마늘, 양파, 생강, 고추즙의 항균작용 (The Antibacterial Action of Garlic, Onion, Ginger and Red Pepper Juice)

  • This study was carried out to determine the inhibitory effect of juice of garlic, onion, ginger and red pepper against Staphylococcus aureus, Salmonella enteritidis, Vibrio parahaemolyticus and Enterobacter cloacae which are food born disease organisms. It was found that 1~2.5%(wt/vol.) garlic juice showed strong antimicrobial action against growth of all test bacteria at 1/20$\times$10-6 dilution. Especially 1% garlic juice completly inactivated Vibrio parahaemolyticus but approximately 71.9~88% of reduction at same concentration in other bacteria was occurred. 2.5% onion juice had 28.5% antimicrobial activity on Sal. enteritidis, but 50% reduction was occurred on St.aureus and V. parahaemolyticus at same concentration. Antibacterial activity of ginger juice was similar to that of onion juice. 2.5% ginger juice showed approximately 50% reduction on Sal. enteritidis and V.parahaemolyticus, but less antimicrobial activity was occured on St. aureus and E. cloacae. Red pepper juice showed the least antimicrobial activity on food born disease organism compared to that of other juices. 2.5% red pepper juice showed 11.3%, 18.7% and 8.1% reduction on St. aureus, Sal. enteritidis and V.parahaemolyticus, respectively.

TRICHOTHECENES AS ENVIRONMENTAL TOXICANTS

  • The trichothecenes are a chemically related sesquiterpenoid fungal metabolites of Fusarium, Trichoderma, Stachybotrys and others, and at moment more than 70 kinds of derivatives are identified. Historically, they are identified as antifungal and phytotoxic compounds, but after the finding of T-2 toxin from Fusarium tricinctum, several trichothecenes are now considered to be natural toxicants in foodstuffs and feeds.

The relationships among birth season, sunlight exposure during infancy, and allergic disease

  • Purpose: The recent increase in the prevalence of allergic diseases is hypothetically attributed to immune dysregulation in turn caused by a reduction in exposure to sunlight. We explored relationships between birth season, sunlight exposure, exercise duration, and an allergic disease. Methods: We performed a questionnaire-based survey on allergic diseases among elementary school students. Birth time was categorized according to the season (summer and winter). Results: The prevalence of atopic dermatitis (AD) "symptoms ever" was higher in the children born in winter than in those born in summer (adjusted odds ratio [aOR], 1.24; 95% confidence interval [CI], 1.03-1.49; P=0.024). Birth in winter was associated with an increase in the "symptoms in the past 12 months" prevalence of food allergy (FA) (aOR, 1.56; 95% CI, 1.09-2.24; P=0.015). The lifetime prevalence of allergic diseases except FA was higher in the children whose parents considered their sunlight exposure prior to 24 months of ageas inadequate than those who considered their exposure as adequate ("diagnosis ever" asthma: aOR, 1.4; 95% CI, 1.17-1.67; P<0.001; allergic rhinitis [AR]: aOR, 1.4; 95% CI, 1.17-1.67; P<0.001; AD: aOR, 1.26; 95% CI, 1.06-1.51; P=0.01). Neither recent sunlight exposure nor exercise duration was associated with the prevalence of an allergic disease. Conclusion: Birth in winter may be associated with development of AD and FA. Inadequate sunlight exposure before the age of 24 months might possibly increase the risks of development of asthma, AR, and AD.

대전 지역 성인의 영양상담에 대한 인지도 및 요구도 조사 (The Perception and Need for Nutrition Counseling of the Adults Living in Daejeon)

  • This study was done to investigate the perception and need of the nutrition counseling of the people living in Daejon. Results were as follows: Nutrition knowledge score increased with education level. It showed tendency that women's scores were higher than men's. Only 15.5% of the participants were experienced in nutrition counseling mostly with medical doctor or nurse in the general hospital. Their satisfaction level was above average, which means positive reaction on nutrition counseling. In the case of the people who paid nutrition counseling fee, they thought that fee level was reasonable. Participants whose education level was higher thought less frequently that the nutrition counseling fee charged currently in the general hospital was expensive. The prevalent contents they want in the nutrition counseling included the prevention and the treatment of the specific disease and food safety (pesticides and food-born illness). As means of nutrition counseling they preferred internet (or PC) and interview. The higher the education status and the less the age, the higher preference, there was for internet or PC. As a source of nutrition knowledge, participants gave high credit on the professional books, academic journals, and advices from dietitian, nutritionist, medical doctor and pharmacist; in the other hand, they gave low credit on the newspaper, magazine, TV or radio, and advices from family or relatives, and friends. They thought most of the adult-onset disease (especially obesity, hyperlipidemia, and diabetes) were closely related to diet. However, percentage of the participants who thought that diet and kidney disease were related was relatively low.

