Effect of Curing Time on the Physicochemical and Sensory Properties of Beef Jerky Replaced Salt with Soy Sauce, Red Pepper Paste and Soybean Paste

  • This study was done to investigate the quality properties of beef jerky with soy sauce, red pepper paste, and soybean paste replacing salt. Sliced beef samples were cured in salt (control), soy sauce, red pepper paste, and soybean paste for 24 or 48 h and then dried at $70^{\circ}C$ for 8 h. Treatments showed higher final moisture content and lower $Na^+$ concentration than the control after drying for 8 h. The lightness and shear force values were lower in all treatment samples than in the control during 48 h of curing time. In particular, lower lipid oxidation was found in the jerky cured with red pepper paste than in the control. Sensory evaluation showed that color, flavor, and tenderness of jerky samples were improved by replacing salt with soy sauce, red pepper paste and soybean paste, and higher likeability scores of the beef jerky were obtained among those treatments after 48 h of curing time.

Cold Shock Response of Leuconostoc mesenteroides SY1 Isolated from Kimchi

  • Low-temperature adaptation and cryoprotection were studied in Leuconostoc mesenteroides SYl, a strain isolated from Kimchi. L. mesenteroides SY1 cells grown in exponential growth phase at $30^{\circ}C$ were exposed to $15^{\circ}C,\;10^{\circ}C$, and $5^{\circ}C$ for 2, 4, and 6 h, respectively, and then frozen at $- 70^{\circ}C$ for 24 h. Survival ratio was measured after the cells were thawed. The freezing-thawing cycles were repeated four times. Preadapted cells survived better than non-adapted control cells, and the highest survival ratio ($96\%$) was observed for cells preadapted for 2 h at $5^{\circ}C$, whereas control cells showed only $22\%$. The 2D gel showed that two proteins (spots A and B) were induced in cells preadapted at lower temperatures. Spots A and B have the same molecular weight (7 kDa), but the pI was 4.6 for spot A and 4.3 for spot B. The first 29 and 15 amino acid sequences from spots A and B were determined, and they were identical, except for one amino acid. A csp gene was cloned, and nucleotide sequencing confirmed that the gene encoded spot A cold shock protein.

Analysis of the Corporate Life Cycle using the Gompertz Model Focused on Korean Pharmaceutical Longevity Companies

  • Purpose: This study aims to figure out the characteristics of corporate life cycle and resource input in terms of the sustainability diagnosis of pharmaceutical companies in Korea. Research design, data, and methodology: Using the Gompertz model under the assumption that companies have finite resources, this study tries quantitative interpretation of life cycle and resource input pattern for longevity companies with 25 years of experience among 158 pharmaceutical companies listed on Korean stock market based on maturity of revenue. Results: The study found revenue maturity through Gompertz model was statistically correlated with enterprise value. According to the life cycle analysis, more than 95% of 59 pharmaceutical companies were in the growth and maturity phase and have an average life cycle of 88 years and an average remaining life of 52 years. Regarding maturity profile of resource input, maturity of employees was generally high more than 60% and this meant there was jobless growth in Korean pharmaceutical industry. Conclusion: This study demonstrated there is a high statistical correlation between the maturity of a company's resource input and its revenue and enterprise value. It is believed that these results could be utilized as a basis for high fidelity function that predict revenue and enterprise value based on resource input information.

Effects of Dietary Supplementation with Branched-chain Amino Acids (BCAAs) during Nursing on Plasma BCAA Levels and Subsequent Growth in Cattle

  • To determine the effects of short-term dietary supplementation of branched-chain amino acids (BCAAs) during nursing (from 3 to 28 days of age) on plasma BCAA levels and subsequent growths in cattle, 12 nursing male Holstein calves, randomly assigned to control and treatment groups (n = 6 in each group), orally received a daily supplement of essential BCAAs (2 g/kg body weight/day; 1:1:1 of valine, leucine and isoleucine) or not. The plasma BCAA levels increased linearly after the administration. During the treatment period, average daily gain (ADG) was lower in the treatment group (0.43${\pm}$0.07 kg/day) than the controls (0.71${\pm}$0.07 kg/day, p<0.05). However, at 2 months of age, ADG was significantly higher in the BCAA-treated group (1.16${\pm}$0.26 kg/day vs. 0.51${\pm}$0.06 kg/day, p<0.05). Furthermore, at age 8, 9 and 10 month, ADG in the treated group (1.35${\pm}$0.23, 1.46${\pm}$0.07 and 1.60${\pm}$0.16 kg/day, respectively) showed a linear increase and was significantly higher than that in the control group (0.88${\pm}$0.14, 0.70${\pm}$0.21 and 1.11${\pm}$0.11 kg/kg, respectively, p<0.05). Overall, ADG was 15.6% higher in the treatment group (1.26${\pm}$0.05 kg vs. 1.09${\pm}$0.04 kg; p<0.05). The final body weight at slaughter was 14.8% higher in the treatment group (759.5${\pm}$17.7 kg vs. 661.7${\pm}$21.2 kg, p<0.01). Thus, the supplementation of BCAAs during nursing improves ADG and carcass weight in cattle and is a useful husbandry technique for beef cattle.

Effects of sleep quality and occupational stress on health-related quality of life among a university's security workers (일개 대학 경비근로자의 수면의 질과 직무스트레스가 건강관련 삶의 질에 미치는 영향)

  • Objectives: The purpose of this study was to identify the effects of sleep quality and occupational stress on health-related quality of life among a university's security workers. Methods: 128 security workers voluntarily participated in the study. The survey asked demographic, health related, job related factors, the Korean Occupational Stress Scale Short Form(KOSS-SF), sleep quality questionnaire, and 12-Short Form Health Survey version 2.0(SF-12v2). The data were analyzed by using descriptive analysis, t-test, ANOVA, multiple linear regression, and multiple logistic regression. Results: The interrupted rest time was significantly negatively related to occupational stress. The occupational stress significantly affected sleep quality. The significant variable affecting Physical Component Score(PCS) and Mental Component Score(MCS) was sleep quality and occupational stress, respectively. Conclusions: HRQOL was founded to be affected by occupational stress and sleep disorder among the security workers. Based on this study, we suggest that the management of both occupational stress and sleep quality is crucial to improve the HRQOL.
