찌개 HMR (Home Meal Replacement)에 대한 L.A. 지역 미국 소비자들의 태도, 인식 조사 및 기호도 조사 (A Study on the Attitude, Perception, and Preference of Jjigae HMR (Home Meal Replacement) for Americans in L.A. Area)

  • This study was performed to examine attitude, perception, and sensory evaluation of Jjigae HMR (Home Meal Replacement) for Americans in the L.A. area. Attitude and perception of Jjigae were conducted by 128 consumers. The questions were as follows: 1) frequencies and attitude toward soup and stew, 2) experience and frequency of Korean food intake, 3) awareness of Korean Jjigae. A total of 69.5% of American had previous experience with Korean foods. However, the frequencies of Korean food intake were once every few months (27.4%) or once a year (18.9%). The 20.2% of consumers selected Kimchi-jjigae as the best-known Korean Jjigae, and 17.1% of consumers had previous experience with Kimchi-jjigae. However, the 23.7% of consumers did not have experienced with Jjigae. Sensory evaluation was conducted using Sundubu-jjigae and Kimchi jjigae. Overall liking and flavor liking were conducted by Americans using a nine-point scale (1: Dislike extremely - 9: Like extremely). The degree of intensity for sensory attribute was also rated using a nine-point Just-About-Right(JAR) scale (1: not nearly spicy/sour enough, 5: Just-About-Right, 9: too spicy/sour). Purchasing intention was rated using a five-point scale (1: Definitely would not purchase, 5: Definitely would purchase). Overall liking and flavor liking of two jjigae (Sundubu-jjigae & Kimchi-jjigae) had a value higher than five on the nine-point scale. The level of spiciness of Sundubu-jjigae was suitable for consumers whereas spiciness of Kimchi-jjigae was significantly different from the JAR value of five points on the nine-point JAR scale, showing that Kimchi-jjigae was significantly spicier than JAR point. Purchasing intention had a value higher than three on the five-point scale.

Detrimental effects of lipopolysaccharide on the attachment and outgrowth of various trophoblastic spheroids on human endometrial epithelial cells

  • Objective: Lipopolysaccharide (LPS) from Gram-negative bacteria causes poor uterine receptivity by inducing excessive inflammation at the maternal-fetal interface. This study aimed to investigate the detrimental effects of LPS on the attachment and outgrowth of various types of trophoblastic spheroids on endometrial epithelial cells (ECC-1 cells) in an in vitro model of implantation. Methods: Three types of spheroids with JAr, JEG-3, and JAr mixed JEG-3 (JmJ) cells were used to evaluate the effect of LPS on early implantation events. ECC-1 cells were treated with LPS to mimic endometrial infection, and the expression of inflammatory cytokines and adhesion molecules was analyzed by quantitative real-time polymerase chain reaction and western blotting. The attachment rates and outgrowth areas were evaluated in the various trophoblastic spheroids and ECC-1 cells treated with LPS. Results: LPS treatment significantly increased the mRNA expression of inflammatory cytokines (CXCL1, IL-8, and IL-33) and decreased the protein expression of adhesion molecules (ITGβ3 and ITGβ5) in ECC-1 cells. The attachment rates of JAr and JmJ spheroids on ECC-1 cells significantly decreased after treating the ECC-1 cells with 1 and 10 ㎍/mL LPS. In the outgrowth assay, JAr spheroids did not show any outgrowth areas. However, the outgrowth areas of JEG-3 spheroids were similar regardless of LPS treatment. LPS treatment of JmJ spheroids significantly decreased the outgrowth area after 72 hours of coincubation. Conclusion: An in vitro implantation model using novel JmJ spheroids was established, and the inhibitory effects of LPS on ECC-1 endometrial epithelial cells were confirmed in the early implantation process.

담금용기에 따른 한국 전통 간장의 맛 성분 분석 (Analysis of Taste Compounds in Traditional Korean Soy Sauce by Two Different Fermantation Jars)

