Nutritional Evaluation of the School Lunch Program : The Nutritent Density and Nutrients that affect the Cost of a Meal (학교급식식단의 영양평가 : 식단의 영양밀도 및 식단가에 영향을 미치는 영양소 연구)

  • To provide approprate nutrition informatios and guidelines for the healthy school lunch program(SLP) menus, the nutritional quality of the SLP and the nutrients that affect the food cost of SLP were evaluated after analysis of recipes and food price lists of 776 menus collected from 10 elementary SLP schools in Seoul and Kyunggi province in Korea in the year of 1995. Index of nutritional quality of SLP menus were good enough, showing over 1.0 in all nutrients except vitamin A(0.86) in kyunggi province. The percent of calories from carbohydrates, protein and fat was 52%, 16% and 32%, while the polyunsaturated fatty acid/monousaturate fatty acid/saturated fatty acid(P/M/S) ratio was 1.0/0.95/1.15. On the other hand, the nutrient-cost evaluation showed that the most expersive nutrient for the RDA(Recommended Dietary Allowance) standard of SLP was origined from the cost of energy and vitamin A. In Pertary correlation analyses, the cost of SLP meals was positively asociated with energy(r=0.244, p<0.001), protein(r=0.306, p<0.001) and carbohydrate(r=0.159, p<0.001) in diet, while the most important predictor of the cost of SLP meal provides sufficient nutrients with enough calories, but fat level is somewhat higher than the suggested value from Dietary Guidelines for Koreans. These data also suggest that meals which could offer enough vitamin A might be included in SLP menus and the cost of a SLP meal can be reduced when choosing the cheap protein source food.

The Effects of Green Vegetable Juice (Angelica Keiskei) Supplementation on Plasma Lipids and Antioxidant Status in Smokers (신선초 녹즙섭취가 흡연자의 지질 수준 및 혈장 항산화 비타민 영양상태에 미치는 영향)

  • It has been suggested that green juice supplementation may have some health promoting benefits. We evaluated the effects of green juice (Angelica keiskei) consumption on parameters of lipid profiles and plasma antioxidant status in healthy male smokers. Fifty-four smokers were supplemented with 300 ml of green juice for 6 weeks while maintaining their normal diet. Blood samples were collected on week 0 and week 6 in order to evaluate plasma lipid profiles (total cholesterol, triglyceride, LDL-cholesterol, HDL-cholesterol) , plasma antioxidant vitamin levels (ascorbic acid, $\alpha$ -tocopherol, ${\gamma}$ -tocopherol, $\alpha$ -carotene, $\beta$ -carotene, cryptoxanthin and lycopene) , the degree of LDL oxidation and GOT, GPT levels for liver function. Plasma ascorbic acid level remained at the same level. However, $\alpha$ -tocopherol and ${\gamma}$ -tocopherol normalized by total cholesterol (p <0.05) and $\beta$ -carotene (p <0.001) level were all significantly increased after green juice supplementation. Plasma cholesterol was reduced for 12%, LDL-cholesterol was reduced for 9.3% after green juice consumption, while plasma triglyceride and HDL-cholesterol was not changed. Oxidized LDL assessed by conjugated diene (CD) , was decreased (p < 0.0001) after green juice consumption. These results further support a role for green juice supplementation in the improvement of lipid status, prevention of lipid peroxidation, and thereby reducing risk factors of numerous diseases associated with elevated oxidative stress in smokers.

