Use of natural ingredients in Japanese quail diet and their effect on carcass and meat quality - A review

  • The present paper reviews the findings of different research studies on the effect of natural ingredients in the Japanese quail (Coturnix coturnix japonica) diet on carcass characteristics and meat quality. The results show a relationship between the type and concentration of ingredients used in diets and carcass characteristics and meat quality. The inclusion of medicinal herbs (thyme, black seed, and mint), plants (canola), seeds (chickpea), spices (cinnamon and coriander), worms (earthworms), bee products (propolis), phytochemicals (lycopene), and edible fungi (common mushrooms) in the diet improved carcass quality characteristics compared to the control diets (basal diets). The inclusion of medicinal herbs (spearmint and green tea), spices (cinnamon), vegetables (tomato), plants (verbena and canola), seeds (marijuana), and edible fungi (oyster mushrooms) improved meat quality. In conclusion, the use of ingredients of natural origin in the diet of Japanese quail improves carcass quality characteristics and meat quality.

  • The development of food poisoning prevention guidelines aims to prevent food poisoning in advance and improve the safety of children's meals through hygiene management of children's feeding facilities, especially infants' facilities. Therefore, the composition of the content should be designed so that it can be fully understood from the point of view of the layperson. In terms of meal service management, various standards must be fully reflected and reviewed to increase utilization in the field. Daycare centers and kindergartens have different administrative agencies, similar application laws and guidelines, but different parts exist and various types of facilities, so management standards are often ambiguous. Therefore, such management requires easy guidance, not special guidance, and it should be universally applicable to any facility. Prior studies have shown that the management of meal facilities is the most efficient, but it is difficult to hire and deploy specialists due to the operation of children's meal facilities, so guidance, facilities managers and workers need to voluntarily practice them. It is time to prepare hygiene guidelines that reflect the characteristics of these children's cafeterias, and it is necessary to prepare and utilize guidance suitable for reality until it is institutionalized for the deployment of manpower exclusively for meals.

옴니채널에서 식품쇼핑의 사용자 경험 디자인 연구 (A Study on Food Shopping User Experience Design of Omni-channel)

  • 본 연구는 옴니채널 환경의 식품쇼핑 경험연구이다. 안전한 먹거리에 대한 관심은 IT의 발전에 따라 소비자의 다양한 요구에 합리적 방식으로 진화하며 이를 충족한 다양한 채널 증가로 이어졌다. 옴니채널은 소비자의 필요와 욕구를 채우는 것뿐 아니라 고객 행동 이해와 경험 가치를 부여한 실증적 사용자 유형 고찰이 필요했다. 온라인 설문 결과, (1)오프라인 식품쇼핑은 대 소형 마트, 1개월에 2~3회, 품질상태 고려, 신선식품을 직접 구매하기 위해 방문 (2)온라인 식품쇼핑은 온라인 커머스, 1개월에 2~3회, 가격/혜택을 고려, 과일/견과를 주로 구매로 나타났다. 이후 고관여자 8인의 심층면접에서 식품구매여정 4단계를 통해 식품쇼핑 경험을 파악하였다. '건강'과 '식단'을 식품쇼핑 핵심 가치로 한 퍼소나는 가족과 건강을 중요시하고 '절약'을 우선하는 프라이머리 퍼소나와 일과 개인을 중시하며 '자동수급'을 하는 원하는 세컨더리 퍼소나로 세분된 방안을 제시하였다. 본 연구를 통해 옴니채널 식품쇼핑 경험을 위해서는 건강하고 균형 잡힌 식생활의 맥락에서 기능과 서비스 방안을 모색하는 데 도움이 될 것으로 기대한다.

DNA 메타바코딩을 이용한 광양만 및 어시장 해양 생물 위 내용물 분석 (Analysis of Stomach Contents of Marine Orgnaisms in Gwangyang Bay and Yeosu Fish Market Using DNA Metabarcoding)

