The physicochemical properties of Korean glutinous rice was compared with those of foreign one in order to investigate their appropriateness as raw materials for making rice-cake. The results are summarized as follows: 1) It was found that the Korean ed more crude protein and less total sugar than the foreign one. Therefore, the Korean variety appears to have a higher value of protein. 2) The Korean glutinous rice appeared more plentiful in crude fat and crude fibre content than those of the foreign one. Judging from this fact, it was found out that the Korean glutinous rice had a lower rate of husking and cleaning. 3) The purity of grain in Japanese glutinous rice was highest with 90.2% and the Kyungki glutinous rice was lowest with 47.4%. 4) While showing a low viscosity, the Honam glutinous rice, strange enough, also showed a low dextrinizing temperature.

Nonvolatile amines in fermented ordinary Korean soysauce were separated and quantitated. 1. Tyramine and histamine were detected as nonvolatile amines. Both of them were increased during the fermentation in the soysauce prepared with 22.0% of salt concentration but histamine only was increased in the soysauce with 28.5% salt concentration. Rapid increase of histamine was observed after 80days of fermentation. 2. Two unidentified spots in paper chromatogram which were positive to Sakaguchi reagents were detected. 3. The amounts of tyramine and histamine in fermented ordinary Korean soysauce were much lower than those in Japanese style soysauce.
The essential oil free needles, which were left after distillation of essential oil from various coniferous needles, were fermented with food waste organics in order to use as compost and roughage. Microorganisms for the fermentation were selected from domestic sources such as swine compost, bark compost, and kimchi, etc, and consisted of aerothermophilic bacteria and actinomycetes. The weight reduction ratio of food waste organics treated with the microorganisms was 90% after 30 days treatment, and the fermentation temperature was kept at approximately $45^{\circ}C$. The compost process was really slow due to chemical compounds derived from needles, and it finally took 60 days for complete compost. When 10% of needle compost was mixed with soil for radish growth, the growth indicators such as leaf length and root weight were increased compared with control, while root weight, root width, and root length were inhibited on the addition of 20% needle compost. The nutrient value and digestibility ratio of various essential oil free needles as roughage for ruminant animals were evaluated. The ratio of crude protein for essential oil free needles from Korean pine(Pinus koraiensis) was 10.02%, which was higher than those of rice straw(5.48%) and corn(9.00%). The digestibility ratios of essential oil free needles from Sawara cypress(Chamaecwaris pislfera), Korean pine(Pinus koraiensis), and Japanese Red Pine(Pinus densiflora) was 53%, 34%, 34%, respectively, indicating that those essential oil free needles were considered as excellent roughage.
Research articles were reviewed to validate the estimated energy requirements (EERs) equations developed by the Institute of Medicine of the National Academies (IOM). These equations are based on total energy expenditure (TEE) measured by the doubly labeled water (DLW) method. We subsequently aimed to provide the basis for the suitability to apply the IOM equations as EER equations for Koreans, and develop relevant equations for EER in the Dietary Reference Intake for Koreans (KDRI). Additionally, besides the EER(IOM) equations, other equations were examined for EER estimation. Research papers demonstrating the validation of the EER(IOM) equations based on TEE(DLW) were searched through PubMed (up to September 2019). Of the 637 potentially relevant articles identified, duplicates and unsuitable titles and abstracts were excluded. Furthermore, papers with irrelevant subject and inappropriate study design were also excluded. Finally, 11 papers were included in the review. Among the reviewed papers, 8 papers validated the application of the EER(IOM) equations for EER based on TEE(DLW). These included 3 studies for children (USA 1, Korea 2), 1 for adolescents (Portugal), 2 for adults (Korean), and 2 for the elderly (Korea, USA). EER(IOM) equations were found to be generally acceptable for determining EER by using the DLW method, except for Korean boys at 9-11 yrs (overestimated) and female athletes at 19-24 yrs (underestimated). Additionally, 5 papers include the validation of other EER equations, beside EER(IOM) for EER based on TEE(DLW). In Japanese dietary reference intake and recommended dietary allowance, EER equations are acceptable for determining EER based on TEE(DLW). The EER(IOM) equations is generally acceptable for determining EER using the DLW method in Koreans as well as several populations, although certain defined groups were found to be unfit for the estimation. Additionally, the concept of healthy body mass index of Koreans and physical activity levels need to be considered, thereby providing the basis for developing relevant equations of EER in KDRI.

