Quality Changes of Sulgidduk Added Cheonnyuncho (Oputia Humifusa) Fruit Powder during Storage (천년초 열매분말을 첨가한 설기떡의 저장 중 품질변화)

  • This study shows the quality changes of Sulgidduk added Cheonnyuncho fruit powder during storage. Sulgidduk was prepared with freeze-dried Cheonnyuncho, rice flour, sugar syrup and salt. The Sulgidduk, which was made with various amounts (0,3,6,9,12%) of added Cheonnyuncho, was examined by the quality of duration during storage. The pH of Cheonnyuncho Sulgidduk decreased as the amounts of Cheonnyuncho fruit powder increased, and also showed a significant decrease as the storage increased. As the amounts of Cheonnyuncho fruit powder increased, lightness (L) decreased while redness (a) and yellowness (b) increased. During the storage period, the lightness (L) and yellowness (b) were increased, but redness (a) was decreased. In the texture profile analysis, the hardness and springiness were decreased with increasing Cheonnyuncho fruit powder, whereas cohesiveness, gumminess and brittleness were increased. However, the tendency of the changes of characteristics during storage was opposite except for springiness. In conclusion, it is suitable to extend the storage period of Sulgidduk added Cheonnyuncho fruit powder.

  • In response to the continuous changes in current consumer demands and market trends for postharvest produces, the functional application for agricultural packaging is becoming increasely significant. This paper focuses on the overview of important changes in physical and chemical status related to postharvest physiology and applications of the functional packaging materials for maintaining the freshness of fruits after harvest. During postharvest treatment and storage periods, fresh fruits undergoes the ripening process in quality attributes of the fruit such as major changes of texture, color, and flavor. Major fruit packaging technologies are concerned with correct gas permeable film and functions of ethylene removal, antimicrobial, and antifogging substances to keep the effective freshness. Application guidelines for the functional packaging in fresh produces were studied.

A Study on Quality Characteristics of Kiwi Fruit-Gruel with Added Kiwi Concentrate (키위 농축액을 첨가한 키위 죽의 품질 특성에 관한 연구)

  • In this study, kiwi fruit, which has various medical actions and excellent functionality, was used together with gruels for comparison and analysis of to compare and analyze the changes in physico-chemical quality of a kiwi fruit-gruel according to the amount of kiwi concentrate added to the gruel. Analysis on the sensual quality of kiwi fruit-gruel spread was done to indicate to it was executed to find out the merchandising potential of the preparation and to provide basic data for gruel commercialization. Increasing content of kiwi concentrate decreased the solid content and pH of kiwi fruit, and increased sweetness and viscosity. Significant changes in chromaticity to L(lightness) and a(redness), texture qualities of hardness and cohesiveness, gumminess, springiness, color, flavor, sourness, and sweetness were evident with increasing kiwi concentrate. Concerning overall acceptability and sensory evaluation, 20% softness samples were most preferred. The findings may lead to enhanced medical/nutritional activity and functionality of kiwi fruit-supplemented gruel. The more the kiwi concentrate was added to the gruel, solid content and pH of the kiwi fruit-grue decreased. The sweetness and viscosity of kiwi fruit-gruel increased. For chromaticity to L(lightness) and a(redness) of the gruel decreased and showed significant difference between sample groups. For texture, there were significant changes shown for hardness and cohesiveness the amount of kiwi concentrate added was different, increased There was a significant change between samples for gumminess. As for springiness, there was a significant change between samples. There were significant difference between each sample for color, flavor, sourness, sweetness. For softness, overall-acceptability and sensory evalution 20% group was most preferred based on this study, from the physico-chemical and sensual perspective, 20% group is highly recommended for adding kiwi concentrate into gruel. In conclusion, this study is meaningful as it enhanced the functionality and quality of a gruel by combining kiwi fruit with various medical action and excellent functionality, with Kiwi Fruit and presented a basic material for creating a kiwi concentrate combined gruels.

Morphological Characteristics and Antioxidant Activity Changes in 'Autumn Sense' Hardy Kiwi (Actinidia arguta) as Honey Plant during Fruit Ripening

  • In this study, we studied the changes in antioxidant activity of Actinidia arguta fruit of Autumn Sense cultivar during fruit ripening. The aim of this investigation was to find the knowledge of the changes of physiochemicals associated with fruit quality, antioxidant properties (free-radical scavenging activity and reducing power), total phenolics and vitamin C during fruit ripening. The highest free-radical scavenging activity (at $100{\mu}g/ml$) and reducing power (at $100{\mu}g/ml$) in A. arguta fruit were 78.57% and 0.22, respectively. Total phenolic content and vitamin C content in fruit of 10 days after fruit set were $639.48{\mu}g/g$ and $1052.2{\mu}g/g$, respectively. In general, the antioxidant activity and the related parameters, including total phenolic content and vitamin C content decreased during fruit ripening. These results improve knowledge of the effect of ripening on the antioxidant activity and related compounds contents that could help to establish the optimum A. arguta fruit harvest data for various usages.

  • The market sales of fresh-cut fruit and vegetables have grown rapidly in recent decades as a result of changes in consumer trend. Choosing the proper pretreatment of fruit and vegetables before minimally processing is very important because appearance is the most fundamental factors affecting the quality of fresh-cut products. This review describes the biochemical bases for color changes of fruit and vegetables including browning, discoloration, and color changes of carrots and alliums. Understanding pathway of pigments in minimally processed fruit and vegetable and preventing the way of color change should be emphasized for successive packaging system. This review also describes pretreatment of fresh-cut fruit and vegetables to improve the prolonging the shelf-life and maintenance of its qualities.