  • 본 연구에서는 한국 전통 간장의 담금용기를 달리하였을 때와 메주의 농도를 상법보다 높게 하였을 때의 질소성분 함량과 향기성분을 분석하고 향미의 관능검사를 실시한 후 향기성분 패턴과의 통계적 해석을 통해 어떠한 성분이 간장의 관능 특성에 영향을 주는지 알아보았다. 본 연구에서 얻은 결과들을 요약하면 다음과 같다. 1. 간장의 맛에 가장 큰 영향을 미치는 요인으로 평가되고 있는 질소성분의 함량에서, 총질소의 경우는 메주의 농도와 상관없이 유리병이 항아리보다 높았으며 메주의 농도가 높은 경우 많은 양을 함유하는 것으로 나타났다. 그러나 유리병은 항아리보다 적은 양의 amino태 질소와 더 많은 양의 ammonia태 질소를 함유하고 있어 질적인 면에서 떨어지는 것으로 나타났다. 2. 유리아미노산의 함량을 조사한 결과, 총유리미노산의 함량은 150일 이후 최고치를 보였다. 지미와 감미를 내는 glutamic acid, aspartic acid, serine, alanine, Iysine의 함량이 높게 나타났고, 쓴맛에 관여하는 valine, phenylaalanine, leucine, isoleucine의 함량도 높게 나타났다. 3. 휘발성 유기산으로는 acetic acid가 가장 많이 함유되어 있는 것으로 나타났고 항아리가 유리병보다 함량이 높았으며 메주농도 1 : 4는 완만한 증가를 보이나 1.3 : 4는 숙성기간 150일에 급격한 증가를 나타냈다. 고린내의 주요성분으로 알려져 있는 butyric acid는 유리병 1 : 4와 항아리 1.3 : 4가 비슷한 경향을 보였으며 유리병 1.3:4에서는 급격하게 감소하였다. 그러나 모든 군에서 숙성기간이 경과할수록 감소하는 일정한 경향을 보였다. 이 외에 valeric acid와 capric acid가 소량씩 함유되어 있는 것으로 나타났다.차이가 있었으며, 추출방법에 따라서도 향 기성분의 조성비가 다르게 나타났다. 하는 것이 바람직하다고 하였다. 4. 조사대상자의 식습관은 보통수준으로 판정되었으며, 양로원과 같은 복지기관에서 생활하는 노인의 식습관이 가장 좋았고 딸이 식사준비를 할 때 낮았으며(p<.05), 노인의 식성을 고려하여 식사준비를 할 때 높았고 식성이 고려되지 않을 경우 낮았다(p<.001). 스스로 건강하다고 생각하는 남자 노인일수록 식습관 점수가 높았다(p<.001). 5. 아침 식사를 규칙적으로 하는 노인이 77.5%였으며 식사시 식품의 배합을 고려하거나 규칙적으로 녹황색 채소 및 과일을 섭취하는 조사 대상자는 매우 드물었으며 고기·생선·계란 및 콩 등의 단백질 식품, 우유, 과일, 해조류식품이 건강에 유익하다고 알고 있으나 실제 섭취 빈도는 낮았으며, 특히 우유의 섭취가 매우 저조하였다(p<.01). 이상과 같은 결과로 탑골공원에 모여 소일하는 남자노인이 비교적 건강하였고 식습관이 보통 수준이었음을 알 수 있었다. 그러나 노인 혼자 식사할수록 불규칙한 식사를 하였고 식습관이 좋지 않았다. 대체적으로 결식 특히 점심결식 비율이 다소 높았는데 그 이유는 식욕이 없거나 경제적인 여유가 없어서로 나타났다. 이러한 문제점들을 개선하기 위하여 우리 나라에서도 미국의 'Lunch program'과 같은 노인 영양프로그램을 개발하여 식사의 동기유발을 불러일으키고 최소한 하루의 한끼는 저가의 균형잡힌 식사를 할 수 있는 제도를 만들어야 하겠다.은 alanine과 glutamic acid였다. 함량이 많은 총 아미노산의 순은 glutamic acid, aspartic acid, arginine, valine, leucine의 순이었으며, 산초 종자의 glutamic acid의 함량이 2.39%로 매우 높았다. 4개의 시료중에

  • 본 연구에서는 국내 토양에서 분리된 곤충병원성 선충 Steinernema carpocapsae Kor-A1에서 분리된 공생박테리아 X. nematophilus Kor-A1 균주를 이용하여 액체 배양을 통해 생산조건에 따른 균주의 성장과 항균활성의 영향을 검증하고 항균물질의 생산조건 최적화를 검토하고 하였다. Flask 상에서 배양시간에 따른 항균활성을 조사한 결과 growth associated form을 보여 주었으며, 공생박테리아의 성장의 정지기에 최대 활성을 타나내었다. 또한 5L jar fermentor 상에서 최적 배양 조건을 알아보기 위해 교반속도와 DO의 영향에 대한 실험을 수행한 결과 교반속도는 400rpm에서 DO는 50%일 때 X. nematophilus Kor-A1의 균체 성장 및 항균물질 분비에 최적임을 알 수 있었다.

  • 발효기에서의 균사체 생장과 세포외다당류의 생산을 위한 최적 배양조건을 조사하기 위하여 회분식 반응기를 이용하여 연구한 결과 최적 회전속도와 통기량은 각각 200 rpm과 1.5 vvm 었다. 최적 배양 환경하에서 5L발효기(working volume 2 L)에서 배양한 결과 각각 10.21 g/L 와 3.56 g/L의 mycelial growth와 exo- polysaccharide를 얻었다.

