This study investigated the quality change of strip loin from hanwoo with quality grade 2 produced by dry aging, and compared the quality of dry-aged strip loin with that of strip loin from hanwoo with quality grade $1^+$. Hanwoo strip loins with quality grade $1^+$ (SL1) and 2 (SL2) after a day of slaughter and dry-aged strip loin (DSL2) aged for 21 days at $2^{\circ}C$ with 85% humidity were obtained from local markets. The proximate composition, pH, cooking loss, lipid oxidation, instrumental color (CIE $L^*$, $a^*$ and $b^*$ value) and sensory properties of the strip loins were measured. DSL2 contained low moisture and high protein contents compared with SL2, and low fat, high protein, and high ash contents compared with SL1 (p<0.05). The pH and cooking loss were higher and lower, respectively, in DSL2 compared to SL2 (p<0.05). SL1 had a higher pH than DSL2 (p<0.05). However, the cooking loss was not different between SL1 and DSL2. The TBARS value was the highest in DSL2 and the lowest in SL2 (p<0.05). DSL2 had higher $L^*$ and $b^*$ value compared with SL2 (p<0.05). There were no significant differences of $L^*$, $a^*$ and $b^*$ values between DSL2 and SL1. Sensory properties such as the color, flavor, taste, texture, and acceptability of DSL2 were higher than those of SL2 (p<0.05). There was no significant different in all sensory properties between DSL2 and SL1. According to the results, dry aging can improve the nutritional and sensorial quality of strip loin with quality grade 2 to quality comparable to quality grade $1^+$.
The purpose of this study was to measure consumers' recognition of service quality in Korean restaurants, and to compare the differences in perceived service quality according to consumers' general characteristics. Self-administrated questionnaires were completed by 1,494 subjects and data were analysed by frequency, factor, reliability, and subjected to t-test and one-way ANOVA. The major results of this study can be outlined as follows: Factor analysis on perceived service quality resulted in 4 factors: staff service (5 variables), menu quality (4 variables), price and value (4 variables) and atmosphere and convenience (5 variables). Cronbach's alpha values for the reliability were over 0.8 for all the factors. The mean value in the elicited factors was indicated to be in order of menu quality ($4.73{\pm}1.19$), atmosphere and convenience ($4.57{\pm}1.09$), price and value ($4.55{\pm}1.15$), and staff service ($4.46{\pm}1.12$). Also, a significant difference was shown in service quality, which was perceived according to consumers' general characteristics. A higher mean value in perceived service quality was shown in women than in men, in the older than in the younger, in people with a high frequency of visiting Korean restaurants than those who do so with low frequency, and in people with high cost expenditure when visiting than those with low cost expenditure. In terms of region, the mean value in perceived service quality was significantly lower for consumers in the Gwangju region than in other regions.
Objectives: The objective of this study was to build COD regression models for the Han River and evaluate water quality. Methods: Water quality data sets for the dry season (as of January) during a four-year period (2012-2015) were collected from the database of the Han River automatic water quality monitoring stations. Statistical techniques, including combined genetic algorithm-multiple linear regression (GA-MLR) were used to build five-descriptor COD models. Multivariate statistical techniques such as principal component analysis (PCA) and cluster analysis (CA) are useful tools for extracting meaningful information. Results: The $r^2$ of the best COD models provided significant high values (> 0.8) between 2012 and 2015. Total organic carbon (TOC) was a surrogate indicator for COD (as COD/TOC) with high reliability ($r^2=0.63$ in 2012, $r^2=0.75$ for 2013, $r^2=0.79$ for 2014 and $r^2=0.85$ for 2015). The ratios of COD/TOC were calculated as 2.08 in 2012, 1.79 in 2013, 1.52 and 1.45 in 2015, indicating that biodegradability in the water body of the Han River was being sustained, thereby further improving water quality. The BOD/COD ratio supported these findings. The cluster analysis revealed higher annual levels of microorganisms and phosphorous at stations along the Hangang-Seoul and Hantangang areas. Nevertheless, the overall water quality over the last four years showed an observable trend toward continuous improvement. These findings also suggest that non-point pollution control strategies should consider the influence of upstreams and downstreams to protect water quality in the Han River. Conclusion: This data analysis procedure provided an efficient and comprehensive tool to interpret complex water quality data matrices. Results from a trend analysis provided much important information about sources and parameters for Han River water quality management.
