Characteristics of Gouda cheese supplemented with fruit liquors

  • This study was conducted in order to evaluate the quality characteristics of Gouda cheeses supplemented with fruit liquor (Prunusmume or Cornus officinalis). Fruit liquor was supplemented to Gouda cheeses during preparation. Changes in chemical composition, lactic acid bacterial population, pH, water-soluble nitrogen, sensory characteristics, and proteolysis were monitored in the prepared ripened cheese. The electrophoresis patterns of cheese proteins, fruit liquor functional component concentrations, and the flavonoid content of the cheeses were also determined. The addition of fruit liquor did not affect (p> 0.05) the appearance or sensory characteristics of the cheeses. Higher amounts of crude ash, mineral, and flavonoids (p< 0.05) were observed in the liquor supplemented cheese than in the control cheese. Findings from this study suggest that wine supplemented Gouda could provide additional nutrients while maintaining flavor and quality.

Altered Protein Expression in Peach (Prunus persica) Following Fruit Bagging

  • Fruit bagging has been widely practiced in peach cultivation to produce high quality and unblemished fruit. Moreover, fruit bagging has been utilized to study the effect of shading on the quality of fruit. We conducted a proteomic analysis on peach fruit to elucidate the biochemical and physiological events that characterize the effect of bagging treatment. Comparative analysis of 2D electrophoresis (2-DE) gels showed that relative protein levels differed significantly at 125 DAFB (days after full bloom), as well as at 133 DAFB in fruit that had been bagged until 125 DAFB, followed by exposure to sunlight. Most of the proteins with altered expression were identified by MALDI TOF/TOF. Twenty-one proteins with differential expression among the groups were identified at 125 DAFB, while thirty proteins with differential expression among the groups were identified at 133 DAFB. The analysis revealed that expression of proteins involved in photosynthesis, stress responses, and biochemical processes influencing metabolism were altered during bagging treatment, suggesting that regulation of the synthesis of carbohydrates, amino acids, and proteins influenced fruit size, solid/acid ratio, and peel color. This work provides the first characterization of proteomic changes in peach in response to fruit bagging treatment. Identifying and tracking protein changes may allow us to better understand the mechanisms underlying the effects of bagging treatment.

'신고' 배 과실의 품질특성 및 관능검사에 따른 적정 저장기간 판정 (Instrumental and Sensory Analysis of Fruit Quality in Relation to Storability of 'Niitaka' Pear Fruit)

  • 기기적인 분석 방법과 관능검사에 의해 '신고' 배 과실의 품질을 조사하여 저장력 판정의 기준을 정하고자 하였다. 상온저장고 및 $2^{\circ}C$ 저온저장고에 저장한 과실을 주요 품질 요인인 당함량과 경도에 따라 구분한 후 각각의 요인에 따른 식미인지도를 조사하였다. 저장 방식별 저장 가능기간은 식미인지도에 근거한 당함량과 경도의 변화 정도를 조사하여 설정하였다. 수확 60일 후 '신고' 배 과실을 이용하여 식미인지도를 조사한 결과, 경도의 경우 $3.3kg/8mm{\emptyset}$ 이상을 보이는 과실이 적정 식미를 보이는 것으로 평가되었고 당함량의 경우에는 13.0% 이상일 때 식미에 적합한 수준으로 평가되었다. 그러나 당함량은 저장중 지속적인 증가 경향을 보임으로써 저장기간 설정의 기준으로는 부적합한 요인으로 판정되었다. 과실의 경도를 기준으로 볼 때, 적정 식미를 유지하는 '신고' 배의 저장가능 기간은 상온저장이 30일, $2^{\circ}C$에서의 저온 저장은 120일 정도인 것으로 평가되었다.

Changes in Growth and Quality of Melon (Cucumis melo L.) and in Soil Nitrogen Forms due to Organic Fertilizer Application

  • The purpose of this study was to determine the effects of organic fertilizers on soil properties and growth and quality of melon. Organic fertilizer was applied in soil at the rate of 0, 0.5, 1, 2N according to Rural Development Administration guideline in Korea. The fertilizer had no effects on plant growth-rate parameters, including plant height, leaf number, and leaf size. There were minor effects on the fruit quality parameters such as fruit weight, fruit length, fruit width, placenta and seed weights, sugar content, and starch content. Ascorbic acid level was decreased as fertilizer level was increased. The level of nitrate in groundwater increased with increased levels of N.