  • 국립중앙박물관 보존과학팀에서는 국립지방박물관 지원사업의 일환으로 국립전주박물관에서 의뢰한 소장품 도자기 12점을 보존처리하였다. 이 논문은 처리완료 된 12점의 도자기 중에서 백자장군(전주97)과 분청사기조화어문큰항아리(전주5630)에 대한 것으로 백자장군의 처리과정에서 수집된 정보을 분석하여 제작기법 및 용도를 조사하였으며, 파손범위가 넓은 분청사기조화어문큰항아리의 효과적인 처리과정에 대하여 소개한다.

Assessment of the Quality of Case Reports in the Journal of Acupuncture Research Using the CARE and STRICTA Guidelines

  • The purpose of this study was to assess the quality of the case reports in the Journal of Acupuncture Research (JAR). All case reports were retrieved from November 2017 to June 2020. There were 19 case reports included in this assessment based on the case report (CARE) guidelines and case report and standards for reporting interventions in clinical trials of acupuncture (STRICTA) guidelines. The overall quality of reporting was relatively high (83.08% on Case Report guidelines and 77.78% on Standards for Reporting Interventions in Clinical Trials of Acupuncture guidelines), but several crucial items remained substantially underreported, such as identifying as a case report (keywords), patient information and perspective, clinical findings, diagnostic assessment, and intervention information. In 18 out of 19 included case reports of acupuncture-related interventions, several items remained considerably underreported such as acupuncture regimen variation, depth of needle insertion, response sought, and experience of acupuncturists. In the classification by disease, condition, or syndrome, 13 out of 19 included case reports were for musculoskeletal disorders (68.4%), which is the main clinical medical field of Korean medicine services. The results of this study may help develop more appropriate reporting guidelines for case reports published in JAR.

  • This paper presents about a example of circuit design and characteristics of proposed circuit in the case of adopted the high frequency resonant Inverter of SEPP type using ZVS(Zero-Voltage-Switching) to the Induction heating load. The soft switching technology known as ZVS is used to reduce turn on and off loss at switching. Also, this paper realizes quantitative circuit analysis which has change the equivalent of Induction heating load to the electric circuit. According to the calculated characteristics value, a method of the circuit designs and operation characteristics of the Inverter is proposed. In addition, this paper proves the propriety of theoretical analysis through the experiment. The proposed inverter shows it can be practically used as power source system for induction heating Jar etc.

시판 강정류의 이화학적 특성 및 소비자 기호도에 관한 연구 (Physicochemical Properties and Consumer Acceptability of Commercial Gang-jeong)

  • This study was conducted to examine the physicochemical properties and consumer acceptability of commercial Gang-jeong. The samples used in this study were nine different Gang-jeong as commercial products. To accomplish this research, the physicochemical properties of nine samples, including moisture, crude lipid, sugar contents, acid value, color values, and texture, were measured. In addition, consumer panels evaluated the overall acceptability, appearance, flavor, sweetness, and texture of samples using a 9-point Likert type scale as well as the perceived intensities of sweetness and rancid odor by a 9-point Just-About-Right (JAR) scale. All data were statistically analyzed using One-way ANOVA, Principle Component Analysis, Hierarchical Cluster Analysis, and Pearson's Correlation Analysis. All physicochemical properties were significantly different among the samples (p<0.001). Analyses of consumer acceptability and JAR ratings of the nine samples showed significant differences (p<0.001).

물리, 화학적 처리방법에 의한 염색폐수의 색도제거에 관한 연구 (A Study on the Reduction of Color in Dye Wastewaters by Physico-chemical Processes)

  • This study was performed to obtain optimal conditions for reduction of color in dye wastewaters using coagulation-sedimentation processes with redox reactions. The reduction of color as well as organic matters variation was observed after coagulation-sedimentation processes using FeSO$_4$ $\cdot$ 7H$_2$O and NaOCl. Coagulation-redox reaction was done with the dose of Coagulant and oxidant at various pH values. Redox reaction was done through jar-mixing and aeration. The results of study were as follows: 1. In the coagulation-sedimentation processes using FeSO$_4$ $\cdot$ 7H$_2$O, color reduction was heigher at pH 3. With variance of dosage of FeSO$_4$ $\cdot$ 7H$_2$O, color reduction was higher at 250 mg/l. When coagulation-sedimentation using FeSO$_4$ $\cdot$ 7H$_2$O 250 mg/l was added at pH 3, the reduction of color, COD$_{Mn}$, and COD$_{Cr}$ showed 47.6%, 21.3% and 22.1%, respectively. 2. When NaOCI was added at level of 100 ppm in raw wastewater at pH 3, the reduction of color, COD$_{Mn}$, and COD$_{Cr}$ showed 30.2%, 5.5% and 6.2%, respectively. 3. After coagulation-sedimentation processes by addition of FeSO$_4$ $\cdot$ 7H$_2$O, when NaOCl was added at level of 250 mg/l in supernant, color reduction was 47.8% in aeration and 37.5% in jar-mixing. 4. Color reduction by aeration was higher than that by jar-mixing.
