This study evaluates the effects of cultured wild ginseng root (0.05%, 0.1% v/w) and xylitol in kimchi. The fermented characteristics of kimchi were investigated during 28 days of fermentation at $4^{\circ}C$. The pH value in the sample with the cultured wild ginseng root was higher than that of control group. The total acidity in the sugar groups (SG groups) was higher than that of xylitol groups (XG groups). Comparing total bacterial count, XG groups were lower than SG groups, regardless of the additional ratio of the cultured wild ginseng root. Reducing sugar of XG groups decreased more slowly than SG groups for seven days; glucose and fructose of XG groups were lower than the control group. DPPH radical scavenging activity was higher in groups with cultured wild ginseng root than in control. In the result of sensory evaluation, XG groups were more preferred than other groups. In conclusion, our results indicate that cultured wild-ginseng root and xylitol have a positive effect on the quality of kimchi, such as antimicrobial and antioxidant functions.
This study was performed to investigate the quality characteristics, including sensory and physical properties, of hamburger patties added with spinach as a source of fiber. Hamburger patties were prepared with spinach at five different levels (5, 10, 15, 20, and 25%. Moisture contents of the groups with spinach were significantly higher than that of the control group. Crude fat and crude protein contents of the control group were higher than those of the group with spinach. Crude ash content of the control group was the lowest among the groups. No significant difference in pH was observed among the groups. The cooking loss rates of groups with spinach were significantly reduced compared to that of the control group. No significant difference in L value was observed among the groups. However, a value of the control group was higher than those of the groups with spinach. Otherwise, b value of the control group was lower than those of the groups with spinach. The hardness levels of the control groups were significantly higher than those of groups with spinach. In the quantitative descriptive analysis, green color and bitter taste of the groups with spinach were stronger than that of the control group. The preference levels for appearance of the groups with 10 to 15% spinach were higher than those of the other groups, including the control groups. Overall acceptabilities of the groups with 5 to 15% spinach were significantly higher than those of the other groups. In conclusion, spinach can increase the acceptability of hamburger patties, and 10 to 15% would appear to be the proper added amount.
This study wa performed to investigate the effect of dired powder of chestnut and acorn on lipid metabolism, antioxidative capacity and antithrombotic effect in rats. Fifty-four male Sprague-Dawley rats weighing 199$\pm$17g were blocked into nine groups according to their body weight. Rats were raised with diets containing only flesh or flesh with inner skin of 5% and 10% dried nut powders for four weeks. Food intake, body weight gain, food efficiency ratio and organ weight were no different among the experimental groups. The plasma and liver lipid levels of all the nut diet groups were lover than those of the control group. The nut diets showed hypolipidenic effect in the plasma and liver. Plasma and liver thiobarbituric acid reactive substance (TBARS) concentrations were significantly decreased in all the nut diet groups. The plasma TBARS levels of the inner skin groups were significantly different from the control group dose-dependently. Superoxide dismutase(SOD) activity was significantly different among the experimental groups, and all the nut groups showed higher activity than the control group. There were significant differences in SOD activity between the chestnut and acorn groups and the chestnut groups showed higher erythrocyte SOD activity and the acorn groups showed higher liver SOD activity than the other groups. Whereas catalase and GSH-Px activities in the erythrocyte and liver of both nut groups showed a tendency to increase, they were not significantly different among the experimental groups. The bleeding time and whole blood clotting time tended to be extended by feeding both types of nut but they were not significantly different among the experimental groups. Production of TX $B_2$ and PG $F_{1{\alpha}}$ was no different among the experimental groups. These results suggest that chestnut and acorn diets have the effect of lowering plasma and liver lipid levels, inhibiting lipid peroxide formation and increasing antioxidative enzymes activity. Thus, it is plausible that chestnut and acorn could be recommended in the treatment and prevention of cardiovascular diseases.
