  • The determination of fungi in various kind of rice-cakes have been carried out in order to information of the toxigenic fungi in Korean rice-cakes. The results as follows: 1. Predominant genera of fungi in most rice-cakes were Pencillium sp.(32.2%) and Aspergillus sp.(30.1%). 2. Of the 63 various rice-cakes, 143 strains of fungi were isolated and 135 strains were possible to identify into 9 genera. 3. Artemisia asiatics and some kind of colouring matters have been an antifungal activity.

  • There were observed the host-parasite relationship between rice grains and contaminating fungi indicated by the fungal penetration degree in the tested rices. The results were as follows ; 1. The fungal penetration could be observed in the outer layer of the rices but couldn't be seen in the starch portin of the tested rices. 2. The Gram staining method was better than the PAS staining method for the observation of fungi penetration into the rices.

  • The Korean cattle industry is important to farming households, the national economy, and the security of foodstuffs in Korea. Since Korean cattle have had inferior ability to produce meat, the Korean cattle industry aimed to improve the meat production ability and to increase numbers to meet the demand from the growing beef cattle market in Korea. This paper reviews the history of the Korean cattle industry and surveys the efforts devoted to improve genetic abilities of the Korean cattle. Discussed are current situations of the Korean cattle industry, projects related to improvement of Korean cattle, Korean cattle's genetic characteristics of economic traits, and some issues to deal with.

콩나물중의 미량 중금속 함유량에 대한 조사연구 (Studies on the Contents of Trace Metals in Bean Sprouts)

  • Bean sprouts is one of the popular traditional foodstuffs as a subsidiary articles of diet in Korea. As the need arise from restaurents, bean sprouts were produced by forcing culture in manufacture. In oder to prevent of the hazard' by trace metals such as Hg, Cd, Pb, Cu and Zn, the contents of these metals were analyzed. Hg, Cd, and Pb were not . detected , but the mean contents of Cu and Zn were O.33ppm and 0.356 ppm, respectively. It seems that the higher oontents of Cu and Zn in beas sprouts was the results of relative high concentration of itself. These contents has no problean in now, but the more sanitary management in manufacture and in bean producing region will be needed.

  • To prevent the incidence of type food allergies, removal of food allergens by excluding all foodstuffs containing the allergen(s) or disruption of allergen(s) using proteases has been employed. Though allergen- specific digestion with a protease worked well in the preparation of low allergenic goods, it is often difficult to destroy allergenicity without adversely affecting the nutritive value, taste and rheological properties of foods. In the present study, we represented that herbs component contained both allergy- enhancing and inhibiting factors, in addition to llergens. We also reported that herbal component such as epigallocatechingallate (EGCG) and epicatechingallate (ECG) is possible to be allergy- inhibiting factors, but the exact mechanism by which they alleviate allergic response is left to be clarifying. Document of allergy enhancing factors and enrichment of allergy inhibiting factors may provide a new approach to diminish allergenicity of various foodstufffs. Clarification of the allergic reaction modifying mechanism of food components and optimization of the intake of allergy modifying factor are necessary for decrement of allergenicity of conventional food and prevention of incidents of allergic response

  • Aflatoxins are metabolites of fungi Aspergillus spp. that world-widely contaminate diverse foodstuffs including com and peanuts. It is well known that aflatoxins are highly mutagenic, carcinogenic and possibly teratogenic. Although aflatoxins have received the great attention among the various mycotoxins due to their potent hepatocarcinogenicity in certain species, it is extremely crucial to elucidate the relative toxicity and carcinogenicity of the types (B$_1$, B$_2$, G$_1$ and G$_2$) of aflatoxins for the risk assessment.(omitted)

Effect of Aster scaber extract on the Growth of Bifidobacteria and Clostridium perfringens

  • Growth responses of some intestinal bacteria such as bifidobacteria and Clostridium perfringens to the extracts of certain foodstuffs were investigated in vitro. Among edible mountain herbs, the extracts of several chui-na-muls (Aster tataricus, Ligularia fischeri and Aster scaber) had an inhibitory activity against C. perfringens on the agar plate and the water extract of Aster scaber worked selectively on it among intestinal bacteria. The water extract showed growth-promoting effect toward bifidobacteria such as B. adolescentis, B. animalis, B. bifidum, B. infantis and B. thermophilum in the broth culture. When the faecal inoculum was incubated in the culture with the extract, the population of C. perfringens decreased, whereas that of bifidobacteria increased by $10^3$ scale.$\beta$-glucuronidase activity in the culture with the water extract of Aster scaber digested with pepsin and pancreatin was lower than that in the control culture.

A Limited Survey of Fumonisin $B_{1}$ Content of Domestic and Imported Corns in Korea

  • Fumonisin $B_{1}$ ($FB_{1}$) is hepatotoxic in all species, and initiator and promotor for hepatocarcinogenesis produced mainly by Fusarium moniliforme. This fungus is commonly natural contaminant of corn and other grains worldwide, and has been associated with animal and human diseases. In these study, natural occurrence of $FB_{1}$ was surveyed in 30 healthy domestic corn kernels in Chonbuk and Kangwon province, harvested in 1994 and intended for human consumption, and 15 imported American and Chinese samples of each, collected from different ship-loading at Inchon harbor for animal foodstuffs. $FB_{1}$ contents were measured by high-performance liquid chromatography (HPLC) with a fiourescence detector. The data revealed that 2 out of 12 corn kernels from Kangwon province with 1.1 and 0.7 ppm, and 2 out of 18 corns from Chonbuk province with 0.5 and 1.3 ppm, respectively. However, there was no detection of $FB_{1}$ in imported corn samples, even though those were visibly moldy.

  • Aspergillus을 이용하여 생리적 제 성질을 조사하였던 바 다음과 같은 결론을 얻었다. 1)각 균주들은 각각 그들의 특성을 가지고 있었으며 이로서 균동정의 가능성을 나타내었다. 2)Amylase측정결과에서 보면 비교적 역가가 높은 균주들이 관찰되었으며, 이는 일주간의 배양시간의 경과에 따라 역가가 증가하였으나 protease의 역가는 우수한 균주를 발견키가 어려웠다. Iodine의 착색대와 비착색대의 비율에 의한 역가의 정성적인 측정이 가능하였다.
