  • Canned and bottled orange juices currently sold in Korean market were stored for 24 weeks at 20, 30, 40 and $50^{\circ}C$ and analyzed after opening at 4 week intervals. Activation energy, $Q_{10}$ values and shelf-life at respective temperatures were calculated from the data on various quality indexes. Proposed indexes were lead, tin, iron and vitamin C contents in canned juices and vitamin C content and browning index in bottled juices and $Q_{10}$ values for these parameters were in the range of $1.3{\sim}2.0$. Shelf-life calculated for canned juices at 10, 20 and $30^{\circ}C$ were 10, 6 and 3 months and that in bottled juices, 24, 12 and 6 months, respectively. When the distribution temperature of juices in Korea is assumed to be $15^{\circ}C$ average, the optimum shelf-life was estimated to be 8 months in canned juices and 18 months in bottled juices. In order to ascertain the safety of canned orange juices, efforts are needed to re-examine the recommended distribution period, legal limit for lead and improvement of container materials.

  • The effect of storage temperature and period on the contents of tin, iron, lead and vitamin C, browning index and pH was studied for canned and bottled orange juices currently sold in Korean market, which were stored for 24 weeks at 20, 30, 40 and $50^{\circ}C$ and analyzed at 4 week intervals. The change of metal content in bottled juices was negligible but metal release in canned juices was remarkably affected by storage temperature. Tin content after 16 weeks increased by $2.7{\sim}13.1$ times, iron content after 24 weeks increased by $4.3{\sim}5.2$ times and lead content after 24 weeks increased by $1.1{\sim}2.9$ times. Retention of total ascorbic acid in canned juices after 24 weeks at $30{\sim}50^{\circ}$ decreased to $13{\sim}76%$, while that in bottled juices decreased to $4{\sim}80%$. Browning index in canned juices after 24 weeks below $40^{\circ}C$ increased slightly with serious discoloration at $50^{\circ}C$ while that in bottled juices increased a little rapid. pH change in canned and bottled juices during storage below $40^{\circ}C$ was not observed regardless of container type but a great change of pH was accompanied with swelling of container ends in the case of canned juices after 24 weeks at $50^{\circ}C$.

  • Shelf-life dating of cooked and heat sterilized food was carried out with the use of principal component analysis (PCA). Changes in color, pH, acidity and sensory properties were measured and analyzed during storage at 20, 30 and $40^{\circ}C$. Acceptability of sample was decreased during storage, shelf-life of sample was determined 1.5, 3 and 3 months at 20, 30 and $40^{\circ}C$, respectively. Application of PCA to quality evaluation, principal component (PC) 1 dominated 49.6% of total variation and PC 2 expressed 28.8%. The rate of change of PC 1 to storage time was 1.3 with increasing temperature of $10^{\circ}C$, and close to shelf-life determined by accepability at 20 and $40^{\circ}C$. Therefore, PCA was applicable to evaluate the quality, predict the shelf-life and investigate the quality parameter of food during storage.

  • This study was conducted to determine the effect of soluble polysaccharides and indigestible polysaccharides on the digestibility of casein in vitro and the structure of polysaccharide. The digestibility of casein by trypsin in vitro was reduced to $80{\sim}89%$ and $69{\sim}99%$ by high molecular soluble polysaccharide (HMS-P) and low molecular insoluble polysaccharide (LMI-P) prepared from buckwheat, respectively. The digestibility of casein by chymotrypsin was reduced to $63{\sim}88%$ and$71{\sim}79%$ by HMS-P and LMI-P, respectively. But casein digestibiliy by trypsin and chymotrypsin was slightly reduced by LMS-P. The casein hydrolyzates inhibited by HMS-P gave a main peak in the void volume on Sepadex G-100, but the peak in the total volume was only appeared in case of LMS-P having no inhibito교 effect. It was suggested that the HMS-P was consisted of 4-linked and 4,6-dissubstituted glucose from the structural analysis by GC.

  • This paper was investigated to elucidate the nitrite-scavenging ability of roasted-barley extracts. Roasted-barley extracts exhibited nitrite-scavenging ability. The nitrite-scavenging ability of roasted-barley extracts showed pH-dependent, and did the highest at pH 1.2 and the lowest at pH 6.0. The roasting temperature and time of barley examined influenced the nitrite-scavenging ability of roasted-barley extracts. The water soluble fraction obtained from barley roasted at $230^{\circ}C$ for 90 min showed higher the nitrite-scavenging effect than the others. Ethanol soluble fraction which is further fractionated from water soluble fraction was most effective in nitrite-scavenging.

  • Of the several methods proposed for decreasing toxicity of Paralytic shellfish poison(PSP) from intoxicated shellfish, heat treatment has been most popular, although a large percentage of the incidents of PSP illness have been related to the ingestion of cooked shellfish. The purpose of this study was to determine the kinetics of PSP destruction at various temperatures. The homogenate of intoxicated blue mussel(Mytilus edulis) was heated at temperature ranging from $90\;to\;121^{\circ}C$ and toxicities measured in samples heated for various time intervals. The rate constant(k) per second was $3{\times}10^{-4},\;at\;90^{\circ}C,\;4.98{\times}10^{-4},\;at\;100^{\circ}C,\;7.38{\times}10^{-4},\;at\;116^{\circ}C,\;and\;8.38{\times}10^{-4},\;at\;121^{\circ}C,\;$. By the Arrhenius equation, the decimal reduction time(D-value) was $121min.\;at\;90^{\circ}C,\;82min,\;at\;100^{\circ}C,\;58min.\;at\;116^{\circ}C\;and\;53min.\;at\;121^{\circ}C$. The z-value, activation energy($E_a\;and\;Q_{10}$) was $72^{\circ}C,\;3.9{\times}10^7(J/kg\;mol)$ and 1.39, respectively.

  • A study relating the sugar contents of radishes to the final titratable acidities(TA) after complete fermentation was conducted to get an idea of selecting radish varieties to improve storage stabilities of fermented pickled radish cubes. Thirty six varieties of spring-sowing and thirty four varieties of autumn-sowing radishes were chosen to ferment to measure their final TA in relation to their sugar contents. The sugar contents of spring-sowing radishes were in the range from 2.40 to $3.71^{\circ}\;Brix$ and the final TA ranged from 1.15 to 1.65%. The sugar contents of autumn-sowing radishes were in the range from 4.00 to $5.53^{\circ}\;Brix$ and the final TA ranged from 1.45 to 2.00%. The final TA obtained after complete fermentation were found to be directly proportional to the sugar contents of radishes, showing that TA equals to 0.29x+0.4428, where x is sugar content of radish. From the equation, since a properly aged fermented pickled vegetable is believed to have a TA range from 0.6 to 0.8%, a radish of a sugar content ranging from 0.6 to $1.3^{\circ}\;Brix$ will make fermented pickled radish cubes which will not be overacidified during the prolonged storage period.
