  • The In the experiment on flow using sand walls, when white clay+sand was mixed with glutinous rice, traditional paper and seaweed as adherents and preventive measures for cracks, the flow was higher than other sand wall mortars. This indicates that it is effective in improving flow. Moreover, in terms of strength, a mix of white clay+sand, traditional paper and flour had a greater strength than a mix of white clay+sand, straws and flour. In the experiment to test for cracks and shrinking during drying, a composition of white clay+sand+traditional paper showed fewer cracks and less shrinking than the walls where straws were mixed in.

재래식과 공장산 고추장의 향기성분 (Volatile Flavor Components of Traditional and Commercial Kochujang)

  • The volatile flavor components of traditional and commercial kochujang were collected by simultaneous steam distillation-extraction (SDE) method. Essential oils were analyzed by gas chromatography (GC) and combined gas chromatography-mass spectrometry (GC/MS). Tested kochujang included Sunchang kochujang prepared with glutinous rice, Boeun kochujang prepared with barley, Sachun kochujang prepared with wheat and commercial kochujang. One hundred and twelve volatile flavor components which included 30 esters, 15 alcohols, 14 aldehydes, 13 acids, 9 ketones, 7 alkenes, 6 phenols, 3 alkanes, 3 pyrazines, 2 benzenes and 2 furans were identified. The major volatile compounds in traditional and commercial kochujang were 2-methyl propanal and ethanol, which represented $21{\sim}36%\;and\;2{\sim}44%$ of total GC peak area, respectively.

전북 지방의 유과 제조 방법 및 소비자들의 유과 선호도 조사 (Research Study of Yukwa Baking Process, a Traditional Desert Originated from Jeonbuk, Korea)

  • A survey was conducted to study the ingredient and the nutrition of Yukwa consumed in Jeonbuk region. Additional survey was performed to the adult population in Jeobook region to identify the recognition and improvement of Yukwa. The ingredient and baking process varies from each region. The modernization of Yukwa baking process requires introduction of new flavour using new ingredient and simplification of the baking process as these two factors are holding back the modernization of the Yukwa. Top quality Yukwa can be produced by standardized baking process, using top quality agricultural goods, cultivated in Korea. The key to making Yukwa more accessible to the public is by simplifying the current baking process, including the drying process Bandegi, which is the most complicated process of all.

설사(泄瀉)의 식료방법(食療方法)에 관한 연구(硏究) (A study of dietetic on the diarrhea)

  • Objectives : This research examined about dietary therapy on the diarrhea based on the literary findings, for clinical treatment and prevention of the diarrhea. Methods : This Research examined on histories, compositions, applications, and effects of the diarrhea on about 100 cases of dietary therapy of the diarrhea from recent Chinese literatures Results : 1. Various vegetables, animals and mineral materials including herbs, grains, vegetables, fruits, food and drink were used for the dietary therapy. 2. Methods of the preparation for use as therapeutics were decoction, pulvis, gruel, medicinal wine, cake, tea, paste and gelatin and etc. 3. Frequently used materials were sesame oil, honey, ear mushroom, shiitake mushroom, kelp, walnut seed, hemp seed, groundnut, glutinous rice, apricot stone, yellow bean peel, radish, potato, spinage, and spring onion. Conclusion : Though dietary therapy for the diarrhea is not based on clinical or experimental data, but through experience. It is mostly based on Yin-Yang and five elements, visceral manifestation, channels and their collateral channels and chinese herbal medicine theories. If we use them properly according to oriental medicine method, it will be effective on treating and preventing the diarrhea.

