The aim of this study was to identify binding properties of germanium (Ge) in Germanium-fortified Yeast using optimum manufacturing process. The ratio of yeast cell and germanium solution was 1 : 0.5 (50%), and pH 6.5, $35^{\circ}C$ and 20 h during fermentation, and Germanium-fortified Yeast produced. In results of the XRD, NMR and FT-IR analysis, it was different adding inorganic Ge $(GeO_2)$ during fermentation process from transformed into germanium in Germanium-fortified Yeast. And germanium concentration was not shown any difference before and after in the dialysis test with SGF (simulated gastric fluids). Therefore, Germanium-fortified Yeast of Geranti made by using biosynthetic technology was considered that transformed into organic properties during fermentation process. And, this result showed that Germanium-fortified Yeast was not dissociated under SGF (simulated gastric fluids) condition because of its structural binding safety. Thus, Germanium-fortified Yeast was transformed into organic germanium during biosynthetic cultivation. It is expected that this Germanium-fortified Yeast can be applied as a new dietary functional materials for cellular immunity, recovery of injured cells and immune system, and possible anticancer activities by activation immune cells like macrophage.
This study was carried out to investigate the influence of dietary germanium supplementation on the meat quality of duck. Ducks raised for 42 days were slaughtered and the ground meats were stored at 3$^{\circ}C$ for 12 days under 1200 lux. Experimental treatments were divided into 3 kinds of meat from ducks fed germanium as follows; 1) Control(natural water + commercial feed), 2) T1(1~10 days: natural water + commercial feed, 11-42 days: natural water + commercial feed supplemented with 1 % germanium), 3) T2(1~10 days: germanium submersion water + commercial feed, 11~42 days: natural water + commercial feed supplemented with 1 % germanium). The pH of duck meat was not different among the treatments(p>0.05). The germanium treatments exhibited significantly higher crude fat content in both breast and thigh meat(p<0.05). In the fatty acid composition, T2 contained more unsaturated fatty acid than control or Tl. TPA(textural profile analysis) value such as hardness, gumminess, chewiness and adhesiveness decreased in meat from duck fed supplemental germanium. Cholesterol contents of duck meat decreased in dietary supplemental germanium treatment compared to control, but were not significantly different among them(p>0.05). Dietary germanium supplementation affected on lipid oxidation of meat during storage. TBARS of meat from duck fed germanium was lower than that of control(po.05). The CIE L*, b* and h$\^$0/ values of germanium treatments were significantly(p.o5) higher than those of control. Also a* value showed more stable in germanium diet treatment during storage. Therefore, dietary supplemental germanium to duck resulted in light brownish color formation, improvement tenderness and retardation of lipid oxidation of meat during refrigerated storage.

Objectives : The purpose of this study was evaluated hypoglycemic effect of culture broth of germanium-fortified Tricholoma matsutake mycelium and yeast. Methods : We examined $\alpha$-glucosidase inhibitory activity, blood glucose level, concentration of serum lipid, and serum metabolic variables of Tricholoma matsutake mycelium and yeast fortified Germanium. in streptozotocin induced diabetic rat. Results : In the $\alpha$-glucosidase inhibitory activity, germanium-fortified yeast was significantly higher than germanium-fortified Tricholoma matsutake mycelium. The hypoglycemic effects of germaniumfortified Tricholoma matsutake mycelium was higher than germanium-fortified yeast. The activity of alkaline phosphatase(ALP), aspartate aminotransferase(AST) and alanine aminotransferase(ALT) was significantly lower in the germanium-fortified Tricholoma matsutake mycelium and yeast than in diabetic control(DC) group and diabetic positive control(PC) group. The concentration of total cholesterol and triglyceride of germanium-fortified yeast was significantly lower than germanium-fortified Tricholoma matsutake mycelium, DC group and PC group. Conclusions : The results suggest that germanium-fortified Tricholoma matsutake mycelium and yeast have improvement effects in blood glucose, serum lipid and liver function.

