Physicochemical Properties of Rice Affected by Steeping Conditions (수침이 멥쌀의 이화학적 성질에 미치는 영향)

  • The effects of steeping temperature $(7^{\circ},\;15^{\circ},\;20^{\circ}\;and\;30^{\circ}C)$ and steeping time $(2{\sim}14\;hr)$ on the physicochemical properties of milled rice (variety; Chucheongbyeo) were investigated. The pH of the steep water decreased as the steeping time increased, which was more pronounced at higher steeping temperature. The solid loss was about 4.0% during steeping. The contents of protein, fat and ash decreased during steeping, which was greater at elevated temperature. The lightness of rice was slightly increased, and the yellowness was decreased upon steeping. The water-binding capacity of rice was increased during steeping at above $15^{\circ}C$. The slight increase of the swelling power of rice at $80^{\circ}C$ was observed upon steeping. The maximum wavelengh for the rice flour-iodine complex was moved to a higher wavelengh, but X-ray diffraction patterns remained constant regardless the steeping conditions. The pasting properties of rice flour (10%) by amylograph indicated that the peak viscosity increased as the steeping time was increased at all steeping temperatures. The steeping resulted in the greater breakdown and the 1ower setback. The log peak viscosity showed a linear relationship with the steeping time. The activation energy and $Q_{10}$ value for the visciosity increase rate was 2, 320 cal/mole and 1.14, respectively.

Chemical Composition of Blue crabs Preserved in Soy Sauce (간장으로 염지한 꽃게장의 화학적 성분)

  • An interest in traditional foods is growing in an effort to preserve dietary culture in Korea. Blue crab preserved in soy sauce, one of the Korean traditional foods is especially popular in summer and is produced in the Jeollanam-do province, Korea. However, there has been no report on processing of the blue crab. The objective of this research is to investigate changes of nutritional composition in blue crab preserved in soy sauce. Moisture content was a little higher in FBC (Fresh Blue Crab) than in PBC (Preserved Blue Crab) and ash content was greatly higher in PBC than in FBC. Salt content was 1.50% in FBC and 7.89% in PBC. The amount of free sugars in FBC was very low but was increased after preserved using soy sauce, especially of fructose significantly. After preserved, the pH of blue crab was also increased. The contents of most total amino acids in blue crab were decreased after preserved, but free amino acids were increased. Major total amino acids were glutamic acid, arginine and aspartic acid in two samples and major free amino acids were arginine, proline and alanine. Fatty acid content was decreased after preserved and major fatty acids were palmitic acid (16 : 0), oleic acid (18 : l), eicosapentaenoic acid (20 : 5) and docosahexaenoic acid (22 : 6).

Effects of GA3 and Alternating Temperature on Breaking Bud Dormancy of Panax ginseng C. A. Meyer Seedling (인삼 묘삼 휴면 조기타파에 미치는 GA3 및 변온 처리 효과)

  • Background : Considerable time and effort is required to develop new Panax ginseng varieties. Ginseng breeders have been developing techniques to shorten the breeding cycle to resolve this problem. In this study, we investigated the effects of adding $GA_3$ and alternating temperature (AT, $2^{\circ}C{\rightarrow}-2^{\circ}C{\rightarrow}2^{\circ}C$) on breaking bud dormancy in the varieties (Chungsun and Sunun) of ginseng root. Methods and Results : The $GA_3$ soaking treatment and AT were applied to one year old roots, which greatly accelerated the emergence of new buds. In one year old roots, new buds emerged from the 4th day post transplanting and after breaking dormancy with $GA_3$ and AT treatments. The emergence of new buds was completed within two weeks. The rate of bud emergence for Chungsun was 60% - 98% over 15 - 60 days after the AT and $GA_3$ treatments. The emergence rate of Sunun was 46% - 92%. Normal growth of the ginseng seedling was observed in spite of the early breaking of bud dormancy by combined $GA_3$ and AT treatments. Conclusions : $GA_3$ and AT treatments shortened the dormancy period and facilitated the stable emergence of ginseng seedlings. However, some plants suffered deformities and early sprouting owing to the combined $GA_3$ and AT treatments. Early sprouting was free from dormancy after leaf fall from the of aerial part of the plant.