Vibrio parahaemoiyticus에 대한 산초 추출물의 항균활성 (Antimicrobial Activities of Zanthoxylum schinifolium Extract Against Vibrio parahaemolyticus)

  • 산초는 우리나라를 비롯한 일본, 중국 등지 에 널리 분포하고 있으며 전통적으로 우리 정서에 친숙한 식미와 향기를 가지는 아시아권의 공통적인 향신료이다. 더불어 우리나라에서는 생선회와 어패류의 소비가 증가함에 따라 Vibrio parahaemolyticus에 의한 식중독발생 억제방안의 확립이 필요한 실정이다. 따라서 본 연구는 독성이 없는 새로운 천연 식품 보존제의 개발을 위하여 식품 및 향신료로서 적용 범위가 광범위한 산초를 대상으로 Vibrio parahaemolyticus에 대한 천연항균제의 적용 가능성을 검토하였다. 산초나무 추출물의 항균작용을 알아보기 위해서 Vibrio parahaemolyticus에 대한 항균력 분석에서 종자를 제외한 성분으로 제조한 산초의 주정추출물이 효과가 가장 우수함을 확인하였으며, 이 추출물의 온도 및 pH에 대한 안정성을 검토한 결과 다양한 범위의 온도, pH에 대해서 매우 안정하다는 것을 알 수 있었다. 또한 GC-MS에 의한 산초 추출물의 분리, 동정 결과에서는 estragole이 항균활성을 나타내는 주성분임을 확인하였다. 이 결과를 바탕으로 우리나라에서 많이 사용되는 산초를 Vibrio parahaemolyticus에 의한 식중독을 줄일 수 있는 항균제로 적용할 수 있음을 확인할 수 있었다. 따라서 식품첨가제 및 포장재, 식품포장 외부 충진 물질, 살균소독제 등의 다양한 형태로의 응용이 가능하리라 생각된다.

A perspective on partially hydrolyzed protein infant formula in nonexclusively breastfed infants

  • The World Health Organization recommends that infants should be exclusively breastfed for the first 6 months of life to provide optimal nutrition in this critical period of life. After this, infants should receive nutritionally adequate and safe complementary foods while breastfeeding continues for up to 2 years of age or beyond. For nonbreastfed infants, infant formula is an available option to provide the nutrition needed. Infant formula is usually prepared from industrially modified cow's milk and processed to adjust for the nutritional needs of infants. However, cow's milk is one of the most common causes of food allergy, affecting 2%-5% of all formula-fed infants during their first year of life. One strategy to prevent cow's milk allergy in nonbreastfed infants is the use of partially hydrolyzed formula (pHF) in high-risk infants, which are infants born in families with atopic disease. However, based on an epidemiological study, approximately half of the infants who develop allergy are not part of the at-risk group. This is because the non-at-risk group is significantly larger than the at-risk group and the non-at-risk infants have approximately 15% risk of developing allergies. This study aimed to evaluate the effects of partially hydrolyzed whey formula (pHF-W) in nonbreastfed infants and determine whether pHF-W can prevent atopic disease in high-risk infants and can be used as routine starter formula regardless of the allergy risk status.

시중 유통판매 중인 편육에서의 Staphylococcus aureus 성장예측모델 개발 (Development of a Predictive Model Describing the Growth of Staphylococcus aureus in Pyeonyuk marketed)

  • 본 연구에서는 축산식품인 편육을 대상으로 황색포도상구균의 성장예측모델을 개발하였다. 편육에서 황색포도상구균의 성장패턴은 4, 10, 20, $37^{\circ}C$의 보관온도에서 측정되었으며, 황색포도상구균은 각각의 저장 온도에서 모두 증가하는 것으로 나타났다. 편육에 오염된 황색포도상구균의 생육결과를 토대로 Baranyi model을 이용하여 유도기(LPD)와 최대성장률(${\mu}_{max}$)을 산출한 결과, 유도기는 4, 10, 20, $37^{\circ}C$에서 212.81, 79.67, 3.12, 2.21 h으로 온도에 반비례한 것으로 나타났고 최대성장률은 같은 보관온도에서 0.004, 0.009, 0.130, 0.568 log CFU/g/h으로 온도에 비례한 것으로 조사되었다. 2차 모델은 ${\mu}_{max}$의 경우, square root model, LPD는 polynomial equation을 사용하여 산출하였고, 개발한 모델의 적합성을 평가하기 위해 통계적 지표인 RMSE 값을 계산한 결과, 비교적 0에 가까운 0.42로 도출되어 모델이 적합한 것으로 확인되었다. 따라서 개발된 모델이 편육에 대한 황색포도상구균의 성장 예측모델로 사용 가능하다고 판단되어지며, 편육에서의 식중독을 예방하고 미생물학적 위생관리기준을 설정하는데 기초자료로 활용될 수 있을 것으로 사료된다.