This study was designed to investigate the optimum manufacturing condition of germanium-fortified yeast, and the binding properties of germanium (Ge) in germanium-fortified yeast. The nutritional optimum conditions were glucose 3.0 (w/v) %, yeast extracts 0.3 (w/v) % and peptone 0.5 (w/v) %, and the amounts of yeast cells were 67.4 mg/ml. And, the standard germanium-fortified yeast was produced under the condition at the ratio of yeast cell and germanium solution was 1 : 0.5 (50%), pH 6.5 and $35-40^{\circ}C$ during fermentation. In results of the identification, binding of germanium-protein showed structural difference between the inorganic Ge $(GeO_2)$ added during fermentation process and germanium-fortified yeast. Therefore, germanium-fortified yeast made by biosynthetic technology formed structurally safe organic germanium during fermentation process. Germanium-fortified yeast can be applied as a new functional material far the improvement of health, the prevention and treatment of chronic degenerative disease like cancer, and the enforcement of immune system.
We have attempted to determine the Germanium ion (G $e^{4+}$) effect on the human body by observing the formation of artificial lipid membrane and photolysis in the mineral water containing G $e^{4+}$ ion. The artificial lipid membrane is prepared by using the phospholipid in the Germanium water and the formation efficiency of the liposomes is compared with those obtained in the plain mineral water without G $e^{4+}$ ion. This work shows that the liposomes are formed in the Germanium water better than in the non-Germanium water. The liposomes can be photolyzed by superoxide anion ( $O_{2-}$$^{.}$) produced in the presence of some peptide such as NAT (N-acethyl-L-tryptophan). However, this is inhibited by superoxide dismutase (SOD), and it was found that the activity of SOD on the inhibition of the liposomes oxidative damage is higher in the Germanium water than in the non-Germanium water. It is concluded that the G $e^{4+}$ ion in mineral water helps the formation of new cell as well as elevation of SOD activity for the lipid oxidation.n.
Analytical method for the determination of trace germanium in inorganic matrices by differential pulse polarography(DPP) was studied. The reduction peak of germanium(IV) in perchloric acid solution containing 1, 2, 3-trihydroxy benzene appeared at -0.45V(vs. Ag/AgCl) and the peak current for germanium complex varied linearly with concentration variation. Factors affecting sensitivity and precision for germanium quantification were studied and detection limit under the investigated parameters was 1ng/ml. Inorganic samples were decomposed by fusion with potassium pyrosulfate. Serious interferences of Se(IV), Pb(II), As(III) for the determination of germanium were discussed. Interferences of these elements could be avoided by extraction of germanium from decomposed matrices by $CCl_4$ in 10M HCl solution. The germanium contents of inorganic samples(Pb bf. dust, Cu bf. dust, gneiss, Cu anode slime) were determined by the above method.
The object of this study was to examine whether the germanium fortified yeast administered to SD rat is accumulated in the liver and kidney. The administration doses were within 2,000 mg/kg which is the level of NOAEL (no observed adverse effect level) proved through the previous study of single/consecutive oral toxicity test. There were no significant clinical symptoms and mortality following the administration of organic germanium-fortified yeast (0, 500, 1,000, 2,000 mg/kg) during the whole test period, and also no difference in the consumed amount of feed and water for each group. No significant abnormalities of hematology and blood chemistry parameters were found in all groups of organic germanium-fortified yeast (0, 500, 1,000, 2,000 mg/kg). The amount of germanium accumulated in liver and kidney was 0 g/kg by ICP-AES method in the group of organic germanium-fortified yeast. In the positive control group of $GeO_2$ (150 mg/kg), the amount of accumulation was shown to 3135.0 and 4277.2 g/kg in each female and male kidney and 1044.3 and 2135.8 g/kg in each female and male liver, respectively. Organic germanium-fortified yeast, a biosynthetic product resulting from putting germanium into yeast, did not show any clinical symptoms, blood chemical significance, and residues in kidney and liver. It could be inferred that the non-toxic amount of organic germanium-fortified yeast was up to 2,000 mg/kg.

Since germanium has been shown to be beneficial for the treatment of diseases such as cancer and rheumatic arthritis, we developed an adapted process of bio-germanium preparation using inorganic germanium. In the present study we determined the optimal conditions for culturing yeast Saccharomyces cerevisiae (KCTC-1199), and the best concentrations of inorganic germanium for the adaptation process. The resulting method was successful at producing high quantities of germanium yeasts. The following are the culture conditions that obtained the highest level of productivity: an inorganic germanium concentration of 3,000-5,000 ppm, a pH of 6.5, a temperature of $35^{\circ}C$, and 20 hr of incubation time. In addition to this high-yield quantity study, we observed the acute oral toxicity of mice treated with Geranti Bio-Ge $Yeast^{(R)}$. We found no changes in body weight, or in the mortality between the control groups and the bio-germanium yeast group. There were also no digestive problems such as diarrhea that occurred in either group.

Background: This study was conducted to investigate the effects of germanium treatment on the growth and organic germanium production in the roots of Oplopanax elatus plantlets. Methods and Results: O. elatus plantlets were cultured in Murashige and Skoog (MS) medium with different concentrations of germanium dioxide ($GeO_2$) to analyze optimum growth conditions. Exogenous treatment of $10mg/{\ell}\;GeO_2$ promoted growth and an increase in the contents of chlorophyll a, b and carotenoid in O. elatus. The germanium accumulation and production in roots of O. elatus plantlets treated with organic germanium reached the highest levels. The growth of the aerial and underground portion of O. elatus with organic germanium was greater than that of the control. The accumulation and production of organic germanium reached the highest level ($40.89{\mu}g/plantlet$) with the treatment of $50mg/{\ell}\;GeO_2$. Antioxidant activity measured by DPPH and ABTS assays also increased with the germanium treatment and improved the DPPH and ABTS radical activity by 200% compared with that in the control. In addition, the total phenol and flavonoid contents of the plantlets with a treatment of $50mg/{\ell}\;GeO_2$ were higher than in the control. Conclusions: Taken together, the growth of O. elatus was increased with the treatment of $50mg/{\ell}\;GeO_2$ germanium and the biological references improved, with increased antioxidant activity and organic germanium production.
