The amounts of monosaccharides in acid hydrolysates of decomposing plant residues under laboratory conditions were determined. Straw of cereal rice and barley, wild grass cutting, and litters of deciduous and coniferous forest trees were treated to decompose for 90 days. Samples for the analysis of mono-saccharides were taken at 3 different periods of incubation. 1. Fractions of monosaccahrides in plant residues steadily decreased with the time of decomposition. In some samples there appeared an intermediate stages where the fractions reached the highest level. 2. Decomposition of barley straw occured at a faster rate than that of rice straw, and so did the decomposition of deciduous litter than that of coniferous litter. 3. Cereal crop residues of rice and barley were richer in monosaccharides than residues of wild grass cutting and forest litters. 4. Distiction between monosaccharides of plant origin and those of microbial origin was not possible to make in this study. 5. Glucose was the predominent monosaccharide and fucose was the monosaccharide contained in the smallest amount. No measurable ribose was detected from any sample. 6. The relative proportion of galactose in creased with the time of incubation. 7. In general, the proportion of fucose decreased with time and so did that of rhamnose, rhamnose of rice straw residue being the exception. 8. The orders of abundance of monosaccharides after decomposition of 90 days were as the following: in rice straw; glucose > xylose > arabinose > galactose > rhamnose > mannose > fucose, in barley straw; glucose > xylose > arabinose > galactose> mannose > rhamnose > fucose, in wild grass cutting; glucose > xylose > galactose arabinose> rhamnose mannose > fucose, in deciduous litter; glucose > arabinose > xylose galactose > mannose > rhamnose = fucose, and in coniferous litter; glucose > xylose > galactose > arabinose mannose > rhamnose > fucose.

This study is to investigate effects of green tea and capsulated components mixture on body fat and serum lipid composition and fat distribution in college women students in terms of supplemented periods. During 3 months of this research, 34 college women students (average age 20.3 yr) were selected as subjects. Nutrient intake was investigated by questionnaire and 24-hr recall method. Anthropolatric assessments of the subjects were investigated by SBIA method (Segmental Bioimpedance Assay, Inbody 3.0). The results were as follows: mean body height was 162.5cm and mean body weight and mean BMI (Body Mass Index, kg/$m^2$) were 57.9kg and 21.9, respectively. Status of carbohydrate intake decreased significantly (p<0.05) and dietary fiber intake increased significantly (p<0.001) after supplementation. WHR (waist-hip ratio) decreased significantly (p<0.05) and body fat and percent body fat decreased significantly after supplementation (p<0.05). Total cholesterol and triglyceride decreased significantly after supplementation (p<0.001). Above results of this study show that green tea, silk peptide and dietary fiber supplementation-added routine diet improves body fat distribution, total cholesterol, triglyceride. Especially, declination of abdominal fat and WHR was notable, since that means diminution of risk factors for obesity and chronic degenerative diseases.

The objective of this study was to investigate the organic solubilization (SCOD) and improvement of methane production for pig slurry by thermal hydrolysis. A sludge cake was pretreated by thermal hydrolysis at different reaction temperatures (200, 220, 250, $270^{\circ}C$). Ultimate methane potential (Bu) was determined at several substrate and inoculum (S/I) ratios (1:9, 3:7, 5:5, 7:3 in volume ratio) by biochemical methane potential (BMP) assay for 73 days. Pig slurry SCOD were obtained with 98.4~98.9% at the reaction temperature of $200{\sim}270^{\circ}C$. Theoretical methane potentials ($B_{th}$) of thermal hydrolysates at the reaction temperature of $200^{\circ}C$, $220^{\circ}C$, $250^{\circ}C$, $270^{\circ}C$ were 0.631, 0.634, 0.705, $0.748Nm^3\;kg^{-1}-VS_{added}$, respectively. $B_u$ of $200^{\circ}C$ thermal hydrolysate were decreased from $0.197Nm^3\;kg^{-1}-VS_{added}$ to $0.111Nm^3\;kg^{-1}-VS_{added}$ with the changes of S/I ratio from 1:9 to 7:3, and also $B_u$ of different thermal hydrolysates ($220^{\circ}C$, $250^{\circ}C$, $270^{\circ}C$) showed same tendency to $B_u$ of $200^{\circ}C$ thermal hydrolysate according to the changes of S/I ratio. Anaerobic biodegradability ($B_u/B_{th}$) of $200^{\circ}C$ thermal hydrolysate at different S/I ratios was decreased from 32.2% for S/I ratio of 1:9 to 17.6% for S/I ratio of 7:3. $B_u/B_{th}$ of $220^{\circ}C$, $250^{\circ}C$, and $270^{\circ}C$ thermal hydrolysat were decreased from 36.4% to 9.6%, from 31.3% to 0.8%, and from 26.6% to 0.8%, respectively, with the S/I ratio change, respectively. In this study, the rise of thermal reaction temperature caused the decrease of anaerobic digestibility and methane production while organic materials of pig slurry were more solubilized.

