광주.전남지역 호텔 일식 레스토랑의 세트 메뉴 분석 (Analysis of Set Menu of Japanese Restaurant in Hotel of Gwangju and Southern Jeonla Province)

  • The research on set menus served at Japanese restaurants at special-rate hotels around Gwangju and Jeonla Province suggests problems and rooms for improvement through examination of the current status of set menus at Japanese Restaurant in hotels of Gwangju and southern Jeonla province, prime cost, and sales volume. Advantageous points of course menus served at Japanese restaurants at hotels are as followings: a variety of courses are available; ingredients can reflect seasonal change; clients are satisfied with food at reasonable cost; and it results in sales increase. Based on such measures, more efforts should be made in order to advance preference and satisfaction with menus, cut back on prime cost, and maximize sales volume.

한일 양국의 식생활관련 가사노동의 수행 실태에 관한 연구 (A comparative Study of the Housework Related to Daily Meals in Korea and Japanese Families)

  • The purpose of this study was to compare the performance mode of housework related to daily meals. The data for 214 Korean couples living in Seoul and 136 Japanese Couples in Tokyo were collected using structured questionnaires and time diaries. The performance mode of housework were analyzed according to the employment status of wives. The results were as follows; Generally Koreans and Japanese wives had similar patterns in the time use of meals preparation and dish washing. In both nations Husbands seldom participated meals preparation, wives did most part of the work. But Japanese husbands of full-time employed wives spent more time on meals preparation than their Korean counterparts did. Korean wives received more help from other family members and paid labor, on the contrary Japanese wives purchased more ready-made goods for food preparation.

  • 구약감자 5개 수집종에 대한 생리 생태적 특성을 요약하면 경장, 경태는 일본 수집종이 가장 컸고 분지수는 국내수집종인 제천종이 각각 3.1개 3.6개로 가장 많았다. 출하일수는 일본수집종 및 중국수집종이 60일로 제천수집종에 비해 3-5일 빨랐다. 출하율은 일본종이 90%로 금산, 제천종보다 5-10% 높았다. 엽면적은 일본수집종이 가장 넓었으며, 광합성 능력도 엽면적이 넓은 일본수집종이 전기간에 걸쳐 가장 높았다. 엽록소 함량은 관행(자연광) 대비보다 차광율이 높을수록 엽록소 함량이 높았다.

Post-harvest Technology for High Quality Rice in Japan

  • Rice is one of the most important cereals in the world. Japanese people use about 9 million tons of rice per you. We use rice for cooked rice as staple foods and for processing, such as rice wine (sake), rice crackers and miso fermentation, etc. Palatability, eating quality, of rice is evaluated by the sensory test and various kinds of physicochemical measurements. Japanese National Food Agency started the storage of 1.5 million tones of rice in 1996. We carried out the storage test using high quality rices since 1995 until 1996. As indices for the quality deteriorations of rice grains during the storage, germination ratio, enzyme activities, fat acidity, physical properties of cooked rice were clarified to be useful. We applied colorimetric method for the measurements of fat acidities in the place of titration method. Processing suitabilities of rice differ depending on the products. Low amylose rice is more suitable for soft rice crackers and high amylose rice is preferred more for rice noodle. Pre-cooked rice products, such as frozen cooked rice, retort-pouched rice and aseptic rice, are increasing recently in Japan. In addition to above-mentioned physico-chemical tests, NIR spectroscopy,“Midometer”and“Taste sensor”are novel and useful to evaluate eating quality and processing suitabolities. Recently, rice wholesalers and retailers have been obligated to display the name of cultivar, location of cultivation and the year of production of rice grains which they sell by the Japanese Agricultural Standard Law (JAS). In order to detect the dishonest labeling of rice cultivars, we developed new cultivar identification method based on DNA polymorphism.