한국농촌의 식품금기에 관한 연구

  • A 371 agricultural households from 26 different communities in South Korea was subjected on a study of food taboos in January of 1966. To the pregnant women, those to whom a high protein diet is particurally important, as many as 14 different kinds of foods, mostly portein rich foods, were avoided to eat. It is believed that if duck is eaten while pregnant her baby may walk like a duck in later life. Some mother have a strong aversion to the rabbit meat that her unborn baby must be a harelip. It is feared to eat chicken, shark or carp by the pregnant mother for her baby may get a gooseflesh appearance, or fish scale-like skin in later life. It is thought that if mother eats soup made of meat borns, especially chicken bones, a disfigured baby may be born. Some area informed that if mother eats crab meat her future baby will always bubble. To the child-bearing mothers 13 different kinds of foods were avoided to eat. Some believe that if raddish kimchi, soybean curd, squash are eaten while dilivery that mother may get dental decay or to lose all her teeth. Other think that highly spiced raddish kimchi cause delivery difficult. To the lactating mothers 7 different items of foods were not recommended to eat. It is a common belief that eating green vegetables, especially fresh lettuce, are restricted that her baby may stool greenish. It is said that eating ginsen-chicken soup, or ginsen tea during lactating reduces breast milk secretion. To the weaning babies 7 different kinds of foods were prohibited to fee. Eggs are not eaten because mothers think her babies will start to talk very late. Eight different items of foods in cases of gastro-intestinal diseases, 5 items for liver disease, 7 items for high blood pressure as well as for paralysis were respectively restricted. It is said that meats including pork, beef, and chicken are neither desirable for the patients of high blood pressure nor those of paralysis. To the measles children 10 varieties of foods were restricted. Especially soybean products and meats were not encouraged to use for avoiding asecond attack of measles. For the common cold 8 different kinds of foods were aversed and men think that eating of soup of undria delays a recovery. For the tuberculosis 4 kinds of foods were prohibited to eat. It is said that wine, red pepper and ginsen will stimulate lung bleeding. Many mothers had a strong aversion to fermented shrimp and fish in case of style. and 5 different items of foods were restricted. In case of menstration not so many foods were restricted as other cases, but meat soup is not eaten in this condition in some areas. Majority of food taboos in Korean villages are neither based on tribal nor religious factors. But no one knows how, since what ages, from where, these food taboos have been transmitted and spread over the country. This survey found a great variety of food taboos, aversions, traditional beliefs and prohibitions latent unknown reseasons, or non-scientific conceptions, or completely different ideas from the modern medical aspect, or somewhat fallacious and superstitious beliefs. For the vascular disease contrasting approach were found between modern the oritical therapy and popular remedy among the rural populations who largely depend on the eastern medication. Further scientific study on either side should be done to lead the patient proper way. Many restricted foods such as rabbit, duck, chicken and fish are best resources of protein rich foods which are available in the village. Emphasis should be laid upon breaking down fallacious and supersititious food taboos through the extended nutrition education activities in order to improve food habit and good eating pattern for healthier and stronger generations of Korea.

가축의 fumonisin 중독증에 대한 최근 연구 동향 : 종설 (The current status of fumonisin toxicosis in domestic animals: A review)

  • 말의 뇌화연증(equine leukoencephalomalacia)과 돼지의 폐수종(porcine pulmonary edema)은 Fusarium에 오염된 옥수수로 인하여 발생되는 것으로 추정되어 왔다. 1988년에 F moniliforme에서 2차 대사산물인 fumonisin $B_1(FB_1)$이 동정되면서 오염된 옥수수와 순수 분리된 $FB_1$으로 두질병이 실험적으로 재현되었고, 말과 돼지 이외의 다른 가축에 대해서도 독성 연구가 진행되고 있다. fumonisins(FBs)는 모든 종에서 간에 독성을 나타내나 종에 따라 주요 독성 장기가 각기 다름이 밝혀지고 있다. FB의 독성 기전에 대해서는 잘 알려지지 않았으나 FB가 sphingolipid 생성과정을 차단함으로써 장기 및 혈중에 sphinganine(SA) : sphingosine(SO)를 증가시키는 것으로 알려졌다. 이는 증가된 SA : SO가 FB 독성의 진단기준이 될 수 있음을 시사하는 것이다. 최근 진행 중인 연구에 의하면, 저용량의 $FB_1$ 급식 투여가 돼지에서 혈중 입자(blood-born particle)에 대한 폐혈관 대식 세포(pulmonary intravascular macrophage)의 탐식 능력을 저하시켜, 세균 감염에 대한 감수성이 증가될 수 있음을 시사하고 있다. Fusarium 속균은 전세계적으로 생산되는 옥수수에서 발생되고 있으며, 우리나라는 사료에 사용되는 옥수수의 절대량을 수입에 의존하고 있는 점을 고려할 때, 허용기준 및 무해용량 등에 대한 관리가 절실하다. 이 논문에서는 최근 연구된 FB에 의한 가축 독성에 대하여 기술하고자 한다.
