  • Carbon dioxide enrichment for greenhouse crops has generally been a standard commercial practice for many years. Vegetable crops such as tomato, cucumber, and lettuce respond positively to the $CO_2$ enrichment. But improper $CO_2$ enrichment leads to physiological damage and economical loss. This study was carried out to develop a $CO_2$ concentration control algorithm considering growth stage and efficiency. The measurand was $CO_2$ consumption rate and top fresh weight that represents growth stage. The weight of top fresh lettuce as a whole in the tray was measured through a non-destructive method. The demand in $CO_2$ concentration according to growth stage was investigated. The results are summarized as follows. 1. The $CO_2$ consumption rate could be measured within the error of $\pm$ 15.4mg$CO_2$/hr in the range of $CO_2$ concentration of 500-1500ppm. 2. The weight of top fresh lettuce could be measured within the error $\pm$ 4.3g in the range of 0-1400g. 3. The $CO_2$ control model developed could determine an economical $CO_2$ supply rate considering $CO_2$ consumption rate and leakage rate. 4. The $CO_2$ control algorithm based on the control model was composed of feedforward control for maintaining a stable $CO_2$ concentration level, and feedback control with $CO_2$ consumption rate and top fresh weight for adapting to the change in $CO_2$ demand by growth stage. 5. For the performance test with the developed control algorithm on lettuce the decrease in $CO_2$ supply rate was obtained without a significant decrease in top fresh weight.

  • The effective use of rolling oils in the metalworking industry is generally regarded as an art rather than a science. With variations in the quality of some of the raw materials used e.g. vegetable oils, it was often difficult to predict the performance of a product from one batch to another. However, with the increasing use of synthetically produced components and better understanding of the rolling process itself, more consistent and predictable results can now be obtained.

  • 토양에 비료 형태로 투여한 셀레늄 농도와 처리기간이 마늘의 생육에 미치는 영향을 구명하고자 본 실험을 수행하였다. 셀레늄의 농도가 높고 처리기간이 길수록 생체중은 대조구에 비하여 감소하였다. 셀레늄의 처리농도가 높고 처리기간이 길수록 3주 후 셀레늄의 함량은 구보다는 엽초에 많이 축적되었다 그러나 처리 6주 후에는 구>엽초>뿌리 순으로 셀레늄의 함량이 높았다. 셀레늄 처리 후 토양에 잔류하고 있는 셀레늄의 함량은 대조구와 차이가 없었다.

Thermal Oxidative Stability of Various Vegetable Oils used for the Preparation of the Seasoned Laver Pyropia spp.

  • Seasoned laver Pyropia spp. is a traditional Korean seafood that has gained popularity worldwide because of its unique taste, texture, and health benefits. It is prepared by roasting a sheet of dried laver, to which vegetable oils have been applied, at an ultra-high temperature (UHT) of $300^{\circ}C$. Therefore, the oxidative stability of the oils is the most important factor in determining the shelf life of seasoned laver products. In this study, we investigated changes in the thermal oxidative stability of six major vegetable oils (sesame, perilla, sunflower, rice bran, canola, and olive) during the seasoned laver processing. The oxidation induction time of each oil from the seasoned laver products was decreased compared with the fresh oil. These results indicate that the UHT treatment ($300^{\circ}C$, 10 s) induced thermal oxidation of the oils. Among the six seasoned laver oils, the induction times of olive (OL, 8.02 h) and sesame (SE, 5.31 h) oils were significantly higher than the other oils. The acid values (AVs) of OL and SE oils from the seasoned laver were 0.49 and 0.79, respectively. On the other hand, perilla oil had the overall worst thermal oxidative properties (induction time: 0.35 h, AV: 2.82). Our results provide useful information about seasoned laver products for researchers or manufactures.