곡류 및 잡곡류를 이용한 팽화과자의 생리 활성 비교연구 (A Comparative Study on the Physiological Activities of Puffed Snack using Miscellaneous Cereals and Grain Crops)

  • This study was performed to compare the physiological effects of puffed snack on diabetic and geriatric diseases using miscellaneous cereals and grain crops. The puffed snacks were prepared with different amounts of miscellaneous cereals and grain crops (in ratios of 10%, 20%, and 30% of brown rice). Changes in the water soluble index, water absorption index, color, antioxidant activity, total polyphenol content acidity, ${\alpha}$-glucosidase inhibition activity, and sensory evaluation were also determined. As the cereal and crop contents increased, the value of the water soluble index increased while the water absorption index decreased, with the exception of glutinous foxtail and barnyard millets. With respect to color, lightness and yellowness decreased in concert with increases in the cereal and crop contents, whereas redness increased. Furthermore, the antioxidant activity and total polyphenol content as well as ${\alpha}$-glucosidase inhibition activity increased remarkably with increasing concentrations of sorghum. There was no significant difference in the physiological activities depending on the addition of millet, barley and barnyard millets. In sensory evaluation, the puffed snacks containing sorghum, millet, and glutinous foxtail millet received higher values than other samples. Altogether, our results indicate that puffed snacks containing 10~20% sorghum could be suitable as ingredients for improving sensory and physiological activities in diabetic and geriatric diseases.

Effects of adlay, buckwheat, and barley on transit time and the antioxidative system in obesity induced rats

  • In the present study, we examined whether four grains including adlay (AD), buckwheat (BW), glutinous barley (GB), and white rice (WR) affect the duration of food residence in the gastrointestinal tract and hepatic enzyme activities in rats fed different combinations of the grains. The rats were raised for 4 weeks on a high fat diet based on the American Institute of Nutrition-93 (AIN-93G) diets containing 1% cholesterol and 20% dietary lipids. Forty male rats were divided into four groups and raised for 4 weeks with a diet containing one of the grains. Corresponding to the dietary fiber contents of the experimental grains, gut transit time was shortest in the rats fed GB and increased in the order of BW, AD, and WR. In addition, the accumulated shortest transit time occurred in the GB group. Gut transit time affected weight gain and major organ weight, as it was closely related to the absorption of nutrients. The level of thiobarbituric acid reactive substance (TBARS) in liver was higher in rats fed WR, AD, BW, and GB, indicating that the other grains decreased oxidative stress in vivo more than WR. Glutathione, glutathione peroxidase, and glutathione S-transferase levels in the AD, BW, and GB groups were significantly higher than those in the WR group. In conclusion, reduced colonic transit time has been implicated in reducing the incidence of colon cancer, as evidenced by populations consuming diets rich in fiber. Whole grains such as AD, BW, and GB may contribute to a significant supply of antioxidants to prevent oxidative stress if they are consumed in large amounts.

국내육성 향미 유전자원과 도입 향미 유전자원의 농업적 형질 평가 (Estimation of Agronomic Characteristics of Domestic Aromatic Rice Germplasm and Foreign Aromatic Rice Germplasm in RDA Genebank, Korea)

  • 본 시험은 국내 육성 향미자원과 외래 도입 향미 유전자원 및 국내 다면적 재래자원들의 농업적 형질특성을 비교하여 향후 우수한 향미 품종의 육성에 필요한 기초 자료를 제공하고자 실시하였으며,그 결과는 다음과 같다. 1. 공시재료는 104품종으로 국내자원 5품종 및 국내 다면적 재배 자원 14품종으로 모두 출수하였으나, 외래 도입자원 84품종 중 24품종(23%)은 출수하지 못하였다. 2. 평균 출수일은 통일계 국내자원(122일)이 빨랐으며, 자포니카형 국내자원이 136일로 늦었고, 도입자원(약 132일)과 다면적 재배자원(131일)과 비슷하였다. 평균 간장은 통일계 국내자원(74 cm) < 다면적 재배자원(97.5 cm) < 자포니카형 국내자원(100.3 cm) < 자포니카형 도입자원(120cm) < 인디카형 도입자원(130 cm) 순으로 길었다. 평균 수장은 국내 향미자원(21 cm)과 다면적 재배자원(21.5 cm)이 비슷하며, 자포니카형(24.5 cm)과 인디카형(29.5 cm) 도입자원이 국내자원보다 길었다. 평균 수수는 자포니카형 도입 자원(10개) < 통일계 국내자원(12개) < 인디카형 도입자원(14개) < 다면적 재배자원(15개) < 자포니카형 국내자원(19개) 순으로 많았다. 평균 1,000립중은 통일계 국내자원(23.6g)과 자포니카형 도입자원(23.5 g)이 자포니카형 국내자원(20.9 g)과 다면적 재배자원(21.9 g)이 비슷하였고, 인디카형 도입자원은 19.1 g이었다. 3. 벼의 생태형을 결정하는 립의 평균 장폭비는 인디카형도입자원(3.29) > 통일형 국내자원(2.52) > 자포니카형 국내자원 = 자포니카형 도입자원(1.81) > 국내 다면적 재배자원(1.7) 순이었다. 4. 임실률은 자포니카형 국내자원(100%) > 국내 다면적 재래종(98%) > 자포니카형 도입자원(89.7%) > 인디카형 도입자원(65.4%) > 통일형 국내자원(50%) 순으로 높았다. 평균 발아율은 국내자원(통일계, 98.3%; 자포니카형, 90.4%) 및 국내 다면적 재래종(자포니카형, 93.3%)이 도입자원(인디카형, 83.7%; 자포니카형, 88.6%)보다 높았으나, 변이폭은 도입자원이 컸다.현미의 형태적 특징은 찰벼는 7자원이며 메벼가 97자원(84.2%)이었다. 5. 국내자원 중 Hyangmibyeo2ho, Aranghyangchalbyeo가 중간 정도의 향을 띄었다. 인디카형 도입자원 40품종 중에서 22품종(55%)과 자포니카형 도입자원 16품종 중 9품종(56%)이 약한 향을 나타내었고, 국내 다면적 재래종은 13품종은 모두 향이 없었다.