The effects of diet induced hyperlipidemia on kidney function were studied in Sprague-Dawley rats fed high fat diet containing 20% beef tallow and high cholesterol diet containing 5% cholesterol for 8, 12, 16 weeks, respectively. The concentrations of serum total lipid, total cholesterol and LDL-cholesterol were significantly high cholesterol diet groups during all experimental periods (p<0.05). HDL-cholesterol concentration was the lowest value in high cholesterol diet group of 16 weeks(p<0.05). Triglyceride concentration was not affected by experimental diets. Serum total protein, albumin and creatinine concentration tended to higher in high cholesterol diet groups than those in high fat diet groups. And serum urea-N concentration was higher in high fat diet group of 16 weeks than that in other diet groups. Urinary total protein and urea-N were higher in high cholesterol diet groups than those in other diet groups regardless of experimental period period. There was no significant difference in urinary creatinine concentratin among diet groups(p<0.05). GFR was lower in high cholesterol diet groups than that in high fat diet groups at 8, 16 weeks, respectively. Wet weight per body weight, total lipid, triglyceride, total cholesterol concentations of liver tissue were apparently high in high cholesterol diet groups(p<0.05). Kidney wet weight per body weight wer not affected by experimently diets, total lipid concentration of kidney tissue was significantly high in high fat diet groups of 12 weeks(p<0.05), kidney tissue triglyceride concentrations of high cholesterol diet groups of 12, 16 weeks apparently low, and total cholesterol concentration of kidney tissue was higher in experimental diet groups than that of control groups at 12, 16 weeks(p<0.05). Fecal excretion, total lipid, triglyceride and cholesterol concentrations of feces were markedly high in all high cholesterol diet groups except high fat diet group of 16 weeks. The results of light microscopic examination indicated that glomerulosclerosis was not obsrved in rats fed experimental diets.

This study classified consumers' behaviors of purchasing gifts, divided groups by the types of similar behaviors, and examined impacts of demographic variables, relevant variables in purchasing processes on those behaviors. Findings of this study can be summarized as follows. First, factors explaining consumers' behaviors of purchasing gifts were the tendency of demonstrative purchase, the level of placing values to the meaning of gifts, the level of altruism and rationality in the purchase of gifts, and the tendency of impulsive purchase. On the basis of these five factors, five distinct consumer groups showing similar behaviors of purchasing gifts based on the results of Cluster analysis were identified. Those groups were impulsiveㆍdemonstrative groups, impulsiveㆍnon-sincere groups, indifferent groups, non-impulsiveㆍdemonstrative groups, non-altruistic'ㆍrational groups, sincere groups, and altruisticㆍrational groups. Second, behaviors of purchasing gifts showed significant differences depending on gender, educational levels, occupational types, and women's employment status. Consumers with high education, professional occupation, high income tended to show the demonstrative purchase. Male consumers were not interested in the purchases of gifts and placed high values on the meanings of gifts. In contrast, female consumers showed rational behavior, but revealed the tendency of demonstrative in the purchase of gifts as well. Finally, behaviors of purchasing gifts were also different depending on the method of gathering consumer information, places of purchasing gifts, experiences of ordering paid wrapping gifts and the relevant costs, consumers' evaluations of the purchases of gifts, and degrees of satisfaction after the purchase of gifts. Impulsive'ㆍdemonstrative groups and non-impulsive'ㆍ demonstrative groups preferred departments as places of purchasing gifts and choose ordering paid wrapping gifts but showed dissatisfactions after purchases of gifts. Consumers who belongs to non-altruistic'ㆍrational groups, sincere groups, and altruistic'ㆍ rational groups tended to prefer local stores in their own villages as places of purchasing gifts and did not order paid wrapping gifts while showing high after the purchase of gifts.
In this paper, we compute the images of homotopy groups of various classical Lie groups under the homomorphisms induced by the natural projections from those groups to irreducible symmetric spaces of classical type. We identify that those computations are certain lower bounds of Gottlieb groups of irreducible symmetric spaces. We use the lower bounds to compute some Gottlieb groups.
Throughout this paper, we denote that R is a near-ring and G an R-group. We initiate a study of R-substructures of G, monogenic R-groups, faithful R-groups and faithful D.G. representations of near-rings. Next, we investigate some properties of monogenic R-groups, faithful monogenic R-groups and a generalization of annihilator concepts in R-groups.
In this paper, we summarise and present results on involution lengths and commutator lengths of certain linear groups such as special linear groups, projective linear groups, upper triangle matrix groups and Vershik-Kerov groups. Some open problems motivated by these results are also proposed.
Let $n{\geq}0$ be an arbitrary integer. We define the class of almost n-simply presented abelian p-groups. It naturally strengthens all the notions of almost simply presented groups introduced by Hill and Ullery in Czechoslovak Math. J. (1996), n-simply presented p-groups defined by the present author and Keef in Houston J. Math. (2012), and almost ${\omega}_1-p^{{\omega}+n}$-projective groups developed by the same author in an upcoming publication [3]. Some comprehensive characterizations of the new concept are established such as Nunke-esque results as well as results on direct summands and ${\omega}_1$-bijections.
