  • Traditionally, food and medicines are considered as having common roots. That is, their energies share the same source (藥食同源), which has created a unique food culture, and nurtured a unique academic area of dietary medicine (藥膳食料學). This study aimed to develop a desirable dietary life-style based on the oriental dietary medicine theorem originated from the schema of four qi as well as five flavors of foods (四氣五味), originated from the yin-yang and five phase theory based on a clear understanding of a modern point of view, and experimental analysis of nutrients and dietary effects of clear heat effect materials. This study can promote more healthy life-styles and prevent adult diseases by following oriental dietary medicine theory. We should develop a Yack-sun theory and dietary culture that is suitable for physical and genetic health.

Correlation between Dietary Sodium and Electroecardiographic Left Ventricular Hypertrophy Among Hypertensives

  • In hypertensives, electrocardiographic left ventricular hypertrophy (LVH) is an independent risk factor for cardiovascular disease. Animal and human studies suggest an association between left ventricular mass and dietary sodium (Na) intake. This study determined if dietary Na intake in a homogenous ethnic population is associated with electrocardiographic LVH (S in Vl + R in $V5{\geq}5.5 mV$). Blood pressure (BP), body mass index, EKG, and 24 hour urine Na and potassium (K) excretion were determined in 40 otherwise healthy Korean patients with untreated essential hypertension on the standard Korean diet. Among these variables, only Na excretion (mmol/day) was significantly different between those with and without LVH $[LVH+:357{\pm}50,\;LVH-;\;268{\pm}25(p=0.04]$. Thus, dietary sodium intake may be predictive of electrocardiographic LVH.

Analysis of Residual Furan in Human Blood Using Solid Phase Microextraction-Gas Chromatography/Mass Spectrometry (SPME-GC/MS)

  • For an accurate risk assessment of furan, a potential human carcinogen, levels must be determined in human blood plasma using a simple and robust assay. In this study, solid phase microextraction-gas chromatography/mass spectrometry (SPME-GC/MS) was used to analyze blood plasma levels of furan in 100 healthy individuals who consumed a normal diet. The subjects were 30 to 70 years of age and 51% were women. Ultimately, an analytical method was established for analyzing furan in human blood. The limit of quantification (LOQ) and furan recovery rate in blood were 1.0 ppb and 104%, respectively. Finally, furan was detected in 21 individuals (13 males, 8 females) with levels ranging up to 17.86 ppb (ng furan/g food).

  • Lately, soybeans have received considerable public attention for their potential roles in the prevention of the chronic diseases. Epidemiologic study showed that Asian countries have significant health benefits because of the high contents of the isoflavones in their traditional diets(soybean-rich diet). This study was carried out to determine pharmacokinetic parameters of isoflavone in Korean woman. Pharmacokinetic study of three soy products(isogen, soymilk, and fermented soybean) with different ration of aglycone/glucoside in 26 healthy female volunteers(20-30 years of age) was performed.   • Obesity is a complex multifactorial disease that is associated with various complications, including cardiovascular diseases. The prevalence of obesity among young adult males has increased, and this has increased the prevalence of several comorbidities. This trend was closely linked to lifestyle factors, including heavy drinking, smoking cigarettes, and an imbalanced diet. This emphasized the necessity of lifestyle improvements for effective obesity management. In this case, the comprehensive lifestyle changes and adjuvant medication resulted in weight loss and improvement in several comorbid conditions in a young adult male. The case highlighted the importance of a comprehensive approach to managing obesity. Furthermore, it emphasized the importance of a healthy lifestyle in addressing obesity and its complications.

식단의 당부하량에 따른 20대 성인의 체중 감량 효과 연구 (Effects of a low glycemic load diet on body weight loss in overweight or obese young adults)

