An Analysis of Papers used in Historical Manuscrips (조선시대 고문서(古文書)에 사용된 종이 분석)

  • This study is that the name from Tagjijunjeol is compared with the actual papers used in historical documents. I have selected the families having had influencing power in Gyungi-Do(京畿道), Gyungsang-Do(慶尙道), Jeonra-Do(全羅道), Chungcheung-Do(忠淸道), and analyzed 1504 articles of historical documents owned by those families. I checked up each papers used in historical documents in it's shape of screens, density, raw material. I cannot find the feature of it's region, but prominent feature according to the types and period of historical documents. At first, I have surveyed the impressions of screen marks in papers. The number of strips can be divided into two cases, around 10 and around 17. The case around 17 is similar to the number seen in the book paper of the early Joseon Dynasty, but the case around 10 is rare. Dard Hunter said in his book, published in 1933, that screens were made of Korean grass(Miscanthus sp.) at that time in Korea. I guess the impressions of screen marks of the case around 10 was made of Korean grass, Miscanthus sp.. The case around 10 and the case around 17 were not different in period, but the contemporary appearance. However, if we look into the change of strips' number, we can learn that it becomes more dense as time goes by. The intervals of hair stitch, contrary to book paper, have appeared irregularly and a short hair stitch was frequently found between long hair stitches. This was the result of fastening extra stitch to increase the firmness of strips, as the part of screens which was frequently touched by hands would wear out easily. Then, have look into the density. Each kinds of historical documents had a wide range of density. But the average have had relationship with the kinds of paper written in Tagjijunjeol. The historical documents having the same item of paper have kept similar densities. From the density variation of Gosingyoji(告身敎旨), the letter of appointment the official rank over 5 by king, based on time periods, we can see a great disparity between before and after Imjin-waeran war. Before Imjin-waeran war paper's quality was high, right after Imjin-waeran war went abruptly down, and went gradually up just from 1650's, but since 1700's quality has not risen more, kept the value. On the contrary, the density of Gyocheop(敎牒), the letter of appointment the official rank under 5 by the Ministry of Personnel and the Ministry of Military, have not had a great disparity according to time periods, but had a lower density than Gosingyoji. Joseon Dynasty has strictly divided Gosingyoji appointing the official rank over 5 from Gyocheop appointing the official rank under 5, it seems to distinguish the appointment by king from the appointment by Ijo(吏曹), the Ministry of Personnel and Byeongjo(兵曹), the Ministry of Military.

Quality Characteristics of Frozen Doraji (Platycodon grandiflorum) according to Various Blanching Treatment Conditions (블랜칭 처리 조건에 따른 동결 도라지의 품질 특성)

  • This study was conducted to devise appropriate blanching-process conditions as a means to convert Doraji, which is widely used in Korean food due to its unique fragrance and flavor, into frozen food materials for various uses. For the Hunter L values representing the brightness transformation among the surface color and gloss changes that were observed in Doraji before and after freezing, and after Doraji went through a blanching process, the specimen that went through a blanching process at $80^{\circ}C$ showed a significantly higher value compared to another specimen processed at a higher temperature, and the first specimen's value also rose after freezing. Meanwhile, for the hardness values, they declined more as the blanching temperature became higher and as the processing time became longer. For the number of total counts and the number of coliform groups, the number of total counts at $3.75{\times}10^5$ and $1.25{\times}10^5$ cfu/g before the blanching process was reduced into the approximately 2-3 log scale, and no coliform group was detected after the blanching process. As for the peroxidase activity, its activation was decreased by the blanching process, and more than 89% of the peroxidase became inactivated in all the specimens that went through the blanching process. The sensory characteristics of the frozen-thawed Doraji by test group showed the radish leaves blanched at $90^{\circ}C$ for 1 min to be the most highly evaluated in terms of the overall preference level (p<0.05).

Changes in Quality Characteristics and Chemical Components of Sweet Potatoes Cultivated using Different Methods (재배방법에 따른 고구마의 품질특성 및 화학성분 변화)

  • Effects of cultivation methods on quality characteristics, pasting characteristics, chemical components, and antioxidant activities of sweet potatoes (Ipomoea batatas (L.) Lam) were determined. The Brix degree, hunter color value, pasting characteristics, moisture, protein, and mineral contents of the sweet potatoes showed significant differences from cultivation methods. The total polyphenol and flavonoid contents of the methanolic extracts of the sweet potato's pericarp were higher than sweet potato's sarcocarp. The 1,1-diphenyl-2-picrylhydrazyl (DPPH) radical scavenging activity of the sweet potato's pericarp on the conventional culture and successful cropped hairy vetch culture was 776.38 and 715.20 mg TE/100 g sample. The 2,2'-azino-bis-3-ethylbenzo-thiazoline-6-sulfonic acid (ABTS) radical scavenging activity of the sweet potato's pericarp on the conventional culture and successful cropped hairy vetch culture was 708.03 and 708.58 mg TE/100 g sample. Generally, there was a difference in antioxidant compound content and radical scavenging activity on the methanolic extract of sweet potato with cultivation methods.