Postprandial hypoglycemic effect of mulberry leaf in Goto-Kakizaki rats and counterpart control Wistar rats

  • Postprandial hypoglycemic effect of mulberry leaf (Morus alba L.) was compared in two animal models: Goto-Kakizaki (GK) rats, a spontaneous non-obese animal model for type II diabetes, and their counterpart control Wistar rats. First, the effect of a single oral administration of mulberry leaf aqueous extract (MLE) on postprandial glucose responses was determined using maltose or glucose as substrate. With maltose-loading, MLE reduced peak responses of blood glucose significantly in both GK and Wistar rats (P < 0.05), supporting the inhibition of $\alpha$-glucosidase by MLE in the small intestine. With glucose-loading, MLE also significantly reduced blood glucose concentrations, measured at 30 min, in both animal models (P < 0.01), proposing the inhibition of glucose transport by MLE. Next, dried mulberry leaf powder (MLP) was administered for 8 weeks by inclusion in the diet. By MLP administration, fasting blood glucose was significantly reduced at weeks 4 and 5 (P < 0.05), but then returned to values that were similar to those of the control at the end of experimental period in GK rats. Insulin, HOMA-IR, C-reactive protein, and triglycerides tended to be decreased by MLP treatment in GK rats. All other biochemical parameters were not changed by MLP administration in GK rats. Collectively, these findings support that MLE has significant postprandial hypoglycemic effect in both non-obese diabetic and healthy animals, which may be beneficial as food supplement to manage postprandial blood glucose. Inhibitions of glucose transport as well as $\alpha$-glucosidase in the small intestine were suggested as possible mechanisms related with the postprandial hypoglycemic effect of MLE.

  • Objective The purpose of this study was to investigate the effects of Sweet Bee Venom to the abdominal fat accumulation clinically. Methods The 20 healthy women volunteers who showed the notice of this study by the home page of Sangji University were treated with Sweet Bee Venom(SBV) during twenty times. To investigate the effects of Sweet Bee Venom of the abdominal fat accumulation, abdominal CT, LFT, Thermography, BMI, Inbody 3.0 etc. were performed during clinical trials. And statistical analysis was carried out the data of 10 volunteers who performed all the schedule of this study. Results Following results were obtained from the clinical studies Sweet Bee Venom showed the effect of decreased the body weight, thickness of abdominal skin and fat layer, BMI, and increased abdominal heat, but they are not showed statistical significant. Conclusions These results suggest that treatment Sweet Bee Venom on the abdomen was effective to decrease fat tissue but for the treatment of obesity was performed with right diet program and exercise.

Development of a Salt Taste Sensor for Improvement on Meal HabitDirection Method (식습관 개선을 위한 음식 짠맛센서 개발)

  • The amount of salt intake of Korean people is 11.4 grams per a day, which is 2.3 times of the recommended daily salt intake by WHO - 5 grams of salt a day. The relationship between high salt consumption and increased risk of high blood pressure, observed not only in hypertensive but also in normotensive patients. High salt intake is also associated with an increased risk of heart attack, cerebral ischemia and osteoporosis. Therefore, this research is for developing a salt taste sensor to reduce sodium consumption and improve meal habits for the perception of a more bland taste of most foods. When the sensor was put into food sample, current intensity achieved with distribution cables. Current intensity was correlate with a simple equivalent of salt taste stimulus intensity. The salt taste sensor consists of salinity & temperature measuring probe, signal processing circuit and LCD display & LED warning light. When salinity is going over a set point, LCD displayer indicate salt taste on LCD panel by percent value (%), and at the same time, blue LED light change to red LED light. So we could know the grade of salt taste in soup before meals conveniently and objectively. The results show that operating range of 10 to $80^{\circ}C$ and accuracy of ${\pm}0.1%$ were achieved with an analysis time of about 2 or 3 sec. Moderate reductions in salt intake can help to avert adult diseases and lead a healthy life.

Relationship Among Dietary Intake, Blood Level, and Urinary Excretion of Minerals and Blood Pressure in Korean Rural Adult Men and Women (농촌 성인 남녀의 무기질 섭취량, 혈액수준 및 소변중 배설량과 혈압과의 관계에 대한 연구)

