중국 연변 조선족 집합주택의 취사 및 식사공간에 관한 연구 (The Study on the Space for Cooking and Dinning of Multi-family Housing at Yanji City in China.)

  • Recently, the space organization of Korean-Chinese houses is different from that of other territories. The characteristics of eating and dinning space for Korean-Chinese Multi-family Housing are as follows ; ⅰ) The most obvious change in Korean-Chinese urban housing style was seen in kitchen space, which can be classify three types such as traditional type, improved type, and LDK type on the bases of heating and cooking method. ⅱ) Special feature of Korean-Chinese housing in Yanji city was that kitchen fulfilled important functions such as heating, cooking, dinning, sleeping, bathing and washing. Since then, each function was separated and functions of kitchen were cut down after all. iii) The arrangement of kitchen space have changeed according to the change of heating fuel, heating system, equipment, relatcd policy, etx. Multi-function kitchen discovered only in Yanji had lasted until 1980's by equipping heating floor system, which is suitable for sit-down living style. In 1990's, this kitchen style was prohibited legally, and the balcony area of kitchen widened due to the abolition of outdoor storehouse for foodstuff.

Eating Ethnic: "Culinary Tourism" and "Food Pornography" in Kitchen Chinese

  • According to Wenying Xu, Asian American literature abounds in culinary metaphors and references (8); subsequently, a growing number of critics have begun to recognize that food "feeds into the literary rendering of Asian American subjectivity [and] provides a language through which to imagine Asian alterity in the American imagination" (Mannur 13). Ann Mah's Kitchen Chinese: A Novel about Food, Family, and Finding Yourself (2010) is yet another text within which to investigate how food "operates as one of the key cultural signs that structure people's identities" (Xu 2). Even as Kitchen Chinese insists on underscoring that Chinese food, as much as the voyage to her "motherland" China, is critical to protagonist Isabelle's quest to gain a better understanding of herself, we are able to observe how Isabelle exploits Chinese culture and its foodways as "food pornography" in order to align herself with mainstream America. Needless to say, the novels' relegation of Chinese food as "food porn" is problematic in that it encourages readers to participate in the exoticization of Asia and its culture, and the reduction of its people as the other. Ultimately, this essay aims to consider how the consumption and rejection of food becomes a critical means by which the Asian American subject fashions her identity.

사용자 관찰을 통한 부엌 사용 행태 연구 - 중국 상해 소형아파트를 중심으로 - (A Study on Kitchen Use Behaviors through User Observation - Focused on Small-sized Apartments in Shanghai, China -)

  • As a neighboring country belonged to the same cultural sphere with the Northeast Asia, China is recently emerging as a center of the world's economy. The social transformations caused by the rapid economic growth are bringing changes in the Chinese housing culture and thus, it is considered that the identification of a user's need concerning a new housing space and social and cultural understanding on China are necessary. Accordingly, this research intended to conduct the basic research on the Chinese housing space design by observing the small apartment users in Shanghai area in terms of not only the tangible element of the residential space type but also the intangible elements such as lifestyle, values, behaviors, etc. The research range was limited to the kitchen area at the center of a house as a place where the exchanges among the family members are most frequently occur, and the research was carried out in the following methods. First, the effective user research method for the analysis of the Chinese small apartment kitchen users was studied through the literature investigation. Second, the 6 families of a research target were selected focused on the small apartments in Shanghai, China and the user research was performed using three methods of User observation, Video ethnography, and Contextual inquiry. Third, the research results were analyzed focused on the flow of human traffic in the kitchen area and user's behaviors. What were identified as a result take account of the human traffic movements in the kitchen areas around the sink-counter-cook top, cooking behaviors and meal areas outside of the kitchen. Through this, the need for the effective organization of the sink-counter-cook top, arrangement of meal area, and placement of storage by section for the kitchen space of China were drawn based on the understanding of the cooking process, and it was identified that such results require comprehensive understanding of Chinese housing culture.

중국(中國) 길림성(吉林省) 수전촌(水田村)의 조선족(朝鮮族) 주거(住居)와 한족(漢族) 주거(住居)의 비교(比較) (A Comparative Study on the Architetural Characteristics of Traditional Korean-Chinese and Chinese Dwellings of Sujoenchon Village in Jilin Province of Northeast China)