  • 본 연구에서는 한국인이 평소 섭취하는 일반식사와 유사한 수준의 당부하량을 가진 high GL 식사와 당부하량이 낮게 설계된 low GL 식사를 섭취한 후 체중, 체지방, 혈압 및 혈액 내 생활습관병 위험 지표 등의 변화를 분석 및 비교하였다. 20대 성인남녀를 대상으로 체중 감량을 위해 wash-out 기간인 중간 2주를 제외하고 개인 필요 열량의 30%를 줄인 low GL 식사와 high GL 식사를 각 2주간 제공하였다. Low GL 식사와 high GL 식사의 효과를 비교한 결과 low GL 식사가 high GL 식사에 비해 체중 (p < 0.001), 체지방량 (p = 0.024), 체질량지수 (p < 0.001)에서 유의적으로 감소량이 더 컸다. 하지만 혈압, 혈액 내 비만 질환 위험 지표에서는 유의한 차이가 없었다. Low GL 식사의 전·후를 비교한 결과 체중, 체지방량, 체질량지수, 체지방률, 이완기 혈압, 중성지방, 총콜레스테롤, HDL-콜레스테롤, LDL-콜레스테롤, 공복혈당, C-peptide HOMA 지수가, high GL 식사에서는 체중, 체지방량, 체질량지수, 총콜레스테롤, HDL-콜레스테롤, 공복혈당, C-peptide, C-peptide HOMA 지수에서 각 식사 전보다 후에 유의적으로 감소되었다. 또한 실험 식사 섭취 전과 섭취 후를 비교한 결과 체중, 체지방량, 체질량지수, 체지방률, 혈압 (수축기, 이완기), 총콜레스테롤, HDL-콜레스테롤, LDL-콜레스테롤, 공복혈당, 당화혈색소, C-peptide, C-peptide HOMA 지수가 모두 유의적으로 감소되었다. 본 연구 결과 체중감량 및 생활습관병 위험을 줄이기 위해서는 단순히 섭취 열량을 낮추기보다는 열량과 함께 당부하량을 고려하여 섭취하는 것이 체중을 감소시키는 데에 더 효과적일 것으로 사료된다.

한국인 젊은 여성에서 고당질, 고지방 및 고단백질 식사가 식후 열생성에 미치는 영향 (Effects of High Carbohydrate, High Fat and Protein Meal on Postprandial Thermogenesis in Young Women)

  • 일반식사, 고당질식사, 고단백식사 및 고지방식사가 DIT에 미치는 영향을 관찰하기 위하여 건강한 성인 여성에게 각각 동량의 에너지를 급식시켰을 때 에너지 소모량과 혈액중 포도당, 지질 및 인슐린 함량변동을 3시간 동안 관찰한 결과 다음과 같은 성적을 얻었다. 고당질식사, 고단백식사, 고지방식사 및 일반식사의 섭취에 따른 혈당의 $\delta$-AUC 값은 각각 301.9$\pm$64.4 mg/dL, 63.8$\pm$ 14.4 mg/dL, 22.3$\pm$8.3 mg/dL, 153.4$\pm$ 19.8 mg/dL로 고당질식사가 가장 높았고, 고지방식사에서 가장 낮았다. 혈중 인슐린의 $\delta$-AUC 값은 고당질식사와 고단백식사에서 314.1$\pm$45.3 $\mu$IU/mL 및 165.3$\pm$ 23.8$mu$IU/mL이었고, 고지방식사와 일반식사에서 각각 102.4$\pm$11.4 $\mu$IU/mL 및 244.5$\pm$24.4$mu$IU/mL이었으며 고당질식사가 가장 높았고, 고지방식사에서 가장 낮았다. 혈중 중성지방의 $\delta$-AUC 값은 고당질식사, 고단백식사, 고지방식사 및 일반식사에서 각각 -4.7$\pm$21.5 mg/dL, 44.3$\pm$13.9 mg/dL, 120.4$\pm$44.7 mg/dL, 50.5$\pm$48.5 mg/dL로 고지방식사가 가장 높았고, 고당질식사에서 가장 낮았다. 섭취한 열량에 대한 DIT의 비율은 일반식사의 경우8.7$\pm$2.0$\%$였으며, 고당질식사와 고단백식사 및 고지방식사에서 각각 10.4$\pm$1.3$\%$, 12.9$\pm$0.5$\%$, 6.9$\pm$1.2$\%$로, 고단백식사가 고지방식사에 비해 유의적으로 높은 결과를 보였다. 그러나 DIT가 인슐린 및 제지방량과 상관성을 보이지 않았다.

큰눈자미 배아의 식물성 스테롤 함량 및 성숙기 흰쥐에서 항산화 효과 (Phytosterols content of Keunnunjami germ and its antioxidative effects in adult rats)

  • 본 연구에서는 고기능성 쌀인 큰눈자미 배아의 phytosterols 함량 및 in vitro 항산화 활성을 평가하고, 성숙기 흰쥐에게 보충 급여한 당질 대사, 항산화 활성 및 일부 cytokines 개선 효과 여부를 검증하였다. Phytosterols 분석에서 NG보다 KG의 campesterol과 stigmasterol의 함량이 유의하게 높았다. NG에 비해 KG가 DPPH radical 소거 활성, 환원력 및 ABTS radical 소거능 측정에서 유의적으로 높은 값을 나타내었다. 실험동물은 각 10마리씩 3군으로 나누어 일반 식이를 급여하는 NC군, 일반현미배아 3%를 첨가하는 NG3군, 큰눈자미배아 3%를 첨가하는 KG3군으로 나누어 사육하였다. 그 결과 KG3군에서 체중증가량, 신장주위 및 총 지방량이 유의하게 감소하였다. 당질 대사에서 실험군들 간에 glucose, 인슐린, C-peptide 및 HOMA-IR의 수준이 유의적인 차이가 나타나지 않았다. KG3군에서 혈중 TNF-α 수준이 NG3에 비해 유의적으로 감소하고, SOD 활성이 유의하게 증가하였으며, leptin, AOPP 및 IL-6 수준이 감소하는 경향을 나타내었다. 이상의 결과로부터 큰눈자미 배아는 높은 함량의 phytosterols과, 우수한 in vitro 항산화활성, 그리고 in vivo 실험에서 일부의 cytokine 개선 및 항산화에 긍정적인 효과가 있음을 제시하였고 향후 더 많은 생리활성물질 분석, 대사 지표 개선, 작용 기전 규명 등 세부적인 연구가 필요할 것으로 사료된다.