  • This study was carried out to estimate the relationship between dietary intake, blood level, and urinary excretion of minerals and blood pressure in 30 healthy adults living in rural area of Korea(12 males and 18 females). Analysis for the nutritional status of the subjects were performed by 3-day dietary intake record, duplicated diet collection, 24-hour urine collection, and venous blood sampling before measuring blood pressure. The mean blood pressure of subjects was 117.50/80.83mmHg in males and 110.00/73.89mmHg in females. The mean daily intakes of Na, K, Ca, P, Mg, Fe, Cu, Zn estimated for 3 days were 199.97mEq, 49.56mEq, 452.50mg, 725.57mg, 240.40mg, 12.48mg, 3.41mg, 8.28mg, respectively. The serum concentration of Na, K, Ca, P, Mg, Fe, Cu, Zn were 139.83mEq/dl, 4.06mEq/dl, 8.86mg/dl, 3.28mg/dl, 2.13mg/dl, 0.12mg/dl, 0.12mg/dl, 0.14mg/dl, respectively. The 24-hour urinary excretions of Na, K, Ca, p, Mg, Fe, Cu, Zn estimated for 169.60mEq, 39.37mEq, 80.40mg, 398.97mg, 64.77mg, 0.21mg, 0.07mg, 0.29mg, respectively. No significant correlation was found between dietary intake, serum concentration, and urinary excretion of minerals and blood pressure. But, the serum Ca/Mg ratio showed negative correlation with the systolic and diastolic blood pressure at the level of significance of 5%. The study verifies the need for more systematic studies on interrelationship among minerals and mineral requirements in normotensive and hypertensive subjects.

Structural relations in the effect of convenience food satisfaction and quality of life according to dietary style - Comparative study of singles in metropolitan area of Korea, Japan and China -

  • BACKGROUND/OBJECTIVES: Due to recent changes in social structure, single-person households are on the rise worldwide and therefore the interest in the quality of life of singles is increasing, but the research on the relationships related to their diet-related quality of life is scarce. This research analyzes the structural relations in the effect of convenience food satisfaction and quality of life according to dietary style of Korean, Japanese and Chinese singles. SUBJECTS/METHODS: The targets of this study were Korean, Japanese, and Chinese singles, identified as adults between the ages of 25 and 54, having economic capabilities or working and living alone, either legally or in actuality having no partner. A statistical analysis was conducted using SPSS12.0 for Windows and SEM using AMOS 5.0 statistics package. The reliability of these findings was supported by a Cronbach's alpha coefficient of 0.6 and higher for all the factors. In an attempt to study the level of satisfaction with convenience food in accordance to dietary style and the quality of life of singles, a structural equation model was constructed and analyzed. RESULTS: Of the three countries, regarding the effect of dietary style on singles' quality of life, the convenience-oriented style was found to have a negative effect on Korean singles' overall quality of life, but a positive effect on Japanese singles' overall quality of life, and a negative effect on Chinese singles' positive psychological aspect of quality of life. In addition, although Chinese singles have a high level of interest in health, they have an overall high level of satisfaction regarding fast food and its nutritional value. CONCLUSIONS: The number of singles in Korea, Japan, and China has been consistently increasing in recent years, and there is a need for continuous interest in their healthy dietary lifestyles in terms of convenience, economy, and taste.

The Correlation of Anthropometric Measurements, Physical Performance and Biochemical Measurements with Nutrient Intakes in Male College Students

  • Possible correlations between nutrient intake add health status-as assessed by anthropometric measurements, physical performance and biochemical measurements-were investigated, using 514 healthy young men aged 20 years old who had no apparent health problems. The intakes of nutrients were estimated using a three-day dietary recall method. Height and body weight were measured, and body mass index (BMI) was calculated. Physical performance was tested using sit-ups, push-ups, a loom sprint and a 1,500m run. When compared with the Korean recommended dietary allowances (Korean RDA), the subjects nutrient intakes were adequate except for calcium. The intake of calcium was 516.66$\pm$293.43mg/day, which is 73.80 % of the Korean RDA. The subjects averaged 174.51$\pm$7.07cm in height, 68.17$\pm$9.25 kg in body weight and 22.23$\pm$2.16 in BMI. The associations between nutrient intakes and anthropometric measurements, and between nutrient intakes and physical performance, were weak. The intake of vegetable fat was positively correlated to body weight, whereas the intake of carbohydrate was negatively correlated to BMI. The intake of carbohydrate was positively correlated to the level of performance in the loom sprint, and the intake of vegetable Int was positively correlated to the level of performance of sit-ups. No correlation was found between nutrient intakes and the following biochemical measurements of the blood: the levels of glucose, total protein, total cholesterol, triglyceride, hemoglobin and hematocrit. These results suggest that anthropometric measurements and level of physical performance can be associated with energy nutrient intakes, even in moderately active, well-nourished, young men. No correlation was found between nutrient intake and biochemical measurements, probably because all subjects had a reasonably well-balanced diet.

