Heat Flow and Cooling Performance of an Electronic Refrigerating Kimchi Jar (전자냉동 김치독의 열유동 및 성능 특성)

  • The electronic refrigerating kimchi jar operates with a low noise because it contains no compressor but it consumes more energy than that of an refrigerator with compressor. In this paper, the heat flow characteristics and cooling performance of an electronic refrigerating kimchi jar are studied by means of experiments. When the storage temperature is kept in a range of $-5.7^{\circ}C$ to $4.1^{\circ}C$. in the case of three ambient temperatures; $12.7^{\circ}C$, $22.3^{\circ}C$ and $32.2^{\circ}C$, the cooling performance of $20{\ell}$ kimchi jar is investigated. The experiments show that the temperature difference that exists between kimchi jar and its ambient provides a measure of the coefficient of performance of kimchi jar. It is also found that ratio of net pumping heat to the heat pumping rate of thermoelectric module is independent of the temperature difference.

Container System Actively Maintaining High CO2 Concentration for Improved Sensory Quality of Kimchi

  • A kimchi container actively controlling $CO_2$ concentration by timely flushing of $CO_2$ gas was structured and tested in its capability and effectiveness because high $CO_2$ concentration enhances the sensory flavor of the product. The inlet and outlet valves of $CO_2$ gas were programmed to open and close allowing synchronous vent/$CO_2$ flush according to the requirements of its dissolution in the contained kimchi. During the chilled storage, the headspace of container could be maintained at desired high $CO_2$ concentration providing the preferred kimchi in sensory quality compared to control of the conventional container. However, there was no significant difference between the high $CO_2$ container and control (container simply closed with air) in kimchi quality attributes of pH, titratable acidity, total viable bacterial count, Lactobacillus sp. count and Leuconostoc sp. count. The flow rate and time interval of $CO_2$ flushing need to be adjusted considering the kimchi amount, headspace volume and ripening time. The designed system has potential to be applied in refrigerator appliances in homes and food service industry.

Storage container-dependent chemical and microbiological characteristics during kimchi storage (저장용기에 따른 김치 저장 중의 화학적, 미생물학적 특성)

  • Different types of storage containers, such as polypropylene (PP), stainless steel (STS), and ceramic were used for kimchi storage at 0℃ in a refrigerator, and the characteristics were compared for 32 days. The pH of kimchi samples in PP and STS containers reached 4.59 and 4.53, respectively at day 16, while a pH of 4.92 could be observed in ceramic containers. This trend persisted until day 32. Titratable acidities of the PP and STS container contents reached 0.83 and 0.82%, respectively, on day 16, while it reached 0.73% in the case of the ceramic container contents. The viable cell counts of lactic acid bacteria in kimchi samples in PP, STS, and ceramic containers fluctuated and finally reached 4.87, 5.44, and 5.35 Log CFU/g, respectively. Weissella koreensis occupied a large portion of the kimchi sample of the ceramic container on day 20 based on the metagenomic analysis. Taken together, ceramic container might be desirable for the storage of kimchi in low temperature refrigerators.

  • In the information society, individual, enterprise and nation must be equipped with environmment and competence with which they can acquire useful information anytime and anywhere to process and utilize it in required form. Therefore, this study intends to investigate how digital TV, refrigerator and computer are laid out in the residential space in terms of life space, analyze the preference of residents an d forecast the preferred functions of the products to be introduced in the future. To build frame for making questionnaire tool of this survey, 3 households of the first constructor among the top-ranked constructors in the first half of 2004 were chose and in-depth interview was made from April 12 to April 17. On the basis of result of preliminary survey obtained by this process, the questionnaire was revised and supplemented. Targeting those living at the apartment house in Seoul and constructors ranked in top-four in the order of construction of the first half of 2004, I selected 3 households for each group in the range of 30$^{\sim}$40 pyung. Twelve cases were surveyed from April 19, 2004 to June 5, 2004. First, TV will continue playing the role of central entertainment mustering family at one place rather than separating them to each room.   • Waste refrigerator is the most large amount of item being recycled and the recycling process is the most complicated in WEEE (Waste Electrical and Electronic Equipment) because refrigerator is biggest product and consists of various parts and materials such as ferrous, non-ferrous, and plastics. Recently, recycling process of waste refrigerator has been being more complex since large capacity 2 door refrigerators and standing Kimchi refrigerators with various material are distributed on custom market. In addition, recycling of valuable resource from waste refrigerator is mandatory by WEEEs recycling legislation; therefore, high efficiency recycling enough for economic and environment-friendly recovery of valuable resource through present technical situation analysis and comparison of recycling technologies of waste refrigerator with advanced country.

