저온저장시 포장방법에 따른 단감의 품질변화 (Changes in the Quality of Sweet Persimmon Fruits with Packaging Methods during Low Temperature Storage)

  • 본 연구에서는 단감의 저장성을 향상시키고자 polythylene 필름 포장방법에 따른 단감의 물성 및 품질의 변화를 조사하였다. 저장방법에 따른 단감의 품질 변화는 농가에서 사용하는 5개씩 포장하여 저온저장시에는 저장 120일가지 저장성을 유지하였고, 1개씩 포장한 경우에는 저장 150일가지 저장이 가능하였고, 품질면에서 아주 우수한 것으로 판정되었다. PE 필름 두께에 따른 품질의 변화는 일반 농가에 사용하고 있는 0.06mm PE 필름으로 포장한 것은 저장성이 떨어졌고 0.08과 0.10mm PE 필름으로 포장시에는 0.06mm PE 필름에 비해 저장성이 증가되었고 품질면에서도 우수하였다. 저장중 경도와 색상은 저장일가 증가함에 따라 약간 감소하는 경향이었고, 특히 1개씩 0.08mm PE 필름으로 포장시 저장 180일까지도 경도와 색상이 수확시와 차이가 없었다.

Comparison of Storability and Quality of Sweet Pepper (Capsicum annum L.) Grown in Two Different Hydroponics Media

  • This study compared the effects of cocopeat and perlite growth media on the storability and quality of sweet pepper fruit stored using modified atmosphere packages (MAP) and carton boxes. The fruits were stored at 8℃ for 35 and 30 days, respectively. Perlite-grown fruits had a significantly lower size at harvest due to the medium's inability to hold plenty of water during the growing stage. Contrary to what is expected for small fruits, the result shows box-stored perlite-grown fruits to have lower weight loss and a longer shelf life than cocopeat-grown fruits, while MAP fruits have indifference. Perlite fruits also had a higher quality in terms of dry matter, soluble solids, and vitamin C, while box-stored fruits had a better visual quality. As expected, respiration and ethylene production rates were high, and fruits had similar after-storage firmness values. Based on the findings, perlite-grown sweet pepper fruits may have a better quality and give preference in a box storage condition.

수확년도에 따른 조생온주 밀감의 품질변화 (Physicochemical Properties of Satsuma Mandarin according to Harvest Year)

  • Physicochemical properties of early cultivar of Satsuma mandarin(Citrus unshiu Marc. var. miyagawa) according to harvesting year during 1990 to 1995 were investigated. Climatic conditions of every year affected the quality of citrus fruits. Compared to other harvesting years, flesh ratio and soluble solids were higher, but acid content was lower on citrus fruits produced in 1994, as for good climatic conditions during growth of fruits. Especially, acid content of fruits produced in 1993 was higher, compared to those of years, as for low mean temperature and high rainfalls. Fruit weight, peel thickness and soluble solids had a good linear correlation to fruits size, but acid content and flesh ratio had not correlation derived from difference of individual fruits. From the climatic data, the prediction of fruit quality would be possible in some degree before harvest. It seemed recommend to ably the flexibe method by harvesting year for the quality stanardization of citrus fruit.

고품질 중소과 생산을 위한 '한아름' 배의 과실 품질 및 수확 기준 (Criteria of Fruit Quality and Harvest for Production of High Quality Small and Medium-Sized Fruits in 'Hanareum' Pear (Pyrus pyrifolia Nakai))

