Carcass Traits and the Quality of Meat from Cattle Finished on Diets Containing Barley

  • Research on barley as an animal feed started some decades ago but its utilization in animal production has been limited to countries that grow the crop extensively. Corn has been the most popular energy feed in cattle rations, but the high price of corn and the decreased supply of the grain in the international market have shifted the focus of the animal industry to other cereal crops like barley. Studies have indicated that growth performance of cattle fed barley-based diets has been generally comparable with that of those fed corn-based diets, while results for cattle fed whole-crop barley silage have been more variable. Beef from cattle fed barley-based diets has proved to be as tender and as acceptable for taste as that from animals fed other finishing diets when compared at similar growth rates and degree of finish. The barley crop contains good amounts of antioxidants like 2"O-GIV isovitexin, so from the meat science point of view, a desirable influence of these components on meat quality traits such as meat color, oxidative stability and sensory characteristics might be expected. Furthermore, the effect of the distinctive fatty acid profile of beef fed from whole-crop barley silage on sensory traits is also an important subject to be elucidated. A lot of studies have been made over past decades on the effect of barley, and especially whole crop barley, on beef cattle production and meat quality, but these data have not been collectively documented in a review. The current review re-visits previous literature to underline the effects of barley in the diet on beef quality traits and to identify areas for further studies.

Effects of Combining Feed Grade Urea and a Slow-release Urea Product on Characteristics of Digestion, Microbial Protein Synthesis and Digestible Energy in Steers Fed Diets with Different Starch:ADF Ratios

  • As a result of the cost of grains, the replacement of grains by co-products (i.e. DDGS) in feedlot diets is a common practice. This change produces diets that contain a lower amount of starch and greater amount of fibre. Hypothetically, combining feed grade urea (U) with slow release urea (Optigen) in this type of diet should elicit a better synchrony between starch (high-rate of digestion) and fibre (low-rate of digestion) promoting a better microbial protein synthesis and ruminal digestion with increasing the digestible energy of the diet. Four cannulated Holstein steers ($213{\pm}4$ kg) were used in a $4{\times}4$ Latin square design to examine the combination of Optigen and U in a finishing diet containing different starch:acid detergent fibre ratios (S:F) on the characteristics of digestive function. Three S:F ratios (3.0, 4.5, and 6.0) were tested using a combination of U (0.80%) and Optigen (1.0%). Additionally, a treatment of 4.5 S:F ratio with urea (0.80% in ration) as the sole source of non-protein nitrogen was used to compare the effect of urea combination at same S:F ratio. The S:F ratio of the diet was manipulated by replacing the corn grain by dried distillers grain with solubles and roughage. Urea combination did not affect ruminal pH. The S:F ratio did not affect ruminal pH at 0 and 2 h post-feeding but, at 4 and 6 h, the ruminal pH decreased as the S:F ratio increased (linear, p<0.05). Ruminal digestion of OM, starch and feed N were not affected by urea combination or S:F ratio. The urea combination did not affect ADF ruminal digestion. ADF ruminal digestion decreased linearly (p = 0.02) as the S:F ratio increased. Compared to the urea treatment (p<0.05) and within the urea combination treatment (quadratic, p<0.01), the flow of microbial nitrogen (MN) to the small intestine and ruminal microbial efficiency were greater for the urea combination at a S:F ratio of 4.5. Irrespective of the S:F ratio, the urea combination improved (2.8%, p = 0.02) postruminal N digestion. As S:F ratio increased, OM digestion increased, but ADF total tract digestion decreased. The combination of urea at 4.5 S:F improved (2%, p = 0.04) the digestible energy (DE) more than expected. Combining urea and Optigen resulted in positive effects on the MN flow and DE of the diet, but apparently these advantages are observed only when there is a certain proportion of starch:ADF in the diet.

Effect of Disodium Fumarate on In vitro Rumen Fermentation of Different Substrates and Rumen Bacterial Communities as Revealed by Denaturing Gradient Gel Electrophoresis Analysis of 16S Ribosomal DNA