As a method of utilization of sardine, the processing conditions of the sardine sauce extracts and the taste compounds of products were investigated. To prepare the sardine sauce extracts, chopped sardine was mixed with $1\%$, onion powder, $1\%$ garlic powder, $1\%$ red pepper powder, loft koji and $50\%$ water, and then hydrolyzed under different conditions of hydrolysis. The optimum conditions for hydrolysis were $55^{\circ}C$, 6 hours, pH 6.5-7.0. After hydrolysis, the hydrolysates were heated at $100^{\circ}C$ for 20 minutes with $5\%$ soybean protein isolate for inactivation of enzymes and improvement of bitter taste of the hydrolysates. Finally, $10\%$ salt was added to develop the characteristic taste of sauce extracts. The major taste compounds of the products were free amino acids, non-volatile organic acids and nucleotides and their related compounds. The major free amino acids in the products were arginine, histidine, lysine, glutamic acid, phenylalanine, leucine and alanine. The contents of these free amino acids were in the range of $68.2\%\;to\;69.9\%$ of the total free amino acids of products. The major non-volatile organic acids ill the products were lactic acid and $\alpha-ketoglutaric$ acid which occupied more than $95\%$ of total non-volatile organic acids. The contents of free amino acids, non-volatile organic acids and nucleotides and their related compounds were not changed during storage. Total creatinine, betaine and TMAO were seemed to act an auxiliary role in taste of the products. Judging from the results of chemical experiments and sensory evaluation, the product prepared with koji and soybean protein isolate was excellent as seasoning materials.
The purpose of this study was to seek the optimum condition for effective separation of the chemical constituents of wood biomass by means of hydrolysis of acetone solution in presence of acid salt as a catalyst. Out of diverse acid salts the catalytic effect of aluminum sulfate ($Al_2(SO_4)_3$) was the most excellent during the hydrolysis of wood biomass in the acetone solution and the optimum concentration was 0.01 M (6.3 wt%). In the condition of mixture ratio of acetone and water to 9 : 1 as well as optimum concentration of aluminum sulfate two wood biomass species, oak wood (Quercus mongolica Fischer) and Pine wood (Pinus densiflora Sieb. et Zucc.), was hydrolyzed for 45 minutes at $200^{\circ}C$ and the degree of hydrolysis was determined to 92.7% and 92.4%, respectively. Extending the reaction time to 60 minutes in the mixture ratio of acetone and water to 8 : 2 the degree of hydrolysis of oak wood was also ca. 92.7%. In the case of Pinus, however, the similar hydrolysis ratio was obtained at $210^{\circ}C$. As the temperature and hydrolysis time increased, the quantitative amount of lignin recovered from the hydrolysate clearly increased, whereas the total amount of carbohydrates in the hydrolysate decreased rapidly. Considering the recoverable amount of lignin and carbohydrate in the hydrolysate, the best condition for the hydrolysis of wood biomasses were confirmed to the mixture ratio of acetone and water to 8 : 2, the concentration of aluminum sulfate of 6.3 wt%, hydrolysis temperature of $190^{\circ}C$ for 60 minutes. In this condition the total amounts of carbohydrate in the hydrolysates of oak wood and pine wood were estimated to 47.6% and 51.4%, respectively. The amount of lignin recovered from the hydrolysates were ca. 18.2% for oak wood and 13.7% for pine wood.