  • 보구치는 어류와 요각류가 공통 먹이원으로 분석되었다. 광양만에서 채집한 보구치가 가장 많이 먹은 먹이원은 단각류로 ASV 빈도가 62.5%로 나타났으며 여수 어시장에서 구입한 보구치는 어류의 ASV 빈도가 16.6%로 가장 많았다. 광양만에서 채집한 참조기의 우점 먹이원은 십각류로 ASV 빈도가가 99.9%로 나타났으며 어시장의 참조기는 어류의 ASV 빈도가 51.2%로 조사되었다. 광양만과 어시장의 자주새우 우점 먹이원은 각각 요각류로 92.6%와 100%로 조사되었다. 광양만에서 채집한 꼴뚜기는 요각류(91.4%)를 가장 많이 먹었으나 어시장에서 구입한 갑오징어는 어류(96.6%)를 가장 많이 섭식하였다. 계층적 군집 분석 결과, 꼴뚜기 및 채집한 자주새우와 구입한 자주새우는 먹이원이 유사하였으며 보구치와 참조기, 갑오징어와는 차이가 있는 것으로 조사되었다. 네트워크 분석 결과, 요각류는 참조기를 제외한 모든 수서 생물과 연결되어 있어 가장 중요한 먹이원인 것으로 조사되었다. 먹이원 폭 분석 결과 광양만에서 채집한 참조기의 먹이원 폭 값은 0.001로 낮았으나 어시장에서 구입한 참조기의 먹이원 폭 값은 0.886으로 먹이원 다양성이 가장 높았다. 영양단계 분석 결과, 어류를 주로 섭식했던 갑오징어가 3.98로 가장 높았으며, 광양만에서 채집한 보구치가 2.0으로 영양단계가 가장 낮은 것으로 조사되었다. 이를 통해 위 내용물의 DNA 메타바코딩을 활용한 먹이원 분석 연구는 육안을 통한 먹이원 분석 사이에서 상호보완하여 섭식생태 연구에 활용할 수 있을 것이다.

청소년의 성별에 따른 식생활 행태가 스트레스 인지에 미치는 영향에 대한 융합적 연구 (A Convergence Study of the Effects of Eating Behaviors on Stress Recognition by Adolescent Gender)

  • 본 연구는 청소년의 성별에 따른 식생활 행태가 이들의 스트레스 인지에 미치는 영향을 파악하여, 성별에 따른 맞춤형 영양교육과 연계한 교육프로그램을 위한 기초 자료를 제공하고자 수행되었다. 이를 위해 2019 청소년건강행태조사를 활용하였으며, 연구대상으로 중·고등학생 57,303명을 선정하였다. 청소년의 연령, 학업성적, 경제상태, 거주형태, 주관적 건강과 체형 인지를 통제하고, 식생활 변수로 아침식사 및 신선식품(과일, 채소, 우유, 물), 가공식품(탄산음료, 에너지음료, 단맛 나는 음료, 패스트푸드) 변수들이 청소년의 스트레스 인지에 미치는 영향을 분석하였다. 아침식사는 청소년 모든 성별에서 스트레스 인지에 부(-)의 영향을 나타냈고, 신선식품의 경우 남학생은 물이, 여학생은 과일이 스트레스 인지에 가장 높은 부(-)의 영향을 미쳤으며, 가공식품의 경우 청소년 모두 에너지음료가 스트레스 인지에 가장 높은 정(+)의 영향을 미치는 식생활 요인이었다. 이러한 결과는 청소년의 스트레스 인지 개선을 위해 청소년의 성별에 따른 맞춤형 식생활 교육프로그램을 개발하고, 건강한 식생활을 형성하기 위한 지속적인 지도가 필요함을 시사한다.

Questionnaire Survey of the Methods Used in Household Doenjang Production in Korea

  • This study examined the methods used in household doenjang (Korean soybean paste) production. Nine hundred forty-three responses were obtained using a nationwide, questionnaire-based survey (2018-2019) with non-probabilistic snowballing sampling. Consistent with previous studies, the respondents were primarily over the age of 50 years (97.1%) and female (97.9%). In addition to soybeans, the most used ingredients were red pepper (85.8%) and charcoal (85.5%), which most respondents obtained through direct farming (50.4-59.9%). Seasonal production occurred later in the higher latitude regions (Gyeonggi-do, Gangwon-do, Chungcheong-do) (p < 0.01), which have lower average temperatures, and the fermentation period was shorter in the lower latitude regions (Jeolla-do, Gyeongsang-do, Jeju-do) (p < 0.01), which have higher average temperatures. There were no significant regional differences in the season when doenjang was made, with most production occurring during January and February (81.1%). Most respondents (71.3%) made doenjang using homemade meju (soybean block used as a starter) in a traditional way to allow the microorganisms to be naturally inoculated. These results could be used as a basis for future research on topics such as starter development, standardized production, and safety of household doenjang.