  • Two experiments were conducted to investigate the effects of disodium fumarate on the in vitro rumen fermentation profiles of different substrates and microbial communities. In experiment 1, nine diets (high-forage diet (forage:concentrate, e.g. F:C = 7:3, DM basis), medium-forage diet (F:C = 5:5, DM basis), low-forage diet(F:C = 1:9, DM basis), cracked corn, cracked wheat, soluble starch, tall elata (Festuca elata), perennial ryegrass and rice straw) were fermented in vitro by rumen microorganisms from local goats. The results showed that during 24 h incubations, for all substrates, disodium fumarate increased (p<0.05) the gas production, and tended to increase (p<0.10) the acetate, propionate and total VFA concentration and decrease the ratio of acetate to propionate, whereas no treatment effect was observed for the lactate concentration. The apparent DM loss for tall elata, perennial ryegrass and rice straw increased (p<0.05) with the addition of disodium fumarate. With the exception of tall elata, perennial ryegrass and rice straw, disodium fumarate addition increased the final pH (p<0.05) for all substrates. In experiment 2, three substrates (a high-forage diet, a medium-forage diet and a high concentrate diet) were fermented by mixed rumen microbes in vitro. A polymerase chain reaction-denaturing gradient gel electrophoresis (PCR-DGGE) technique was applied to compare microbial DNA fingerprints between substrates at the end of 24 h incubation. The results showed that when Festuca elata was used as substrate, the control and disodium fumarate treatments had similar DGGE profiles, with their similarities higher than 96%. As the ratio of concentrate increased, however, the similarities in DGGE profiles decreased between the control and disodium fumarate treatment. Overall, these results suggest that disodium fumarate is effective in increasing the pH and gas production for the diets differing in forage: concentrate ratio, grain cereals and soluble starch, and in increasing dry matter loss for the forages (tall elata, perennial ryegrass and rice straw) in vitro, whereas its effect on changes of ruminal microbial community may largely depend on the general nature of the substrate.

급이에 의한 강제 환우 방법이 산란계의 생산성과 계란 품질에 미치는 영향 (Effect of Feeding-Induced Molting on the Performance and Egg Quality in Laying Hens)

  • 본 시험은 동물 복지 차원에서 절식에 의한 강제 환우를 지양하고 사료를 급여하는 강제 환우 방법이 산란계의 생산성 및 난질에 미치는 영향을 알아보고자 60주령 White Leghorn 산란계 400수를 공시하여 34주간 실시하였다. 처리구는 관행적으로 절식한 환우구(C), 옥수수 단일 사료 급여(T1), 밀기울 단일 사료 급여(T2) 및 알팔파 단일 사료를 급여(T3)한 4처리로서, 처리구당 5반복, 반복당 20수씩 철제 케이지에 완전임의 배치하였다. 시험 결과 산란율 및 1일 산란량은 산란 후 $1{\sim}4$주간에만 T1에서 대조구에 비하여 유의적으로 감소하였으나(P<0.05), 전 시험 기간 동안에는 강제 환우 방법간에 차이를 보이지 않았다. 사료 섭취량은 $1{\sim}4$주에 T1에서 대조구에 비하여 통계적으로 감소하였으나(P<0.05), 전 시험 기간에는 처리구간에 차이가 없었다. 또한, 사료 요구율도 전 시험 기간 동안 처리구간에 유의적인 차이를 보이지 않았다. 난각 두께는 산란 후 10, 14주에 옥수수만을 급여한 T1구가 대조구에 비하여 유의적으로 개선되었으나(P<0.05), 26주에는 옥수수(T1)와 밀기울(T2)만을 급여한 처리구가 대조구에 비해 유의적으로 감소하였다(P<0.05). 난각 강도와 호우 유니트는 환우 방법에 따른 차이를 보이지 않았다. 난황색은 6주에 T1구와 T2구가 대조구에 비하여 유의적으로 감소하였으나(P<0.05), 18주에는 T1구와 T2구가 대조구나 T3구에 비하여 유의적으로 높았다(P<0.05). 시험 결과 사료 급여와 절식을 이용한 강제 환우 방법간에 생산성에서는 커다란 차이를 보이지 않았으며, 난질에서도 차이를 보이지는 않았다. 또한 사료 급여를 이용한 강제 환우에서는 알팔파만을 단독으로 급이한 강제 환우 방법이 옥수수나 밀기울을 급여한 강제 환우 방법보다는 생산성에서 통계적으로 유의차는 보이지 않았으나 우수한 경향을 보였다.

Fruit and vegetable discards preserved with sodium metabisulfite as a high-moisture ingredient in total mixed ration for ruminants: effect on in vitro ruminal fermentation and in vivo metabolism