도정 및 품종혼합에 의한 고아미2호의 취반특성 (Improvement of Cooking Properties by Milling and Blending in Rice Cultivar Goami2)

  • 난소화성 다당류의 함량이 높은 고아미2호의 취반특성 개선 및 식미 향상을 목적으로 수행한 연구결과는 다음과 같았다. 1. 취반이 어려운 것으로 알려진 고아미2호는 가루로 1차 호화시킨 후에도 미세전분입자는 호화되지 않은 것으로 나타나 일반적인 취반방법으로는 식미개선에 어려움이 있는 것으로 나타났다. 도정에 의해서 색, 물성 및 호화특성의 변화를 살펴 보았으나 명도와 백도 이외에는 도정율에 따른 유의한 특성 변화는 없는 것으로 나타났다. 2. 상온수분흡수특성을 통해 고아미2호 최소 1시간 이상의 수침시간을 필요로 하며 관능평가를 통해 이 경우 식미가 더 양호함을 확인할 수 있었다. 3. 품종별 호화 및 취반특성을 비교해 본 결과 고아미2호의 호화개시온도가 $88^{\circ}C$로 매우 높고 일반 밥솥에서 취반할 경우 수분흡수율과 팽창용적이 적은 것으로 보아 취반 방법에 있어서 고온고압이 요구되는 것으로 나타났다. 4. 다른 품종과의 혼합을 통한 식미 혹은 물성 개선을 위해 아밀로스 함량이 다른 일품벼, 백진주, 화선찰벼를 비교한 결과 호화가 늦고 경도가 낮으며 노화특성이 양호한 백진주, 화선찰벼가 일품벼에 비해 더 적합할 것으로 예상되었고, 관능 평가를 통해 두 품종이 일품벼에 비해 전반적으로 더 양호한 것으로 나타났다.

국내 육성 및 도입 향미자원의 이화학적 특성 평가 (Estimation of Physico-Chemical Characteristics of Domestic Aroma Rice and Foreign Aroma Rice)