Quality characteristics of Yakju at addition sprout and root of reed (갈대 뿌리와 갈대순 첨가에 따른 약주의 품질특성)

  • This study was performed to improve the availability of reed and quality of traditional Yakju by using roasted reed. The pH of sprout Yakju was 3.43, whereas the pHs of other Yakjus were 3.57. No remarkable differences were observed in contents of total titratable acids and reducing sugars. Color changes were measured by Hunter's color value; L value decreased, whereas redness (+a) and yellowness (+b) increased during fermentation. Ethanol content of Yakjus prepared with sprout and root were 15.30% and 15.28%, respectively, which were lower than that of control Yakju (15.31%). However, there were obvious differences of ethanol contents in three types of Yakjus. The major free sugar and organic acid were glucose and lactic acid, respectively. The total polyphenol contents of sprout Yakju (4.26 mg%) and root Yakju (4.21 mg%) were much higher than that of control Yakju (2.56 mg%). The DPPH (1,1-diphenyl-2-picryl-hydrazyl) free radical scavenging activities of sprout Yakju and root Yakju were higher than those of control Yakju. Yakju prepared from 0.3% addition of sprout showed the highest score in overall preference from the sensory test.

Quality and Palatability of Pork Patty Containing Wine (포도주가 함유된 돈육 패티의 품질 및 기호성)

  • This study was carried out to investigate the effects of adding wine on the quality and palatability of pork patties. Pork patties were prepared by four types: pork patty without wine (control), pork patty containing wine 1% (WP-1), pork patty containing wine 3% (WP-2), and pork patty containing wine 5% (WP-3). Moisture, crude protein, crude fat, crude ash, Hunter's $a^*$ value, calorie, water holding capacity, VBN content, total bacterial counts, amino acid composition, fatty acid composition, flavor, texture, and juiciness were not significantly different among the pork patties. The $L^*\;and\;b^*$ values of the control patty was higher than those of the WP-1, WP-2, and WP-3 (p<0.05). The pH and TBARS value of the WP-2 and WP-3 were lower than those of the control patty and WP-1 (p<0.05). The total amino acid content of the control patty, WP-1, WP-2, and WP-3 were 18.29, 17.83, 17.85, and 17.37%, respectively. Palmitic acid was the most abundant among saturated fatty acids while oleic acid was the most abundant unsaturated fatty acid in the four groups. The taste and palatability of the WP-2 and WP-3 were superior to the control patty and WP-1 (p<0.05).

Physicochemical Properties and Antioxidant Activities of Steam-Dried Allium hookeri Root (증포 처리한 삼채 뿌리의 이화학적 특성 및 항산화 활성)

  • This study was carried out to investigate the effect of steam-drying method on physicochemical properties and antioxidant activities of Alliun hookeri root (AHR). Moisture, crude protein, crude fat, and crude ash contents of raw and steam-dried AHRs were 10.91~14.15%, 11.14~13.49%, 0.83~3.02%, and 7.55~8.98%, respectively. Sulfur contents of steam-dried AHRs were 2.0 and 2.2 times lower than that of raw AHR (0.51%), respectively. pH and total sugar contents of AHRs were reduced by steam-drying, whereas titrate acidity and browning intensity were increased. The L and b values of AHRs in Hunter's value were also reduced, but a value was increased by steam-drying. Among hot water extracts from raw and steam-dried AHRs, four times steam-drying showed the lowest $EC_{50}$ values (0.44, 9.01, and 0.48 mg/mL, respectively) in DPPH radical assay, ABTS radical assay, and reducing power, whereas four times steam-drying had the highest total phenolic content ($34.47{\mu}g/mg$) and browning intensity (2.05 and 0.20 at 280 and 420 nm, respectively). The antioxidant activities of hot water extracts from raw and steam-dried AHRs were closely correlated with their total phenolic contents and browning intensity, showing coefficient of determination ($R^2$) values higher than 0.87. From the results, we suggest that steam-drying method could be used as an effective process for increasing the antioxidant activity of AHR.