  • 멜론 과실은 품종에 따라 과형, 당도, 네트 품질, 직경 및 무게 등에서 다양한 형태적 변이를 보이며, 이러한 특성이 시장성을 결정하는 주요 요인이다. 네트 품종의 경우, 네트의 균일성과 패턴은 멜론의 외적 품질을 결정하는 중요한 요소로 작용하며, 멜론의 내부 품질을 보장하는 지표로 활용된다. 본 연구는 LED 보광 처리를 통한 멜론 과실의 품질 변화 및 과실 생장 모델링을 통해 과실 형태와 생장이 네트에 미치는 영향을 분석하였다. 컴퓨터 비전 분석을 사용하여 과실의 네트 품질을 정량적으로 평가하였으며, 3변수 로지스틱 모델을 활용하여 과실의 생장을 모델링하였다. 실험 결과 LED 하에서 재배된 멜론은 대조구에 비해 더 균일한 과형을 가지며, 네트의 품질과 당도 모두에서 향상된 것으로 나타났다. 또한, 로지스틱 모델을 통한 결과에서는 낮은 오차값과 처리 간에 일관된 곡선의 기울기를 확인할 수 있었으며, 다양한 광조건 하에서의 과실 생장 패턴을 효과적으로 예측할 수 있음을 확인하였다. 이 연구는 과실의 형태와 생장이 네트 품질에 어떠한 영향을 미치는지에 대한 이해를 제공한다.

Effects of ethylene treatment on postharvest quality in kiwi fruit

  • The kiwi fruit (Actinidia deliciosa cv. 'Hayward') should be ripened at any step during postharvest handling before consumer consumption. This is essential for freshly harvested kiwi fruit. But, this requires correct temperatures and ethylene concentrations. More testing of a newly developed ethylene generator using charcoal for commercial purposes is needed. This study was conducted to investigate the optimum storage temperatures and the effect of ethylene on the postharvest quality of kiwi fruit. Three different ethylene concentrations of 10, 50, and $100{\mu}L{\cdot}L^{-1}$ were used on fresh kiwi fruit stored at different temperatures of 10, 15, and $20^{\circ}C$. The quality changes of the fruits were assessed by sensory evaluation and by measuring firmness, soluble solids content, titratable acidity, and ethylene production. Higher storage temperatures and ethylene concentrations softened the kiwi fruit quickly and led to the rapid loss of acidity while soluble solid contents of fruit increased to a significant extent during the same storage period. Similarly, the firmness of ethylene-treated fruits stored at 20 and $15^{\circ}C$ dramatically decreased in the experiment while treated fruits stored at $10^{\circ}C$ decreased only slightly. Quality characteristics of kiwi fruits stored at 15 and $20^{\circ}C$ were better than those of fruits at $10^{\circ}C$. With regards to the effect of temperature, fruits stored at lower temperatures took a longer time to ripen and retained their quality longer. The newly developed ethylene generator maintained the ethylene concentration in the 5 kg box at $40-400{\mu}L{\cdot}L^{-1}$. The ethylene generator could also be used to soften persimmons.

Changes of Physicochemical Quality in Hardy Kiwifruit (Actinidia arguta) during Storage at Different Temperature

  • The effect of storage temperature and the storage period of hardy kiwifruits on the fruit firmness, soluble solids and fruit weight were studied in this work. The investigation was carried out on the Sae-Han cultivar of Actinidia arguta. It has an edible smooth skin and contains high amounts of sugar and vitamin C (ascorbic acid). In this research, the measurement of fruit firmness, soluble solids, and fruit weight were carried out at various temperatures (5, 10, 15, and 20℃) during 14 days. Fruit firmness rapidly decreased and soluble solids content increased at 15 and 20℃. We also investigated the correlation between fruit firmness and soluble solids content. There was a strong correlation between fruit firmness and soluble solids content. That means that fruit firmness affect the soluble solids content of hardy kiwifruit.

Effect of 1-MCP and Temperature on the Quality of Red-fleshed Kiwifruit (Actinidia chinensis)

  • This study detailed the effects of 1-methylcyclopropene (1-MCP) on ripening and fruit quality in red-fleshed kiwifruit (Actinidia chinensis) stored at 0 or $10^{\circ}C$ for 20 days, and $20^{\circ}C$ for 13 days. The quality of the fruit was assessed by measuring ethylene production, respiration rate, weight loss, firmness, flesh color, soluble solids content (SSC), and titratable acidity (TA), along with a sensory evaluation. Compared to untreated kiwifruit, fruit treated with $1{\mu}L{\cdot}L^{-1}$ 1-MCP for 24h at $20^{\circ}C$ prior to storage showed a delay in ripening and maintained fruit quality during storage. Ethylene production and respiration rate were affected by 1-MCP treatment only in fruit stored at $20^{\circ}C$, where the values were markedly higher compared to kiwifruit stored at 0 and $10^{\circ}C$. 1-MCP treatment resulted in a clear reduction in weight loss due to a delay in fruit ripening. The firmness of kiwifruit stored at 10 and $20^{\circ}C$ decreased significantly compared to fruit stored at $0^{\circ}C$, but 1-MCP treatment led to a reduction in this loss. Upon storage, SSC increased while TA decreased across all treatments. Sensory evaluation scores increased with decreasing firmness and acidity and increasing SSC. The shelf life of kiwifruit stored at $0^{\circ}C$ was extended without any chilling injury or color changes. In summary, the results show that 1-MCP treatment can potentially maintain quality and delay ripening of red-fleshed kiwifruit stored at all storage temperatures.

