Food and Meal Preference of Workers in the Chonnam Yeosu Industrial Area (전남 여수지역 산업체에 근무하는 근로자의 식품 및 음식의 기호도 조사)

  • This study was conducted to investigate food and meal preference of workers (435 male and 212 female) in the Chonnam Yeosu industrial area. The results of the survey were analyzed by principal components analysis. The results were obtained as follows: 19.3% of the subjects were twenties, 28.3% were thirties, 28.8% were forties and 23.7% were fifties. Females liked rice rolled in dried laver, rice cakes, janchi-noodle and breads, on the other hand males liked thick beef soup, loach soup, an eel stew and soju. The young liked instant noodles, fried chicken, sweet and sour pork, pork cutlet, pizza, hamburger, ham, sausage and fruit beverage, on the other hand the old liked a fish pot stew, loach soup, eel stew, fish boiled in soy with spices, panfried fish, sea slug, ascidian, bunder, green laver and boiled burdock-lotus root in soy. Females who are young liked hamburger and sweet and sour pork whereas males who are young liked instant noodles, pork cutlet, ham, sausage and fruit beverage. Aged females liked fish boiled in soy with spices, panfried fish, bunder, green laver, boiled burdock-lotus root in soy whereas aged males liked a fish pot stew, loach soup, eel stew, sea mussel and oysters. Boiled rice was located within the middle irrespective of age and sex, but noodles, wheat flour meal, fast foods and fruits were situated at the young female side. Aged males liked soup and pot stew. Young males liked meats and eggs whereas fish and shellfish and kimch were located at the aged people side. Aged females liked sea weeds and most people disliked vegetables but females liked some vegetables irrespective of age. Processed foods, salted foods, and alcohol were generally disliked foods by subjects but males liked those foods. Soybean curd was liked more males than females, and teas, except coffee, was liked by males. (Korean J Community Nutrition 14(4) : 392${\sim}$405, 2009)

Effect of schizandra berry dregs and rice bran treatment on γ-aminobutyric acid (GABA) content enhancement in Pleurotus ostreatus (오미자박과 미강 첨가배지가 느타리버섯 자실체의 γ-aminobutyric acid(GABA) 함량에 미치는 효과)

  • This study was carried out to establish a cultivation technique for increasing the ${\gamma}$-aminobutyric acid (GABA) content in the fruit body of mushrooms by adding processed by-products. For the oyster mushroom 'Heucktari', addition of green tea powder, sea tangle powder, and green tea dregs resulted in very poor primordia formation, fruit body growth, and increased GABA. However, addition of 10% schizandra berry dregs and 1% rice bran to the basal substrate induced 100% and 10% increases, in GABA content in the fruit bodies compared to the control treatment without by-product, respectively. In addition, fruit body growth and primordia formation were greatly increased by these treatments. Therefore, GABA content was increased when the substrate was prepared by mixing an appropriate amount of schizandra berry dregs and rice bran.

Research on Drinking Traditional Beverages among College Students in Seoul (전통 음료에 대한 서울 지역 대학생의 인지도 및 섭취 실태 조사)

  • This study was to investigate the factors affecting drinking Korean traditional beverages and the drinking habits of college students in Seoul. The research was carried out by asking them to drink 10 kinds of traditional drinks. They were composed of 45.5% of boys and 54.5% of girls who were $18\sim21$ years old, studying food related science (63.9%), and mostly (86.6%) living in a nuclear family in collective residents (60.4%) like an apartment. The number of students whose family's monthly incomes were over 3 million won was the largest as 37.1%. Their mothers were housewives (58.4%) mostly aged $46\sim50$ as 47.0%. In the research on the preference of students for the traditional drinks, most of them, 78.7%, showed their liking for the drinks because of their good taste (61.%). The number of students who answered they got the drinks by homemaking was the largest as 39.6%. Most of them, 66.3%, preferred fruit drinks, 19.8% soda drinks, 11.4% traditional drinks and 2.5% functional drinks. 31.2% of the drinks mostly taken at home was green tea, followed by sweet rice drink, Shik-hae. Among the drinks coming into the market, sweet rice drink was preferred in general as 25.7%, and the next was green tea 16.8%, ume drink (Maesil tea) 14.9%, rice tea 13.9%, fruit punch (Sujeonggwa) 11.4%, black tea 7.9%, honey tea 4.5%, ginseng tea 2.5% and jujube tea 2.5%. In the research on 'whether the students had experience preparing the traditional drinks or not', many of them, 62.4%, answered "No". And in the questionnaire asking on 'whether they liked to receive a training on making traditional drinks or not', 87.6% of them showed their wish to get the training. In the question on the reason why the students did not like to take the training on traditional drinks, the number of students who answered that it was complicated and hard to prepare was the largest as 53.0%.