HTTP adaptive streaming has recently emerged to handle the rapidly growing traffic and to provide high quality multimedia contents. To improve the QoE (Quality of Experience) for HTTP adaptive streaming service, the average video bitrate should be maximized, and the video switching frequency (difference of bitrate between adjacent segments) and video stalling events need to be minimized. The recently proposed quality adaptation algorithms for HTTP adaptive streaming do not provide high QoE, since detailed QoE factors such as video switching frequency and bitrate difference of adjacent segments, are not considered. In this paper, we propose a SQA (Smooth Quality Adaptation) algorithm to improve the user QoE. The proposed algorithm provides the smoothed QoE, such that it minimizes the unnecessary video switching events by maintaining the quality in a certain period, thus minimizing the bitrate difference of adjacent segments. Through simulation, we confirm that the proposed algorithm reduces the unnecessary switching events, and prevents the sudden decrease in video quality.
BACKGROUND/OBJECTIVES: Due to recent changes in social structure, single-person households are on the rise worldwide and therefore the interest in the quality of life of singles is increasing, but the research on the relationships related to their diet-related quality of life is scarce. This research analyzes the structural relations in the effect of convenience food satisfaction and quality of life according to dietary style of Korean, Japanese and Chinese singles. SUBJECTS/METHODS: The targets of this study were Korean, Japanese, and Chinese singles, identified as adults between the ages of 25 and 54, having economic capabilities or working and living alone, either legally or in actuality having no partner. A statistical analysis was conducted using SPSS12.0 for Windows and SEM using AMOS 5.0 statistics package. The reliability of these findings was supported by a Cronbach's alpha coefficient of 0.6 and higher for all the factors. In an attempt to study the level of satisfaction with convenience food in accordance to dietary style and the quality of life of singles, a structural equation model was constructed and analyzed. RESULTS: Of the three countries, regarding the effect of dietary style on singles' quality of life, the convenience-oriented style was found to have a negative effect on Korean singles' overall quality of life, but a positive effect on Japanese singles' overall quality of life, and a negative effect on Chinese singles' positive psychological aspect of quality of life. In addition, although Chinese singles have a high level of interest in health, they have an overall high level of satisfaction regarding fast food and its nutritional value. CONCLUSIONS: The number of singles in Korea, Japan, and China has been consistently increasing in recent years, and there is a need for continuous interest in their healthy dietary lifestyles in terms of convenience, economy, and taste.
This study intended to provide fundamental data to take countermeasures against recurrent stress by analyzing the health-related quality of life and factors for recurrent stress of alcohol dependents. Structured questionnaire was prepared for patients who quitted drinking after they had been hospitalized for alcohol dependence to take medical treatment but suffered recurrence, and analysis on health-related quality of life and environmental factors with drinking risk was conducted. The quality of life was at a relatively satisfactory level, where pain was found at the highest level and general health condition was found at the lowest level. Environmental factors with drinking risk were found to be a moderate level, drinking for the reason of family and friends in terms of complications with other persons was found to be highest, and then job, self control, bad emotions, and social pressure on drinking were found in order. For health-related quality of life, the quality of life was found to be high in case of the only son, professional job, well-educated persons, and no history of hospitalization. Regarding factors for recurrent stress, stress was found to be high in case of the eldest son and being without religion, and the lower was the quality of life, the higher were recurrent stress and environmental factors with drinking risk. It was found that demographic factors including age, marriage, and job influenced the recurrence of alcohol dependence, and factors for recurrent stress, etc. also influenced recurrent alcohol dependence with drinking risks. Specially, the lower was the quality of life, the higher were factors for recurrent stress, and drinking risks, therefore measures to improve the quality of life are required to be taken to prevent alcohol dependence from recurrence.
Purpose: This study was to identify the degree of health-promoting behavior and quality of life and the factors influencing quality of life of solitary elderly in rural areas. Method: The subjects of this study were 202 solitary elderly, and 65-89, who had been living in four rural areas. Data was collected through 4 questionnaires from July 10th, 2003 to August 30th, 2003. The collected data was analyzed using descriptive statistics, t-test, ANOVA, Duncan's multiple-range test, Pearson correlation coefficient and Stepwise multiple regression with SPSS/PC. Results: The average item score for the health-promoting behavior was 2.43; the highest score on the subscale was self-actualization (M=2.58) with the lowest being exercise (M=2.05). 2) The average item score for the quality of life was 2.81; the highest score on the subscale was neighbor relationships (M=3.27) with the lowest being economic conditions (M=2.24). There were significant differences in the health-promoting behavior by educational level and leisure-activity, in the quality of life by age and religion. Quality of life scores correlated negatively with depression scores (r=-.063, p=.000) and positively with health-promoting behavior (r=.144, p=.000), social support scores (r=.383, p=.000). Stepwise multiple regression analysis for quality of life revealed that the most powerful predictor was health-promoting behavior. Health-promoting behavior, social support, depression and age explained 51.8% of the variance. Conclusion: These results suggested that elderly people in rural areas with high degree of quality of life are likely to be high in health-promoting behavior and social support and low in depression. Therefore, it is necessary to develop health promotion programs in due consideration of health-promoting behavior and social support and depression in order to enhance the quality of life of solitary elderly in rural areas.