  • Objective: Our recent series of laboratory- and large-scale experiments confirmed that under aerobic and anaerobic conditions, sodium metabisulfite (SMB) was effective in preserving nutrients and antioxidant capacity of highly perishable fruit and vegetable discards (FVD). Hence, the purpose of this study was to examine how partial inclusion of SMB-treated FVD in total mixed ration (TMR) influences in vitro ruminal fermentation, whole-tract digestibility, nitrogen metabolism, blood metabolites, and voluntary feed intake of sheep. Methods: The FVD were mixed thoroughly with 6 g SMB/kg wet biomass and kept outdoors under aerobic conditions for 7 days. Four TMRs including four levels of SMB-treated FVD (as-fed basis) at 0%, 10%, 20%, and 30% (equaling to 0%, 1.9%, 3.8%, and 5.7% on dry matter basis, respectively), were prepared as replacement for corn grain. The ruminal fermentation metabolites were studied using an in vitro gas production test. Four mature male Corriedale sheep were assigned at random to the 4 diets for two separate sub-experiments; i) digestibility trial with four 21-d periods, and ii) voluntary feed intake trial with four 28-d periods. Results: Inclusion of SMB-treated FVD in the TMR tended to quadratically increase partitioning factor. No effect was seen on total-tract digestibility of organic matter, ether extract, crude protein, and acid detergent fiber, except for neutral detergent fiber digestibility that tended to linearly increase with increasing SMB-treated FVD in the TMR. The progressive increase of FVD preserved with SMB in the diet had no effect on nitrogen metabolism. Treatment had no effect on serum antioxidant capacity and blood metabolites assayed. Voluntary feed intake was not impaired by inclusion of SMB-treated FVD in the TMR. Conclusion: It appears that FVD preserved with SMB can be safely incorporated into TMR as replacement of corn grain without impairment of nutrient metabolism and feed intake.

Diurnal Variations in Milk and Blood Urea Nitrogen and Whole Blood Ammonia Nitrogen in Dairy Cows

  • The levels of urea nitrogen both in blood (BUN) and milk (MUN), and milk protein (MP) reflect protein and energy intake in dairy herd feeding. Blood and milk constituents may be changes rhythmically and influence by different sampling time within a day and after feeding. Trials were conducted using five dietary treatments in both lactating and dry cows to study the effects of sampling time on concentrations of BUN, MUN and whole blood ammonia nitrogen (BAN) in practical dairy cow feeding in Taiwan. The conventional feed ingredients and forages including corn silage, alfalfa hay, timothy or pangola hay and corn grain were used as major source of the diet to follow practical dairy cow feeding. Five different diets were varying in amounts (low=L; standard=S; high=H) of crude protein (P) and energy (E) according to the NRC (1989). The energy to protein ratios in kcal/kg for the PSES, PLES, PHES, PSEH and PSEL were 10.82, 12.54, 9.41, 12.53 and 9.13 in lactating cows, and 11.38, 13.33, 9.78, 13.28 and 9.74 in dry cows, respectively. Results showed that after feeding at 9:30, BUN reached peak at 13:30 and was significantly higher than those to that sampled at 14:30 to 18:30 (p<0.05) in dry cows. Therefore the best blood sampling time for urea nitrogen assay in dry cows is 4 hours after morning feeding. In lactating cows, BUN of 13:30 was significantly higher than those of 8:30 to 11:30 (p<0.05), but there were no significant difference between the BUN values of other sampling time. Hence the suitable blood sampling time for BUN value in lactating cows was located on 3 to 8 hours after morning feeding, but the best time was 4 hours after morning feeding. MUN content is significantly higher in the afternoon collected bulk milk than the fore-strip morning milk (p<0.05), therefore the best sampling time for MUN is from afternoon collected bulk milk. Diurnal BAN changed without traceable rhythmic pattern and was negatively correlated to the BUN (r = -0.78). It is suggested that BAN may not be a good indicator for monitoring dairy cow feeding.

담수산 새우, Macrobrachium nipponense (De Haan)의 증${\cdot}$양식에 관한 생물학적 기초연구 2. 생활사 및 종묘생산에 관한 연구 (Studies on the Propagation of the Freshwater Prawn, Macrobrachium nipponense (De Haan) Reared in the Laboratory 2. Life History and Seedling Production)