Quality Properties of Chonggak Kimchi Fermented at different Combination of Temperature and Time (발효 온도와 시간 조합을 달리한 총각김치의 품질 특성)

  • To determine the conditions of the fermentation and storage for Chonggak kimchi in kimchi refrigerator, prepared Chonggak kimchi took into kimchi refrigerators which were controlled at four different modes of the fermented temperature and time, and fermented and kept for 16 weeks. The pH in Chonggak kimchi fermented at $20^{\circ}C$ for 24 hours/stored at $-1^{\circ}C$ dropped greater than all of kimchi fermented at other combinations, and the changes of pH at any combinations were not greater than those in Baechu kimchi, because pH in Chonggak kimchi did not dropped below 4.5. Acidities in Chonggak kimchi were greatly increased at higher temperature. The acidity in Chonggak kimchi during the first week of fermentation was lower than that in Baechu kimchi and then it was rather higher because of the addition of waxy rice paste. In texture, puncture force of Chonggak kimchi was decreased slowly until 8 weeks of fermentation and then did not changed much and the highest values showed in Chonggak kimchi stored directly at $-1^{\circ}C$ without any fermentation. In sensory evaluation, the scores for the carbonated flavor and the sourness were the highest in Chonggak kimchi fermented at $20^{\circ}C$ for 24 hours/stored at $-1^{\circ}C$, but the lowest in Chonggak kimchi stored directly at $-1^{\circ}C$ without any fermentation because of some undesirable flavors. The lowest hardness showed in Chonggak kimchi fermented at highest temperature and the best hardness was in Chonggak kimchi fermented at $5^{\circ}C$ for 3 days or 6 days/stored at $-1^{\circ}C$. The appearance was the best in Chonggak kimchi fermented at $20^{\circ}C$ for 24 hours/stored at $-1^{\circ}C$ and the worst was in Chonggak kimchi stored directly at $-1^{\circ}C$ without any fermentation. The overall acceptability of Chonggak kimchi fermented at $20^{\circ}C$ for 24 hours/stored at $-1^{\circ}C$ was good after 4 weeks of fermentation, but in Chonggak kimchi fermented at $5^{\circ}C$ for 3 days or 6 days/stored at $-1^{\circ}C$ it was good after 6 weeks. Total microbial counts in most of Chonggak kimchi were reached to a maximum number within 7 days, and then decreased similarly at all modes. Leuconostoc spp. and Lactobacillus spp. increased to maximum number of $1.48{\times}10^9\;and\;5.62{\times}10^9$, respectively, in Chonggak kimchi fermented for 7 days. Yeast counts showed a increasing trend not depends on fermenting temperature and they were lower counts than those in Baechu kimchi. Waxy rice paste which added to Chonggak kimchi resulted in increasement of glucose as a carbon source and stimulated to reproduce the microbes in Chonggak kimchi.