This study was aimed to investigate whether soy protein hydrolysates had beneficial effects on serum and tissue lipid contents and appetite-related hormones as compared with intact soy protein. Four-week-old male Sprague-Dawley rats were fed AIN-93M diet containing high fat (18% w/w) with low protein (10% w/w). After four weeks, the rats were divided into four groups (n = 8/group) and fed experimental diets with different nitrogen sources and levels, respectively; 10% soy protein isolate (10SPI), 25% soy protein isolate (25SPI), 25% soy protein hydrolysates (25SPH) and 25% soy macro-peptide fractions (25SPP, MW $\geq$ 10,000) for six weeks. Weight gain was significantly higher in 25% nitrogen sources-fed groups than in 10% group (10SPI). In 25SPP, perirenal fat mass and serum total lipid were significantly lower than in other groups. As for appetite-related hormones, serum ghrelin concentration was not shown to be different among groups but leptin concentration was significantly decreased in 25SPP. It can be concluded that soy macro-peptide fractions as compared with intact soy protein may have beneficial effects on reducing fat mass and serum lipid.
In order to investigate the lowering effects of in vitro enzymatic hydrolysis by the treatment of chymotrypsin, trypsin, pancreatin, or protease from Aspergillus oryzae on the antigenicity of whey protein(WPI) against rabbit anti ${\beta}-LG$ antiserum, competitive inhibition ELISA(cELISA) and passive cutaneous anaphylaxis(PCA) test using guinea pig were performed. The results of cELISA showed that the monovalent antigenicity of the whey protein hydrolysates(WPH) to the antiserum was decreased to $10^{-1.7}{\sim}10^{-4.1}$ and less by the hydrolysis. Especially, the antigenicity of OUP(hydrolysate by protease from Asp. oryzae with preteatment of pepsin) was found almost to be removed. By the heterologous PCA the polyvalent antigenicity of the WPH was decreased to $1/2{\sim}1/128$ and less. Especially, the polyvalent antigenicity of OUN(hydrolysate by protease from Asp. oryzae without preteatments) was found almost to be removed, although OUN did not have so high degree of hydrolysis(DH) or so low monovalent antigenicity (reduced to $10^{-3.2}$). Therefore, this result was assumed to come from effective destruction of antigenic determinants on ${\beta}-LG$ in WPI, not to produce polyvalent antigenic peptides that are closely associated with induction of allergy. This finding suggested that WPH prepared by the treatment of microorganic protease from Asp. oryzae would be a material for hypoallergenic infant formula due to the removal of the polyvalent antigenicity of ${\beta}-LG$, the major milk allergen in WPI.

To investigate the lowering effects of in vitro enzymatic hydrolysis by the treatment of chymotrypsin, trypsin, pancreatin, or protease from Aspergillus oryzae on the antigenicity of whey protein isolate (WPI) against rabbit anti ${\alpha}-LA$ antiserum, competitive inhibition ELISA (cELISA) and passive cutaneous anaphylaxis (PCA) test using guinea pig were performed. The results of cELISA showed that the monovalent antigenicity of the whey protein hydrolysates (WPH) to the antiserum was decreased to $10^{-2.5}-10^{-5.5}$ and less by the hydrolysis. The monovalent antigenicity of the WPH hydrolyzed by trypsin, or protease from Asp. nryzae was much lowered by the pretreatment of heat denaturation. The antigenicity of the WPH hydrolyzed by chymotrypsin, trypsin, or pancreatin was much lowered by the pretreatment of pepsin. Especially, the antigenicity of TDP (trypic hydrolysate with pretreatment of heat and pepsin) was found almost to be removed. However, there was not consistency between degree of hydrolysis(DH) and the monovalent antigenicity of the WPH. By the heterologous PCA it was found that all of the PGPH lost the polyvalent antigenicity regardless of the pretreatments although WPI and ${\alpha}-LA$ had the positive high antigenicity. The results suggested that the peptides derived from ${\alpha}-LA$ in WPH could bind specific antibodies but they could not induce allergy. Therefore, it was elucidated that the allergenicity of ${\alpha}-LA$ in whey protein could be destroyed easily by the enzymatic hydrolysis.
