On the Foodservice Customer Recognition of Food Safety (외식 업체 고객의 식품 안전성 인식에 관한 실증적 연구 - 패밀리 레스토랑을 대상으로 -)

  • This study carried out a survey which is related to food safety in food business in order to find out interest in food safety and to get awareness of food safety in food business. The research was done through surveys for the people in the Seoul Metropolitan area. 232 out of 250 answers were used in analyzing frequency, factor, $x^2$-test, and t-test through SPSS Win 12.0. There are three main factors of food safety in food business. The first is food borne illness(65.9%), the second is trans-fat(63.4%), and the third is remained agrichemicals(58.5%). Basically, women consider food safety more seriously than men do, and married women than unmarried women. Women were unsatisfied with the government's regulations than men were, married women than unmarried women. Women more consider awareness of food safety than men do, married women than unmarried women. Overall, unmarried women worried about their eating stuff seriously than any other group does. People consider food safety first, more and more these days, therefore, we need special management programs and regulations to focus on food safety and to support many studies about food safety.

  • The results obtained by survey on 599 respondents of different age groups for preference of 84 prepared foods were subjected to statistical principal component analysis, factor analysis, analysis of variance, scheffe verification, and discriminant analysis so as to find a structure of preference for foods. The results may be summarized as follows: 1. The results of the factor analysis indicate that 84 prepared food items may be classified into 3 groups and that by knowing an indvidual's preference to one prepared food, one can presume his preference to the others in the same group without carrying out actual test. 2. The results from an analysis of variance showed that most of primary school children extremely liked snacks, seniors liked Korean cooking, primary school children and collegians had weaknesses for western cookings while kindergarden children and adults over 50 years old disliked them.

  • The actual status of production, management and export of 96 traditional food processing companies which supported by the government in Kyungpook province were investigated. Governmental support contributed to the increase of farmhouse income, employment and depreciation of agricultural products a bit, but it was supported mostly to unexperienced party. Technologies for food processing developed in institute and college were little. 42 percent of packaging design was developed by service commission, but the agency was very limited. Total export price in 1996 was 2.3 billion Won, but it was decreased in 1997. The responce to the prospect of traditional food processing work, 37.5 percent replied that this work can bring up as exportable product, but ambiguious response was a little. To settle a weakness of farming food processing work, the establishment of special marketing comapny was required and this company should accomplish marketing advertizing and exporting business.

  • Sildenafil citrate(SC. Viagra(equation omitted)) is the oral treatment for erectile dysfunction. Vardenafil hydrochloride. tadalafil and modified sildenafil have anti-impotent effect and have possibility to be used illegally. The aim of this study was to set up simultaneous determination method of anti-impotent drugs using TLC and HPLC. The anti-impotent drugs were extracted with 50% methanol and then diluted with mobile phase for HPLC and also extracted with developing solvents as sample solutions for TLC. (omitted)

  • An important aspect of indigenous medicine is the ability of traditional societis to manipulate the environment for their own benefit, for example for their health care. In Indonesia, this indigenous medicine is called Jamu. Jamu mostly consists of a mixture of herbals of the genus Curcuma, Zingiberaceae. There are 19 species of curcuma grown in Indonesia. Eleven of them are popular in the jamu preparations. Ethnopharma-cological surveys have shown that 50% of these species are used for post partum protection, dismenorrhea, 30% are used for the treatment of stomache and as cosmetics, 20% for the treatment of various diseases such as fever, worms, asthma, etc. Chemical studies show that they contain curcuminoids, volatile oils, flavonoids, starch, and resinous substance. Pharmacological studies of extracts and isolated bioactive compounds have shown that they have a broad pharmacological activity such as antibacterial, antifungal, anti-inflammatory, choleretic, antihepatotoxic, antitumor, antioxidant, and antihyperlipidemic activity.

  • The purpose of this study is to investigate if recommendation selling (methods of recommendation selling, a key word used for recommendation, and employee attitude) influences the customers' menu decision. The results of the study are as follows: 'Menu picture' and 'explanation by word' among the tools used by employees for recommendation were found to influence customers' menu decision. The words such as 'new menu' and 'special only today' used by employees for recommendation were found to influence customers' menu decision. Employees' attitude elements such as 'interesting explanation', 'dressed up tidy', 'strong intention', and 'patience' were found to influence customer's menu decision. 'Recommendation selling' in the food and beverage industry means 'employees help customers make a good decision on food and beverage service'. This study makes an important contribution to the food industry in terms of providing substantial marketing strategies.

  • We have studies fatty acid composition of water extracts of parts of omija (Schizandra chinensis Baillon) and antioxidant activities of fractionated omija parts (fruits, endocarps, seeds) were determined by DPPH methods and by in vitro hepatic microsomal lipid peroxidation system. Fatty acid composition was not different by parts of omija and major fatty acids are linoleic, oleic, and palimitic acids, among fatty acids is water extracts of parts of omija, linoleic acid was highest in content. Methanol and buthanol fractions of seeds and ethyl acetate fraction of endocarps showed stronger antioxidant activities by DPPH methods. Methanol and buthanol fractions of seeds also showed on inhibitory effect on in vitro liver microsomal lipid peroxidation.

  • The present study analyzes the diversity and usage of NTFPs and evaluates their importance in the day to day life of the people of rural Meghalaya. People use 172 NTFPs belonging to 139 plant species mainly for food, medicine and fuelwood and to a lesser extent for construction, handicrafts and ornamental purpose. These 139 plants belonged to 117 genera and 70 families with Rosaceae, Poaceae and Fagaceae families as the dominant NTFP yielding families. Fruits from shrubs and trees are most commonly harvested by people. Collection and availability of NTFPs for use as food are more during the summer season, which is also the period with least availability of job. NTFPs for subsistence use are greater in number than those having commercial value. The most commonly harvested plant parts are fruits and leaves. Roots, rhizomes and whole plants are extracted in lesser quantity which is a positive approach from sustainability point of view. NTFPs and other forest products also form a vital part of the rural household's income generation activities.

  • Although ginseng has been shown to have an antiobesity effect, antiobesity-related mechanisms are complex and have not been completely elucidated. In the present study, we evaluated ginseng's effects on food intake, the digestion, and absorption systems, as well as liver, adipose tissue, and skeletal muscle in order to identify the mechanisms involved. A review of previous in vitro and in vivo studies revealed that ginseng and ginsenosides can increase energy expenditure by stimulating the adenosine monophosphate-activated kinase pathway and can reduce energy intake. Moreover, in high fat dietinduced obese and diabetic individuals, ginseng has shown a two-way adjustment effect on adipogenesis. Nevertheless, most of the previous studies into antiobesity effects of ginseng have been animal based, and there is a paucity of evidence supporting the suggestion that ginseng can exert an antiobesity effect in humans.

  • The taxonomy of the Alternaria spp. has been a subject, of controversy because of their high variability in conidial morphology and polymorphism displayed even in pure cultures. The published Korean literature on the genus Alternaria is scattered and fragmentary, and pertains to about 25 species with special emphasis on occurrence and pathogenicity, but mycological studies on this group of fungi are insufficient. This is the first series of detailed and consolidated account of Korean species of Alternaria, which includes 11 species; viz., Alternaria brassicae, A. brassicicola, A. cinerariae, A. dauci, A. dianthi, A. dianthicola, A. helianthi, A. helianthinffciens, A. iridicola, A. japonica and A. protenta. Detailed diagnostic descriptions, specific characterizations, taxonomic discussions and illustrations for each species are presented.