  • '한아름' 배는 기본적인 품종 특성이 중소과 범주에 포함되는 품종으로 재배기술의 큰 변화 없이도 고품질의 중소과 생산이 가능할 것으로 예상되는 품종이다. 따라서, 본 연구에서는 '한아름' 품종을 대상으로 중소과로의 활용 가능성을 알아보고, GA 처리와 비교하여 고품질의 중소과 생산이 가능한 최저 과중 기준 설정하고자 하였다. 과실 품질인자간 상관분석 결과, 무처리구와 GA 처리구에서 공통적으로 과중과 당도, 과중과 경도가 높은 상관관계가 있어 각 처리구의 당도와 경도의 관찰을 통한 과중의 예상이 가능하였다. 또한, 당도와 경도는 소비자 선호도를 예측하는데 유용한 지표로 확인되었으며, 당도가 $11.6^{\circ}Bx$ 이상, 경도가 25.6N 이하의 과실이 상품성이 높은 것으로 조사되었다. 관능평가를 통해 도출된 품질 기준을 각각 과중과의 회귀분석 결과에 적용한 결과, 무처리구는 과중 436g 이상의 과실이 당도와 경도의 품질 기준을 충족하였으며, 품질 균일도 또한 높아 436g 이상의 과실을 수확하면 고품질의 중소과 생산이 가능할 것으로 판단되었다. GA 처리구에서 당도와 경도의 품질 기준을 모두 충족시키는 최소 과중은 620g으로, 중소과 범위에서는 품질이 낮고 불균일하여 고품질의 중소과 생산을 목적으로 재배할 경우, GA 처리는 지양해야 할 것으로 판단되었다.

한국인 다빈도 섭취 과일의 영양관련 지수 분석 (Analysis of Nutritional Index of Frequently Consumed Fruits in South Korea)

  • Fruits are good sources of vitamins, minerals, fiber, and phytochemicals, which are known to reduce serum lipids, oxidative damage, and blood pressure as well as improve blood glucose control. The purpose of this study was to estimate nutrient quality indices of fruits by carrying out a critical analysis of pre-existing methods according to their nutritional compositions. Four methods were used to assess the nutrient indices of 26 fruits, which are frequently consumed by Koreans based on the fourth Korean National Health and Nutrition Examination Survey (2009). Naturally nutrient rich score (NNR), nutrient rich food (NRF), nutrient adequacy score (NAS), and nutrient density score (NDS) were used to calculate nutrient quality indices. The Korean Nutrition Society Food Composition database of fruits based on 100 g edible portions was used. The algorithm of each method included the mean percentage of daily values (Dietary Reference Intakes for Koreans, 2010) for particular nutrients based on consumption of 1,900 kcal/day. The relative score indicated that strawberries, kumquat, and lemon had high nutrient quality indices. In addition, mango, lemon, persimmon, strawberry, apricot, and tangerine fruits are rich in antioxidant nutrients such as ${\beta}$-carotene, vitamin C, vitamin E, and selenium. However, scores of nutrient quality indices did not imply that higher scores of particular fruits are superior. We suggest moderate seasonable consumption a variety of fruits. Our results can be used as a reference for consumers when they choose fruits.

  • Quality characteristics of fruits and vegetables were investigated by physical, chemical and sensory evaluations. Firmness of tomato fruits tended to be reduced as their maturity or ripeness stage progressed. Sensory evaluation revealed that raw tomatoes were the most acceptable at pink or light red stage. Specific gravity was highly correlated with mealiness. Emphasis was placed on the basic study forming the foundation of national quality standards of raw fruits and vegetables.

생산지역과 고도별 궁천조생 온주밀감의 품질특성 (Quality Characteristics of Satuma Mandarin by Harvest Areas and Sea Level Altitude in Cheju)

  • Quality characteristics of Satsuma mandarin (Citrus unshiu Marc.var.miyagawa) harvest on early December according to production areas and sea level altitude of Cheju were investigated. Soluble solids and flesh ratio were distributed 9.32∼12.50, 75.95%-81.3 in citrus fruits harvested in orchards located below 10m sea level altitude (lower area), and was 10.23-12.17 , 77.35%-80.29% on those over 150m sea level altitude )higher area), respectively. Acid content of citrus juice was 0.95%-1.26% in fruits harvested inlower area, and was 1.02%-1.39% in higher area. In proportion to late harvesting , Brix/acid ratio and fruits quality was improved. Soluble solids of fruits harvested in higher area were higher than those of fruits from higher area, but acid contents were on the contrary . In sensory evaluation on fruit appearance, the differences between two altitudes were not clear.

