Educational Needs for the Development of a Career Exploration Program for Human Ecology Majors for High School Students: A Survey Targeting Experts and High School Students (고등학생의 대학 생활과학전공 진로탐색 프로그램 개발을 위한 교육요구 조사: 전문가 및 고등학생을 대상으로)

  • As human life and welfare become more valued in the Fourth Industrial Revolution era, the role and mission of human ecology are expanding. Therefore, a career exploration and education program for high school students covering all the academic fields of human ecology may be necessary. To investigate what would be needed to develop such a program, a focus group interview (FGI) targeting experts within the same field and a survey targeting high school students were conducted. As a result of the FGI, a total of 3 categories and 7 subcategories were identified. The three categories included "human ecology and high school education," "human ecology and career choices," and "education program development and management in human ecology." The results of the high schoolers' survey showed that they had a moderate level of awareness about careers related to human ecology majors, but their interests and known information about human ecology programs in universities were low. Within the sub-content of each major, the contents with the highest educational needs were fashion product management, nutrition by disease, housing market analysis, personal financial management, and children's rights and welfare. If a career exploration and education program is implemented in the future, the most preferred type is a mentoring program by professors, students, and graduates in the field of human ecology. In conclusion, it is necessary to develop and implement an integrative education program about human ecology majors based on the educational needs of high school students.

  • This study was designed to establish the standing of Human Ecology by discussing the integrity and practicality of Human Ecology and viewing it from various angles. We dealt with objects of study, viewpoints, and the adoption of research results in discussing the integrity of Human Ecology. We also discussed the practicality of Human Ecology focusing on family welfare, health and policy. This study revealed that integrity and practicality were closely connected and played important roles in the identification of Human Ecology.

Development of S-Adenosyl-L-methionine (SAM)-reinforced Probiotic Yogurt Using Bifidobacterium bifidum BGN4

  • S-Adenosyl-L-methionine (SAM) exerts several beneficial effects on depression, chronic diseases, and cognitive impairments. Bifidobactrium bifidum BGN4 reportedly produces higher amounts of SAM than any other lactic acid bacterium used in yogurt. The aim of this study was to develop a SAM-reinforced probiotic yogurt using Bifidobacterium. The sensory aspects of the yogurt via response surface methodology (RSM) and the texture and SAM content of the yogurt were assessed. Based on the sensory assessments for sweetness, sourness, and thickness evaluated by 48 panelists, the optimized conditions for preparation of SAM-reinforced yogurt were 4.0-4.4%(w/w) sugar, 3.2-3.5%(w/w) skim milk, and a pH of 4.7-4.8. The SAM content of the developed yogurt was 0.05 nmol/mL. In conclusion, SAM-reinforced probiotic yogurt may provide a vehicle for the potential exploitation of the benefits of increased dietary SAM.

Development and Roles of Landscape Ecology as An Emerging Opportunity for Ecology (생태학의 새로운 분야로서 경관생태학의 발전과 역할)

  • Landscape ecology is an emerging interdisciplinary ecology field to understand the holistic human and natural systems on the basis of concept and database obtained from pure ecology. Landscape ecology is an integrated ecology widely available for environmental science such as nature conservation and sustainable land-use planning. It is also a practical study as an applied ecology to restore and to manage local environment. Landscape ecological study is realized by embodiment of human disturbance system which is rigorously extending on natural system. Considering Korean status without landscape ecological studies, we briefly reviewed establishing process, study goal and methodology of landscape ecology as well as the related several concepts through current landscape ecological studies in the world. We hope that this paper will be helpful to ecologists having interest in landscape ecology.