Effect of Application Rate of Hairy Vetch on Ammonia Emission from Paddy Soil (논에서 헤어리베치 시용량에 따른 암모니아 휘산량 평가)

  • BACKGROUND: Hairy ventch (Vicia villosa) is a good green manure for supplying nitrogen in arable soil. Ammonia emission from rice fields can occur, and the degree of this emission can be great. However, quantitative information of ammonia emission from paddy soil using green manure is required to obtain emission factors for rice cropping in Korea. METHODS AND RESULTS: Ammonia emission from flooding soil with different application rate of hairy vetch was measured using the closed chamber method. For this study, hairy vetch was applied at rates of 0 (control), 500 (H500), 1000 (H1000), 2000 (H2000), and 3000 (H3000) kg/ha (fresh matter basis). This experiment was conducted for 54 days under flooding condition. The total NH3 emission throughout the experiment period was 0.32, 0.54, 1.20, 4.20, and 6.20 kg/ha for control, H500, H1000, H2000, and H3000, respectively. The ratio of NH3 emission to applied nitrogen by hairy vetch for each treatment was 0.7, 1.4, 3.2, and 3.2% for H500, H1000, H2000, and H3000, respectively. CONCLUSION(S): A very small amount of ammonia emission was recorded in the present study. Therefore, the use of hairy vetch in paddy field instead of chemical fertilizer can reduce ammonia emissions.

Microbial composition and diversity of the long term application of organic material in upland soil

  • Organic and chemical fertilizer amendments are an important agricultural practice for increasing crop yields. In order to maintain the soil sustainability, it is important to monitor the effects of fertilizer applications on the shift of soil microorganism, which control the cycling of many nutrients in the soils. Here, culture-dependent and culture-independent approaches were used to analyze the soil microorganism and community structure under six fertilization treatments, including green manure, rice straw compost, rapeseed cake, pig mature compost, NPK +pig mature compost, NPK and control. Both organic and chemical fertilizers caused a shift of the cultural microorganism CFUs after treatments. Bacterial CFUs of the organic fertilization treatments were significantly higher than that of chemical fertilization treatments. The DGGE profiles of the bacterial communities of the samples showed that the green manure treatment was a distinct difference in bacterial community, with a greater complexity of the band pattern than other treatments. Cluster analyses based on the DGGE profile showed that rice straw compost and pig mature compost had a similar banding pattern and clustered together firstly. Rapeseed cake, NPK, NPK +pig manure compost and control clustered together in other sub-cluster and clearly distinguished from green manure.

Standardizations of Traditional Special Kimchi in Kyungsang Province (경상도 별미김치의 표준화 연구)

  • This study was conducted to standardize ingredient ratio and preparation method of mafor traditional special kimchies in kyungsang province, korea. There were about 35 varieties of special kimchi in Kyungsang province. Six varieties of them such as burdock kimchi, wild leek kimchi, green thread onion kimchi, perilla leaf kimchi, Godulbaegi(Korean wild lettuce) kimchi, and red pepper leaf kimchi were selected, because they tasted good and the physiological functions of their main ingredients were excellent. The ingredient ratios of the selected special kimchi were standardized through surveying hereditary preparation of some families in kyungsang province and using the literatures including cooking books. The standardized ingredient ratio of the burdock kimchi was 15.1 pickled anchovy juice, 6.8 red pepper powder, 5.7 garlic, 2.2 ginger, 18.0 rice flour paste, 13.5 green thread onion, and 1.2 sesame seed in proportion to 100 of burdock. The standardized preparation step of the selected special kimchies was similar except some preprocessing methods of main ingredients. The diagonally cut-up burdock ws usually parboiled or soaked in salted water, then it was mixed with the other ingredients. Wild leek and green thread onion were usually pickled with salt or pickled anchovy juice. Sometimes the green thread onion pickled was dried in the sun. General preprocessing of perilla leaf, Korean wild lettuce, and red pepper leaf was soaking them in salted water for about 5-10 days. Sometimes red pepper leaf was heated with steam and dried in the sun, then it was mixed with the other ingredients.

Eco-efficiency Analysis of Organic Agriculture in Korea

  • Eco-efficiency which is calculated by dividing economic productivity by the environmental load was made by synthesizing eco and efficiency from ecology and economy, proposed by World Business Council for Sustainable Development in 2000. Eco-efficiency by connection of resource efficiency with resource intensity is used as an indicator for evaluating green growth for minimizing the impact on the environment and achieving economic development as well by means of efficient use of resources. This research analyzes eco-efficiency with the case of organic agriculture promoted as a key green growth policy. Thirty questionnaires for farmers producing organic rice in Hongseong-gun, Choongcheongnam-do were used for the analysis. Eco-efficiency was measured by means of the amount of used nitrogen with respect to the amount of income, and was represented that organic agriculture was 32.0 higher than conventional agriculture. The analytical result of technical efficiency, using the (Data Envelopment Analysis (DEA) model showed that it is 0.765 which has a possibility of 21% in management improvement, and higher eco-efficiency was with higher technical efficiency. The analytical results showed that an organic agriculture contributes to green growth more than conventional agriculture. In addition, higher technical efficiency groups exhibited higher eco-efficiency indices.