Comparison of sweetness preference and motivational factors between Korean and Japanese children

  • Purpose: This study was performed to examine motivational factors affecting sweetness preference in Korean and Japanese children. We identified meaningful variables that could be targeted to nutrition education interventions designed to overcome innate barriers and reduce sweetness preference and sweet food intake in Korean and Japanese children. Methods: Questionnaire surveys and sweetness preference test were conducted to examine variables affecting behavioral intention (BI) regarding sweetness preference. Questionnaire variables were based on the theory of planned behavior. Participants were recruited from one urban school from each country. In total, 166 children (mean age: 8.4 years) and their guardians (n = 166) participated in the study. A trained research assistant provided all children with personal guidance regarding completion of the sweetness preference test and survey questionnaire at school. The data were analyzed using Pearson's correlation coefficients, t tests, repeated measure ANOVA, and stepwise multiple regression analysis (significance level: p < 0.05). Results: Perceived behavioral control (PBC) and parenting practice were significantly associated with BI in both groups. Motivation to comply affected BI only in Japanese children, whereas affective attitude was associated with BI only in Korean children. In predicting sweetness preference, BI was associated only in Japanese children, whereas sweets consumption frequency had a significant effect in Korean children. Conclusion: The study shows similarities and differences in motivational factors, which could be considered when developing nutrition education programs in Korea and Japan. PBC and parenting practice were common factors in predicting BI. In predicting sweetness preference, BI had a significant effect on Japanese children, whereas sweets consumption frequency was the greatest contributor in Korean children.

  • After the Japanese Invasion of Korea in 1592, correspondents of Chosun called on Japan twelve times, as a mission, from 1607 to 1811. The suite of Chosun Communication Facilities (correspondents) was composed of nearly 500 people including a senior envoy, a junior envoy, other envoyes, and cooks. After preparing traveling expenses, Sifts, foods, medicinal stuffs, and ginseng, they shipped people and freight in three passenger ships and three freighters. They departed from Pusan for Edo(Tokyo). There were 28 stop-overs on their way to Edo and the banquet was given for them at every stop. The arrangements of the table for each banquet were made up of 753 Seon(tables), 3Jeup(soups) and 15Che(dishes). 753Seon(tables) is Ganban(the table for decoration) and a substantial food reception was composed of 3Jeup(soups) and 15Che(dishes). 753Seon(tables) was called Dadopoong(the food of refreshment) style and this was the standard arrangement of the banquet table in Japan. It was comprised of 3Jeup(soups) and 15Che(dishes). On their way from Edo to Thusima Island, food was afforded to correspondents for later preparation and dining. The banquet that the master of Thusima Island gave was composed of the first and second style banquets. The first one was Chusun style and the second one was Japanese style.

자색고구마 색소 농축액과 매실음료 Anthocyanin의 가열분해에 대한 속도론적 연구 (Degradation Kinetics of Anthocyanins in Purple-Fleshed Sweet Potato Pigment Concentrates and a Japanese Plum Juice Based Beverage)

  • 자색고구마 anthocyanin 색소 용액은 가열에 의해 1차 반응속도식에 따라 색소 함량이 감소하였으며, 이 반응은 색소용액의 농도와 가열온도에 영향을 받았다. 이 반응의 활성화 에너지 값은 색소 용액의 농도에 따라 51.29-73.02 kJ/mol이었으며, 농축하지 않은 색소 추출액을 제외하면 활성화 에너지는 색소의 농도가 증가함에 따라 직선적으로 감소하였다. 자색고구마색소를 첨가한 매실음료의 anthocyanin 색소 역시 저장 중 1차 반응에 따라 색소가 감소하였는데, 저장온도가 낮아질수록 반응속도가 낮아져 저장기간이 증가하여, $5^{\circ}C$에서 저장한 경우는 저장 8개월까지 80%이상의 색소 잔존률을 나타냈다. 매실음료에 함유된 자색고구마 anthocyanin색소 변화에 대한 활성화 에너지는 75.80 kJ/mol이었다.

  • After new medical system of separation of dispensary from medical practice was started in 2000 in Korea, to expand bioequivalence-proven drug products and to ensure the credibility of the therapeutic equivalence of generic drugs are hot issues in Korea. It will be obligatory to submit bioequivalence reports for getting licenses of all generic prescription drugs in the near future. Like other countries such as US and Japan, the KFDA also has a plan to re-evaluate the already approved drugs by bioequivalence studies. Therefore, it becomes more necessary to develop bioequivalence-demonstrating methods for specific preparations such as topical drug products among already approved drug products. There are some differences between US and Japanese guidances of bioequivalence studies of generic drug products for topical use. The information on Japanese guidance and the guidance's Q&As is already provided in our previous paper. In this paper, we examined the US guideline published in 1995 and compared with the Japanese guideline, which will give a useful information to make a guidance on bioequivalence studies of topical drug products in Korea.
