Food Ethics Approach to Korean New Food Words of Years 1994-2005 (1994-2005년 한국 음식 신어에 대한 음식 윤리적 접근)

  • This study was conducted to approach the Korean new food words for the years 1994-2005 from the stance of food ethics. The new food words were categorized into food industry, foodstuffs, cooking, various foods, processed foods, distribution, and consumer health. The principles of food ethics applied to new food words include a respect for life, justice, environmental preservation, priority of safety, and dynamic equilibrium. Seventy percent of new food words were ethically neutral, while 30% had significant ethical meaning. There were more words with a negative ethical meaning than with a positive one. All of the principles, except respect for life, could be successfully applied to new food words. Dynamic equilibrium was the most appropriate principle for the new food words, followed by a priority for safety, justice, and environmental preservation. The results of this study implied that moderation and balance is required in our modern dietary life.

A Study of Value Evaluation for Foods among College Students (도시 대학생들의 식품에 대한 가치 평가 분석)

  • The purpose of this study was to investigate the value evaluation of foodstuff of 448 college students residing in the urban area. As a result of analyzing the value of each foodstuff, two to four factors were drawn from each foodstuff. The factors were classified into the social-conceptual factor, the preparatory factor, the quality factor, the economic factor, the subjective factor, and the complex factor. It was learned that the social-conceptual factor was dominant over the majority of college students in the evaluation of value of foodstuffs. There was a difference in the factor of the value evaluation for each foodstuff according to sex and the main growth region among the college students. A significant difference was found between the sexes regarding the preparatory factor and the economic factor. Also, in accordance with the main growth region, there was great difference in the social-conceptual factor(except for the Korean rice cake).

  • Recently, it is becoming the big issue internationally where the safety problem of the industrial product including the foodstuffs. The way is able to construct the trust of the consumer that the external specialized agency independently operating confirms what production process of the product keep a standard or a technical regulation. This is conformity assessment. In the many countries, agencies entrusted government authority do conformity assessment. Specially, 'certification' in one form of conformity assessment process is operating a certification system at the government and the non-government body in Korea. Also non-government certification is fixed by trusted system from consumer. He has to prepare a competitive power in liberalization time, so need the countermeasure urgently. This study purpose that develops strategy so as to activating of non-government certification system in gist of the origination called 'self-control.' I present activation strategies using SWOT/AHP analysis.

  • Fifty-eight strains of Aspergillus spp. isolated from various grains were examined for the screening of aflatoxins by the method of the Thin-Layer Chromatography (TLC), using the aflatoxin producing strain of Aspergillus flavus ATCC 15517 as a control. The results as follows: 1. Samples of Aspergillus spp. isolated from various grains were extracted with chloroform and chromatographied by the thin-layer chromatography method. 2. Three strains of Aspergillus spp. among the 58 strains can be found that the spots having the same Rf value as control with culture extract of Aspergillus flavus ATCC 15517. 3. The further prove studies of aflatoxins were proceed by the methods of in vivo and in vitro tests. And this methods considered to capable for the use of mass screening among the samples.

Environmental Radioactivity Prior to the Kori Nuclear Power Plant Operation

  • The present paper deals with the measurement of the environmental radioactivity at the Kori nuclear Power Plant site area for the Period of six years from December 1970 to December 1976. Gross alpha activity was measured in samples of airborne particulate. Gross beta measurement was performed on soil, water, airborne perticulate, pine needle, precipitation, fallout (gummed acetate paper) and various foodstuffs. Radioactivities of strontium-90 and cesium-l37 were determined by means of radiochemical analyses in samples of spinach, cabbage, barley, rice in terrestrial food, sea eel, shell fish, dulse, green laver in marine product and milk, and of fallout (cloumn), Furthermore, tritum was also analyzed in water sample of well, stream and sea by electrical enrichment.

O Valor Documental dos Balangandãs: Uma Análise Simbólica e Formal

  • The purpose of this article is to present the potential of balangandãs as a documentary source for intersectional studies of gender and slavery, from the analysis of formal and symbolic aspects of the museum objects in the Museu Nacional Nacional (MHN) and Museu Carlos Costa Pinto (MCCP). Balangandãs are a type of creole jewelry, made in gold or silver and used in Brazil since the 18th century by black women - women who worked, especially in the commercialization of foodstuffs in large urban centers. They are described in printed sources and engravings, and preserved in some museum institutions. In the study, the meanings attributed to the object over the centuries are observed: jewelry, amulet, peculium, document, travel memory and heritage. As a result, the article seeks to highlight the objects as a historical and documentary source, verifying similarities between the pieces musealized at the MHN and at the MCCP, also emphasizing the documental power of the pieces produced today.

  • Supermarket Franchising, as a relatively new mode of retail business, is often regarded as one of the two hallmarks of the "Modern Logistics Revolution". After more than ten years of development, franchise supermarkets have been a rising force in retail business in China. As a product of a highly-developed commercial economy, franchise supermarkets mainly deals in foodstuffs and other daily necessities, featuring low cost, high turnover rate, low prices and diversified inventory. Propelled by the conveniences that come with open shelves and self-service shopping, franchise supermarkets have been growing very rapidly and the rise of many franchise supermarket brands bears testimony to its growth potential and profitability. Meanwhile, in the backdrop of this boom, some franchise supermarkets are going bankrupt. This paper analyzes the current status of franchise supermarkets and some factors bearing on their core competencies, so as to close the competitiveness gap with international retail giants.

