Utilization of Probiotic Starter Cultures for the Manufacture of Low-fat Functional Fermented Sausages (저지방 기능성 발효소시지의 제조를 위한 복합 유산균주의 이용)

  • This study was performed to evaluate the physico-chemical properties of fermented sausages containing probiotic starter cultures (LK-30 plus, Lactobacillus plantarum 155 and 167, and Pediococcus damnosus L12) with reduced fat levels, and to determine the optimum condition for the manufacture of these products. Although low-fat fermented sausages were reduced fat content at the amount of 90% and the ripening time by 1-2 weeks, as compared to regular-fat counterpart, they became harder and had many winkles outside due to the extreme drying. In addition, fat level in fermented sausages affected the composition and shear force values. During ripening, pH, lightness and yellowness values tended to decrease, however, microbial counts of inoculated lactic acid bacteria were increased up to $10^8-10^9cfu/g$ within 3 days and remained constant thereafter. Low-fat fermented sausages had higher microbial counts than regular-fat ones. Although the inoculated probiotic starter cultures alone had the functional properties, such as cholesterol reduction, anti-high blood pressure and antimicrobial activity, they did not have distinctive characteristics in the fermented sausages. Based on these results, the low-fat fermented sausages were successfully manufactured, but a little bit increased fat level and improved functional properties in the fermented sausages would be required to have better quality as compared to regular-fat counterparts.

A Study on the Philippines Furniture through Manila FAME (마닐라 페임을 통한 필리핀 가구 연구)

  • The aim of the present study was to investigate and analyze a tendency of the Philippines furniture which are not well-known in Korean market yet, but have been emerging as an OEM base, through the Manila FAME 2012. The study was conducted by visiting some furniture companies in Philippines for the active understanding regarding the current status of the Philippines furniture, in consideration of the material, functional and structural aspects of the goods which were exhibited on the Manila FAME 2012. The methods of the investigation were to research the related literatures concerned and materials had been collected over the internet, to visit the Manila FAME 2012 at work and finally to visit furniture companies in Philippines. Manila FAME has been based on the DTI (DTI: Department of Trade and Industry) through CITEM (CITEM: The Center for International Trade Mission and Expositions) since 1983. The exhibition whichincludes various sorts from furniture, traditional artifacts, leisure goods, gifts, jewelry and clothes is becoming such a potent force by integrating three exhibitions such as Manila Now, CEBUNEXT and Bijoux Cebu, what all had been held before the world economic downturn. The features of the Philippines furniture shown on the Manila FAME are as follows: First, they are focusing on the maximum of function to the exclusion of the decoration and they were mostly made of various kinds of mahogany like jambilina, acacia, bamboo, wisteria and Manila hemp growing up in the Philippines indeed and finally there were a lot of the simple designs of the curved line which were exactly the material nature of the wisteria and Manila hemp.

A Study on the Multiplicity of Architectural Skin in Contemporary Architecture (현대건축의 표피에서 나타나는 다질성의 특성 연구)

  • Development of digital technology, which is individualizing and differentiating the world, makes time and space facilitate multi-layering in the contemporary society. It gives a large influence on the contemporary architecture that inducing the visual and spatial experience. Also, It generates new images through the skin of architecture, which implies the contingent and fluid characteristics. These phenomenon show that various parameters are working on the architectural skin simultaneously. Such complexity make the structure of open space and diversity that are homogenized and synchronized. Like this, the architectural skin implies 'multiplicity': qualitative difference which is enable to change and create new images. This characteristic generates instant images changing variously and semantics constantly by the function of skin as a filter. Also, the architectural skin integrates or relocates of relationships between the various information and elements appearing in contemporary society in order to escape the customary relationship between internal and external. Furthermore, the inside and outside of the mixture as a collection of sense has been recognized as one image. This image of mixture consists of one unified continuous integration and extend the meaning of a fluid interface not just surface of the building. The skin of the contemporary architecture is very technical, so its meaning and role is expanded as a complex that exchange interaction. This means that the skin itself has functional elements of the integrated multiple skin to assist. Also it can form a multi-layered relationship and act as a wide range of interfaces depending on the perception of the observer. Therefore the multiplicity of the architectural skin indicates the importance as a boundary that generate images of new life through the sensory perception and implicit force. And it shows potential as the intermediary to try to communicate.

