The purpose of this study is to analyze Kapa, the traditional bark cloth of Hawaii, including materials, method of manufacture, and colors and patterns, and to show the characteristics of Kapa to identify traditional culture of Hawaii as well as the unique culture of cloth of Hawaii in tropical area. The method of study is qualitative research using documentary records about Kapa. The cultivated Wauke proved to be the best material for bark cloth in Hawaii. The manufacture of Kapa was made by beating divided into two stages. The dyes for coloring were very different due to the existence of various plants. Indigenous Hawaiians showed the unique textures like grooving and watermarks, and the various designs in their Kapa. The characteristics of Hawaiian Kapa appear the symbol of some colors, the preference of geometrical patterns, the various uses of Kapa, and perfumed Kapa. Through these characteristics of Hawaiian Kapa, the traditional culture of indigenous Hawaiian can be understood very well. This study will help people understand indigenous bark cloth of tropical areas including Hawaii.
To evaluate nutrient intakes of the first generation Korean -Americans in Hawaii, a dietary survey was conducted using a food frquency questionaire which included 139 food items most often consumed among Korean foods and American foods. The questionnaire surveyed 157 first generation Korean-Americans living in Hawaii. The 66.7~81.1% of first generation Korean-Americans in Hawaii were of healthy weight. The mean percentages of calories obtained from their dietary analyses were 61% carbohydrate, 23% fat and 16% protein. The calorie distribution of their diet appeared to be similiar between older women and older men, however it was seen that men consumed a higher percent of calories from fat than women among younger subjects. The mean dietary intakes for first generation Korean-Americans exceeded recommended intakes for protein, thiamin, niacin , vitamin A, vitamin C, folacin , phosphorus and iron , but the intakes of energy, riboflavin, vitamin B6 ,vitamin E, calcium and zinc were lower than the recommended dietary allowance for Americans. Compared with other groups based on age and gender , younger men had significantly(p<0.05) higher intakes of riboflavin, phosohrous, iron and zinc, and lower intake of folacin. Older subjects consumed significantly (p<0.05) less protein, riboflavin, vitamin B6 and zinc than did younger subjects, and most of the first generation Korean-Americans in Hawaii consumed adequate levels of saturated fatty acid . The ratio , however, of polyunsaturated fatty acid to saturated fatty acid in the diet of younger men was about 0.61, much lower than the recommeded ration of 1.0 and also was significantly (p<0.05) lower than that of other subjects. Moreover, cholesterol intakes of younger men were close th the maximum recommeded level of 300mg/day.
To evaluate food consumption patterns of first generation Korean-American in Hawaii, questionnaires were developed using sociodemographic questions and food frequency questionnaire, which included 139 food items most often consumed among Korean foods and American foods. The questionnaires surveyed 157 first generation Korean-Americans in Hawaii. Mean daily servings for the first generation Korean-Americans were calculated for 139 food items combined into 41 food groups based on similarity in nutrient composition and serving size. The food groups which were consumed in amounts over one serving per day for all subjects were rice, Kimchi , non-citrus fruit , vegetables, organge/green vegetables. oil. margarine and coffee/tea. All subjects consumed less than one serving of hotdogs, hamburgers, pizza and pancakes per week(0.14 serving per day). The most notable characteristic of food consumption for first generation Korean-Americans was that they consumed more Korean food such as rice, Kimchi, soybean paste(Deenjang), soybean curd and seaweed than American foods. Compared with other groups based on age and gender, younger men showed significantly(p<0.05) more frequent consumption of beef/pork, sausages /hams /bacons and hambergers. Older men were significantly(p<0.05) more likely to consume Doenjang and less likely to consume pizza and hamburgers. Daily servings were below the recommended level for thegrains /bread/cereals group and fats/oils/sweets group for all subjects . Fruits/vegetables group servings exceeded the recommeded 5 daily servings for younger men. In correlations of daily servings of selected foods among Korean foods and American food with sociodemographic characteristics, this study showed that the older the subjects and the shorter the stay in Hawaii, subjects were more likely to consume Kroean foods.

In this research, an internal model based method is proposed to estimate the structural displacements and velocities under ambient excitation using only acceleration measurements. The structural response is assumed to be within the linear range. The excitation is assumed to be with zero mean and relatively broad bandwidth such that at least one of the fundamental modes of the structure is excited and dominates in the response. Using the structural modal parameters and partial knowledge of the bandwidth of the excitation, the internal models of the structure and the excitation can be respectively established, which can be used to form an autonomous state-space representation of the system. It is shown that structural displacements, velocities, and accelerations are the states of such a system, and it is fully observable when the measured output contains structural accelerations only. Reliable estimates of structural displacements and velocities are obtained using the standard Kalman filtering technique. The effectiveness and robustness of the proposed method has been demonstrated and evaluated via numerical simulations on an eight-story lumped mass model and experimental data of a three-story frame excited by the ground accelerations of actual earthquake records.
The Multiethnic Cohort Study was designed to study prospectively the relationship of diet and other lifestyle factors to the risk of cancer. The cohort was established in 1993-1996 in Hawaii and California (primarily Los Angeles) and included a representative sample of more than 215,000 men and women primarily from five different ethnic groups: Japanese, whites, Native Hawaiians, Latinos, and African- Americans. Because of the emphasis on diet, great attention was paid to developing and pre-testing a self-administered quantitative food frequency questionnaire that would adequately assess food and nutrient intakes in these groups. An extensive food composition database was also created for the study. In addition, during data collection, a calibration study was conducted that makes possible adjustment for measurement error in nutrient intakes and valid comparison of intakes across the several ethnic groups. At the present time, blood and urine specimens are being collected from cohort participants and should yield a biorepository of more than 80,000 subjects. Baseline data indicate that the cohort is well representative of the general population of Hawaii and California, so that results can be generalized. These data also show a wide range in dietary intakes and in other lifestyle variables that should facilitate the testing of etiologic hypotheses.
Melamine is a chemical intermediate to manufacture amino resins and plastics, which cannot be used as food additive since it can cause kidney stones. A qualitative determination method of melamine residue in powdered and liquid milk was developed using Fourier transform infrared (FTIR) spectroscopic technique. The calibration sets consisted of 21 standard melamine solutions, in which 1% trichloroacetic acid aqueous solution and acetonitrile (3:1, v/v) were used as solvent. The model was validated using 10 standard melamine solutions which were unused to build up the calibration set. Infrared (IR) absorbance peaks specific to almost all chemical groups in melamine molecule were shown in the spectral range between 1,100 and 1,800/cm. Combined partial least squares (PLS)-$2^{nd}$ derivative calibration model coupled with mean centering (MC) mathematical enhancement showed the highest correlation coefficients ($R^2$>0.99). In brief, the FTIR technique can be used for quantitative analysis of melamine in milk samples.