  • 본 시험은 국내 육성 5품종, 국외 도입 61품종 등 향미자원 66품종 및 국내에서 재배면적이 넓은 재래종 14품종을 비향미자원의 이화학적 특성을 평가하고자 아밀로스함량, 단백질함량, 알칼리붕괴도(ADV) 및 호화점도(RVA)등을 분석 향후 기능성 및 다양한 향미 품종의 육성에 필요한 기초자료를 제공하고자 실시하였다. 그 결과를 요약하면 다음과 같다. 1. 국내 육성향미 자원(18.1%) 및 국내 다면적 재래종(19.0%) 각각의 저아밀로스 자원을 제외하면 평균 아밀로스함량이 비슷하였으며, 외국에서 도입한 인디카형(25.6%) 및 자포니카형(25.0%) 향미자원의 평균 아밀로스함량보다 매우 낮은 경향을 보였다. 2. 국내에서 육성한 통일계와 자포니카형 향미품종 각각의 평균 단백질함량은 7.6%와 6.4%이었고 인디카형 도입 향미자원 및 자포니카형 도입 향미자원의 평균 단백질함량은 각각 7.6%와 7.0%이었으며, 국내 다면적 재래자원(자포니카형)들의 평균 단백질함량은 5.6%이었다. 자포니카형의 품종들이 인디카형 자원에 비해 다소 낮은 단백질함량을 나타내었으며, 외국에서 도입한 향미자원의 경우 단백질함량의 변이 폭이 넓었다. 3. 국내에서 육성한 향미 자원 중 통일계 품종의 평균 알칼리붕괴도는 5.0이었고 자포니카형 품종의 평균 알칼리붕괴도는 6.0이었다. 인디카형 도입 향미자원의 평균 알칼리붕괴도는 4.3이었고 자포니카형 도입 향미자원의 평균 알칼리붕괴도는 5.1이었다. 국내 다면적 재래자원(자포니카형)의 평균알칼리붕괴도는 6.0이었다. 알칼리붕괴도 값은 자포니카형 > 통일계 > 인디카형의 순서로 낮았으며 도입 향미자원의 알칼리붕괴도 값의 분포가 국내 육성 향미 자원이나 국내 재래자원보다 넓었으며 평균값도 낮게 보였다. 4. Amylogram의 전체적인 양상을 살펴보면, 전체 자원의 최고점도, 최저점도, 최종점도는 국내육성 향미 자원 중 통일계 품종 > 국내 다면적 재래자원(자포니카형) >국내 육성 자포니카형 향미자원 > 인디카형 도입 향미자원 > 자포니카형 도입 향미자원 순으로 낮은 평균값을 보였다. 또한 국내외 향미 자원 및 일반 벼의 생태형(ecotype)에 따라 아밀로그램의 양상이 뚜렷하게 차이를 나타내었으며, 배유의 amylose와 amylopectin의 구성조합의 차이에 따른 메벼, 찰벼, 중간찰벼의 아밀로그램의 양상이 구분이 가능하였으며, 특히 찰벼의 경우 메벼나 자포니카형에 비해 뚜렷한 차이를 보였다.

대전지역 전업주부들의 학력수준에 따른 식품구매 실태조사 (Food purchase Behavior of Taejon Full Time Housewives with Different Education Levels)

  • A survey was conducted to assess the food-purchase behavior of 197 Taejon full time housewives 30 to 49 years of age. Food purchase was assessed using a questionnaire and the resulting data were analyzed using SPSS programs. Demographic data revealed that most of the households have three to five family members and that the Engel Indices of the participating households were mostly between 10 and 30%. Noticeable results of the food purchase assessment are as follows. In the grain and grain products items, the low-education group purchased more rice and barley than the high-education group, whereas the high-education group purchased more glutinous rice, brown rice, bread, macaronis and spaghetti than the low-education group. In the vegetable items, the low-education group purchased more Chinese cabbage and radish than the high-education group, while the high-education group purchased more head lettuce, broccoli and sweet pepper than the low-education group. In the meat items, the beef purchase was higher in the high-education than in the low-education group, while the pork purchase was higher in the low-education than in the high-education group . In the processed meat items, ham was the most favorite purchase item regardless of the education level. In the fish and shellfish items, Pacific cod and Alaska pollack were purchased more in the low-education than in the high-education group, and salmon and dried icefish strip were purchased more in the high-education than in the low-education group. No items in fruit group showed significant differences in the purchase amount between the low-education and the high-education group although the latter purchased more imported-fruits such as melons, kiwis, grapefruits, and oranges. Dairy products such as milk, cheese and butter were purchased more in the high-education than in the low-education group. It was also found that both the number of food items and the consumption of foods coming from animals were higher in the high-education than in the low-education group.
