Outbreak Pattern Forecasting of Food-borne Disease in Group Food Services in Korea (미래 집단급식 식중독 발생 양상 예측)

  • This study was undertaken to analyze the hygienic problems of group food services and to predict the outbreak patterns of future food-borne diseases. A delphi survey with 20 experts identified the main causes of food-borne outbreaks in group food services as improper hygienic management of raw food materials, washing of worker's hands, dividing the spaces and unsanitary retail storage. Vibrio parahaemolyticus, Escherichia coli (EPEC), non-typhoid Salmonella serotypes, Staphylococcus aureus, Escherichia coli (ETEC), norovirus, and the hepatitis A virus all have potential to cause outbreaks of food-borne disease. We analyzed the daily food use and the possibility of food-borne outbreaks in school food services for fruits, milk, fish, pork, eggs, and meat as raw food materials, and bibimbab, soybean sprouts muchim, spinach namul, cucumber sengchae, jabchae, and pork bulgogi as prepared food items. Frozen (${\leq}\;-20^{\circ}C$) and refrigerated ($0{\sim}10^{\circ}C$) processed foods are popular items in group food services. Their storage, heating, and chemical sanitization methods are potential sources of food disease outbreaks. Our results can be applied to a well-organized hygiene control system and can be used to develop menus for preventing food-borne outbreaks.

A Study on Complication factors between foreign and domestic chefs (국내외 조리시간의 갈등요인에 관한 연구)

  • This study attempts to identify the level of conflicts occurring between foreign and domestic chefs, and to suggest the way of controlling those conflicts in order to well manage human resources, foreign chefs. Based on the empirical research, the research findings shows that in terms of targeting and achieving objectives different level of conflicts are experienced when age, hotel type, position varies. For example. purchasing excessive foreign foods may cause undesirable stock which will lead to considerable loss. In order to overcome this problem the advantages of the chain-operated and the independent hotel's food purchasing system must be incorporated. Secondly, another conflicts arise when the architecture and system of a kitchen is different from what foreign chefs are familiar with. Kitchen architecture and system should be well-designed in terms of delivery channel, sanitation, safety, food control, banquet etc.. In developing menu, chefs often have different criteria in the scale of sweet and salt of a particular dish. Foreign chefs often blame his subordinates for not meeting his requirements without proper training or education. Finally, because of the different culture, communication as well as the lack of mutual understanding problem occur. Even though today is called global town. some chefs do not seem to open their minds to learn other developing countries' culture. In diversity management aspect, chefs need to put much effort to be aware of other countries' culture, history, political and economic situation. In prior to employing foreign chefs, the job enrollment and description must be prepared so as to minimize the conflicts, which otherwise will create poor job performance.

  • Aquifer storage transfer and recovery (ASTR) is a type of managed aquifer recharge which entails injecting water into a storage well and recovering it from a different well. It has effects of natural purification when injected water passes through aquifer medium, and can be a good way of supplying water especially in a region with poor surface water quality. This study is about an on-going effort to introduce ASTR as a solution to source water problems in coastal areas. A pilot study is being conducted in the delta of the Nakdong River. A proactive management system is incorporated to ensure the water qulity in the process of drinking water process. The system is based on the Hazard Analysis and Critical Control Point (HACCP) which is a tool originated from the food industry in order to assess hazards and establish control systems for the safety of food product. In this paper, we analyze hazardous events which can occur in the entire water supply system using ASTR as a first step to the incorporation of HACCP to drinking water production process.

  • After the import liberalization of agricultural products, The Imported agricultural products rapidly increased market share of domestic agricultural products. But Imported agricultural products include various agricultural chemicals and food additives. In order to improve competitiveness in domestic markets of farmhouses and to secure food safety, the farmers needs to introduce Systematic support and various system. In this paper, established system that use Monitoring technology, to inform production information and management information about agricultural products to consumer by real time. Therefore unused analog camera such as CCTV(Closed-Circuit Television) for real time Monitoring. This system Used web camera that offer picture quality that is good than CCTV at place that consists network without distinction in the place. An advantage of real time Monitoring system designed multi-vision interface showing multi images on single screen and, for the purpose of the improvement in efficiency, the functions of saving images and of scheduling the time to save the images.

Safety Evaluation of Microbiological and Aflatoxin of Traditional Dried Persimmon (곶감의 미생물 및 aflatoxin에 대한 안전성 평가)

  • To evaluate microbiological and aflatoxin safety on traditional dried persimmon, a total of 315 samples were collected from 105 farms. The collected samples were assessed on aflatoxin and microorganisms (Aerobic plate count, coliform count, Escherichia coli, Escherichia coli O157:H7, Salmonella spp., Staphylococcus aureus, Listeria monocytogenes, Bacillus cereus). The the APC of sliced dried persimmon, dried persimmon, and semi dried persimmon were $3.93{\pm}0.96$, $2.12{\pm}0.93$, and $1.50{\pm}1.08{\log}\;CFU/g$, respectively. S. aureus was detected in 40.0% of sliced dried persimmon, 29.5% of dried persimmon, and 23.5% of semi dried persimmon. E. coli recovered from dried persimmon and semi dried persimmon was 6.6%, and 2.9%, respectively. However, E. coli O157:H7, Salmonella spp., and L. monocytogenes were not detected. According to the result of aflatoxin by ELISA and UPLC, aflatoxin was not detected in any sample. These data suggested that safety management system should be introduce to the farms producing traditional dried persimmon to enhance the safety of traditional dried persimmon.

