고춧가루의 HACCP 시스템 적용을 위한 미생물학적 위해 분석 (Microbiological Hazard Analysis for HACCP System Application to Red Pepper Powder)

  • 본 연구는 고춧가루의 HACCP(Hazard Analysis Critical Control Point) 시스템 적용에 필요한 미생물학적 위해 요소분석을 위한 목적으로 2014년 1월 10일~2014년 6월 13일까지 충주시 동량면 소재에 있는 용금농산에서 수행하였다. 고춧가루 제품의 모든 공정 단계들을 파악하여 공정흐름도를 작성하였고 미생물학적 위해를 제어할 수 있는 자외선살균공정에서 살균 시간을 변화시키면서 미생물의 변화를 시험한 결과 자외선 등 $20W{\times}12EA$, 살균 시간은 $63{\pm}3$초를 한계기준으로 결정하였다. 자외선살균 후에는 위해 미생물 검사 결과는 안전하나 제조환경과 작업자의 미생물 검사 결과 주기적인 세척 및 소독을 실시하여 미생물학적 위해를 감소시키고 작업자 위생교육 등을 통하여 개인위생을 준수해야 할 것으로 판단된다.

대수층 저장·이동 및 회수에 의한 음용수 생산과정에서의 위해사건분석 (Hazardous event analysis in drinking water production using aquifer storage transfer and recovery)

  • Aquifer storage transfer and recovery (ASTR) is a type of managed aquifer recharge which entails injecting water into a storage well and recovering it from a different well. It has effects of natural purification when injected water passes through aquifer medium, and can be a good way of supplying water especially in a region with poor surface water quality. This study is about an on-going effort to introduce ASTR as a solution to source water problems in coastal areas. A pilot study is being conducted in the delta of the Nakdong River. A proactive management system is incorporated to ensure the water qulity in the process of drinking water process. The system is based on the Hazard Analysis and Critical Control Point (HACCP) which is a tool originated from the food industry in order to assess hazards and establish control systems for the safety of food product. In this paper, we analyze hazardous events which can occur in the entire water supply system using ASTR as a first step to the incorporation of HACCP to drinking water production process.

학교급식소의 HACCP 시스템 적합성 검증 -가열조리 및 가열조리 후처리 공정의 미생물적 품질평가를 중심으로- (Verification of the HACCP System in School Foodservice Operations - Focus on the Microbiological Quality of Foods in Heating Process and After-Heating Process -)

  • The objective of this study was to evaluate and improve the microbiological quality of HACCP application in school foodservice operations. The microbiological quality of foods and utensils were evaluated two times at each critical control point (CCP) with 3M petrifilm in five Daegu elementary schools. Two processes were evaluated: Heating process and after-heating process. The CCPs of the heating process were receiving, cooking and serving temperatures. The CCPs of the after-heating process were personal hygiene, cross contamination avoidance and serving temperature. After the first experiment, 31 employees of five schools were classroom educated, trained on-site, and pre- and post-tested on HACCP-based sanitation with the goal of improving the microbiological quality of the foodservice. Scores representing knowledge of holding, thawing, washing, food temperature, sanitizing and food-borne illness increased after education. In the heating process, internal food temperatures in the first and second experiments were higher than 74$^{\circ}C$, the holding temperature in the first experiment was less than 6$0^{\circ}C$. In the second experiment, the serving temperature improved to a satisfactory level. The microbiological quality in the second experiment improved by decreasing the time from cooking to serving. In the after-heating process, the ingredients were boiled before being cut in the first experiment. In the second experiment, ingredients were cut before being boiled, improving microbiological quality. Also in the second experiment, cooking just before serving food improved its microbiological quality through time-temperature control. These results strongly suggest it is essential to measure microbiological quality regularly and to educate employees on HACCP continuously, especially time-temperature control and cross contamination avoidance in order to improve foodservice quality.

