Function of Dietary Fibers as food ingredients

  • Dietary fiber imparts both mutritional and functional properties to foods. This review deals with (1) the classification of dietary fiber, (2) the plant cell wall models, (3) the relations between structure and physicochemical and functional properties of dietary fiber and (4) the applications of dietary fiber in foods. Dietary fiber can be classified in terms of source, plant function, solubility, charge and topology. Plant cell wall models are presented to provide information on the interconnections of dietary fiber components which determines the content of soluble and insoluble dietary fiber content. In reality, physicochemical and functional properties of dietary fiber originate factors such as chemical constituents , charge, branching degree, conformation and etc. Dietary fibers possess a variety of functional properties in food systems, which thus make them useful in food application. In particular, rheology and gelation of water-soluble gums or hydrocolloids are discussed for their effects on food quality. A guideline s also listed for the gum selection to meet the best product requirements.

  • This report presents a new technical approach for evaluating the fiber orientation of composites using small-angle light scattering (SALS). Glass fiber (GF)/polypropylene (PP) composites with different fiber orientations were prepared by drawing compression-molded specimens. The drawn samples were remelted and then annealed at $150^{\circ}C$ in order to induce a crystalline structure on the fiber surface, and then underwent SALS analysis. The samples showed a combination of circular and streak patterns. The model calculations demonstrated that the number of nuclei on the fiber surface and the thickness of the transcrystalline layer affected the sharpness and intensity of the streak pattern. In addition, the azimuthal angle of the streak pattern was found to be dependent on the direction of the transcrystalline layer, which correlated with the fiber direction. This correlation suggests that the fiber orientation in the composites can be easily evaluated using SALS.

  • Dietary fiber naturally present in various sources of cereals, legumes, fruits and vegetables plays a physiological role in human health, such as lowering cholesterol and blood pressure, improving blood glucose control in diabetes, helping with weight loss and management, and reducing cancer risk. In addition, dietary fibers have has been added as a functional food ingredient to food products to provide water-holding capacity, viscosity, gel-forming ability, and fat-binding capacity to food products. These beneficial characteristics of dietary fiber components can improve the image of meat products to be healthy and functional food products. This article reviews the concept and current definition of dietary fibers in food products along with their health benefits and functional characteristics. Dietary fibers from different sources like cereals, legumes, fruits, and vegetables and soluble dietary fibers have been applied as functional ingredients to various types of meat products, such as beef patties, ground beef and pork, pork and chicken sausages, meatballs, and jerky etc. Based on the application of dietary fibers to different types of meat products, possible future characteristics in selecting appropriate dietary fiber ingredients and their proper incorporation are explored to develop and produce healthy and functional meat products with high dietary fiber contents.

  • Electrochemical surface treatment of PAN-based carbon fibers in acidic electrolyte has been studied in increasing the surface functional groups on fiber surfaces for the improvement of fiber-matrix adhesion of the resulting composites. According to the FT-IR and XPS measurements, it reveals that the oxygen functional groups on fibers are largely influence on the composite mechanical behaviors, whereas the nitrogen functional groups are not affected in the system. In this work, a good correlation between surface functionality and mechanical properties is established.

Influence of Preparation Conditions on the Formation of Copper (II) Architectures with Pyrazine-2,3,5-tricarboxylic Acid

  • Three new metal-organic copper(II) complexes, $[Cu(H_2PZTC)_2]_n{\cdot}2nH_2O$ (1), $[Cu(HPZTC){\cdot}2H_2O]_n{\cdot}2nH_2O$ (2), and $Cu_2[(PZHD)(OH)(H_2O)_2]_n$ (3) ($H_3PZTC$ = pyrazine-2,3,5-tricarboxylic acid, $PZHD^{3-}$ = 2-hydroxypyrazine-3,5-dicarboxylate), have been synthesized from $Cu(II)/H_3PZTC$ system under different synthetic conditions, and characterized by single-crystal X-ray diffraction, elemental analysis, IR spectroscopy and thermogravimetric analysis. In complexes 1 and 2, $H_3PZTC$ ligands loose one and two protons, which were transformed into $H_2PZTC^-$ anion and $HPZTC^{2-}$ dianion under different preparation condition, respectively. Furthermore, two ligands coordinate with Cu(II) cations in different modes, leading to the formation of the different chain structures. In complex 3, $H_3PZTC$ ligand was converted into a new ligand-PZHD by in situ decarboxylation and hydroxylation under a higher pH value than that for complexes 1 and 2. PZHD ligands link the Cu(II) cations to form a 2D layer structure. These results demonstrate that the preparation conditions, including pH value and reaction temperature etc, play an important role in the construction of complexes based on $H_3PZTC$ ligand.

  • In this study, the influences of organic solvent viscosity on absorption properties of split-type micro fiber fabrics is examined with real time absorption measurement device built by our research group recently. And the absorption behavior of these fabrics is analyzed by material, fineness, construction, weight, thickness, and density of fabrics.

  • Poly (ethylene 2, 6-naphthalate) (PEN) has been used for a high performance engineering plastics such as fiber, film, and packaging, because of excellent physical properties and outstanding gas barrier characteristics [1-2]. However, the application of PEN is limited because PEN exhibits a relatively high melt viscosity. Recently, many researches for organic/inorganic composites by applying nano-particles to the polymer matrix have been carried out [3], and the nano-particles exhibited greatly improved mechanical and rheological properties [4].   • Three bi-functional reactive dyes such as Bis(vinylsulphone) type, Bis(monochlorotriazine) type and Bis(mononicotinotriazine) type were applied to regular viscose rayon and new regenerated cellulosic fiber ($enVix^ⓡ$) which was prepared from cellulose acetate fiber by the hydrolysis of acetyl groups, and their dyeing properties and fastness properties were compared. enVix exhibited better dyeability and fastness than regular viscose rayon and these results were also explained by the differences in the supramolecular structure of these two fibers.