Changes in flavor-relevant compounds during vine ripening of tomato fruit and their relationship with ethylene production

  • Flavor quality is import for determining consumer perception and acceptance of tomato products. In this study, 'Fendou' tomato fruit were harvested at six ripening stages and sampled to investigate the development of flavor-relevant compounds during vine ripening. Results showed that upon the initiation of ripening there was an increase in respiration rate and concomitant ethylene evolution that was associated with increased membrane permeability. In accordance with these physiological changes, flavor-relevant compounds demonstrated different expression patterns as fruit ripened, which contributed to 'red-ripe' flavor characteristics of red-ripe fruit. Based on correlation analysis between ethylene evolution and the flavor-relevant compounds during 'Fendou' tomato ripening and the other researchers' reports, the activation of System 2-dependent autocatalytic ethylene production plays an important role in the development of most flavor-relevant compounds during tomato vine ripening. Overall, our results suggested that most flavor-relevant compounds that accumulated the most during tomato fruit ripening at red stage could be under ethylene regulation and were among the most important contributors to the 'red-ripe' flavor. Due to the development of these compounds, the flavor quality at late ripening stages is different from that of fruit at early ripening stages.

Circulation State of Strawberry and Quality Changes during Ripening (딸기의 유통실태와 성숙중의 품질변화)

  • Circulation state and changes in quality during ripening of strawberry were investigated. Tissue damage of the fruit happened when it was harvested and selected. Strawberry has been harvested without considering of fruit temperature in the farm. It takes 25 hours from Goreung which is main production area of strawberry to retailer, and seasonal variation in the price was severe. Shelf-life of strawberry from Feb to Mar was 5-6 days, and was 24-30 hours from May to June. Desirable ripening stage was 28-30th day after blooming and 40th day and after this was over ripening stage when the degree of ripening estimated by color "a" value and color saturation. Overall eating quality and vitamin C contents and sugar content were more higher in the fruit of the desirable ripening stage than that of unripening and over ripening stage. The dark redness degree was high in the over ripening stage.

The Correlation Between Quality Changes and Skin Thickness of the Stored Citrus Fruit (저장감귤에서의 과피 두께와 품질변화간의 상관관계)

  • The storage time of citrus fruit at two different storage temperatures was predicted by quality changes such as weight loss, %Brix and skin thickness. The less weight loss of citrus fruits during storage at $3^{\circ}C$ was observed, compared to those stored at $25^{\circ}C$, whereas %Brix of citrus fruits increased slightly without any difference between storage temperatures. Skin thickness of fruit, represented by pixel, also changed more rapidly at the higher storage temperature. Above parameters with a storage time followed the 0 order reaction pattern. The relationship of skin thickness and storage time of the citrus fruit were resolved to a simple linear equation, and storage time could be predicted using this equation.

Studies on the Quality Changes of Mixed Fruit and Vegetable Juices as Influenced by Processing Conditions during Storage (혼합과채주스의 가공방법에 따른 저장 중 품질특성 변화에 관한 연구)

  • Physicochemical properties and microbiological quality chanties were investigated on mixed fruit and vegetable juices (apple, carrot and cucumber) stored at 4$^{\circ}C$ without pasteurization(NT), with light piasteurization (LP; 66$^{\circ}C$, 10 sec) and with full pasteurization(FP; 90$^{\circ}C$, 60 sec). Effects of ultrafiltration (UF) on the changes during storage were also examined. pH, viscosity, a-value and b-value remained relatively constant and all samples revealed Newtonian characterisitics. Total acidity and turbidity tended to increase slightly; however, total vitamin C content and L-value slowly decreased during storage up to about 2 months. During the first 4 weeks storage, soluble solids content slowly increased and then decreased. Mold and Yeast and Bacteria were not detected in LP, UP and UF treated samples during storage studied; however, E. coli were detected after 24 days storage. No distinctive storage effects were found among samples prepared; however, ultrafiltration had a considerable effect on the color and soluble solids content of mixed fruit and vegetable juice.

Evaluation of quality indices during fruit development and ripening in 'Wonhwang' and 'Whasan' pears (동양배 '원황' 및 '화산'의 생육기간 중 품질 변화 요인 탐색)

  • In this study, we evaluated the changes of fruit quality indices during fruit development and ripening in Korean new pear cultivar 'Wonhwang' and 'Whasan' to determine appropriate harvest time and to enhance the marketability. The fruit of each cultivar harvested from 100 days after full bloom (DAFB) to 135 and 150 DAFB in 'Wonhwang' and 'Whasan', respectively. The fruit growth of both cultivars showed a typical single sigmoidal pattern. Flesh firmness of two cultivars decreased continuously with fruit development and ripening, reaching a final level of about 2.6 kgF at harvest stage. The starch content of fruit sap was much higher in the fruits of early development stage than the later stage of fruit ripening. In 'Wonhwang' pears, the starch level decreased coincide with fruit ripening (130 DAFB), while that of 'Whasan' decreased from very early stage of fruit development (120 DAFB), 30 days before full ripe. 'Whasan' pear showed much lower acidity level of about 0.13% during fruit development and ripening period compared with that of 'Wonhwang'. Therefore, the ratio of soluble solids to total acidity (TSS/acid) increased gradually with fruit development and ripening, reaching a final level of 80 and 98 in 'Wonhwang' and 'Whasan', respectively. There were no climateric rise of fruit respiration during fruit ripening periods in two oriental pear cultivar. The changes of skin color difference including hunter vale $a^*$ which means loss of green color occurred only after onset of ripening in two cultivars.