The city is developing into a smart city. Smart villages and smart farms are developing in rural areas. Architectural technology needs synergy with smart cities, smart villages, and smart factories (intelligent factories) to help architectural experts understand smart farms and build facilities and equipment. Smart farms require design and construction technology with architectural structure and function. The purpose of this study was to investigate the current status and cases of smart farms in Korea and to investigate cases abroad. The conclusion is as follows. ① Smart farms are developing rapidly. The Korean government is expanding smart farms by utilizing ICT technology and infrastructure. ② 'Smart Farm Innovation Valley', which has been promoted since 2018, is a cutting-edge convergence cluster industrial complex that integrates production, education, and research functions such as start-ups and technological innovation. ③ In domestic cases, smart farms are operated in subway stations, buildings, supermarkets, and restaurants. ④ In the Japanese case, a dome-type smart farm was being operated. It utilized factory wastewater, waste heat, renewable energy, and used new materials. Otemachi Ranch raised livestock and provided a lounge on the 13th floor of the building. ⑤ In the cases of Korea and Japan, the smart farm technology is very similar. As stated earlier, since the food culture and agricultural technology of both countries are similar, we hope to promote the development of smart farms that can reduce concerns about future food by communicating and sharing mutual technologies.

The sanitary status of 264 restaurants was investigated to develop a program of sanitary education at restaurants for improving sanitary levels of restaurant and consumers’ food safety. This investigation was performed through direct interviews on general items and sanitations for employees, facilities, equipments and food treatment. The restaurants are grouped into four different types according to the food served: Korean style food, Japanese style raw fish, roasted ribs, and western style food. It is found that sanitary education for employees are conducted at 66.5% of the total restaurants. The highest percentages are obtained by Korean style food restaurants (83.1%) and the lowest by western style food restaurants (55.6%).Washing facilities for employees are equipped at only 66.8% of the total restaurants. In the personal sanitation, 96.6% of the employees wash their hand after touching a dirty stuff, 77.5% after touching money and 57.1% after using telephone. It is also revealed that during food preparation shoes, overgarments, and caps are worn by 58.5%, 55.5%, and 20.6% of the employees, respectively. 73.5% of the restaurants are equipped with dish storages facilities while only 59.2% of restaurants have sterilizers for dishes. Also, chopping boards are sterilized more than once a week by 74.8% of them and knives everyday by 71.6%, 15.4% of restaurants sterilize their knives only once a week. 56.8% of restaurants check temperatures of the refrigerators and 26.2% of restaurants do not even sterilize the refrigerators. 31.8% of restaurants sterilize the kitchens with sodium hopochlorite after cooking. 93.3% of the restaurants store the raw food and the cooked foods separately. 49.8% of the restaurants refroze thawed food and 19.4% of the restaurants reuse leftovers. The frozen foods are thawed at room temperature by 49.4% of the total restaurants and 66.7% of the roasted rib restaurants.