Flowering and Fruits Formation Characteristics in Major Varieties of Panax ginseng (인삼 주요품종의 개화 및 결실 특성)

  • Background: This study aimed to investigate the flowering and fruits formation characteristics of Korean Panax ginseng varieties. The results will provide basic data for ginseng seed production and breeding program. Methods and Results: The characteristics investigated included flowering date, seed setting rate, seed type and seed production. The ginseng variety Chungsun had the earliest emergency and flowering dates, whereas Sunhyang showed late emergence and flowering dates. The emergence date of Chunpoong was not later than that of the other varieties, but the flowering date was delayed. The seed setting rate was 64.6%, 75.8%, 78.5% and 74.4% for three, four, five and six-year-old varieties, respectively. The ratio of double seed (RD) for Sunhyang and Chungsun were higher than those for the others, whereas the RD for Chunpoong was the lowest. Yunpoong and Sunone had many stems per plant and a high seed production rate. Seed production was 21.7, 67.7, 74.4 and 89.0kg/10 a in three, four, five and six-year-old varieties, respectively. Conclusions: The emergence date ranged from April 15 to 25, and the flowering date was from May 10 to the 19 for the new ginseng varieties. The average seed multiplication of the ginseng varieties was about 8.5 and 21.1 times a year for varieties in which, seed-production occurs once a year for over four years and four times over six years, respectively.

Evaluation of changes in random blood glucose and body mass index during and after completion of chemotherapy in children with acute lymphoblastic leukemia

  • Purpose: Improved survival of patients with childhood acute lymphoblastic leukemia (ALL) has drawn attention to the potential for late consequences of previous treatments among survivors, including metabolic syndrome. In this study, we evaluated changes in 3 parameters, namely, random blood glucose, body mass index (BMI), and Z score for BMI (Z-BMI), in children with ALL during chemotherapy and after completion of treatment. Methods: Patients newly diagnosed with ALL from January, 2005 to December, 2008 at Saint Mary's Hospital, The Catholic University of Korea, who completed treatment with chemotherapy only were included (n=107). Random glucose, BMI, and Z-BMI were recorded at 5 intervals: at diagnosis, before maintenance treatment, at completion of maintenance treatment, and 6 and 12 months after completion of maintenance treatment. Similar analyses were conducted on 2 subcohorts based on ALL risk groups. Results: For random glucose, a paired comparison showed significantly lower levels at 12 months post-treatment compared to those at initial diagnosis ($P$ <0.001) and before maintenance ($P$ <0.001). The Z-BMI score was significantly higher before maintenance than at diagnosis ($P$ <0.001), but decreased significantly at the end of treatment ($P$ <0.001) and remained low at 6 months ($P$ <0.001) and 12 months ($P$ <0.001) post-treatment. Similar results were obtained upon analysis of risk group-based subcohorts. Conclusion: For a cohort of ALL patients treated without allogeneic transplantation or cranial irradiation, decrease in random glucose and Z-BMI after completion of chemotherapy does not indicate future glucose intolerance or obesity.

Prediction of the Flight Times of Hydrochara affinis and Sternolophus rufipes in Paddy Fields Based on RCP 8.5 Scenario (RCP 8.5 기후변화 시나리오를 적용한 논 서식 애물땡땡이 (Sternolophus rufipes)와 잔물땡땡이(Hydrochara affinis)의 비행시기 예측)

  • The total area of paddy field was estimated to be 55 % of the cultivated lands in South Korea, which is approximately 1 million hectares. Organisms inhabiting paddy fields if they are sensitive to environmental changes can be environmental indicator of paddy fields. Biological indicators such as phenology and distributional range are evaluated as intuitive and quantitative method to analyze the impact of climate change. This study aims to estimate flight time change of Hydrophilidae species' based on the RCP 8.5 climate change scenario. Unmanned monitoring systems were installed in Haenam, Buan, Dangjin and Cheorwon relative to the latitudinal gradient. In the three regions excepting Cheorwon, it was able to measure the abundance of flying Hydrochara affinis and Sternolophus rufipes. Degree-day for the flight time was determined based either on field measurement values and estimates of 2020s, 2050s and 2080s from KMA climate change scenario data. As a result, it is found that date of both species of initial flight becomes 15 days earlier, that of peak flight becomes 22 days earlier and that of final flight does 27 days earlier in 2080s compared to 2020s. The climate change impact on flight time is greater in coastal area, rural area and valley than inland area, urban area and plan. H. affinis and S. rufipes can be used as climate change indicator species.

Improvement Characteristics of Bio-active Materials Coated Fabric on Rat Muscular Mitochondria

  • This study surveys the improvement characteristics in old-aged muscular mitochondria by bio-active materials coated fabric (BMCF). To observe the effects, the fabric (10 and 30%) was worn to old-aged rat then the oxygen consumption efficiency and copy numbers of mitochondria, and mRNA expression of apoptosis- and mitophagy-related genes were verified. By wearing the BMCF, the oxidative respiration significantly increased when using the 30% materials coated fabric. The mitochondrial DNA copy number significantly decreased and subsequently recovered in a dose-dependent manner. The respiratory control ratio to mitochondrial DNA copy number showed a dose-dependent increment. As times passed, Bax, caspase 9, PGC-$1{\alpha}$ and ${\beta}$-actin increased, and Bcl-2 decreased in a dose-dependent manner. However, the BMCF can be seen to have had no effect on Fas receptor. PINK1 expression did not change considerably and was inclined to decrease in control group, but the expression was down-regulated then subsequently increased with the use of the BMCF in a dose-dependent manner. Caspase 3 increased and subsequently decreased in a dose-dependent manner. These results suggest that the BMCF invigorates mitophagy and improves mitochondrial oxidative respiration in skeletal muscle, and in early stage of apoptosis induced by the BMCF is not related to extrinsic death-receptor mediated but mitochondria-mediated signaling pathway.