병원급식에 일반위생관리기준과 HACCP 제도 적용을 위한 시설모델 개발 (Development of a Hospital Foodservice Facility Plan and Model based on General Sanitation Standards and RACCP Guidelines)

  • The purposes of the study were to establish HACCP-based standards and guidelines for conducting a plan review to build, or renovate, hospital food service establishments, and ensure the safety of foodservice and reduce the risk of food borne illness. The scope of the study included suggestion for the planning of hospital foodservice facilities: layout, design, equipment and modeling. The results of this study can be summarized as follows: 1) The development of a foodservice facility plan based on the results of a survey, literature reviews and the results of interviews with foodservice managers from 9 general hospitals. This was composed of operational policies in foodservices, layout characteristics, space allocation, selection, design, specification standards for equipment and the construction principles of foodservice facilities. 2) Two foodservice facility models were developed, one for general hospitals with 900 beds (2,000 patients and 2,500 employee meals per day) and the other for general hospitals with 300 beds (600 patients and 650 employees meals per day). 3) The suggested kitchen space requirements for the foodservice facility models were 341.2 ㎡ (W 17,100mm x L 23,700mm) and 998.8㎡ (W 35,600mm x L 32,800mm) for the 300 and 900 beds hospitals, respectively, with both designs being rectangular. The space requirements for the equipment, in relation to the total operational area, in terms of ratios were 1:3.5 and 1:3.8 for the 300 and 900 beds hospitals, respectively. The recommended space allowances per bed for the developed foodservice facility models were 1.15 ㎡ and 1.11 ㎡ for the 300 and 900 beds hospitals, respectively, which were increased by more than 30% compared to those suggested in the precedent study, and considered appropriate for the implementation of the HACCP system. 4) The hospital foodservice facilities plans and models were developed based on the general sanitation standards, guidelines and the HACCP system, and included foodservice facility layout, product flow, physical separation between contaminated and sanitary areas, foodservice facility specifications with a 1/300 scale for a 300 bed, and a 1/400 scale for a 900 beds blueprint. 5) The main features of the developed foodservice facility plans and models were; physical separation between contaminated and sanitary areas to prevent cross contamination, product flow in one direction from the arrival of the raw material to the finished product, and separation of different work areas and the process of receiving & preparation of products, refrigeration & storage, cooking, assembly, cleaning & disinfection, employee areas and janitorial facilities. The proposed models from this study were presented as examples for those wanting to build, or renovate, their facility for the production of foods.

  • The production, processing, sale and service of food materials are not subject to attainment via a single country. In accordance with internationalization of the world, issues related to food safety have emerged as critical international concerns and they are closely associated with the health and interest of domestic consumers, producers, manufacturers, and distributors. As a third party certification standards, ISO 22000 is in progress International Organization for Standardization(ISO) and the Draft International Standard(DIS) has already been presented on December 2004. The purpose of this study is to analyze the international standards, guidelines and legislation in regard of Food Safety Management System(FSMS) including ISO 9001, Hazard Analysis Critical Control Point(HACCP) and Product Liability(PL) so as to present Korean-model Food Safety Management System requirements and system establishment model.

소규모 외식업체용 IP-USN을 활용한 HACCP 시스템 적용 및 유효성 검증 (The Implementation of a HACCP System through u-HACCP Application and the Verification of Microbial Quality Improvement in a Small Size Restaurant)

