매화의 품종과 건조방법에 따른 화학성분 조성 (Chemical Composition of Prunus mume Flower Varieties and Drying Method)

  • 매화의 품종과 건조방법에 따른 화학성분을 분석하여 매화차를 개발하기 위한 기초 자료로 이용하고자 본 연구를 수행한 결과 매화의 건조별, 품종별 일반성분은 생화를 기준으로 수분 함량은 $82.5{\sim}84.2%$, 조섬유 $2.5{\sim}3.1%$, 조단백질 $2.6{\sim}3.1%$, 조지방 $0.67{\sim}0.84%$, 조회분 $0.22{\sim}0.60%$ 이었으며, 가용성 무질소물은 $10.1{\sim}11.2%$로 나타났으며, 동결 건조에서는 수분 16.4%, 음건 13.3%로 나타났다. 품종에 따른 일반성분은 회분 함량을 제외하고는 큰 차이가 없었다. 매화의 생화, 동결건조, 음건의 유리당 분석결과 fructose, glucose가 검출되었으며 sucrose는 생화를 제외한 동결건조와 음건시료에서 미량 검출되었다. 품종에 따른 유리당 함량은 큰 차이가 없었다. 청축 생화 유기산 분석결과 citric acid, malic acid가 각각 0.82%, 0.41% 검출 되었고 품종별 함량은 청축>고성>백가하순으로 나타났다. 매화의 품종별 무기성분의 함량은 3품종 모두 K가 가장 높았으며 건조별 무기성분 함량을 보면 음건한 시료가 동결 건조된 시료보다 다소 높게 나타났다. 주요 지방산으로는 각각의 품종별로 palmitoleic acid가 가장 많았고 건조별로는 지방산 함량이 큰 차이가 없는 것으로 나타났다. 매화의 비타민 C 함량은 청축의 경우 생화 64.3 mg%, 동결건조 480.5 mg%, 음건 442.3 mg%로 나타났다. 품종별로 구성 아미노산의 함량을 살펴보면 세 품종 모두 aspartic acid의 함량이 가장 높게 나타났고, 유리아미노산의 경우 총 함량은 청축>백가하>고성 순으로 나타났다.

현대패션 활용을 위한 천연염색에 의한 검정색 구현(1): 견직물을 중심으로 (Developing Black Color by Natural Dyeing for Contemporary Fashion: Dyeing of Silk Fabrics)

  • The aim of this study is to develop an effective dyeing process for black color on the silk fabrics, using natural Indigo, Madder, Amur cork tree, Alder, Logwood, and Gallnut. All natural dye materials were water-extracted, concentrated, and freeze-dried. Seven different processes were carried out and the color differences(${\Delta}E$) of black color with each process from the chemical black dyed fabric were compared. The light, washing, and rubbing fastness were evaluated. The black dyeing of the silk fabrics was well carried and excellent black color was obtained in every methods. The profound black color could be obtained by the subtractive mixture of the three primary colors of red, yellow, and blue in the order of indigo(blue) - amur cork tree(yellow) - madder or lac(red). Black color was efficiently obtained by iron mordant when logwood or alder fruit was used. The color difference(${\Delta}E$) from the black color with chemical dyestuff was the lowest in the indigo - amur cork tree - lac - iron method. Light fastness and washing fastness were excellent in all dyeing processes, showing grade 5. The fastness to rubbing was excellent as shown grade 5 in the dry samples of logwood - iron process and alder fruit - iron process.

건조방울토마토 제조와 품질 특성 (Development and Quality of Dried Cherry-Tomatoes)

  • This study was carried out to develop new processed food from cherry tomatoes. The dried cherry tomatoes were prepared by using a sequence of osmotic dehydration, air drying, vacuum drying and freeze drying. The moisture contents of dried cherry tomato products by nontreatment and osmosis treatment were about 11~13% and 7.5~ 10%, respectively. The vitamin C contents of the dried product after osmotic dehydration were higher than those of the dried products by nontreatment. The vitamin C content of the freezing dried product was the highest of the others. The vacuum dried product by nontreatment was retained color of fresh fruit in the change of color. The ΔE value of the air dried product was lower than those of the others. As a result to microscopic analysis, fresh cherry tomato was observed regular tissue, while cherry tomato treated by osmosis was observed a cell collapse following the loss of water. The dried product had cell shrinkage and dense tissue. And the cell wall of dried products after osmotic dehydration were much more damage than those of nontreatment dried product. The palatability of the air dried product was the best of three drying methods. The dried cherry tomatoes treated by osmosis were superior to the dried cherry tomatoes by nontreatment.