Evaluation of the efficiency of the Vac-lock type belly board in Pelvic cancer Radiation Treatment (골반부 방사선치료 시 자체 제작한 Vac-lock type belly board에 대한 유용성 평가)

  • Purpose : At the time of the pelvis cancer radiation treatment using the belly board, set-up error is large because of a prone position. In order to improve the reproducibility, we made Vac-lock type belly board. In this study, we attempt to validate its utility. Materials and Methods : We compared belly board and Vac-lock type belly board through the OBI. OBI was performed three times with entire course of treatment and the setup errors in the direction of X axis, Y axis, Z axis were recorded and calculated the distance from the isocenter. Results : X axis, Y axis, Z axis setup errors with existing belly board were 0.32 cm, 0.41 cm, 0.29 cm. The setup errors with the vac-lock type belly board were 0.12 cm, 0.19 cm, 0.17 cm. Further, errors of 0~0.29 cm were increased from 48% to 83% when using VLT belly board. Error of 0.5 cm or more was reduced from 21% to 2%. Conclusion : Vac-lock type belly board is able to maintain the efficacy of existing and create to match the characteristics of the patient. Therefore We think that vac-lock type belly board is very useful in pelvic cancer patients.

Identification and Determination of Dietary Fibers and Flavonoids in Pulp and Peel of Korean Tangerine (Citrus aurantium var.) (감귤과육 및 과피의 식이섬유와 플라보노이드 검색 및 정량)

  • Potential health promoting effects such as antiallergic, anti-inflammatory, antiviral, anticancer and anticarcinogenic properties have been ascribed to citrus flavonoids. Dietary fibers have also been used as functional food components due to the various beneficial physiological activities. Two kinds of flavonoids, naringin and hesperidin, were identified both in the pulp and in the peel of Korean tangerine. The contents of naringin and hesperidin in the pulp were 2.95 mg/100 g and 0.53 mg/100 g, respectively. However, the contents of naringin and hesperidin in the peel were much higher (10.77 mg/100 g and 38.90 mg/100 g) thanthose of two identified flavonoids in the pulp. The content of soluble dietary fiber (SDF) in the pulp of tangerine was 1.90%, insoluble dietary fiber (IDF) 0.37%, and total dietary fiber (TDF) 2.27% based on wet matter, respectively. The content of SDF was 1.09%, IDF 4.77% and TDF 1.86% in the peel of tangerine. The total pectin content was 1.53% in the pulp and 0.94% in the peel of tangerine. The peel of Korean tangerine, a by product in tangerine processing, would be a good source for the production of naringin, hesperidin and pectin.

Validation of Analytical Method of Marker Compounds in Extract of Pear Pomace as a Functional Health Ingredient (건강기능식품 원료로서 나주 배박 추출물의 지표성분 분석법 벨리데이션)

  • This study was conducted to establish an HPLC analysis method for determination of marker compounds as part of materials standardization for development of health functional food materials from pear pomace. The quantitative determination method of caffeic acid and chlorogenic acid as marker compounds of pear pomace extract (PPE) was optimized by HPLC analysis using a C18 column ($5{\times}250mm$, $5{\mu}m$) with a 0.2% elution gradient of acetic acid and methanol as the mobile phase at a flow rate of 0.8 mL/min and detection wavelength of 330 nm. The HPLC/UV method was applied successfully to the quantification of marker compounds in PPE after validation of the method with linearity, accuracy, and precision. The method showed high linearity of the calibration curve with a coefficient of correlation ($R^2$) of 0.9999, and limit of detection and limit of quantification were $1.14{\mu}g/mL$ (caffeic acid) and $1.61{\mu}g/mL$ (chlorogenic acid) as well as $4.9{\mu}g/mL$ (caffeic acid) and $4.9{\mu}g/mL$ (chlorogenic acid), respectively. Relative standard deviation values from intra- and inter-day precision were less than 3.1% (caffeic acid) and 4.0% (chlorogenic acid), respectively. Recovery rates of caffeic acid and chlorogenic acid at 12.5, 25, and $50{\mu}g/mL$ were 93.66~106.32% and 97.33~105.68%, respectively. An optimized method for extraction of caffeic acid and chlorogenic acid in PPE was established through diverse extraction conditions, and the validation indicated that the method is very useful for evaluation of marker compounds in PPE to develop a health functional food material.