Simulation Model for Monitering Food Contaminants during Kimchi Fermentation (김치 숙성 중 생물학적 이물질 혼입 검지 모니터링)

  • A simulation model was developed to monitor food contamination during the ripening process of Kimchi on a factory scale. The cabbages were divided into three groups: control (without salt or red pepper), samples with added salt, and samples with added salt and red pepper. The processed Kimchi was left to ripen in a refrigerator at $4^{\circ}C$ and five frog heads (contaminant) left on the surface of the cabbages in each group. For the control, the contaminant exhibited a long life span of 10 days or more, however, for the samples with salt and samples with salt and red pepper, the contaminant showed a relatively short life span. In particular, for the processed Kimchi that included salt and red pepper, the life-span of the contaminant was dramatically decreased to around 3 days. Therefore, the present results suggest that the proposed simulation trial is suitable for monitoring contamination during Kimchi production. Moreover, since the contaminant could not survive more than 3 days, this suggests that the salt concentration in the Kimchi damaged the permeability of the skin and other tissue membranes.

Changes in Some Physico-Chemical Properties and γ-Aminobutyric Acid Content of Kimchi during Fermentation and Storage

  • In this study, we investigated changes in some physico-chemical and biochemical properties of Kimchi during fermentation and storage. After fermenting Kimchi at $15^{\circ}C$ for 23, 36, 40, 44, and 60 hrs during the first week, we stored it at $-1^{\circ}C$ in a Kimchi refrigerator until the end of 8th week. The pH of samples fermented for 36 hr, 40 hr, 44 hr and 60 hr sharply decreased during the first seven days and then slowly decreased. Acidities of samples fermented for 36 hr, 40 hr and 44 hr sharply increased for the first seven days. According to measured changes of lactic acid bacteria number, samples fermented for 60 hr revealed the largest augmentation in the number of lactobacilli for the first seven days. The $\gamma$-aminobutyric acid (GABA) content of the sample fermented for 40 hr was the most superior, with an early increase and maintenance of GABA content, which maintained a maximum 20 mg per 100 g of Kimchi sample on the seventh, fourteenth, and twenty eighth days. These results suggest that relatively enhanced levels of GABA in Kimchi samples can be produced and maintained by controlling the fermentation and storage processes, as with the 40 hr fermented sample conditions.

Electric Load Signature Analysis for Home Energy Monitoring System

  • This paper focuses on identifying which appliance is currently operating by analyzing electrical load signature for home energy monitoring system. The identification framework is comprised of three steps. Firstly, specific appliance features, or signatures, were chosen, which are DC (Duty Cycle), SO (Slope of On-state), VO (Variance of On-state), and ZC (Zero Crossing) by reviewing observations of appliances from 13 houses for 3 days. Five appliances of electrical rice cooker, kimchi-refrigerator, PC, refrigerator, and TV were chosen for the identification with high penetration rate and total operation-time in Korea. Secondly, K-NN and Naive Bayesian classifiers, which are commonly used in many applications, are employed to estimate from which appliance the signatures are obtained. Lastly, one of candidates is selected as final identification result by majority voting. The proposed identification frame showed identification success rate of 94.23%.

Gastric Cancer Cell Growth Inhibitory Effects of Cabbage Kimchi by Fermentation and Storage Conditions (김치 발효 및 저장조건에 따른 배추김치의 위암세포 성장 억제 효과)

  • In this study, we investigated cancer cell growth inhibitory effects of kimchi extracts obtained from cabbage kimchi. Kimchi extracts (S46h, S47h, S48h) were obtained from the samples fermented at $15^{\circ}C$ for 46 h, 47 h, and 48 h during the first 10 days, which were subsequently stored at $-1.4^{\circ}C$ in kimchi refrigerator (hereinafter DV kimchi extracts). The samples showed a higher anti-proliferative effect against AGS (human, gastric adenocarcinoma) cell lines compared to control kimchi extract (S0h) obtained from sample stored at $-1.4^{\circ}C$ without fermentation. The DV kimchi contained higher levels of ${\gamma}$-aminobutyric acid (GABA) and ornithine compared to the control kimchi extract. Among the DV kimchi extracts, the S46h sample showed a higher anti-proliferative effect against the cancer cell growth and contained higher amount of GABA than the other kimchi samples. These results suggest that the consumption of DV kimchi can be more beneficial, as it is rich in GABA and ornithine. Therefore, it could be helpful in retarding the proliferation of cancer cells compared to the control kimchi.