  • 담수산 새우 Macrobrachium nipponense의 생활사와 종묘 생산에 관한 연구를 수행한 결과 다음과 같은 결론을 얻었기에 보고하는 바이다. 1. 발생 과정 : 부화된 zoea 유생의 크기는 2.06 mm였고 $15{\~}20$일에 걸쳐 9단계의 zoea 유생기를 거쳐 후기 치하로 변태하였으며 이때의 체장은 5.68 mm였다. 각 zoea 유생 단계는 제 1, 2 안테나의 형태, 제 1, 2 보각의 내${\cdot}$외지의 형태 및 미절과 소악의 형태에 따라 분류할 수 있었다. 2. Zoea 유생기의 환경 : Zoea 유생은Artemia의 유생을 먹고 건강하게 성장하였으며, 수온 $26{\~}28^{\circ}$, 염분도 $7.85{\~}8.28{\%_{\circ}}Cl.$에서 변태율이 $65\~72{\%}$를 보였다. 수온 $26{\~}32^{\circ}C$에서 생존율이 높았으며 (최적 수온 $28^{\circ}C$), 염분 범위 $4.12\~14.08\%_{\circ}Cl.$에서 생존율이 높았고(최적 염분 $7.6\~11.6\%_{\circ}\;Cl.$) 염분도가 적정 범위에서 멀어질수록 특히 높아질수록 zoea 유생기가 길어지는 경향을 보였다. 담수에서 zoea 유생은 모두 폐사하였다. zoea 유생 발생단계(Y)와 수온(X)와의 관계는 Y=46.09-0.9673X로 나타났다. 3. 후기 유생 및 치하기의 환경 : 후기 유생기의 적정 성장 수온은 $24\~32^{\circ}C$(최적 $26\~28^{\circ}C$)였으며, 치하기까지의 생존율은 $41{\~}63{\%}$를 나타내었다. 수온 $17^{\circ}C$이하에서는 후기 유생의 성장은 중지되었으며 적정 수온 범위내에서는 공식 현상이 더 많이 나타나는 경향이 보였다. 후기 유생기와 치하기의 정상 성장 염분 범위는 $0{\~}11.24{\%_{\circ}Cl.$이었으며 이때의 생존율은 $32{\~}35{\%}$를 나타내었다. 후기 유생기의 최적 염분 농도는 $0\~2.21\%_{\circ}Cl.$였으며 담수에서는 성장이 양호하였으나 순 해수에서는 폐사하였다. 4. Zoea 유생의 먹이 공급 효과 : Zoea 유생기에 먹이로 알테미아의 노플리우스 유생, 노플리우스 유생의 클로렐라에 혼합하여 공급한 것, 윤충류, 인공 플랑크톤을 수조 내에서 먹인 경우 생존과 후기 유생기로의 변태가 진행되었으나 가장 좋은 것은 Artemia nauplius 유생을 Chlorella sp.와 혼합한 물에서 사육하였을 경우였고 이 때의 변태율은 $68{\~}75{\%}$를 보였다. 소 간의 분말, 계란 분말, Chlorella sp.만을 먹인 것은 폐사하였다. 5. 후기 유생과 치하 및 성체의 먹이 : 후기 유생기의 먹이는 Artemia nauplius 유생이나 물벼룩 등 수중갑각류를 공급할 수 있고, 치하기나 성체에는 이들 외에 조개 살이나 어육, 다모환충류, 곡류, 펠렛 사료 등과 사람이 이용할 수 없는 가축의 내장이나 과일 등을 먹는다. 6. 후기 유생과 치하 및 성체의 성장 : 최적 조건 하에서 후기 유생은 매 $5\~6$일마다 변태하였고 치하기까지 2개월이 소요되었으며, 이때의 체장은 1.78 m, 체중은 0.17 g을 나타내었다. 치하의 성장은 4개월 정도에 체장 3.52 cm, 체중 1.07 g으로 성장하였으며 이때 암수의 구별이 수컷의 2차 성징을 나타내는 rudimental processes에 의해 가능하였다. 수컷은 성적 성숙이 후기 유생기로부터 7개월 후에 이루어지며, 이때의 크기는 체장 5.65 m, 체중 3.41 g이었고, 암컷도 $6{\~}7$개월 후에 성적 성숙이 되며 이때 체장은 4.93 m, 체중은 2.43 g이었다. 부화후 $9{\~}10$개월 후에 수컷은 체장 $6.62\~7.14$ m, 체중 $6.68{\~}8.36$ g으로 성장하였고, 암컷은 체장 $5.58{\~}6.08$ m, 체중 $4.04{\~}5.54$ g으로 성장하였다. 7. 방양 밀도 : 수조에서 30일간 사육한 결과 성장과 생존이 양호한 zoea 유생의 최대 밀도는 수량 1l 당 $60\~100$개체였고, 이때의 후기 유생으로의 변태율은 $73{\~}80{\%}$였다. 체장 0.57 m의 후기 유생을 120일간 사육한 결과 적정 밀도는 $1\;m^2$$100{\~}300$개체였고 이때의 생존율은 $78{\~}85{\%}$였으며, 체장 2.72 m의 치하기에 120일간 사육한 결과 적정 밀도는 $1m^2$$40{\~}60$개체였고 생존율은 $63{\~}90{\%}$였다. 체장 5.2 m의 어린 새우의 120일간사육시의 적정 밀도는 $1\;m^2$$20{\~}40$ 개체였으며 생존율은 $62{\~}90{\%}$를 나타내었고, 체장 6.1 m의 경우 60일간 사육한 결과 적정 밀도는 $1\;m^2$$10{\~}$30개체로 나타났고 이때 생존율은 $73{\~}100{\%}$였다. 유생기와 어린 새우의 사육에서 숨을 수 있는 은폐물을 넣어 준다면 위의 밀도를 약 2배 가량 증가시킬 수 있을 것으로 사료된다.