정상식이를 섭취하는 여대생들의 질소 섭취 및 배설에 관한 연구 (A Study on Nitrogen Intake and Excretion in Young Korean Adult Women on Normal Diet)

  • A study was conducted to measure nitrogen intake and excretion in young korean women on their normal diet and leading normal activity level. Dietary survey by food record, fecal and urinary samples were collected for 3 days in 19 healthy female college students in Korea. On one of the 3 days, duplicate of one-day diet was collected from each subjects. Mean daily intakes of energy and protein were calculated from food recorded. Duplicate diet samples and pooled fecal samples were analyzed for N content. Pooled urine samples were analyzed for total N, urea N, and creatinine content. Apparent N absorption, apparent N balance and urea N/creatinine N were calculated to evaluate protein nutritional status. The results obtained are summarized as following ; 1) Accordingly to food record, mean daily intakes of energy, protein, carbohydrate and far were 1535.2 $\pm$53.78Kcal, 55.95$\pm$2.97g(total nitrogen 8.95$\pm$0.45g), 254.13$\pm$10.31g and 39.24$\pm$2.76 g, providing 14.6%, 66.2%, 19.2% of total energy respectively. 2) Nitrogen intake by chemical analysis was 7.16$\pm$0.31g/day (protein 44.75$\pm$1.94kg/day) providing 82.39$\pm$4.58% of nitrogen intake by food record. The difference of total nitrogen intake between food record and chemical analysis in diets was significant(p<0.05). 3) Mean daily fecal nitrogen excretion was 1.38$\pm$0.10g and then mean apparent digesbility of protein was 80.53$\pm$5.21%. 4) Mean daily urinary nitrogen excretion, urea N excretion and creatinine excretion were 6.03$\pm$0.30g, 4.52$\pm$0.22g, and 0.88$\pm$0.04g respectively. Urinary urea nitrogen was 75.2$\pm$1.38% of total urinary nitrogen excretion and urinary nitrogen was 85.4$\pm$3.56% of total nitrogen intake by chemical analysis. 5) Mean urea N/creatinine N ration was 14.01$\pm$0.77. 6) Mean nitrogen balance was -0.244$\pm$0.33g/day. From the above results, it is concluded that the subjects in this study seem to be in marginal protein nutritional status and therefore should increase dietary protein intake.

Skipping breakfast is associated with diet quality and metabolic syndrome risk factors of adults

  • The aim of the present study was to assess the effects of skipping breakfast on diet quality and metabolic disease risk factors in healthy Korean adults. Subjects included 415 employees (118 men, 297 women; 30-50 years old) of Jaesang Hospital in Korea and their acquaintances. Data collected from each subject included anthropometric measurements, 3-day dietary intake, blood pressure, and blood analyses. The subjects were classified into three groups based on the number of days they skipped breakfast: 'Regular breakfast eater', 'Often breakfast eater', or 'Rare breakfast eater'. Participants in the 'Rare breakfast eater' group consumed less rice, potatoes, kimchi, vegetables, fish and shellfish, milk and dairy products, and sweets than did participants in the other two groups (P for trend <0.05) and ate more cookies, cakes, and meat for dinner (P for trend <0.05). Participants in the 'Rare breakfast eater' group consumed less daily energy, fat, dietary fiber, calcium, and potassium than did participants in the other groups (P for trend <0.05). The percent energy from carbohydrates was lower and fat intake was higher in the 'Rare breakfast eater' group than in the other groups (P for trend <0.01). When diets were compared using the Acceptable Macronutrient Distribution Range for Koreans, 59.1% of subjects in the 'Rare breakfast eater' group consumed more energy from fat compared with the other two groups (P <0.005). According to the Estimated Average Requirements for Koreans, intake of selected nutrients was lower in the 'Rare breakfast eater' group than in the other two groups (P <0.05). The risk of elevated serum triglycerides was decreased in the 'Rare breakfast eater' group (OR, 0.3 [0.1-1.0], P for trend=0.0232). We conclude that eating breakfast regularly enhances diet quality, but may increase the risk of elevated serum triglycerides.
