A Study on Nutrition Education and Dietary Life Received at School in Adolescents (청소년들이 학교에서 받는 영양교육과 식생활에 관한 연구)

  • This study aims to find out how the nutrition and eating habit education that Korean adolescents receive at school actually affects and affects their dietary culture. he subject and method of this study was a secondary analysis study using the data from the 18th Korea Youth Risk Behavior Survey(2022). Statistical significance was confirmed using the SPSS program as the frequency of breakfast, reason for skipping breakfast, fruit, high-caffeinated beverage, sweet beverage, fast food, vegetable, milk, water, and late-night snack intake frequency as variables. There was a significant difference in breakfast, fast food, and late-night snacks between the group that received nutrition and eating habits education at school and the group that did not(p<.001). Regarding breakfast consumption, the group that received education showed a higher proportion of students eating breakfast for seven days or more, whereas the group that did not receive education showed a higher proportion of students who did not eat breakfast at all. The group that did not receive education showed a higher proportion of students who did not drink milk, and a higher proportion of students who drank less than one cup of water per day. This study can serve as a foundation for further studies to improve nutritional and dietary education, breakfast consumption, and beverage intake in schools. It was hoped that this study will contribute to developing more effective nutritional and dietary education strategies in schools.

Dietary and Demographical Risk Factors for Oesophageal Squamous Cell Carcinoma in the Eastern Anatolian Region of Turkey Where Upper Gastrointestinal Cancers are Endemic

  • Background: Oesophageal squamous cell carcinoma (ESCC) is endemic in the Eastern Anatolian region of Turkey. The present study was performed to identify risk factors for ESCC that specifically reflect the demography and nutritional habits of individuals living in this region. Materials and Methods: The following parameters were compared in 208 ESCC patients and 200 control individuals in the Eastern Anatolian region: age, sex, place of living, socioeconomic level, education level, smoking, alcohol intake, nutritional habits, and food preservation methods. Results: The mean age of ESCC patients was 56.2 years, and 87 (41.8%) were 65 years-old or older. The ratio of women to men in the patient group was 1.39/1. ESCC patients consumed significantly less fruit and yellow or green vegetables and more hot black tea, 'boiled yellow butter', and mouldy cheese than did control individuals. Residence in rural areas, smoking, and cooking food by burning animal manure were also significantly associated with ESCC. Conclusions: The consumption of boiled yellow butter and mouldy cheese, which are specific to the Eastern Anatolian region, and the use of animal manure for food preparation were identified as risk factors in this region. Further studies are required to potentially identify the carcinogenic substances that promote the development of ESCC in this region.

Postharvest technologies for fruits and vegetables in South Asian countries: a review

  • Agricultural systems in South Asian countries are dominated by smallholder farmers. Additionally, these farmers have limited access to pre- and post-harvest technologies due to their high initial cost. The lack of these technologies in postharvest handling is responsible for 20% to 44% of fruit and vegetable losses. These high losses are largely the result of a generally weak basic postharvest infrastructure for the preservation of products, which avoids damage from improper handling, transportation, packaging, and storage. High postharvest losses of products negatively affect food availability, food security, and nutrition, as the producer is able to sell less of the farm yield and the net availability of these food commodities for consumption is reduced. An underlying cause of these postharvest losses is the limited awareness and knowledge bases of stakeholders (researchers, farmers, governments, non-governmental organizations, and merchants) in the traditional supply chains in which these losses occur. The analysis presented in this paper explores the state of postharvest practice in South Asian countries and discusses options for low-cost postharvest technologies in the region that can support small-scale farmers and provide a viable pathway for supply to the market, joining with modern value chains and bringing about individual and regional reduction in postharvest losses of fruits and vegetables. The improvement of basic and simple low-cost technologies through precise research efforts has the potential to prevent such huge losses of products, and help meet the ever-increasing demand for food in South Asian countries.

The Effects of Vit C Supplementation and Nutrition Education on Nutrition Knowledge, Food Habits and Antioxidative Enzyme Activity in Male Adolescent Smokers (비타민 C 보충 및 영양 교육이 흡연 남자 청소년의 영양지식, 식행동과 체내 일부 항산화 관련 효소체계에 미치는 영향)

