinese) consisted of Red ginseng (RG; the steamed root of Panax ginseng C.A. Meyer) and Crataegii fructus (CF, the fruit of Crataegus pinnatifida BGE) is used frequently in China and Korea as a herbal medicine to treat arteriosclerosis, was investigated. Treatment of ISE significantly reduced blood triglyceride (TG) and total cholesterol (TC) levels in Triton WR-1339-induced hyperlipidemic mice and serum TG levels in corn oil-induced hypertriglyceridemic mice. ISE significantly lowered the high blood TG and TC levels as well as body and epididymal mass weights in hyperlipidemic mice induced by long-term feeding of a high-fat diet and increased blood HDL cholesterol level. ISE and its ingredients, RG and CF, inhibited pancreatic lipase and HMG-CoA reductase activities. Of its ingredients, RG reduced the blood TC level and HMG-CoA reductase activity more than CF. CF reduced blood TG level and pancreatic lipase activity more than RG. These finding suggest that the antihyperlipidemic effect of ISE may be due to synergistic inhibition of HMG-CoA reductase and pancreatic lipase by RG and CF, and that ISE may be effective hypolipidemic agents.

Treatment of the Soft Tissue Defect in Extremities by Forearm Free Falp (전완부 유리피판술을 이용한 연부조직 결손의 치료)

  • The radial forearm flap was first designed at the Ba-Ba Chung Hospital of People's Republic of China in 1978. The flap consists of the skin of the volar surface of the forearm, the subcutaneous fat, the underlying fascia, and the intramuscular fascia which includes the radial vessels. It is very useful flap in soft tissue coverage of skin defects of the upper and lower extremities. The authors have reported 13 cases of forearm free flap treated in the Korea University Hospital from January 1991 to Jun 1995 with a review of literature. The results were as follows. 1. We had good results in soft tissue coverage for all patients 2. The average size of flaps was $54cm^2$ and the average ischemic time of flaps was 74minutes. 3. The postoprative complication was occurred in three of 13 cases, two of three cases were arterial thrombosis treated with thrombectomy in postoperative 2 days, and one case was venous thrombosis resulted in superficial necrosis of the flap treated with STSG. 4. Forearm free flap with sensory innervation is a good donor site for reconstruction of weight-bearing areas of heel and sole. 5 The forearm free flap is suitable for soft tissue coverage of the upper and lower extremities, and can be used by skillful microsurgeon with high success rate.

The Geographical Discrimination of Korean and Chinese Soybeans (Glycine max(L.) merrill) Using NMR Relaxation Methods (NMR relaxation 기법을 이용한 한국산과 중국산 대두의 원산지 판별)

  • To discriminate the geographical origin (Korea vs. China) of soybean (Glycine max(L.) merrill) samples (Korean samples n=25, Chinese samples n=24), proximate composition of soybeans and relaxation times were analyzed using low field NMR. Composition results indicate that there are no significant differences in moisture, fat, or ash contents between soybeans. The crude protein content of Korean soybeans, however, was higher than that of Chinese soybeans (p<0.05). The relaxation times of T1-IR (p<0.0001), T1-SR (p<0.0001), and T2-SE (p<0.0086) in Korean soybeans were longer than those in Chinese soybeans. The geographical origin of soybeans could be identified using a canonical discriminant analysis using two relaxation times (T1-IR and T1-SR) with 96% accuracy. Furthermore, in this study, a canonical discriminant analysis using four relaxation times (T1-IR, T1-SR, T2-SE, and T2-CPMG) could discriminate the geographical origin with 100% accuracy. It was possible to identify the geographical origin of Korean and Chinese soybeans using relaxation times from 10 MHz NMR.

Evaluation of quality characteristics of Korean and Chinese buckwheats (품종에 따른 국내산 및 중국산 메밀의 품질특성)

  • This study investigated the quality characteristics (chemical composition, amino acid content, lipid content, and rutin content) of common and tartary buckwheats cultivated from Korea and China. The moisture, crude protein, crude fat, crude ash, and carbohydrate contents of various common and tartary buckwheats were 8.78~13.37%, 11.00~12.11%, 2.87~3.18%, 1.80~2.58%, and 70.2~73.8%, respectively. The major amino acids in Korean and Chinese buckwheats were aspartic acid (1,105.1~1,403.5 mg/100 g), glutamine (2,250.9~2,996.1 mg/100 g), and arginine (932.5~1,388.6 mg/100 g). The major minerals were K (423.7~569.4 mg/100 g), Mg (181.8~255.9 mg/100 g), and P (328.6~555.0 mg/100 g). Palmitic acid (14.2~16.1%) was the major saturated fatty acid, and oleic (37.0~40.8%) and linoleic (31.7~38.6%) acids were the major unsaturated fatty acids. Tartary buckwheats (261.0~265.0 mg/g) had significantly higher rutin contents than that of common buckwheats (4.39~5.68 mg/g). These results suggested that common and tartary buckwheats cultivated in Korea and China contain naturally occurringnutrients in an abundance.