Effect of Kefir Extract on th Growth of Serum-Free Mouse Embyro (SFME) Cells

  • The antioxidative and protective activities of kefir, low-fat dry milk (NFDM) extract and fractions on SFME cells in serum-free medium were investigated. Kefir and low-fat kefir and NFDM extract were made by solubilizing the freeze dried powder forms in deionized water, filtering through glass prefilter, 12 ㎛ and 2 ㎛ membrane, and demineraling with chelating resin. Kefir, low-fat kefir and NFDM extract were fractioned into dialyzate and retentate by dialysis with membrane tube having the molecular cut-off of 3,500 Dalton. An antioxidative activity was analyzed by the in vitro model system using a linoleic acid. In the case of kefir an antioxidative activity was detected only in the retentate of kefir extract. On the other hand NFDM showed an antioxidative activity in extract, demineralized extract, dialyzate and retentate. The retentate of kefir extract had the higher antioxidative activity than that of NFDM extract. Kefir showed the protective effect of SFME cells in serum-free medium in extract, demineralized extract and retentate, but low-fat kefir didn't. NFDM had the similar protective effect on SFME cells as extract, demineralized extract and retentate of kefir.

알칼리 용제를 이용하여 제조한 셀룰로오스 겔의 카드뮴 흡착특성 (Cadmium Adsorption Characteristic of Cellulose-gel Manufacture using Alkali Solvent)

  • This study was carried out to investigate the characterization of cadmium adsorption by cellulose hydrogel and aerogel. Hydrogel and aerogel were made from ashless pulp dissolved in alkali hydroxide-urea aqueous solution and manufactured in film and bead types. After regeneration of cellulose, hydrogel went through the process of substitution of organic solvent and freeze-dry in order to make aerogel. SEM was used to analyze the microstructure of hydrogel and aerogel. Experiment was conducted in various concentrations and pH conditions to find out the characteristic of cadmium adsorption. After that, EDS was used to identify existence and distribution of cadmium in hydrogel and aerogel. The result from comparisons of cadmium adsorption shows that bead type aerogel has the maximum cadmium adsorption and film type hydrogel has the minimum cadmium adsorption.

겔화제 첨가에 따른 쌀 묵의 품질특성 (Quality Properties of Rice Mook with the Addition of Gelling Agents)

  • Purpose: Rice starch is known not to be suitable to Mook. Its gel is not hard and elastic enough and too sticky. This study investigated the effects of agar, carrageenan, and gelatin addition on low amylose rice flour paste and gel properties for making Mook. Methods: Angemi, low amylose rice, and Goamibyeo, intermediate amylose rice, were dry milled. The properties of Mook were determined by texture profile analysis (TPA), cold storage stability, and sensory acceptance. Results: Addition of agar and carrageenan increased cold paste viscosity, whereas addition of gelatin decreased cold paste viscosity while improving breakdown and setback viscosity. When 30% of gelling agents such as agar, carrageenan, and gelatin were added to low amylose rice, Angemi, Mook-like gels were formed. The hardness, adhesiveness, and springiness of gelling reagent-added Angemi Mook increased, whereas cohesiveness decreased, and fracturability was not observed. The addition of gelling agent decreased lightness and increased yellowness. Angemi Mook added with gelatin showed the best freeze-thaw stability while addition of agar and carrageenan increased syneresis. The carrageenan-added Angemi Mook was equal to Goamibyeo 100% Mook in all sensory acceptance properties without significant difference. Conclusion: Above results suggest that addition of carrageenan and gelatin to low amylose rice can be used to produce Mook with improved physical properties.

감자 Lipoxygenase 가 밀가루 반죽의 페리노그라프 특성에 미치는 영향 (The Effect of Potato Lipoxygenase on the Farinograph Characteristics of Wheat Flour Dough)

  • To investigate the effect of potato lipoxygenase on the farinograph characteristics of wheat flour dough, composite flours containing enzyme-active potato flor (EPF) and hot-ar dried potato flour(HPF) were used. EPF was made by freeze-drying potato tuber. DPF (denaturated potato flour) was prepared by holding EPF at 8$0^{\circ}C$ for 18 hr in a dry oven. The potato flours were added to wheat flour at a level of 10% , respectivley. EPFB (enzyme-active potato flour blends, 90% wheat flour +105 enzyme -active potato flour) containing lipoxygenase activity gave higher farinogram peak time and higher stability values, lower MTI (mixing tolerance index ) and lower weakness values than those of HPFB(hot-air potato flour blends, 90% wheat flour + 10 % hot-air potato flour). Moreover, then lipoxygenase was added to DPFB(denatured potato flour blends , 90% wheat flour + 10% denatured potato flour) at a level of EPFB, it resulted in increasing stability, peak time and decreasing MTI , weakness at a level of EPFB. When the lipoxugenase was added to wheat flour with fumaric acid at alevel of 6.5 $\times$ 10units/g flour, lipoxygenase overcame the deleterious effects that fumaric acid including activated double-bond compounds have at mixing stability. Also the addition of liposxygenase with linoleic acid to defatted wheat flour resulted in the increase in stability and decrease in MTI value compared with those of linoleic acid and defatted wheat flour.