  • This paper, based on the filed survey conducted from August 14 to 21, 2000, examines the architectural characteristics of traditional dwellings of Sujeonchon(수전촌, 水田村) village. Sujeonchon village is located on the northen slope of Changbaishan Mt., Andohyun(안도현, 安圖縣) of jilin Province(吉林省), a province in the northeastern region of China. The village was established between late 1940's and early 1950's by the Korean-Chinese. Later on, some of the Korean-Chinese residents moved out of the village and presently, the residents are composed of both the Korean-Chinese and the Chinese consisting about fifty-fifty. Since the cultural background and the living custom are different from each other ethnic group, that is, the Korean-Chinese and the Chinese, their dwellings reveal some differences between them. Through the study, the architectural characteristics and distinctions of the Korean-Chinese and Chinese dwellings are found and summarized as follows: 1.The way of building layout is different between them: the Chinese mainly follows the north-south direction of building layout, while the Korean-Chinese considers the surrounding environmental condition. 2.The floor level of kitchen is different between them: that of the Chinese house is same as the outdoor earth level, while that of the Korean-Chinese is lower than the outdoor level. 3.The way of providing the kitchen space is different between them: the kitchen of the Chinese house is consist of one separate room, while that of the Korean-Chinese is open to the living area. 4.The way of heating system is different between them: the Chinese house has kang only at the sleeping area, while the Korean-Chinese install whole under-floor heating of gudeul in the living area. 5.The attitude to the way of building is different between them: the Chinese are easily adapt to the new building materials and construction method, while the Korean-Chinese are showing strong attachment to the traditional way of building. 6.The houses of the Chinese and the Korean-Chinese have their own traditional ornaments and talismans on and in the building.

호텔 중식 주방 한.중 조리 종사원의 갈등 요인 분석에 관한 연구 (A Study on Analysis of Conflicting Factors between Kitchen Staffs of Korean and Chinese in Chinese Restaurant of Hotel)

  • The aim of this study was to analyze conflicting factors between Korean and Chinese Kitchen staff within the Chinese restaurants if hotels, and formulate a plan for resolving problems. A closed-end questionnaire was used for survey, which was conducted between 30 April 2005 and 4 June 2005. The survey was conducted among Koran and Chinese (China/Taiwan) cooking staff at Chinese restaurants within 5 star hotels located in Seoul, Korea. 231 questionnaires were distributed to the staff members, and the data collected and analyzed Form the results, Chinese staffs that have more cooking experience were found to be in higher positions and receive higher salaries. In addition, compared to Korean staff, the Chinese staff had fewer problems with conflicts from personnel adminstration, personnel adminstration, personal/psychological areas, benefits/rewards and relationship with their outlet manager. Conversely, Korean staff experience more disagreements in each conflict factor area than Chinese staff, implying there is a divergence between Korean and Chinese staff.

현대 중국 식문화와 주방수납공간의 관계성에 대한 연구 (The Study on the Relationship between Chinese Food Culture and Kitchen Storage Space)

  • 최근에 중국의 경제적, 문화적 변화 속도는 빠르고 생활양식도 많이 바뀌었다. 따라서 중국인의 생활은 인간 근본적인 식(食), 의(衣), 주(住)에 대한 요구가 높아졌다. 이에 각각 기업들은 한계를 넘어 더 넓은 영토와 풍부한 인구, 자원으로 시장 성장의 잠재력이 높은 중국시장으로의 진출이 주목되고 있다. 한국은 20세기 60년대 이후 경제성장을 통하여 근대화에 접근하는 동시에 수많은 문제점도 같이 생겼다. 그 중 하나는 인구의 도시집중 현상이다. 이 현상으로 이야기되는 주택부족의 문제는 특히 심각하여 사회적 문제가 되어 있는 상황이다. 이러한 현실에서는 주거공간의 축소화는 필연적일 수 밖에 없으며 이 상황에 따라 주거공간의 효율적인 활용이 요구되고 있음은 당연한 것이다. 특히, 한정된 가족 공동 생활공간에서의 합리적이고 효율적으로 공간을 활용하는 것은 더욱 의미가 크다. 한국과 달리 중국 주방공간은 거의 폐쇄되고 그 한정된 공간에서 다양한 활동을 진행해야 하는 것은 더 심각하다. 사람들이 생활에 대한 요구가 높아지고 식생활을 즐기면서 더 많은 물건으로 주방공간을 채우고 있다. 이 상황에 따라 주방 공간을 추가해야하는 상황이지만 불합리적이고 획일적인 주방가구의 배치 및 아파트의 자투리를 활용한 주방계획으로 주방공간의 사용효율성이 떨어지고 거주자의 불만이 높아지고 있다. 따라서 본 연구는 중국식 주방가구디자인을 위한 기초연구로 중국 보편적인 중소형아파트의 식생활공간에 수납되어 있는 물품의 가짓수, 수납위치와 빈도를 조사·분석하여 중국 식문화에 나타나는 식행위(食行爲)과 중소형아파트의 주방 수납공간 특성을 찾아내서 그 사이의 관계성을 제시하고자 한다. 향후 본 연구는 합리적·효율인 수납방식을 제안할 수 있도록 기초자료가 되기를 바란다.

중국 요녕성 조선족 도시단독주택의 공간구성에 관한 연구 (A Study on the space organization of Korean-Chinese single family housing at the urban area in Liaoning Province, China)

  • Recently, the space organization of Korean-Chinese houses is different from that of other territories. The vast land of China, coming from different hometown in Korean peninsula, and the different hometown in Korean peninsula, and the different procedure of settlement seem to make the different space organization of Chinese-Korean single family housing at the urban area in Liaoning Province.The characteristics of the Korean-Chinese space organization of single family housing at the urban area in Liaoning Province are as follows;i)Three types of space organization are central kitchen type, central corridors types, and central living room type. ii)The central kitchen type is mainly in old urban housing, after 1980's, the central corridor type appears in single family housing, and central living room type appears 1990's.iii) It seems that the main reason to change the space organization are fuel, system of heating, influence of Korea housing. Especially, Korean-Chinese like central living room type that is suitable for sit down living style. This central living room type supposes to be used as popular space organization in urban housing.