한국인과 동남아시아인의 푸드네오포비아와 음식관여도 차이 비교 (Comparison of Food Neophobia Scale and Food Involvement Scale Between Koreans and East-South Asians)

  • An individual's food-related personal traits play an important role in influencing personal food choice and habits. According to culture, their influence can manifest differently. To ascertain personal traits about food, FNS (food neophobia scale) and FIS (food involvement scale) were employed in recent studies. This study aimed to understand the food culture and food choices of East-South Asians who live or stay in Korea through comparison of FNS and FIS. Eighty Koreans and 233 East-south Asians (Indonesians, Filipinos, Malaysians, Vietnamese, Thai, Singaporeans, and Bangladeshi) completed a questionnaire to measure FNS (10 questions), FIS (12 questions), and sociodemographic conditions (9 questions). ANOVA was conducted to ascertain FNS and FIS between the groups, and regression analysis was carried out to determine which sociodemographic factors had an effect. The items were analyzed to determine the differences according to gender, age, marital status, nationality, religion, occupation, educational background, monthly income, and length of residence in Korea. FNS showed significant differences between the groups with regard to sociodemographic characteristics, except gender, age, and marital status, whereas FIS showed significant differences in gender, nationality, religion, occupation, educational background, monthly income, and length of residence in Korea. The results of the regression analysis suggest that nationality strongly affected FNS and FIS, and FIS was also affected by gender.

관광 자원으로서 전통 음식의 매력성에 따른 구매 의사에 관한 연구 (Study on the Purchase Intention for Traditional Food according to the Attractiveness of Traditional Food as a Tourism Resource)

  • The present study, we purposed to surveyed how much Korean natives' valuation of value traditional food as a tourism resource and their perception of traditional food, and to measured the attractiveness and potential of traditional food. For this purpose, we reviewed previously published studies research on traditional food and tourism resources, and conducted a questionnaire survey of urban citizens in Seoul on traditional food. Three hundred distributing 300 questionnaires were distributed and recovering 242 of them were returned. In this study, SPSS for Windows 16.0 was used for empirical analysis and the subjects' demographical characteristics were analyzed through frequency analysis. In addition, reliability analysis were performed to test the overall reliability of the empirical survey and collected data. Factor analysis was conducted to integrate variables, and the effect of the attractiveness of traditional food on purchase intention for traditional food was tested through multiple and simple regression analysis. Inquiring By surveying into the attractiveness of traditional food as a tourism resource, this study attempted to formulate a causal relation model among major variables, and examined the effects of the attractiveness of traditional food as a tourism resource on purchase intension based on Korean natives’ perception of and attitude toward traditional food, which is a Korean cultural heritage. Furthermore, and furthermore, made we provided suggestions for the improvement and development of traditional food.

3-MCPD 지방산에스테르 분석법 (Analysis Method Development for Bound-MCPD)

  • 연구에서는 식품 중에 bound-MCPD를 측정하기 위해 지방을 추출하고, 메탄올에 녹인 황산으로 $60^{\circ}C$, 4hr 가수분해하여 모두 3-MCPD로 전환시켜 분석등하는 실험법을 개발하였다. 기존의 논문과 비교하였을때 분석시간이 더 빠르고, 현재 식품공전에 등재된 3-MCPD 시험법에 접목시킨 시험법이다. 분석가능한 선형구간은 3-MCPD로서 10ppb(ug/kg)-2ppm(mg/kg), 이며 반복성이 상대표준편차 5%이내, 재현성의 상대표준편차는 선형구간에서 10%이내이다. 기기적인 LOD는 5.4ppb, LOQ 9.0ppb이며 회수율은 3-MCPD 85.53%, bound-MCPD 82.97%이다.

한국거주 외국인유학생들의 K-Wave, K-Drama, K-Pop 및 K-Friend에 대한 선호도가 한식의 선호도, 만족도 및 재구매의도에 미치는 영향에 관한 연구 - 부산지역을 중심으로 - (A Study on the Effects of K-Wave, K-Drama, K-Pop and K-Friend Preference on Korean Food Preference, Satisfaction and Repurchase Intention of International Students in Korea - Focusing on Busan Area -)

  • Studies with various approaches are required for the globalization of Korean Food. The objectives of this study were i) how the preferences of foreign students residing in Korea on K-Wave, K-Drama, K-Pop and K-Friend affect their preference, satisfaction level and repurchase intention on Korean food, and ii) which of the factors have the strongest effects on their preference, satisfaction level and repurchase intention on Korean food. The results showed that the higher K-Wave, K-Drama, K-Pop and K-Friend preferences, the stronger effect on the preference, satisfaction level and repurchase intention on Korean food (p=0.0001). Among the factors for Korean food preference, the most critical one was K-Wave preference (p=0.0001), followed by K-Drama preference (p=0.0500). For the satisfaction level of Korean food, the most important factor among the four was K-Wave preference (p=0.0496), followed by K-Drama preference (p=0.0500). For the repurchase intention on Korean food, the most significant factor was the preference for K-Friend (p=0.0004), followed by K-Drama (p=0.0016) and K-Wave (p=0.0030). Based on these results, more efforts to invigorate the preferences for K-Wave and K-Drama, as well as various attempts to improve the preference for K-Friend are required for the globalization of Korean Food.