  • The study evaluated the effectiveness of intervention for male adolescent smokers by making an assessment in terms of changes in food habits, nutrition knowledge, plasma catalase, superoxide dismutase(SOD), glutathione peroxidase peroxidase(GSH-px) activities and thiobarbituric acid reactive substance(TBARS) after Vit C supplementation and nutrition education. The subjects, male adolescent smokers, were assigned into four groups : Control group(19 students), education(Educ.) group(19 students), Vit C supplementation (suppl) group(19 students), and Educ. + Vit C suppl. group(19 students). The Educ. group and Educ. + Vit C suppl. group received nutrition education once a week for 2 weeks. The Vit C suppl. group Educ. + Vit C suppl. group received 500 mg ascorbic acid for 35 days. All data were collected before intervention and after intervention. Nutrition knowledge of those who received education increased, and the frequency of fruit and yellow-green vegetable consumption also increased. Plasma antioxidant enzyme activities were not different except for the SOD activity in the Educ. + Vit C suppl. group, which was significantly increased. The plasma ceruloplasmin level of groups that received Vit C supplementation was reduced more than any other groups, and the specific ceruloplasmin ferroxidase activity of groups that received Vit C supplementation was elevated more than other groups. These intervention programs had an impact on food habits, nutrition knowledge, plasma antioxidant enzyme activities, and plasma TBARS in male adolescent smokers. Various nutrition education programs must be implemented for adolescent smokers, and further studied are needed regarding sorts and amount of antioxidant nutrients and supplementation duration.

Papaya: A gifted nutraceutical plant - a critical review of recent human health research

  • The plant kingdom is considered to be a repository of modern medicine, attributable to their rich source of bio-active molecules and secondary metabolites. It is indeed the Nutraceuticals that enhance immunity and ensure a healthier life because of their prophylactic and therapeutic values. Over centuries, papaya [Caricaceae; (Carica papaya Linn.)] is a renowned nutritious and medicinal plant. Each part of the papaya like root, stem, leaf, flower, fruit, seed, rinds, and latex has its own nutraceutical properties. It serves as food, cooking aid, and Ethnomedicine to prevent and treat wide-range of diseases and disorders. It has also been traditionally used as appetite enhancer, meat tenderizer, purgative, medicinal acne, abortifacient and vermifuge. Over decades, a series of scientific attempts were made to authenticate the nutraceutical properties of papaya. These studies validated that the papaya has antiplasmodial, antitrichochramal, antitrichomonal, antidengue, and anti-cancer activities. They have also exhibited that papaya possesses antiseptic, antiparasitic, anti-inflammatory, antidiabetic, and contraceptive features, and it helps in the management of sickle-cell anaemia, HIV, heart diseases and digestional disorders too. Nevertheless, the responsible bio-active molecules and their mode of actions remain indistinct and imprecise, and this calls for further pharmacological and clinical research on them. Conclusively, papaya is one of the naturally gifted plants; though its nutraceutical properties as a food or as a quasi-drug are poorly understood or undervalued by people. Accordingly, this scrutiny, demand for instigation of public health awareness campaigns to promote papaya consumption, so that the society shall acquire optimal benefits of papaya and in turn prevent and alleviate various diseases and illness.

Using and Understanding of Nutrition Labels and Related Factors among Female Adults in the Seoul Area (서울지역 일부 성인여성의 영양표시 이용실태와 이해도 및 이에 영향을 미치는 요인 연구)

  • The purpose of this study was to examine the prevalence of nutrition label use and its association with demographic, weight control related factors, and diet among female adults in the Seoul area. Also, the study subjects' comprehension of nutrition labels was examined using objective measures. 279 females, between ages of 20 and 49, participated in this study. 66% of the participants reported to always or often use nutrition labels when purchasing foods. Nutrition label use was significantly higher among participants who were interested in losing weight and have more knowledge on nutrition, but significantly lower among subjects who were underweight (p < 0.05). Label users had higher fruit consumption and lower intake of fatty foods and snacks (p < 0.01). Only 20% of participants answered correctly regarding questions about the total amount of calories and fats contained in the entire food package tested, and only 15% answered correctly on questions about understanding of the % daily value. Comprehension of nutrition labels were significantly lower among participants who were less educated, underweight, and married (p < 0.05). In conclusion, our study suggests that proper use of nutrition labels may improve food choices and enable healthy dietary practices. Further efforts are needed to provide public a nutrition education program on how to read nutrition labels. Modifications of nutrition labels to make it easier to understand by the public should also be considered.

The Effects of Treatment with Ethylene-Producing Tablets on the Quality and Storability of Banana (Musa sp.)

  • This study was conducted to assess the effect of ethylene producing tablet (patent no.10-1574011) and treatment period on quality and storability of banana (AAA - Cavendish group) fruit imported into Korea from the Philippines. Three and five days of treatment periods, and different concentrations of ethylene tablet (50 ppmv, 100 ppmv) and control (standard ethylene gas treatment at a concentration of 100 ppmv) were used for the study. Slightly higher respiration rate was observed in banana fruits treated with 50 ppmv in both 3 and 5 days after treatments as compared to the control. Better storability was observed with banana fruits treated with 50 ppmv and 100 ppmv as compared to the control. All the treatments were shown a decrease in firmness as the storage days proceeded. The highest firmness was recorded from 50 ppmv on the initial day of storage while the lowest was recorded from 100 ppmv on 9 day storage. It was observed that banana fruits could be stored for up to 12 days without losing their color quality in all treatments except for the control. However, the quality of fruits at the control rapidly decreased (lost marketability) after 9 days of storage. Banana fruits treated with ethylene tablet with 100 ppmv for 5 days recorded the highest soluble solids content (SSC) at the beginning of storage period which was similar with the control. However, banana fruits treated with ethylene tablet with 100 ppmv for 3 days showed better storability than the control. On the other hand, ethylene tablet with 50 ppmv for 5 days of treatment has extended banana shelf life without affecting peel color, firmness and SSC content. Hence, these results indicate that banana fruits treated with ethylene tablet with 100 ppmv for 3 days or /and 50 ppmv for 5 days are an optimum for ripening of banana to be used for market and ultimate consumption.