Relationship between dietary intakes and the double burden of malnutrition in adults of Malang, Indonesia: An exploratory study

  • BACKGROUND/OBJECTIVES: Urbanization and lifestyle changes have resulted in nutrition transition. Over-nutrition causes obesity increase, although malnutrition still exists. This phenomenon is called a double burden of malnutrition (DBM). This study was conducted to confirm the existence of DBM and to investigate the dietary factors related to DBM in Indonesian adults. SUBJECTS/METHODS: Data for the subjects (51 men and 89 women) who are the adults resided in Malang, Indonesia were collected between July 17 and August 14, 2017, by using questionnaire. Height, weight, waist and hip circumference, blood pressure, blood glucose, total cholesterol, and hemoglobin were also measured for the subjects. RESULTS: The average age of the subjects was 47.2 years. The average height, weight, and body mass index for men were 160.08 cm, 62.6 kg and $25.45kg/m^2$, respectively, and those for women were 148.74 cm, 58.09 kg, and $26.21kg/m^2$, respectively. Of the subjects, 3.6% were underweight, 24.3% were normal or healthy weight, while 72.2% were overweight and obese. Analysis of the dietary intakes revealed high for cereal (7.73 points), but very low for milk (0.25 points) and fruits (0.51 points). Dietary diversity was very few overall (< 5). The occurrence of both anemia (23.6%) and chronic diseases such as hypertension (57.1%), diabetes (12.1%), and hypercholesterolemia (3.6%) was considerably high. The existence of DBM was confirmed by 16.4% of the subjects. DBM was observed significantly higher in women than in men. Dietary diversity and DBM occurrence were inversely correlated. On average, the number of chronic diseases was 1.08 in men and 1.79 in women. Dietary diversity inversely affected systolic blood pressure. CONCLUSIONS: DBM existed in adults in Malang, Indonesia due to inadequate dietary intakes, and a high rate of chronic diseases.

Molecular Identification of Predominant Bifidobacterium Strains Isolated from Korean Feces

  • In order to isolate and identify Bifidobacterium spp. that originated in Korea, feces were sampled from healthy Korean adults and children living in three villages, the first having a history of longevity and the other two where the diet did not include fermented milk or any pharmaceutical preparations. Through the use of Gram staining and microscopic examination for cell morphology, 23 bacterial strains presumed to be the Bifidobacterium genus were isolated from the feces of 13 out of a total of 59 Korean people. To identify the Bifidobacterium strains at the genus level, these bacteria were then analyzed by TLC and the fructose-6-phosphate phosphoketolase (F6PPK) test. The result showed that 22 of the isolated strains were confirmed to be members of the genus Bifidobacterium. All of these bifidobacteria were also identified as Bifidobacterium spp. by the fermentation test. Using a RFLP analysis, an attempt was made to identify the Bifidobacterium spp. that had been isolated from both Korean adults and children. In a genomic Southern blot analysis after digestion with two restriction enzymes (EcoRI, HindIII), all of the 14 randomly selected Korean isolates showed patterns identical to those of three different B. longum species. Another restriction enzyme, CfoI (4-bp recognition enzyme), was then used to identify the strain. Interestingly, all the Korean isolates were identified as B. longum ATCC 15708, indicating that a RFLP analysis was effective for identifying Bifidobacterium spp. at both the strain and species levels.