우리나라 하수 및 폐수 처리 슬러지의 다환방향족탄화수소의 함량 (Contemporary organic contamination levels in digested sewage sludge from treatment plants in Korea: (2) Non-alkylated Polycyclic Aromatic Hydrocarbons)

  • The 16 priority PAHs (Polycyclic Aromatic Hydrocarbons) designated by US Environmental Protection Agency were analyzed for some digested sludges from wastewater treatment plants in Korea. PAHs are an important group of organic contaminants present in sewage sludge due to their persistence and toxic potential. PAHs were extracted from freeze-dried sludges using a methylene chloride-methanol (2:1) mixture in a soxhlet extractor. The extracts were cleaned-up by silica gel/alumina combination column and subsequently fed into gas chromatograph/mass spectrometer (GC/MS) for determining PAH contents. The sum of the 16 PAHs in the sewage sludge varied from 534.8 to $5754.5 {\cal}ug/{\cal}kg$, dry wt.. In the sewage sludge, phenanthrene appears as the most abundant PAHs, followed by naphthalene, pyrene, fluoranthene. Source of the investigated sewage sludges relatively predominated pyrogenic. PAHs levels of sewage sludges in Korea appeared to be lower than those in other countries.

상어 껍질과 육으로부터 산 및 Pepsin 가용성 콜라겐의 추출과 탈색조건 (Extraction and Bleaching of Acid- and Pepsin-Soluble Collagens from Shark Skin and Muscle)

  • 상어의 껍질과 육 조직으로부터 산 (citric acid) 가용성 콜라겐 (ASC)과 pepsin 가용성 콜라겐 (PSC)의 추출 및 탈색조건을 조사하였다. 비 콜라겐 단백질을 제거하기 위한 적정 NaOH 농도는 0.3 N이었으며 처리시간은 9시간이었다. 상어껍질의 탈색은 생 원료에 대하여 10배량의 0.48% sodium hypochlorite로 60분간 처리하는 것이 적절하였다. ASC 및 PSC의 추출시 산의 적정농도는 각각 0.3 M 및 0.1 M이었고, 추출시간은 각각 72시간 및 24시간 이었다. 산가용성 콜라겐인 ASSC (citric acid soluble shark skin collagen)와 ASMC (citric acid soluble shark muscle collagen), pepsin 가용성 콜라겐인 PSSC(pepsin and citric soluble shark skin collagen)와 PSMC (pepsin soluble shark muscle collagen)에 함유된 총 단백질 함량은 각각 88.66, 83.09, 90.33 및 84.81% (dry basis)이었으며 시판 표준 콜라겐의 88.86%와 대등하였다. Hydroxyproline의 함량으로부터 산출한 순 콜라겐 함량은 ASC에서는 25.70~70.31%, PSC에서는 32.94~83.09%이었다. 상어육과 껍질 (dry basis) 100 g으로부터 얻을 수 있는 콜라겐의 수율은 ASC는 53.85~57.22%, PSC는 20.81~23.28%이었다.

한옥지붕 경량화를 위한 신형 한식기와 개발 (Development of a New Clay Roof Tiles for the Reduction of Weight in Korean-Style Roof)

  • 기존 한식기와에서 요구되는 강도, 흡수율, 내동해성 등은 유지하면서 지붕 하중을 대폭 줄일 수 있는 새로운 한식기와가 개발되었다. 물막이 턱과, 유속을 빠르게 하는 음각유로를 이용하여 기와 사이의 틈으로 유입되는 빗물을 방지할 수 있도록 설계되었다. 새로 개발된 한식기와는 빗물 역류 방지 능력이 있으므로 지붕에 흙이 필요 없는 건식시공이 가능하다. 새로 개발된 기와를 이용한 건식시공 한옥지붕은 흙을 필요로 하는 기존의 습식시공 한옥지붕에 비하여 지붕 중량이 약 80% 이상 감소될 수 있다. 건평 30평인 전통한옥의 경우 신형 한식기와 사용 시 지붕 중량이 약 135톤에서 약 24톤으로 줄어든다. 제작된 신형 한식기와의 물성은 KS 규격을 만족하였으며, 기와 1개당 중량은 기존 기와보다 30% 이상 가볍고, 신형 한식기와로 지어진 지붕은 우리나라의 강수량 기록을 60% 이상 넘어서는 200mm/h강수량과 풍속 17m/s의 태풍급 폭풍우에서도 물이 새지 않는 우수한 배수성을 보였다. 중량감소 효과와 우수한 배수성 이외에도, 새로 개발된 한식기와는 경제성, 효율성, 작업 편의성, 유지보수, 내진성 등에서 기존 한식기와에 비하여 우수한 장점이 있다.