Research on the Status of the Meal Management and Nutritional Knowledge of the Housewives Living in Yong-dong Area (영동지역(嶺東地域) 주부(主婦)들의 식생활관리(食生活管理) 및 영양지식(營養知識)에 관한 실태조사(實態調査))

  • This study was undertaken to investigate the current meal management situation and nutritional knowledge of the housewives living in Yong-dong area during the period February 10 th to 25th in 1984. Among the housewives who responded, 83.5% of them said that they didn't develop a budget for the meal planning, nor a menu plan. 31.7% of the housewives purchased foodstuffs once for 2 days, whereas the remainder did daily purchasing between meal when they needed foodstuffs. They gave higher score to the taste than to nutrition when they prepared meals. Most of the housewives concerned about good snacks, and they responded that it was hard to correct the unbalanced diet. 36.4% of the housewives earned the knowledge and information on dietary life through the media of radio, television, newspapers, or magazines. 57.9% of them learned how to cook in a cooking class, and sometimes they experimented it (how to cook) on their everyday life. Most of them concerned about nutritional status of their family members. This study showed that the degree of knowledge about nutrition was generally low. They said that they knew well about infant and child nutrition, the harm of the unbalanced diet and fatness, nutrition of the pregnancy and lactation. They thought they had enough knowledge about the foodstuffs for the growth of the children, the relationship between food and nutrition, constituents in milk, nutrition of old men. In general, thr nutrition knowledge of the housewives was correspondingly higher to their higher education levels.

A Survey of Sanitation Management Practices of School Food Ingredients Manufacturing Company Workers in Daegu and Gyeongbuk Province (대구.경북지역 학교급식 식재료 납품업체 생산직원의 위생관리 실태조사)

  • The purpose of this study was to investigate factory workers' knowledge of sanitation management of school foodstuffs and sanitation practices. A questionnaire that identified employees' food safety sanitation management knowledge and practices was developed based on a review of literature. Subjects consisted of 221 factory workers employed at 34 factories in the Daegu and Gyeongbuk areas. Almost half of the factory workers were 40~49 years of age (45.7%), 34.8% had 1~3 years of work experience, 62.4% of the respondents received food safety education 1~2 times a month and 75.1% of the respondents were satisfied with sanitation education. However, the total score for factory worker sanitation knowledge was low: 4.63/9. Sanitation performance was self-evaluated using a Likert 5-point scale. The total mean score for the factory workers' sanitation performance was 4.63/5. Satisfaction level and the amount of sanitation education, application of sanitation knowledge, attitude regarding sanitation management, and sanitation management performance level were significantly high among workers employed in a HACCP certification facility (p<0.05). The difficulties were found to be sanitation management and the time to deliver food to schools. To instill a sense of duty and pride among workers and to ensure that the food suppliers provide best-quality school foodstuffs safely, school dietitians and factory managers must actively educate workers in safe food handling and sanitation.

Daily Intakes and the Blood Levels of Heavy Metals of the College Women Living in Choongchung-NamDo Area (충남지역 일부 여대생의 식이를 통한 중금속 섭취량과 혈중 중금속 농도)

  • As the severity of environmental pollution increases, the foodstuffs are contaminated more the ever. There are 40 kinds of heavy metals that we are able to consume through the heavy metal contaminated-foodstuffs. Arsenic, lead, cadmium, and chromium out or them have been know to be a potential cause for a alzheimers disease, kidney diseases, and cancer. However, research data on the daily intakes of such heavy metals are limited. This study was performed to evaluate the daily intakes of nutrients and the dietary heavy metals of the college women living in Choongchung-NamDo Area, where had been reported to have high contents of heavy metals for the seafoods. We also investigated the blood levels of the heavy metals. The mean age, height, weight, BMI and percent ideal body weight(PIBW) of the subjects were 20$\pm$1.0yr, 158.4$\pm$0.7cm, 55.1$\pm$1.4kg, 22.4$\pm$.04, and 103.3$\pm$2.5 %, resp-ectivly. The mean of daily energy intake was 1,717.03$\pm$55.99kacl/day(86% of RDA for women). The ratio to energy from carbohydrate, fat and protein was 60: 24: 16. Daily intakes of Vit A, Vit B$_2$, CA, and Fe were under the RDA for those nutrients. The mean adequate ratio of the subjects was 0.92 . The daily intakes of heavy metal, such as As, Pb, Co, Cr and Mn , were 1.80$\pm$0.27mg, 75.21$\pm$4.12$\mu\textrm{g}$, 21.12$\pm$12.34$\mu\textrm{g}$, 60.07$\pm$6.24$\mu\textrm{g}$ and 6.23 $\pm$0.12mg respectively. the blood levels of As, Pb, Co, Cr and Mn were 16.10$\pm$2.10$\mu\textrm{g}$/dl, 4.32$\pm$0.58$\mu\textrm{g}$/dl, 0.02$\pm$0.01$\mu\textrm{g}$/dl, 4.23$\pm$0.41$\mu\textrm{g}$/dl, and 4.40$\pm$0.21$\mu\textrm{g}$/dl, respectively. In conclusion, daily intake of heavy metals for the college women living in Choongchung-NamDo area was lower than that of WHOs re-commendation, however, the blood levels of each heavy metals were higher than those of Japanese, american, and italian, There were no correlations between the dietary intakes and blood levels of each heavy metals.