Changes in the environmental conditions of an 'Arisoo' apple orchard with a shading net system

  • This study investigated the changes in planting environment and growing conditions of 'Arisoo' apple trees under shading net treatments. Apple tree canopies were fully covered with Blue (blue color net, mesh size: 4 mm × 5 mm), Black-A (black color net, mesh size: 4 mm × 5 mm), Black-B (black color net, mesh size: 5 mm × 6 mm), and uncovered trees were used as the control. Inside the tree canopies, the illuminance was observed as 100% (85.0 Klux) in the control, but it decreased to 75% (64.3 Klux) in the Blue, 73% (63.0 Klux) in the Black-A, and 77% (65.9 Klux) in the Black-B nets, respectively. The solar irradiance was observed as 755 w·m-3 in the control, but it was decreased to 715 w·m-3 in the Blue, 624 w·m-3 in the Black-A, and 647 w·m-3 in the Black-B nets, respectively. The average daily temperature was observed to be the highest in the Black-A net (31.8℃) while it was observed to be around 30.0℃ in the control, Blue, and Black-B nets. In addition, the average fruit surface temperature was observed to be the highest (39.4℃) in the control, but it was decreased to 38.1℃ in the Blue, 37.3℃ in the Black-A, and 39.0℃ in the Black-B nets. However, the average soil temperature, the shoot growth rate, and leaf SPAD values were not different in all the treatments. Fruit sunburn disorders were the highest in the control while it was observed to be lower in the fruits from trees covered with the shading nets. However, at harvest, the fruit quality parameters were not different in all the treatments. Overall, this study suggests that the apple trees covered with the shading nets reduced the illuminance, solar irradiance, fruit surface temperature, and fruit sunburn disorders. However, the shading nets did not affect tree growth and apple fruit quality.

Y자 수형의 '신고'와 '황금배'에서 착과량 조절에 따른 과실 특성 변화 (Changes of Fruit Characteristics by Fruit Load Control in 'Niitaka' and 'Whangkeumbae' Pear Trees on Y-trellis Training System)

  • '신고'와 '황금배'의 과실 특성간 관계를 파악하고 착과량 조절에 의한 과실의 특성 변화를 알아보고자 본 연구를 수행하였다. '신고'는 평균 과중이 672.0g이었으며 601-750g의 과실이 33.8%로 가장 많았으며 '황금배'는 평균 과중 477.5g이었고 401-600g의 과실이 72.5% 생산되었다. '신고'는 300g 이하부터 1kg 이상까지 넓고 고르게 분포하였으며, '황금배'는 생산되는 과중 분포가 좁았다. '신고'의 당도와 당산비는 과중, 종경 및 횡경과 정의 상관을 나타내었으나, '황금배'는 과중과 횡경에서만 당도와 낮은 상관을 나타내었다. 각 품종의 과중별 품질은 '신고'의 경우 451g 이하의 과실은 당도가 낮고 400g 이하의 과실은 경도가 낮았으며, '황금배'는 과중에 따른 품질 차이를 보이지 않았다. '신고'의 과실 크기는 과육의 크기에 영향을 받았으며 과중이 클수록 과육 부위가 차지하는 비중이 높았다. '신고'에서 약하게 적과하면 과실의 과중, 당도와 당산비가 낮았고 경도가 높았으며, '황금배'는 적과가 약한 경우 과중과 당도가 낮았다. '신고'는 모든 적과 수준에서 처리에서 과중이 클수록 당도가 높았으며 특히 '적과 약'에서는 450g 이하의 과실 또한 당도가 낮아 품질이 불량하였고, '황금배'는 모든 적과수준에서 과중에 따른 품질차이는 나타나지 않았다. 따라서 '신고'는 적과수준에 따라 과중이 작은 과실의 생산이 가능하지만 품질 감소가 불가피하여 중소과 생산은 어려울 것으로 판단되었으나, '황금배'는 품질의 하락없이 적과 수준 조절을 통한 중소과 생산이 가능할 것으로 기대되었다.