  • 대부분의 외식산업은 생산 품목, 생산 방법, 생산 기술, 대상자들이 제조가공업체와는 매우 다르고 생산량, 취급인원, 영업규모등도 학교나 병원급식과는 여러 요소의 차이점을 가지고 있다. 본 연구는 소규모 외식업체에서 HACCP 시스템 적용을 위하여 종사자 대상 위생교육과 도입 전후의 미생물 분석과 시스템 도입에 따른 유의성 평가와 평가항목별 상관관계를 분석하였다. 또한 USN를 구축하여 도입 전후의 시간-온도관리 분석을 시행하여 효율성을 평가하였다. 위생교육 전후 조리 종사자의 위생업무 지식에 관한 평가 결과 개인위생, 식품의 공급 및 저장, 식품의 취급 및 배식, 기구의 세척 및 소독에서 유의적인 차이가 있었다. 또한 위생교육 전후 조리 종사자의 수행도에 관한 평가결과 식품의 취급 및 배식, 기구의 세척 및 소독, 작업 환경관리 영역에서 유의적으로 상승한 결과를 보였다. 조리 종사자의 교육 전후의 위생지식 결과는 개인위생(p<0.05), 식품의 공급 및 저장(p<0.05), 식품의 취급 및 배식(p<0.05), 기구의 세척 및 소독 영역(p<0.05)에서 유의적인 차이를 보였다. 모든 항목에서 정답률이 상승하였고 전체 문항에 대한 정답률은 교육 전 75%에서 교육 후 90%로 향상되었다. 조리 종사자의 위생업무에 대한 수행도 결과는 식품의 취급 및 배식(p<0.05), 기구의 세척 및 소독(p<0.05), 작업 환경관리 영역(p<0.05)과 총 점수에서 유의적인 차이를 보였다. HACCP 도입 전후의 소독에 따른 양상추 샐러드 미생물 품질분석 결과는 소독전 일반세균이 양상추 원재료 4.80 logCFU/g에서 소독 후 2.41 logCFU/g으로, 라디치오는 원재료 4.15 logCFU/g에서 소독 후 2.48 logCFU/g으로, 토마토는 원재료 4.10 logCFU/g에서 소독 후 평균 1.68 logCFU/g으로 나타나 중요관리점인 세척 시 소독을 통해 미생물 수치가 감소되었다. 멸치와 꽈리고추의 미생물적 품질결과는 원재료의 일반세균수는 각각 4.52 logCFU/g, 5.72 logCFU/g으로 나타났고, 볶았을 때 멸치는 2.07 logCFU/g, 꽈리고추는 1.50 logCFU/g으로 낮아졌다. 가열 공정 후 대장균군과 장내세균은 검출되지 않았다. 하지만 멸치꽈리볶음의 생산 공정은 재료별로 따로 볶아 버무리는 공정이 있어 최종식품에는 일반세균 4.33 logCFU/g, 대장균군 0.71 logCFU/g, 장내세균 1.65 logCFU/g, 황색포도상구균이 1.27 logCFU/g으로 검출되었다. 숙주나물의 미생물 분석 결과는 조리단계 및 배식단계에서 각각 4.20 logCFU/g, 4.68 logCFU/g의 높은 수치를 나타냈으나, 적용 후의 조리단계 및 배식단계에서는 각각 3.26 logCFU/g, 3.34 logCFU/g으로 나타났다. 숙주나물 및 잡채의 후처리 작업시 HACCP 적용 전 종사자 손의 일반세균수는 평균 5.90~5.99 logCFU/hand에서 적용 후 평균 0~2.30 logCFU/hand로 나타났다. 가열조리 후처리 공정에서는 교차오염을 줄이기 위하여 종사원의 손의 위생적인 관리가 필수적인 것으로 사료된다. 도입 전과 도입 후 2개월 시점의 조리 종사자의 위생지식점수 차이, 위생수행도 차이, 양상추 샐러드와 조리 종사자 손의 미생물적 품질 개선효과 간의 상관관계를 구하였다. 위생수행도의 변화와 양상추 샐러드의 미생물적 품질 개선 효과는 유의한 양의 상관관계(p<0.01)를 보여 위생 수행도가 높아질수록 식품의 미생물적 품질이 개선될 수 있다는 것을 보여주었다. 위생지식의 변화와 조리 종사자 손의 미생물 변화가 유의한 양의 상관관계(p<0.05)가 있었다. u-HACCP 시스템 도입 전후 온도관리에서의 3가지(온도측정의 정확성, 온도관리 효율성, 온도범위의 안정성)를 평가하였는데, 도입 전에는 업무시간에 냉장고 $5^{\circ}C$ 이하, 냉동고 $-18^{\circ}C$ 이하, 온장고 $57^{\circ}C$ 이상의 기준이 지켜지지 않은 것을 발견할 수 있었다. 하지만 도입 후 냉장고, 온장고, 식기세척기마다 자동경보로 위생 사고를 예방하였고 실시간 상황모니터가 설치되어 있어 HACCP 업무가 대폭 간소화 되었으며, 무엇보다 지속적인 위생교육으로 인해 직원들의 위험온도($5^{\circ}C{\sim}57^{\circ}C$)에 대한 이해도가 높아져 냉장, 냉동, 온장고의 기준온도의 준수율이 상승되었다. 따라서 유비쿼터스 센서 온도계를 이용하여 검수, 가공, 보존, 조리, 유통 등 각 단계별로 자동 모니터링이 가능해 잠재적 위험요소를 사전에 관리자에게 통보해 줌으로써 식품의 위생안전성을 확보할 수 있고, 무선 센서 네트워크의 특징을 이용하여 식재료 안전 관리 시스템에 적용할 경우 24시간 모니터링이 가능하여 신속한 개선조치와 이력 관리 모니터링을 통한 신뢰성 있는 품질경영 시스템을 구축할 수 있을 것으로 사료된다.