A Study on the Improvement of Domestic Medical Device Classification System through the Analysis of Major Foreign Countries (주요국의 의료기기 품목 분류체계 조사분석을 통한 국내 의료기기 품목 신설 및 세분화 연구)

  • With the international change in the medical device market owing to the development of innovative medical engineering and the use of various raw materials, a systematic and rational medical device classification system is needed to safely manage newly developed medical devices. This study aims to improve the domestic medical device classification system by proposing product establishment and segmentation. It is based on medical device products from the United States and Europe that are only available in foreign systems and are more subdivided than domestic products. This study analyzes and compares the domestic and foreign medical device classification systems by examining laws, guidelines, and analysis reports in Korea, the United States, and Europe. In accordance with product establishment and segmentation criteria, products subject to improvement are presented. This study contributes to safely managing medical devices that do not fit with the current classification system and to solving the confusion caused by the lack of international harmony in product classification systems.

  • Engineering of automated tools for the agro-food industries and the rural world activities have to pick up two challenges : to answer the immediate important problems related to the situation of these industries, and to imaging the tools that their professional will need next century. Creating or modifying automated tools in the next few will be made taking into account parameters either technical (environmental protection, health and safety), or social and economical (investment , employment). There will be a strong interaction with disciplines like ecology, medicine, ergonomy, psycho-sociology , etc. , The partners for such a research, tools manufactures and users, should have an early involvement in its content, in order to find rapidly the solution to the drastic problems they are meeting. On a longer term , during the next 20 years , there will be an important evolution of the rural space management and of the food processes. This will imply the emergence of new types of activities and know-how's , with lines of automated tools to be invented and developed , like : micro-system for organic localized tasks -mobile and adaptive equipments highly autonomous for natural space actions - device for perception , decision and control reproducing automatically the expert behaviors of human operators. Design of such automated tools need to overcome technological difficulties like the automation of the expert-decision process, or the management of complex design.

Genetic Analysis and Characterization of a Bacteriophage ØCJ19 Active against Enterotoxigenic Escherichia coli

  • Enterotoxigenic Escherichia coli (ETEC) is the major pathogenic E. coli that causes diarrhea and edema in post-weaning piglets. In this study, we describe the morphology and characteristics of ØCJ19, a bacteriophage that infects ETEC, and performed genetic analysis. Phage ØCJ19 belongs to the family Myoviridae. One-step growth curve showed a latent phase of 5 min and burst size of approximately 20 phage particles/infected cell. Phage infectivity was stable for 2 h between 4℃ and 55℃, and the phage was stable between pH 3 and 11. Genetic analysis revealed that phage ØCJ19 has a total of 49,567 bases and 79 open reading frames (ORFs). The full genomic sequence of phage ØCJ19 showed the most similarity to an Escherichia phage, vB_EcoS_ESCO41. There were no genes encoding lysogeny, toxins, virulence factors, or antibiotic resistance in this phage, suggesting that this phage can be used safely as a biological agent to control ETEC. Comparative genomic analysis in terms of the tail fiber proteins could provide genetic insight into host recognition and the relationship with other coliphages. These results showed the possibility to improve food safety by applying phage ØCJ19 to foods of animal origin contaminated with ETEC and suggests that it could be the basis for establishing a safety management system in the animal husbandry.

Study on Job Satisfaction and Foodservice Management of Dieticians and Nutrition Teachers in Special Schools for the Disabled: Focused on Gyeonggi Area (경기도 소재 특수학교에 근무하는 영양사.영양교사의 직무만족도와 급식운영 현황)

  • This study examined students' menu preferences as well as the job satisfaction and specific considerations concerning foodservice operation of dieticians and nutrition teachers at special schools for the disabled. Semi-structured interview questionnaires were sent to all of the 21 special schools with direct school food service in Gyeonggi-do, and 16 dieticians and nutrition teachers agreed to participate in this study. Among the various menu groups, the subjects perceived the meat group as the most preferred and the vegetable group the least preferred. They were generally satisfactory with their job and duty, and had a strong sense of belonging to the school. However, most of them answered that they needed more time for nutritional education and counseling. While most had pride and pleasure in their job, they expressed a desire to change the system to better fit with their roles as professional nutritionists. The content analysis revealed that the subjects mainly focused on safety issues in planning the food menu and were thus limited in selecting menu items. They also felt difficulty in menu planning due to various tastes and preferences, since special schools tend to consist of a wider grade range. However, most subjects reported little trouble in food distribution and food leftovers owing to practical support from teachers and parents. The necessity for education concerning table manners and obesity prevention was generally a shared opinion, and education programs for parents were also perceived as necessary to better understand the special considerations for developing proper eating habits in their child. The study findings provide useful basic data to improve the foodservice system at special schools.

Overview of Real-time Visibility System for Food (Livestock Products) Transportation Systems on HACCP Application and Systematization (축산물 유통단계의 HACCP 적용과 체계화를 위한 실시간 관제시스템에 대한 현황)

  • HACCP is a scientific and systematic program that identifies specific hazards and gives measurements in order to control them and ensure the safety of foods. Transportation of livestock and its products is one of the vulnerable sectors regarding food safety in Korea, as meats are transported by truck in the form of a carcass or packaged meat in a box. HACCP application and its acceleration of distribution, in particular transportation, are regarded as important to providing consumers with ultimately safe livestock products. To achieve this goal, practical tools for HACCP application should be developed. Supply chain management (SCM) is a holistic and strategic approach to demand, operations, procurement, and logistics process management. SCM has been beneficially applied to several industries, notably in vehicle manufacture and the retail trade. HACCP-based real-time visibility system using wireless application (WAP) of the livestock distribution is centralized management system that enables control of temperature and HACCP management in real-time for livestock transportation. Therefore, the application of HACCP to livestock distribution (transportation, storage, and sale) can be activated. Using this system, HACCP management can be made easier, and distribution of safe livestock products can be achieved.