1-MCP처리가 '후지'사과의 저장성에 미치는 영향 (Effects of 1-Methylcyclopropene on Storage Life and Fruit Qualities of 'Fuji' Apple Fruit)

  • This study was divided to three experiments for evaluating the effects of pre- or post-load 1-MCP on quality of 'Fuji' apples exposed to ethylene. The first experiment was compared for fruit quality at room temperature at 7, 14, 21, and 28 days between the control and 1-MCP-treated fruits followed storage of 130, 150, and 170 days. 1-MCP-treated fruits maintained higher fruit titratable acidity and firmness than those of control fruits. The second experiment was compared for fruit quality at room temperature at 7, 14, 21, and 28 days between fruits applied with pre-loaded-1-MCP on ethylene treatments (10 ${\mu}L/L$, 20 ${\mu}L/L$, and 40 ${\mu}L/L$) and control fruits. 1-MCP-treated fruits were not affected by ethylene concentrations, and had higher fruit weight and firmness than those of control. The third experiment was compared for fruit quality at room temperature at 7, 14, 21, and 28 days between fruits applied with pre-loading with ethylene (10 ${\mu}L/L$) followed by ventilation (8 h, or 32 h, or 56 h) and 1.0 ${\mu}L/L$ 1-MCP treatment. As observed above experiments, 1-MCP-treated fruits had higher fruit weight and firmness than those of control fruits, regardless of the delayed applications of 1-MCP.

A Review of Technologies to Prolong the Shelf Life of Fresh Tropical Fruits in Southeast Asia

  • Southeast Asia, a typical tropical region, plays an important role in exporting a variety of fruits worldwide. The market for fresh fruits has been growing consistently, and this is a chance for Southeast Asian countries to increase their national income. However, export of tropical fruits has limitations such as a short shelf life and difficulty in maintaining the quality because of tropical climate conditions and undeveloped postharvest technologies in Southeast Asia. An important objective for developing postharvest technologies is to extend the shelf life of fresh fruits without deterioration in fruit quality. Therefore, it is essential to determine factors that affect the shelf life of fruits. The shelf life of tropical fruits is significantly dependent on the inherent properties of the fruits, extrinsic conditions, postharvest treatment, and microbial contamination. Recently, Southeast Asian countries have supported agricultural research groups for developing new postharvest technologies and minimizing postharvest losses and maintaining export fruit quality so that the total sales of tropical fruit farms can increase. This review introduces how the primary factors for extending the shelf life of tropical fruits can be determined and discusses the development of postharvest technologies for tropical fruits in Southeast Asian countries.

포장조건에 따른 청매실의 호흡생리 및 선도유지 특성 (Respiratory Characteristics and Quality Attributes of Mature-Green Mume (Prunus mume Sieb. et Zucc) Fruits as Influenced by MAP Conditions)

  • The respiratory characteristics and quality attributes of mature green mume fruits as influenced by modified atmosphere packaging(MAP) conditions during storage at 25oC for 8 days were investigated. The quality attributes of mume fruits were evaluated in terms of fresh weight loss, physiological injury and yellowing. The packaging materials used for MAP were low density polyethylene(LDPE) films with various different thicknesses. Yellowing and fresh weight loss of mume fruits were noticeably reduced by the packaging treatments with LDPE A and B. The physiological injury of the fruits during storage was found to be more severe in LDPE C than others. For LDPE A and B, the oxygen and carbon dioxide contents within the packages of Mume fruits maintained at the levels of 2~3% and 7~8%, respectively. With respect to visual quality, MAP prolonged the shelf life of the fruits much longer compared with the unsealed control. From the experimental results, it is suggested that the LDPE films with the gas trans mission rates of about 2,100 O2 ml/m2.day.atm and 6,700 CO2 ml/m2.day.atm would be proper for MAP of mature green mume fruits during storage at ambient temperature.