Anti-Complementary Properties of Polysaccharides Isolated from Fruit Bodies of Mushroom Pleurotus ostreatus

  • A high molecular-weight water-soluble fraction(PO) obtained by the ethanol precipitation of 0.1 N NaOH extracts of the mushroom Pleurotus ostreatus showed 82% anti-complementary activity for complement consumption hemolysis. The PO consisted of 42% carbohydrate (w/w), 50% protein (w/w), and 3% uronic acid (w/w). Fifty-eight percent of the anti-complementary activity decreased by periodate oxidation and 22% by protease digestion, suggesting that the sugar and protein moieties are essential for this activity. Two polysaccharide fractions, PO-IIIa-1 and PO-IIIa-2, with anti-complementary activity were isolated from the PO using DEAE-Sepharose FF followed by Sephadex G-75 and Sepharose CL-6B gel permeation chromatographies. The PO-IIIa-2 was found by HPLC to be nearly homogeneous, with the molecular mass of 531 kDa, and showed 96% $ITCH_{50}$ (inhibition against the total complement hemolysis of deionized water as the control) at a concentration of 1 mg/ml. This fraction contained galactose, mannose, fucose, and glucose with molar ratios of 1.75:1:0.65 and 0.59, respectively. The majority of galactose and mannose units in the PO-IIIa-2 were composed of TGalp1 ->, ->6Galp1->, ->2,6Galp1->, and ->Manp1->. The PO-IIIa-1 (molecular mass of 2000 kDa), exhibiting higher activity than the PO-IIIa-2, was further purified into two fractions, unbound proteoglycan (PO-IIIa-1A) and bound glucomannan (PO-IIIa-lB), by affinity chromatography using ConA-Sepharose CL-4B. The anti-complementary activity of each affinity purified fraction decreased as compared to that of the native PO-IIIa-1 fraction, indicating that the formation of complex between both polysaccharide fractions was necessary for full anti-complementary activity.

  • As the current heating control of the greenhouse is located in specifically designed place, there is an inevitable difference in degrees depending on the latitude in it. Even though it is necessary to maintain the proper temperature in the greenhouse producing vegetables and fruit plants, the difference between ups and downs in the facilities results in the increasing energy consumption to both warm and cool down the facilities. The newest heating method, automatic control system of vertical agitation heater, which manipulates the inner air circulation efficiently, is suggested in this paper. The proposed system utilizes both the upper temperature and the lower temperature, and controls the air circulation fan and heating independently, so that maximizes the efficiency of heating with the minimum energy and implements predictable planning of farm products.

Food purchase Behavior of Taejon Full Time Housewives with Different Education Levels (대전지역 전업주부들의 학력수준에 따른 식품구매 실태조사)

  • A survey was conducted to assess the food-purchase behavior of 197 Taejon full time housewives 30 to 49 years of age. Food purchase was assessed using a questionnaire and the resulting data were analyzed using SPSS programs. Demographic data revealed that most of the households have three to five family members and that the Engel Indices of the participating households were mostly between 10 and 30%. Noticeable results of the food purchase assessment are as follows. In the grain and grain products items, the low-education group purchased more rice and barley than the high-education group, whereas the high-education group purchased more glutinous rice, brown rice, bread, macaronis and spaghetti than the low-education group. In the vegetable items, the low-education group purchased more Chinese cabbage and radish than the high-education group, while the high-education group purchased more head lettuce, broccoli and sweet pepper than the low-education group. In the meat items, the beef purchase was higher in the high-education than in the low-education group, while the pork purchase was higher in the low-education than in the high-education group . In the processed meat items, ham was the most favorite purchase item regardless of the education level. In the fish and shellfish items, Pacific cod and Alaska pollack were purchased more in the low-education than in the high-education group, and salmon and dried icefish strip were purchased more in the high-education than in the low-education group. No items in fruit group showed significant differences in the purchase amount between the low-education and the high-education group although the latter purchased more imported-fruits such as melons, kiwis, grapefruits, and oranges. Dairy products such as milk, cheese and butter were purchased more in the high-education than in the low-education group. It was also found that both the number of food items and the consumption of foods coming from animals were higher in the high-education than in the low-education group.