Proessing conditions for fermented and dried sauces with the underutilized fishes were investigated. Hair tail, gizzard shad, and kangdale were hydrolyzed at $60^{\circ}C$ for 6 hours using $4\%$ Alcalase, and their hydrolysates were separted by molecularporous membrane. The hydrolytic ratios of hair tail, gizzard shad, and kangdale were estimated to be $84.2\%$, $83.6\%$ and $85.1\%$, respectively. Amino nitrogen recoveries were determind to be $73.1\~73.9\%$ by a membrane with molecular weight cutoff 100 dalton and $91.7\~92.5\%$ by a membrane with 500 dalton. Ultrafiltration was very efficient means for removing bitter taste. With the additions of $2\%$ glucose, $4\%$ lactose and $4\%$ skim milk, product yields of hair tail, gizzard shad, and kangdale were determind to be $16.4\%,\;17.2\%$ and $17.0\%$, respectively. Water adsorption rates of hair tail and kangdale showed $5.0\~9.2\%$ and $5.5\~9.6\%$, respectively, under Aw 0.52$\~$0.94. Contents of total nitrogen in the fermented and dried sauces prepared with hair tail, gizzard shad and kangdale were $3.9\%,\;4.1\%$ and $3.7\%$, respectively, and those of amino nitrogen were $3.2\%,\;3.4\%$ and $3.1\%$, respectively. In the fermented and dried sauces prapared with hair tail, gizzard shad and kangdale, the hygroscopities at Aw 0.88 were $6.9\%,\;7.5\%$ and $6.8\%$, respectively, and solubilities under dissolved in water for 30 minutes were $84.6\%,\;83.6\%$ and $93.8\%$, respectively.
To utilize non-heat treated alcoholic by-products of brown rice (Goami) as food sources, the quality characteristics changes according to the treatment conditions of cellulase were evaluated. Results showed that the increase of hydrolysis temperature correspondingly increased the soluble solids and total sugar amounts in the by-products of Goami, and total dietary fiber amount was found to be around 0.67% Reducing sugar concentration was the highest at the hydrolysis temperature of $70^{\circ}C$. Maltooligosaccharides amounts were detected to be the highest at the hydrolysis temperature of $80^{\circ}C$ and were also, maltopentose and maltopentose were found. In the soluble solid, total dietary fiber, reducing sugar and total sugar according to the cellulase concentration, the content of hydrolysates with enzyme were higher than control, and the content of hydrolysates with enzyme was similar (6.30 and 0.69% 3,600 and 5,500 mg% respectively). The content of maltooligosaccharides was increased with the increase of enzyme concentration, and the content was similar at more than 0.6%(w/w) of enzyme concentration. The soluble solids and total dietary fiber by hydrolysis time were found to be 6.25% and 0.70%, respectively at more than 60 min. of hydrolysis. The content of reducing sugar, total sugar and maltooligosaccharides were increased with the increase of hydrolysis time, and the content was similar at more than 120min. of hydrolysis (3,800, 5,680 and 1,950 mg% respectively). Based upon these results, the byproducts of Goami are expected to be valuable as various food sources showing the highest dietary fiber and maltooligosaccharides contents by the hydrolysis at $80^{\circ}C$ for 120 min. with the addition of 0.6%(w/w) of cellulase.