A Study on the Curvature Ratio and Coefficient in Channel Bend (유로만곡부(流路彎曲部)의 곡율비(曲率比)와 곡율계수(曲率係數)에 관한 연구(硏究))

  • Based on the momentum equation for the flow in a stream bend, the force per unit area which the flow exerts on the outer of a bend is directly proportional to a certain curvature coefficient, $C{\alpha}$. This coefficient is dependent on the ratio of bend radius(R) to flow width(W), as well as on the coefficient of dynamic bedload friction, $tan{\alpha}$. According to the results of the data analysis for the downstrream at the Han river, the range of R/w values is between 2.0 and 4.0. Exploring the variations of $C{\alpha}$ with R/w values a functional relationship which, for the known values of $tan{\alpha}$, shows maximum values of $C{\alpha}$ for R/w values between 2.21 and 4.42 in 1963, while in 1981 its values lied between 1.93 and 3.54.

  • PEMS (printed electro-mechanical system) is fabricated by means of various printing technologies. Passive and active components in 2D or 3D such as conducting lines, resistors, capacitors, inductors and TFT, which are printed with functional materials, can be classified in this category. And the issue of PEMS is applied to a R2R process in the manufacturing process. In many electro-devices, the vacuum process is used as the manufacturing process. However, the vacuum process has a problem: it is difficult to apply toa continuous process as a R2R printing process. In this paper, we propose an ESD (electro static deposition) printing process has been used to apply an organic solar cell of thin film forming. ESD is a method of liquid atomization by electrical forces, anelectrostatic atomizer sprays micro-drops from the solution injected into the capillary, with electrostatic force generated by electric potential of about tens of kV. ESD method is usable in the thin film coating process of organic materials and continuous process as a R2R manufacturing process. Therefore, we experiment the thin films forming of PEDOT:PSS layer and Active layer which consist of the P3HT:PCBM. The result of experiment, organic solar cell using ESD thin film coated method is occurred efficiency of about 1.4%. Also, the case of only used to ESD method in the active layer coating is occurred efficiency of about 1.86% as the applying a spin coating in the PEDOT:PSS layer. We can expect that ESD method is possible for continuous process to manufacture in the organic solar cell or OLED device.

Fabrication and Characterization of Pyrolyzed Carbon for Use as an Electrode Material in Electrochemical Biosensor (전기화학 바이오센서의 전극물질로 응용을 위한 열분해 탄소의 제작 및 특성 연구)

  • This paper presents the fabrication and characterization of carbon films pyrolyzed with various photoresists for bioMEMS applications. To verify the usefulness of pyrolyzed carbon films as an electrode material in an electrochemical biosensor developed by the authors, interactions between avidin and biotin on the pyrolyzed carbon film were studied via electrochemical impedance spectroscopy based on electrostatic interactions between avidin and negatively-charged ferricyanide. The pyrolyzed carbon films were characterized using a surface profiler, a precision semiconductor parameter analyzer, a nanoindentor, scanning electron microscopy, and atomic force microscopy. Amine conjugated biotin was immobilized on the electrode using EDC/NHS as crosslinkers after $O_2$ plasma treatment to enhance functional groups on the carbon electrode pyrolyzed at $1000^{\circ}C$ with AZ9260. The detection of avidin binding with different concentrations in a range of 0.75 nM to $7.5\;{\mu}M$ to the pyrolyzed carbon electrode modified with biotin was carried out by measuring the electrochemical impedance change. The results show that avidin binds to the biotin on the electrode not by non-specific interaction but by specific interaction, and that EIS successfully detects this binding event. Pyrolyzed carbon films are a promising material for miniaturization, integration, and low-cost fabrication in electrochemical biosensors.

Physicochemical Properties and Palatability of Pork Fed with Tangerine-Peel (감귤 껍질을 급여한 돈육의 물리화학적 특성 및 기호성)

  • This study was carried out to investigate the possible for utilization of garbage in pig feed by investigating the functional characteristics of pork from pigs fed tangerine-peels. The samples consisted of the pork loin from pigs not fed with tangerine-peel (control), the pork loin fed with 3% and 5% tangerine-peel during growing and finishing period (TP-1), and fed with 6% and 10% tangerine-peel during growing and finishing period (TP-2) there is no respective comparison here. The pH, VBN content TBARS value, bacterial counts, surface color, water holding capacity, loss degree and rheological properties of the samples were determined by physicochemical properties, and the sensory scores were evaluated. The pH, TBARS value, surface color, water holding capacity and loss degree were not different among the samples, but the VBN content and bacterial counts of TP-1 and TP-2 were significantly lower than those of the control (p<0.05). The hardness, springiness, cohesiveness, gumminess and chewiness, taste, aroma, tenderness and juiciness were not different among the samples, but the shear force value and palatability of TP-1 were the highest among the samples (p<0.05).