폐쇄형 육묘시설 내에서 몇 가지 광원이 토마토와 오이의 묘소질에 미치는 영향 (Effects of Selective Light Sources on Seedling Quality of Tomato and Cucumber in Closed Nursery System)

  • 폐쇄형 육묘시설 내에서 균일한 품질의 플러그묘를 주년으로 생산함에 있어서 LED 광원의 이용 가능성을 검토하기 위하여, 토마토와 오이의 육묘기간 동안에 광원을 달리하여 묘소질을 비교하였다. 적색, 청색, 혼합(적색 2 + 청색 1) LED 및 형광등을 $40{\sim}60{\mu}mol{\cdot}m^{-2}{\cdot}s^{-1}$로 광도(PPF)를 조사하여 30일간 온도조절이 가능한 폐쇄형 육묘시스템에서 육묘하였다. 토마토와 오이 모두 형광등에 비해 적색 LED와 혼합 LED 처리에서 배축의 신장이 작으면서 튼튼한 묘을 생산할 수 있었다. 토마토와 오이의 생체중은 적색 LED에서 가장 무거웠는데 형광등에 비하여 각각 74% 증가하였다. 토마토의 1화방 착과절위에서는 처리간에 차이가 없었으나, 2화방의 착과절위는 혼합광 처리에서 낮았다. 화방별 착화수는 처리간에 차이가 없었다. 오이의 20절까지의 암꽃 착생률은 적색 LED 처리에서 52%로 가장 높았고, 다음이 혼합광 처리로서 44%였다. 과실 착과수와 수량은 처리간에 차이가 없었다. 이상의 결과로부터 폐쇄형 육묘시설 내에서 토마토와 오이의 묘생산에는 적색 및 적색 2 +청색 1의 혼합 LED가 이용 가능성이 높은 것으로 판단하였다.

식용(食用) 찰옥수수의 저장조건(貯藏條件)에 따른 당도(糖度) 및 수분(水分) 변화(變化) (Changes of sugar and moisture content according to storage conditions of the vegetable waxy corn)

  • 식용찰옥수수의 적정 저장온도를 구명하기 위하여 당함량 및 수분함량 변화를 국내에서 및 육성한 찰옥 1, 2호 및 대학찰에 대해 조사한 결과는 다음과 같다. 공시된 찰옥수수 교잡종의 식물학적특성은 대학찰에 비해 찰옥 1호, 2호에서 개화기가 약간 빨랐고, 이삭 길이는 찰옥 1, 2호가 짧고, 이삭 직경이 굵은 반면에 대학찰은 간장 및 이삭길이에서 다소 컷으나 이삭직경과 이삭 열수에서 낮게 나타났다. 공시된 교잡종 찰옥수수의 수확시 당도는 대학찰이 크게 높았으며, 찰옥 2호, 얼룩찰순으로 높게 나타났는데 상대적으로 저장기간이 길수록 저장온도에 거의 무관하게 급 감소하는 경향인 반면에 수분함량의 변화는 크게 변화되지 않았다. 이들 교잡종의 신선도 및 고품질을 유지하기 위해서는 $-4^{\circ}C{\sim}-10^{\circ}C$에서 저장하는 것이 유리하였다.

남부지방 5일장에서 신선 산채류의 유통 실태 (The Actual Distributing States of the Fresh Wild Vegetables in the Five-Day Traditional Markets of the Southern Districts in Korea)

  • This study was carried out to investigate the kinds of fresh wild vegetables, the number of street stalsl, seller's age, and the selling list of items of the street stall in the five-day traditional markets of Gyeongnam Tongyoung and Namhae, Jeonnam Naju and Younggwang, Jeonbuk Iksan and Jangsu, from March to May, 2005. The number of street stalls selling fresh wild vegetables was forty nine in Tongyoung, twenty five in Namhae, thirty in Naju, eighteen in Younggwang, one hundred and thirty in Iksan, and seventeen in Jangsu. The selling lists of items totaled forty items; thirty in Tongyoung, seventeen in Namhae, twenty in Naju, sixteen in Younggwang, twenty seven in Iksan, and thirteen in Jangsu. The main kinds were Aster scaber, Aralia elata, Pteridium aquilinum var. latusculum, Artemisia princeps, Sedum sarmentosum, Oenanthe javanica, Pla쇼codon grandiflorum, Petasites japonicus and Allium monanthum. sprouts or woody plants such as Arazia elate, Ailanthus altissima, Meliosma oldhamii, and Kalopanax pictus were also being sold. About $80{\%}$ of the sellers were over fifty one years old. Half of the sellers were at least sixty years old. More thab $77\%$ of the street stalls in the traditional markets sell fewer than four kinds of fresh wild vegetables.