A Study on the Sanitary Education Program at School Foodservice Operations in Jeonju (전주지역 학교급식에서의 위생교육 실시현황에 대한 연구)

  • The purpose of this study was to assess the sanitary education performance for employee through school foodservice dietitians in Jeonju area. Questionaires were distributed to 67 dietitians of school foodservice. The statistical analysis of data was completed using SPSS 10.0 program. The results were summarized as follows: 47.8% of dietitians were $31{\sim}35$ years old and 73.1% were regular employee. 37.3% had a dietitian career less $5{\sim}10$ years old. Most dietitians(74.6%) provided verbal training to the school foodservice employees at least once every month. This training included details of personal, facility and food processing hygiene, food poisoning and microorganism. Because of 'missing time' had 65.7% of dietitian a problem to conduct the sanitary training. The working experience and academic background of dietitians influenced on the item of sanitary training, not on the frequency of training.

Research on the Contents Construction for the Information-oriented Family Life and Development of Professional Occupations : Based on the Analysis of the Present Condition of Information Needs among the Human Ecology Majors (가정생활 정보화 콘텐츠 구성과 전문 직업 개발을 위한 연구 : 생활과학 전공자의 정보화 요구 실태분석을 통하여)

  • This study is aimed at sowing two purposes. The first is to analyze the real condition and demand of profession development from the human ecology majors. The second is to develop necessary methods in which ordinary people can collect necessary information about family life. Related questionnaire was distributed to 147 the human ecology majors, and analysis was performed on the several web sites providing with information related to family life. Web sites such as“www.yahoo.com”and“www.naver.com”were included in the analysis. Questionnaire consisted of questions about whether the students majoring in the human ecology were familiar with the information-related terms or futuristics-related books, and whether they have ever taken the related courses in college. The results of analysis are as follows: First, analysis shows that the present level of the human ecology majors' information orientation and networking experiences is extremely low. Secondly, according to the analysis on whether they have optimistic or pessimistic attitude toward the contemporay informatized society, the human ecology majors have rather optimistic attitude in group while having pessimistic one individually. As to their response to the question about whether informatized society is connected with industrial society or not, the human ecology majors are divided in neatly equal ratio. Thirdly, analysis of the human ecology majors' understanding of profession relevant to their major indicates that they have high level of perception and information about the professions of fashion designing, traditional garment designing, nutrition counselling or consumer counselling. On the other hand, they are not familiar with the information about professions such as professional QR Programming, eating habit-related information business and family welfare. Lastly, level of web sites supplying information about family life is fragmentary. Especially, probe into the directories providing with necessary information of family life subdivided into special areal of life shows that they lack systematic organization making more convenient consumer use.

A Prospective Study : Human Ecology-Based Researches in Korea Facing Global Promotion (세계화시대와 가정학 연구)

  • Human Ecology researches studying human life patterns in Korea are on the same tracts of recent global promotion in Korea as that of other academic studies. In this changing academic atmosphere, Human Ecology-based researches are in demands of suitable research topics and methods. This study was done to investigate the present research situations of Human Ecology-based subdivisional fields, including food and nutrition, clothing and textiles, child studies, family studies, home management, housing studies, consumer sciences and home economics education, by an increasing need in the society of KHEA (Korean Home Economics Association). The study focused on understanding the trends of research topics and methods shown in the papers published in major academic periodicals in Korea as well as world-class (SCI, SSCI) journals in order to predict the future for Ecology-based studies in Korea. The data were collected from all periodicals from January, 2000 to August, 2003, listed in the Korean Research Foundation and from world-class journals comparable to the former. Twenty-six periodicals were chosen for analysis, including papers with authors of ecology-based, field faculty at colleges or universities. There were some differences between the Korean and world-class research topics and methods. In order to narrow the gap between the two, we suggested that serious consideration be given to the research's application-ability toward human beings, which would be the home-ecology study's identity. The same criteria in these fields as used in other natural science fields are not suitable for supporting and evaluating research proposals and outputs, and recent global academic promotions may not be desirable in some respects. However, they do present an opportunity to expose Korean researcher's to world-class scientific societies and upgrade their studies. These efforts should stimulate the field of Human-Ecology studies and enhance the recognitions of these fields among future students.