A New Cowpea Cultivar 'Okhyun' with Green Cotyledons and a Black Seed Coat

  • Cowpea(Vigna unguiculata L. Walp) has excellent physical properties and texture of starch, so it is mainly used in various ways for songpyeon sediment, rice-cake paste, and porridge. To utilize it as various processed products such as songpyeon sediment and cowpea milk, 'Okhyun', which has green cotyledons and black seed coats and can be harvested by combine was developed. A cowpea variety 'Okhyun' was improved from the cross between IT145379 and IT208081 at the JARES in 2022. 'Okhyun' has an erect plant with an intermediate plant habit, a light purple-colored corolla, and heart-shaped leaflets. 'Okhyun' has green cotyledons and black seed coats, and has straight black brown pods when mature. The stem length of 'Okhyun' is 47cm, and the weight of 100-seed weight was 12.9g, which was lower than the control variety 'Okdang'(16.6g). 'Okhyun' contains 25.8mg/100g of anthocyanin, 279mg/100g of total polyphenols, and 335mg/100g of total flavonoids, respectively. The average yield of 'Okhyun' was 1.97ton per hectare, 11% higher than that of the control cultivar 'Okdang'. 'Okhyun'' does not require the installation of an espalier-net net, so it is possible to harvest with a combine. In addition, 'Okhyun' variety with green cotyledons and a black seed coat is expected to contribute to developing regional specialties and various processed products.

Insect Pests Occurrence and Control in Organic and Conventional Rice Paddy Field (유기 및 관행벼 재배지 충해 발생 및 방제에 관한 연구)

  • Insect pests were surveyed in 5 Rice paddy field areas of Organic paddy field and conventional paddy field. At the each rice-growth period, the occurrence rate of 'Small brawn plant hopper was high at the case of duck raising and rice bran farming on middle stage of rice paddy field in Gang-Hwa region. The occurrence rate of Rice water weevil was high at the conventional paddy field on the early stage of rice paddy field in Yeo-Ju region. In the Hong-Seong region, the occurrence rate of 'Rice water weevil' and 'Green rice leafhopper' was high at the 'duck raising compare to the conventional farming on the early stage of rice paddy field. According to each period, the occurrence rate of insect was high at late stage of rice paddy field, and there was no difference between each region. It showed high-occurrence tendency at duck pasture farming rice paddy field. The major natural enemies were spiders and parasites. Theridiidae and Linyphiidae were highly occurred on the conventional farming rice paddy field in Hong-Seong. Web builders containing Theridiidae, Linyphiidae and Tetragnathidae was occurred more than wandering spiders containing Lycosidae, Clubionidae and Pisauridae at various regions, and then occurrence of spiders was different at the various regions but was not different at each farming system.

Comparative Study on Dietary Patterns of Korean - Chinese and Koreans (중국 연변 조선족자치주 성인과 한국 구리지역 성인의 식생활 양식 비교)

  • This study was conducted to investigate dietary patterns and assimilation of dietary culture of Korean descendants in Yanbian, China compared to Korean. A dietary survey was conducted using one 24-hour recall method from 730 adults over 30 years of age in Yanbian, China and 695 adults over 25 years of age in Kuri, Korea. The average number of food items consumed per day was 14 in Yanbian and 20 in Kuri and there was a significant difference between the two regions(p<0.001). The foods consumed most frequently were rice, salt, the M.S.G. in Yanbian and rice, green onion and garlic in Kuri. The foods consumed most by amount were rice, cucumber, Soju in Yanbian and rice, Kimchi and grape in Kuri. The average number of dishes consumed per day was 6.4 in Yanbian, 9.4 in Kuri and the difference between the two regions was significant(p<0.001). Total number of dishes appeared in the survey was 253 in Yanbian and 494 in Kuri. The dishes consumed most frequently were cooked-rice, beverages, Kimchi, stir-fried eggplant in Yanbian and cooked-rice, Kimchi, coffee, soybean paste stew, in Kuri. The dish groups appeared most frequently were rice, stir-fried foods, vegetables and Kimchi in Yanbian and rice, Kimchi, beverages and fruits in Kuri. Male subjects in Yanbian Consumed alcohol frequently while adults in Kuri consumed coffee more frequently than Yanbian. The major meal patterns were rice+side dish, rice+soup, rice+side dish+Kimchi in Yanbian and rice+soup+side dish+Kimchi, rice+side dish+Kimchi, rice+soup+Kimchi in Kuri. Stir-fried foods, which were consumed 46.6% of all the meals, were dominant side dish in Yanbian, but stir-fried food, seasoned vegetables and grilled food appeared aver 10% in Kuri. There results show that variety of diet of Korean-Chinese in Yanbian was lower than Kuri. Korean-Chinese tend to keep traditional Korean dietary patterns of consuming rice as staple but were adapted to Chinese dietary patterns of consuming stir-fried side dishes. Efforts should be directed toward preserving Korean traditional patterns of dietary culture among Korean-Chinese population.