유산균을 함유한 녹즙의 HACCP 시스템 적용을 위한 미생물학적 위해도 평가 (Microbiological Evaluation for HACCP System Application of Green Vegetable Juice Containing Lactic Acid Bacteria)

  • 본 연구는 유산균을 함유한 녹즙제품의 HACCP(Hazard Analysis Critical Control Point)시스템에 의한 제조공정도 작성과 공정별 원료 농산물과 제조 시설에 대한 일반 세균수와 병원성 미생물을 평가하기 위한 목적으로 수행하였다. 공정별 원료농산물의 원재료보관공정 단계의 4가지 시료에서 일반세균이 검출되었으며, 용수(water)는 8.67~14.67 CFU/$m{\ell}$ 검출되었다. 하지만 자외선살균공정 이후, 모든 시료는 법적기준치인 $10^5\;CFU/m{\ell}$이하로 검출되었다. 식중독균인 E. coil, E. coli O157:H7, B. cereus, L. monocytogenes, Salmonella spp, Staph. aureus 실험결과, 보관공정에서 E.coli는 자외선 살균 전단계 공정까지 검출되었으며, B. cereus는 1차세척까지 일부 검출되었다. 모든 세균 및 진균류는 주원료에서 많이 검출되고 있어 주원료의 초기 균수를 최소화하는 선행관리방법을 수립할 필요가 있으며, 세균수와 황색포도상구균 등의 교차 오염방지를 위한 제조설비 등의 효과적인 세척 소독방법을 수립할 필요가 있다고 사료된다. 상기 결과을 바탕으로 유산균을 함유한 녹즙류의 일반세균 및 식중독균을 감소 또는 제거할 수 있는 중요한 공정으로 UV살균공정이 CCP로 관리되어야 한다. 따라서 자외선살균공정의 관리기준 및 이탈시 조치방법, 검증방법, 교육 훈련과 기록관리 등 철저한 HACCP 계획이 필요하다고 사료된다.

병원급식에 일반위생관리기준과 HACCP 제도 적용을 위한 시설ㆍ설비 위생관리 점검도구 개발 (Development of the Hospital Foodservice Facility Evaluation tools based on the General HACCP-based Sanitation Standards and Guidelines)