Objectives: The present study aimed to evaluate the usability, quality, and usefulness of the mobile application, CAMBRA-kids, for caries management in preschoolers. Methods: Ninety-one caregivers and preschoolers participated in the user evaluation of CAMBRA-kids. The evaluators assessed the usability, quality, and usefulness of CAMBRA-kids. The collected data were analyzed using R studio 1.2.1335 for Windows (RStudio Inc. 2018, Boston, MA, USA). The evaluations for usability, quality, and usefulness were analyzed with descriptive statistics, Kruskal-Wallis rank sum test, and Wilcoxon rank sum test. Results: On user evaluation, the quality and usefulness of the application scored >3 points, and majority of the users rated the quality and usefulness of the application as high. The quality of the application's system was the highest at 3.68 points, and the actual usage of the application was the lowest at 3.10 points. The application had the highest technological aspect score of 3.20, whereas the content related to oral health information had the lowest score of 3.10/5. Although the application showed no statistically significant differences in the quality and usefulness according to general characteristics, there was a statistically significant difference (p<0.05) between the two when compared between the caries risk group. For all items, the protector of the high-risk group evaluated the quality and usefulness of the application highly. The moderate risk group gave the lowest evaluation score for the application's quality and usefulness. The usability score of the application, according to the user version of the mobile application rating scale (uMARS), was 3.25, and the average engagement score was 2.82 (56.31%). The highest subscale score was 3.63. Conclusions: In this study, we found suitable quality, usability, and usefulness of the mobile application, CAMBRA-kids. In future, the use of this application will contribute to the prevention of dental caries among preschoolers.
Water quality models are scientific tools that simulate and interpret the relationship between physical, chemical and biological reactions to external pollutant loads in water systems. They are actively used as a key technology in environmental water management. With recent advances in computational power, water quality modeling technology has evolved into a coupled three-dimensional modeling of hydrodynamics, water quality, and ecological inputs. However, there is uncertainty in the simulated results due to the increasing model complexity, knowledge gaps in simulating complex aquatic ecosystem, and the distrust of stakeholders due to nontransparent modeling processes. These issues have become difficult obstacles for the practical use of water quality models in the water management decision process. The objectives of this paper were to review the theoretical background, needs, and development status of water quality modeling technology. Additionally, we present the potential future directions of water quality modeling technology as a scientific tool for national environmental water management. The main development directions can be summarized as follows: quantification of parameter sensitivities and model uncertainty, acquisition and use of high frequency and high resolution data based on IoT sensor technology, conjunctive use of mechanistic models and data-driven models, and securing transparency in the water quality modeling process. These advances in the field of water quality modeling warrant joint research with modeling experts, statisticians, and ecologists, combined with active communication between policy makers and stakeholders.
With the advancement of technology, the market size of online bookstores is constantly increasing in Korea. Despite the importance of the quality of services provided by online bookstores as many customers use online bookstores, many existing studies have approached only from a linear perspective that satisfying service quality factors will lead to customer satisfaction. In addition, the service quality of online bookstores has only been addressed in general and universal service situations, such as SERVQUAL and e-SERVQUAL and WebQual, or online situations. This study was conducted to consider the specificity of online bookstores and to establish specific strategies for improving service quality. In this study, we present six higher dimensions of service quality for online bookstores and 25 lower dimensions to measure it, and we confirm strategic direction for service quality elements through IPA analysis. As a result of the analysis, a total of 12 factors were included in the first quadrant, which required maintenance of service quality due to the high importance and satisfaction perceived by customers. Next, the importance of customers is high, but their satisfaction is low, so the second quadrant that should be improved first had a total of two factors. Third, the third quadrant was an area where customers perceived low importance and satisfaction, and a total of nine factors were involved. Finally, the fourth quadrant was an area where the customer was satisfied but perceived low importance, with a total of two factors. The results of this study can be used as basic data for strategic use of online service quality factors.