The recommended meal composition allows the general people to organize meals using the number of intakes of foods from each of six food groups (grains, meat·fish·eggs·beans, vegetables, fruits, milk·dairy products and oils·sugars) to meet Dietary Reference Intakes for Koreans (KDRIs) without calculating complex nutritional values. Through an integrated analysis of data from the 6th to 7th Korean National Health and Nutrition Examination Surveys (2013-2018), representative foods for each food group were selected, and the amounts of representative foods per person were derived based on energy. Based on the EER by age and gender from the KDRIs, a total of 12 kinds of diets were suggested by differentiating meal compositions by age (aged 1-2, 3-5, 6-11, 12-18, 19-64, 65-74 and ≥ 75 years) and gender. The 2020 Food Balance Wheel included the 6th food group of oils and sugars to raise public awareness and avoid confusion in the practical utilization of the model by industries or individuals in reducing the consistent increasing intakes of oils and sugars. To promote the everyday use of the Food Balance Wheel and recommended meal compositions among the general public, the poster of the Food Balance Wheel was created in five languages (Korean, English, Japanese, Vietnamese and Chinese) along with card news. A survey was conducted to provide a basis for categorizing nutritional problems by life cycles and developing customized web-based messages to the public. Based on survey results two types of card news were produced for the general public and youth. Additionally, the educational program was developed through a series of processes, such as prioritization of educational topics, setting educational goals for each stage, creation of a detailed educational system chart and teaching-learning plans for the development of educational materials and media.
Sea temperature in the South Sea of Korea has been increased over the last decades. Seabirds are sensitive to changes in food availability in marine environment. In this study, we investigate the diet of Black-tailed gulls (Larus crassirostris) during the breeding season to identify changes of marine environment and biological response such as breeding performance in the South Sea of Korea. A total of 22 fish species or family (n = 128) from regurgitates by chicks were collected on Hongdo Island in 2002 and 2012. The most important prey item was Japanese anchovies (Engraulis japonicas). Proportion of Anchovy in diet increased in 2012 (70.5%) compared to 10 years ago (27.5%). Some species were newly found in 2012: Spotted chub mackerel (Scomber australasicus), Pacific sand lace (Ammodytes personatus), White ventral goby (Acanthogobius lactipes), Silver-strip round herring, Multicolorfin rainbowfish (Halichoeres poecilopterus), Silverside (Hypoatherina tsurugae), Surfperch (Neoditrema ransonneti) and Spotnape ponyfish (Leiognathus muchalis), but not in 2002. Especially, sub-tropic fish such as Kammal thryssa (Thryssa kammalensis), and Rosefish (Helicolenus hilgendorfi) were frequently observed in the diet of 2012. These results might reflect the increase of sea temperature in the South Sea of Korea.
This study was intended for getting information on the job satisfaction and consciousness of 305 cooks working at deluxe hotels in Busan to improve culinary arts training and an efficient man power control program. The results were as follows. Most of the cooks were males(67.2%) and less than 40 years old(85.6%), 59.5% were cooks, 67.0% were graduated from college and 74.8% earned less than 1.5 million won in a month. 39.5% had not changed their workplace. The male cooks had transferred to some other workplace more than 2 times than female ones. The higher their age, job classification and monthly income were, the more frequently they transferred their workplace. The frequency of job transfer was the most significant factor in the age of $30{\sim}39$. 37.0% of the cooks were unsatisfied with their pay. They preferred the more highly ranked hotels(36.5%) and being independent(26.0%) if transferring workplace. They thought devotion was the most important factor for good cooks. They thought efforts, skills and human relationships were important for developing cooks. They answered pay suitable for their work was an important factor to improve the food enterprise. They thought Japanese and Korean cooking had the best prospect, and qualifications for a good cook were sincerity, efforts, careers and skills.

Gene expressions of cytochrome P4501A (CYP1A), aryl hydrocarbon receptor (AhR) and vitellogenin (Vg) by endocrine disruptors, benzo[${\alpha}$]pyrene (B[a]P) and tributyltin (TBT) were examined in cultured eel hepatocytes which were isolated from eels treated previously with B[a]P (10 mg/kg) or estradiol-$17{\beta}$ (20 mg/kg) in vivo, and the relationship between CYP1A, AhR and Vg genes were studied. When the cultured eel hepatocytes were treated with B[a]P ($10^{-6}-10^{-5}M$) the gene expressions of CYP1A and AhR were enhanced in a concentration-dependent manner. However, when treated with TBT ($10^{-9}-10^{-5}M$) the gene expressions of CYP1A and AhR were suppressed at high concentrations ($10^{-6}-10^{-5}M$), while having no effects at low concentrations ($10^{-9}-10^{-7}M$). Gene expression of Vg was also suppressed by TBT in a concentration-dependent manner in cultured eel hepatocytes which was previously treated in vivo with estradiol-$17{\beta}$.