Effect of masonry infill walls with openings on nonlinear response of reinforced concrete frames

  • Masonry infill walls are unavoidable parts of any building to create a separation between internal space and external environment. In general, there are some prevalent openings in the infill wall due to functional needs, architectural considerations or aesthetic concerns. In current design practice, the strength and stiffness contribution of infill walls is not considered. However, the presence of infill walls may decisively influence the seismic response of structures subjected to earthquake loads and cause a different behavior from that predicted for a bare frame. Furthermore, partial openings in the masonry infill wall are significant parameter affecting the seismic behavior of infilled frames thereby decreasing the lateral stiffness and strength. The possible effects of openings in the infill wall on seismic behavior of RC frames is analytically studied by means of pushover analysis of several bare, partially and fully infilled frames having different bay and story numbers. The stiffness loss due to partial opening is introduced by the stiffness reduction factors which are developed from finite element analysis of frames considering frame-infill interaction. Pushover curves of frames are plotted and the maximum base shear forces, the yield displacement, the yield base shear force coefficient, the displacement demand, interstory drift ratios and the distribution of story shear forces are determined. The comparison of parameters both in terms of seismic demand and capacity indicates that partial openings decisively influences the nonlinear behavior of RC frames and cause a different behavior from that predicted for a bare frame or fully infilled frame.

Remote O2 plasma functionalization for integration of uniform high-k dielectrics on large area synthesized few-layer MoSe2

  • Transition metal dichalcogenides (TMDCs) are promising layered structure materials for next-generation nano electronic devices. Many investigation on the FET device using TMDCs channel material have been performed with some integrated approach. To use TMDCs for channel material of top-gate thin film transistor(TFT), the study on high-k dielectrics on TMDCs is necessary. However, uniform growth of atomic-layer-deposited high-k dielectric film on TMDCs is difficult, owing to the lack of dangling bonds and functional groups on TMDC's basal plane. We demonstrate the effect of remote oxygen plasma pretreatment of large area synthesized few-layer MoSe2 on the growth behavior of Al2O3, which were formed by atomic layer deposition (ALD) using tri-methylaluminum (TMA) metal precursors with water oxidant. We investigated uniformity of Al2O3 by Atomic force microscopy (AFM) and Scanning electron microscopy (SEM). Raman features of MoSe2 with remote plasma pretreatment time were obtained to confirm physical plasma damage. In addition, X-ray photoelectron spectroscopy (XPS) was measured to investigate the reaction between MoSe2 and oxygen atom after the remote O2 plasma pretreatment. Finally, we have uniform Al2O3 thin film on the MoSe2 by remote O2 plasma pretreatment before ALD. This study can provide interfacial engineering process to decrease the leakage current and to improve mobility of top-gate TFT much higher.

Influence of Adding Recovered Protein from Processing Wastewater on the Quality of Mechanically Separated Chicken Meat Surimi Like-Material

  • Functional and nutritional soluble proteins can be recovered from surimi (and surimi-like material) processing wastewater, reducing environmental problems and the cost of an irresponsible waste disposal. Recovered proteins may be added back at a low percentage to surimi products. The aim of this work was to evaluate the effect of the addition of soluble recovered proteins (RP), obtained from mechanically separated chicken meat surimi-like material (MSCM-SLM) processing wastewater by acidic pH-shifting, on the composition and texture of RP-MSCM-SLM, with RP contents of 0, 10, 20 and 30% (w/w) in the mixture. For that, proximate composition and gel properties were evaluated. The fat content of the MSCM-SLM was significantly reduced to 11.98% and protein increased to 83.64% (dry basis) after three washing cycles. The addition of 30% RP in the MSCM-SLM significantly augmented the protein content to 93.45% and reduced fat content from to 2.78%. On the other hand, the addition of RP was responsible for a drastic decrease in texture parameters, reaching 252.36 g, 185.23 g.cm, and 6.97 N for breaking force, gel strength and cutting strength, respectively, when 30% of RP was included in the MSCM-SLM. It was concluded that the obtained intermediary product (RP-MSCM-SLM) is a good option to applications in processed meat products where high texture parameters are dispensable, e.g., emulsified inlaid frankfurter-type sausages, but high protein content and low fat content desired.