  • The rapid increase in food borne illness outbreaks in Korea has been one of the major threats to the Nation's Health. Foodservice establishments have been identified as the major place for these outbreaks, mainly due to the lack of sanitary management and sanitary facility management practices. The purposes of the study were to develop hospital foodservice facility evaluation tools, based on the general HACCP-based standards and guidelines, for hospital food service establishments, to ensure the safety of these foodservices and to reduce the risk of food home illness. The scope of this study included: 1) an assessment of the current foodservice sanitation practices and managements for 6 general hospitals, with more than 400 beds, and 3 general hospitals, with less than 400 beds; 2) the development of foodservice establishments sanitation evaluation tools and sanitation standards, based on the HACCP system. The survey data showed varied results between the hospitals surveyed. Most of the hospital foodservice operations had many problems with ventilation and the plumbing. The total dimensional mean scores for the hospitals with more than 400 beds and less than 400 beds were 31.5 and 27.0, respectively. The highest dimension scores were for the water supply facility and lighting, with the lowest for insect and rodent control and toxic materials management. The levels of the mean scores were very low, especially for the general hospitals with less than 400 beds. These low mean scores may have arisen from critical problems within the hospital foodservice operations. The most needed facility management items for improvement were: storage shelf should be spaced 6 inches from the floor and walls, the use of three compartment sinks, utility sinks and cleaning facilities, with a floor drain for cleaning mops or liquid wastes, a ventilation hood designed to prevent dripping onto food, cooking facilities should be disassembled for washing and sanitizing, a separated hand washing sink and a sanitized food board for each area should be provided, all toxic material must have warning labels attached, and be stored in an area away from food preparation under padlock. The evaluation tool consisted of 14 dimensions, with 65 check-off items. The results of this study will provide basic facilities' guidelines to regulators, or foodservice industry personnel, wishing to build, or expend, and establish an efficient flow of food. As a result, food borne illnesses will be effectively prevented, and the Nation's health will be promoted for the development of their own sanitation standards, with a checklist for the safe production of foods.

쿡췰(Cook/Chill)시스템을 이용한 고등어조림의 HACCP 레시피 개발 및 생산과정의 품질평가 (The Development of HACCP-Based Standardized Recipe and the Quality Assessment of Cook/Chilled Soy Sauce Glazed Mackerel)

  • The purposes of this study were to develop Hazard Analysis Critical Control Point-based standardized recipe applicable to cook/chilled soy sauceglazed mackerel and to evaluate the qualities related to the product flow of this item. After conducting experimental cooking, preliminary test, and analysis of recipes, critical control points were identified, control methods were determined, and HACCP-based recipe was standardized. At each critical control point, time-temperature profile was recorded and microbiological analysis (total aerobic plate counts, psychrotrophic plate count, coliform, and fecal coliform count), chemical analysis (pH, acid value and volatile based nitrogen (VBN)) and sensory evaluation of the item were done. Time-temperature data showed that the time the menu item had passed through temperature danger zone (5∼60$^{\circ}C$) during all phases was 60 min. At rapid cooling, but after cooling at room temperature, the temperature of this menu item did not drop below the ambient temperature. The results of microbiological test were negative throughout all phases following cooking and the results of chemical analysis did not change significantly in terms of storage periods except for VBN which increased on 7th day significantly(p<0.05). After steam/convection oven reheating and microwave oven reheating, the sensory score of the only appearance decreased significantly related to the storage time of overall quality profiles. But significant differences were not detected according to two reheating methods. In conclusion, this HACCP-based recipe was considered as an effective tool for assuring microbial as well as sensory quality of this cook/chilled item.

식당 주방의 위생 향상을 위한 공간계획에 관한 연구 (A Study on the Space Planing for Restaurant Kitchens to Improve Hygiene)

  • This research proposed the space planing methode and diagrams of restaurant kitchens to improve hygiene by analyzing the related contents collected from books and researches in interior design and HACCP (Hazard Analysis and Critical Control Point). HACCP is an effective and scientific hygiene system for food safety in order to prevent cross-contamination from food hazards. Based on the analyses, improvement of food production environments like restaurant kitchens is necessary for food hygiene. The space planing methode of restaurant kitchens to improve hygiene are followings: The circulation planing is that the direction of movement of the food, workers, waste, and dishes should be fractionated and managed for cross-contamination prevention. The space separation planing is that the spaces in the kitchen should be classified and divided into contaminated area and non-contaminated and clean area depending on the degree of cleanliness. The zoning is space arrangement with feed-back process to check the possible points of cross-contamination and correct space arrangement until the possibility of cross-contamination disappear in kitchen. However, if cross-contamination is unavoidable in some points in restaurant kitchens, hygiene facilities such as washing rooms, pass rooms, and double doors with air-shower should be located in order to remove contamination.