The Physicochemical Characteristics of Rice Flour with Different Milling Degree of Rice Cultivar "Deuraechan" (드래찬 쌀 품종의 도정도를 달리한 쌀가루의 이화학적 특성)

  • This study investigated the physicochemical characteristics of processing type rice (Deuraechan) with brown rice and brown rice milling different yields (97.4, 96.0, 94.4 and 92.0%). In the results of proximate composition of rice flours with the different milling degrees, moisture contents were 12.92~13.07%, crude protein contents were 6.62~8.47%, crude lipid contents were 0.84~2.52%, crude ash contents were 0.51~1.17%, and crude fiber contents were 0.30~1.16%. The moisture contents were not significantly different. In the results of Hunter's color value of rice flours, L value was the highest in white rice, and a and b values were the highest in brown rice. Water binding capacity of rice flours was the highest in white rice 127.44%, but brown rice was the lowest 114.31%. As for amylogram properties, brown rice was the highest in the initial pasting temperature and temp. at maximum viscosity. However, white rice was the highest in maximum viscosity, viscosity at $50^{\circ}C$, breakdown and setback. In the results of different scanning calorimeter thermal properties of rice flours, brown rice was the highest in onset temperature, peak temperature and end temperature. The enthalpy (${\delta}H$) was the lowest in brown rice flour and the highest in white rice flour.

Physicochemical Quality and Luminescence Characteristics of Gamma-irradiated Dried Fish Products (감마선 조사에 따른 건포류의 이화학적 품질 및 발광 특성)

  • Dried fish products, such as seasoned cuttlefish, anchovy, and filefish, were analyzed to investigate the physicochemical quality and luminescence properties following gamma-irradiation. The overall color difference slightly increased in all irradiated samples, showing significant changes in Hunter's L, a, and b color values. Cuttlefish and filefish showed higher values in hydrophilic browning, whereas anchovy showed a higher value in lipophilic browning. The brown color intensity of filefish showed a dose-dependent increase. The thiobarbituric acid (TBA) value significantly increased in irradiated samples of cuttlefish and anchovy, which have relatively high lipid contents. Irradiated samples, except anchovy, were not suitable for screening using photostimulated luminescence (PSL) because only negative or intermediate values were observed. Thermoluminescence (TL) measurements were suitable for all fish samples, i.e., irradiation-specific glow curves were obtained, signal intensity increased, and the TL ratio fulfilled the criterion. There was no significant difference among the irradiated samples with regard to the sensory properties.

Effects of Electron Beam Irradiation on the Quality of Kochujang Powder (Electron Beam 조사가 고추장 분말의 품질에 미치는 영향)

  • Electron beam (EB) irradiation was applied to study microbial decontamination effects for kochujang powder by determining their microbiological and physicochemical qualities over gamma ray (GR) irradiation. The samples showed a high microbial population, such as 105~106 CFU/g of total aerobic bacteria, negative of yeasts & molds and coliforms. Total bacterial counts were decreased by 1~2 log cycles with EB irradiation at 5~7.5 kGy, and 10 kGy irradiation was enough to improve the microbiological quality by reducing populations to below 104CFU/g, which was similar to gamma energy. Such doses were effective for controlling the microbial growth in stored samples during storage for 4 months at room temperature. Decimal reduction doses (D10 value) on initial bacterial populations were 2.88~3.02 kGy in EB and 3.57~3.59 kGy in GR, which were influenced by initial populations and energy types applied. Based upon the above results, 7.5~10 kGy irradiation caused negligible changes in Hunter's color, capsaicin, fatty acid composition and organoleptic qualities. Considering the quality changes resulting from subsequent storage, such as a decrease in capsanthin content and an increase in TBA value in the samples, it is recommendable to irradiate kochujang powder at 7.5~10 kGy when used for food processing.

Quality Characteristics of Drink with Maca (Lepidium meyenii) Extract and Evaluation of Its Antioxidant Activity during Storage (마카 추출액을 첨가한 음료의 품질특성 및 저장 중 항산화성 평가)

  • The objective of this study was to develop a functional drink using maca extract, and to evaluate the latter's antioxidative activity during storage. Maca extract was added in five different content percentages (0, 8, 16, 24, and 32%), and the physicochemical properties were investigated. The pH of the control drink was lower than that of the drink to which maca extract was added. The $^{\circ}Brix$ increased with the increasing amount of maca extract. The Hunter L value decreased while the yellowness (b) value increased as the maca extract level increased. The results of the consumer acceptance test showed that no significant differences in overall acceptability were observed between the control and the 8%-, 16%-, and 24% maca-added drinks. Therefore, it is suggested that up to 24% maca extract can be added to drinks without depressing the quality. The changes in the total polyphenol content, DPPH radical, superoxide anion radical activity, and tyrosinase inhibitory effect were monitored during storage at 4 and $37^{\circ}C$ for four weeks. The results showed that there was a gradual decrease in the total polyphenol content and antioxidant activities after four-week storage, and the drinks containing maca extract exhibited a smaller decrease in antioxidant activity than did the control drink. Moreover, microbial growth was not shown during the same periods.