대형 외식업소 조리종사자 위생인지도와 수행도 및 고객 위생만족도 (Foodservice Employees' Awareness and Performance in Sanitation and Customers' Satisfaction with Sanitation at Large-Sized Restaurants)

  • The purpose of this study was to investigate the foodservice employees' awareness and performance in sanitation and customers' satisfaction with sanitation in large sized restaurants in Korea. Sanitation inspections were carried out in 200 large Korean, Western, Chinese, and Japanese style restaurants, and in buffet-style restaurants in Daegu and Gyeongbuk province. Foodservice employees' awareness of sanitation and customers' satisfaction with sanitation were investigated by interviewing 317 foodservice employees and 205 customers. Results of the inspection of restaurants showed low performance in food handling, employees' hygiene (hygienic) practices, and in cleaning food processing equipment. Scores of the foodservice employees' awareness in Chinese style restaurants were significantly lower than scores of workers in western restaurants. Foodservice employees had low awareness of sanitation procedures used for food storage and cleaning of equipment in Korean, Chinese, and Japanese style restaurants. Foodservice employees had low awareness of equipment cleaning, inspection and food distribution in western style restaurants and of equipment cleaning and food handling in buffet-style restaurants. Foodservice employees at all restaurants had the lowest performance in terms of HACCP. This shows that HACCP application and recording have not yet been properly carried out at restaurants in Korea. Foodservice employees had low performance scores in food handling, vegetable disinfection and disinfection after hand washing. Research on customers' satisfaction with sanitation revealed a low rating of kitchens and foodservice employees at all restaurants. Customers had low satisfaction with servers and kitchen environments in Korean style restaurants with food, tableware, utensils and servers in western style restaurants; with food and kitchen environments in Chinese style restaurants with servers, tableware, and utensils in Japanese style restaurants and with kitchen environments and servers in buffet-style restaurants. Therefore, cleanliness of kitchen facilities and equipment, and hygienic food handling procedures by workers in restaurants are urgently needed.

중·한·일 세 나라의 주거민속 연구 -조왕(竈王)- (Comparison of House Folkore in China, Korea and Japan)

  • This research on the house folklore in China, Korea, and Japan is focusing on a kitchen God that is common in these three countries. This god originated in China and has subsequently influenced Korea and Japan. Today, all three countries use the same name of this kitchen god which is called Youngwang(竈王) as its name has been spelled in Chinese. In China, this kitchen god has been believed in two different ways. The Han people have developed their belief in Youngwang while another creed has been originated from other ethnic groups. Because of the particular house style with upper stories of ethnic groups in the southern and southeast areas of China, a kitchen fireplace is centered in the house. Han people in China also worship painted depictions of kitchen gods. And the ethnic groups believe it has three stone legs for a fire box. These differing beliefs has bad influenced on Korea and Japan. The kitchen god of Cheju island (off the south Korea coast) is believed to be almost the same as among the ethnic groups in China Interestingly, form of belief in the kitchen god in Okinawa (off the south coast of Japan) is almost identical as in the southern area of China Custom in China. Korea, and Japan regarding the kitchen god symbolized family values healing, initiating a new daughter-in-law to reveging the kitchen god, etc. are all the very similar. A fireplace and its fire are very important and, have many taboo, attached. Existing rich tales of kitchen gods are similar in the three countries. Moreover, people in the three countries, think that the clay or time plaster of the fireplace with bring good luck on New Year's eve. However, Korea kitchen god features one thing that is different from those China and Japan, that is that water symbolizes the kitchen god in Korea. A painted kitchen god as they are popular in China, has influenced only some Buddhist temples in Korea.

한국과 중국 아파트의 평면구성 비교 - 서울과 북경 중심부에 위치한 아파트를 중심으로 - (Comparison of the Apartment Unit Plans in Korea and China - Focus on the Seoul and Beijing centeral Apartment -)

  • Though Korea and China have a lot of things in common, these two countries have developed different housing style. However, after modernization, apartments have become major housing style in both Korea and China. So this research analyzed 240 apartment plans which was build in Seoul and Beijing in 2000s and 2010s to predict the future trends for apartments. The results are as follows: The opening direction of the front door will be outwards as the hallway space of small apartments in China become wider as the living standards is increasing. Because of the floor sitting lifestyle, Koreans end outdoor activities when take off their shoes at the entrance hall and continue for indoor activities, they separate entrance hall from livingroom. However, because Chinese have chair sitting lifestyle, entrance hall and livingroom is not divided. Korean apartment shows a trend which connects livingroom, diningroom and kitchen altogether; however, Chinese apartment shows a trend which separates kitchen from livingroom and diningroom. Bedrooms are showing a trend of distributed layout. Master bedroom are showing a trend which includes separate bathroom or attached room as the size of apartment increases and so on.