두유(豆乳)에 첨가(添加)된 대두유(大豆油), 옥수수유(油), 및 팜 ${\cdot}$ 야자유(油)의 산화안정성(酸化安定性)의 비교(比較) (Comparison of Stability of Soybean, Corn and Palm Oils Added to Soybean Milk Against Accelerated Oxidation)

  • The study was carried out to investigate interrelationships among the acid, peroxide, iodine, thiobarbituric acid values, and changes of fatty acid compositions of some vegetable oils added to soybean milk. A storage temperature of $100^{\circ}C$ was used for the oxidation of the oils, and to determine of variation of the chemical properties and changes of the fatty acid composition, all the samples were carried out in every 8 hours for 40 hours. The changes in fatty acid compositions of the vegetable oils were measured by high performance liquid chromatography. The results obtained were as follow; 1. The acid values of the fresh soybean, corn, and palm oils added to the soybean milk were 0.05, 0.12, and 0.06, whereas those of the oils stored for 40 hours were 0.08, 0.18, and 0.09, respectively. 2. The peroxide values of the fresh soybean, corn, and palm oils added to the soybean milk were 0.3, 1.0, and 0.3, whereas those of the oils stored for 40 hours were 1.1, 1.1, and 0.9, respectively. 3. The iodine values of the fresh soybean, corn, and palm oils added to the soybean milk were 132.7, 124.1, and 57.0, whereas those of the oils stored for 40 hours were 127.3 108.3, and 52.0, respectively. 4. The thiobarbituric acid values of fresh soybean, corn, and palm oils added to the soybean milk were 0.18, 0.05, and 0.02, whereas those of the oils stored for 40 hours were 0.25, 0.19, and 0.07, respectively. 5. The percent content of the major fatty acids of the soybean, corn, and palm oils freshly added to the soybean milk were 2.3%,2.5%,and 25.2%for palmitic acid, 3.2%,3.2%,and 4.8%for stearic acid, 39.7%, 40.7%, and 59.3% for oleic acid, 49.9%, 53.0%, and 10.5% for linoleic acid, and 4.7%, 0.4%, and 0.7% for linolenic acid, respectively. Those of the oils stored for 40 hours were 2.9%, 4,5%, and 36.7% for palmitic acid, 8.5%, 6.8%, and 7.0% for stearic acid, 37.8%, 38.8%, and 49.2% for oleic acid, 46.2%, 49.5%, and 5.8% for linoleic acid, and 4.2%, 0.1%, and 0.1% for linolenic acid, respectively. The fatty acid compositions changed significantly: the amounts of the unsaturated fatty acid decreased considerably. The rsults of the present study demonstrated greater stability of the palm oil as compared with the stability of soybean oil and corn oil added to the soybean milk.

군 급식 제공 메뉴 분석에 의한 식사의 질 평가 (Dietary Quality Estimation of Military Foodservice Menu)

  • This study attempted to estimate the dietary quality and the food diversity by analyzing the military foodservice menu. To evaluate the dietary quality, an analysis of NAR(Nutrient Adequacy Ratio) and MAR(Mean Adequacy Ratio) were carried out. DDS(Dietary Diversity Score), DVS(Dietary Variety Score) and DMGFV(Dairy Product, Meat, Grain, Fruit, Vegetable group) were used for assessment of food diversity. A Can-pro 3.0 and an excel were used for dietary data analysis and SPSS 12.0 program was used for statistical analysis. The results were as follows. The NAR of the 9 nutrients was above the RDAs and MAR was $1.71{\pm}0.19$. For 19 days(61.3%), DDS was 5 and for 12 days(38.7%), DDS was 4. The average of DDS was $4.6{\pm}0.25$. The Fruit & vegetable groups were not often served compared to other groups and especially fresh fruit were not given enough. The average of DVS and DVSS were $22.48{\pm}0.61$ and $29.26{\pm}0.66$ each. The most frequent food pattern was 'DMGFV=11111' which was served for 19 days(61.3%) and second frequent pattern 'DMGFV=11101' was served for 12 days(38.7%). DDS was significantly associated with Vit. C intake and DVS and DVSS was significantly related to Vit. $B_1$ and Vit. $B_2$ intakes. The MAR was significantly correlated with only DVSS. It could be interpreted that DVSS is a useful parameter for evaluating nutrient intakes as previous studies verified. Based on these findings, it can be said that military foodservice was provided with adequate nutrition and diversity. Menu was well composed of various foods which met the nutrition standards, but should provide more fresh fruits for adequate provision of vitamins and minerals.
