학교급식의 관리현황과 문제점에 관한 고찰 (Consideration on the Point at Issue and management State of School Lunch)

  • This paper studies regarding the problems of transmitting disease through food and its prevention in terms of current problematic food poisoning and the transfer of bacterial disease while providing lunch for school children. As the problems of school lunch program, the number of food poisoning and of the transfer of bacterial disease is highly increasing because of the shortcomings of systematic safety management toward food and of the lack of meal supplier's awareness about sanitation.For the prevention the following suggestions are provided:1. It is necessary to shift from the system of meal supply for nutrition to that of meal supply for health. 2. A system that offers a responsibility for nutrition to that of meal supply to a person in charge of hygienist, or a cook, including the a nutritionist, is needed. 3. It is necessary to gain the help from the department of sanitation in city or country for the sanitation guidance and inspection of school meal supply, not to totally rely on the local ministry of education. 4. A manager or employees related to school/group meal supply need to get education constantly on sanitation and public information. 5. For the long term, a systematic sanitary management needs to be accomplished by introducing HACCP system.

  • Sound nutrition is the basic foundation for the health of a population. Proper nutrition education through the school system can actualize the building of sound nutrition being provided at school lunch programs along with nutrition education can have far reaching impact to the health of the whole nation. In Hong Kong, the recent change over from a half day to full day school program signaled the need for a school lunch program. However, there has been no organized effort so far in Hong Kong to provide such service. School lunches are being provided by caterers who are more concerned about profits than food safetly. Alarming rates of food poisoning occurring recently in Taiwan school has further accentuated the importance of fool safety. With the advent of centralized food production technologies, Dietirians can apply their nutrition knowledge and integrate with food production processes such that safe, healthy and nutritious mcals can be produced in large quantities in a cost-effective manner serving he needs of the school children. This paper introduces the centralized food production concept, using some of the cool chill production centers for school lunch programs in the United States as examples to discuss how new technologies and management system can be integrated to yield the best outcome in food quality and safety.

우리나라 식품안전보건지표의 개발 및 운용과정 정립에 대한 연구 (A Study on Establishing a Standardized Process for the Development and Management of Food Safety Health Indicators in Korea)

  • 본 연구는 국내 식품안전보건지표의 개발과정을 정립하기위해 수행되었다. 이를 위해 국내 식품안전보건지표의 개발과정을 제안하고, 제안된 과정에 대해 시뮬레이션을 함으로서 타당성 검사를 실시하고, 개발된 지표의 활용방안을 제시하였다. 국내 식품안전보건지표 개발과정은 국내 환경보건지표 개발과정을 주로 참고하여 설계되었으며, DPSEEA 모형을 적용하였다. 제안된 식품안전보건지표를 개발과정은 크게 개발단계와 운용단계로 나뉜다. 개발단계는 초기지표 제안, 후보지표 선정, 자료 현황 조사, 실행가능성 평가, 파일럿 스터디, 최종 지표 선정의 6단계로 구성되며, 운용단계는 주기적인 지표의 산출과 공표로 구성된다. 개발의 6개 단계는 전반적인 식품안전보건지표 개발을 총괄하는 Task Force팀과 각 개발 단계에서 제안된 지표를 검토 및 평가하는 자문위원회(최소 학계 4명, 연구계 2명, 식약처 관련부서 전문가 4명)의 단계적 역할분배를 통해 운영되도록 하였다. 제안된 과정의 타당성검토를 위해 시뮬레이션을 시행한 결과 제안된 45개의 초기지표 중 최종적으로 4개의 지표(세부지표 17개)가 선정되었다: '국산 과일 채소류 내 잔류농약/제초제 잔류랑 적합판정비율', '식품매개질환사고(outbreak) 발생 수', '식품매개(food-borne) 법정전염병의 발생률', '살모넬라 식중독(Salmonellosis) 발생률'. 선정된 지표는 지수화를 통해 효과적으로 활용될 수 있다. 2010~2012년의 지표를 토대로 비율차를 적용한 통합식품안전보건지수를 산출한 결과 2010년 대비 2011년, 2011년 대비 2012년의 통합식품안전보건지수로 10.37과 9.87이 산출되었다. 이는 식품안전보건상태가 2010년에 비하여 2011년에 10.37%, 2011년에 비해 2012년에 9.87% 호전되었음을 의미한다. 또한, 개별지표의 변화를 살펴봄으로서 변화율에 기여도가 큰 지표를 파악할 수 있으며, 통합식품안전보건지수를 도식화함으로서 대중과 정책입안자의 이해를 높일 수 있다. 이와 같이 식품안전보건지표는 다방면으로 효율적으로 활용될 수 있기 때문에 앞으로 더욱 큰 관심과 함께 법안의 제정과 활발한 연구가 필요하다.

식품 3D 프린터 부품 설계 및 제조를 통한 출력 품질 향상 연구 (Research on Improving Output Quality through Design and Manufacturing of Food 3D Printer Parts)

  • In this paper, we aim to improve the output quality of a food 3D printer through optimized component design and implementation. Existing 3D printers produce customized outputs according to consumer needs, but have problems with output speed and poor quality. In this paper, we aim to solve this problem through optimized design of unit parts such as the extruder, nozzle, guide, and external case. Fusion 360 was used for element design, and in the performance evaluation of the implemented system, the average precision was 0.06mm, which is higher than the non-repeatable precision of ±0.1mm of other products, and the feed speed of the existing system was evaluated to be more than twice as fast, from 70mm/s to 140mm/s. In the future, we plan to continuously research output elements that can produce texture and color and device control methods for convenience.

광역시 거주자들의 비만도 특성 분석 (Feature Analysis of Obesity Index on Metropolitan Cities)

  • Recently, due to economic growth, living environment has been convenient and comfortable and so human activities were decreased. Consequently energy consumption was also decreased. Also the habit of food intake has been changed and the tendency of obesity has been increased. The main objective of this paper is to provide analysis of obesity index of residents in six metropolitan cities. According to analysis of $R\"{o}hrer$ Index, there were significant differences regionally between men and women in metropolitan cities. Through analysis of Drop Value, it was found that there were significant differences regionally between men and women in metropolitan cities on circumferences of chest, waist and buttocks. The result of this research can be utilized in manufacturing and design of uniforms and equipments for safety.

Perception and practice regarding allergen labeling: focus on food-related employees

  • BACKGROUND/OBJECTIVES: Most consumers are able to recognize allergenic foods. However, the frequency of checking such foods is reportedly low, resulting in higher prevalence of food-related allergic reactions in Korea compared to other countries. Thus, this study was performed to investigate the overall perception of allergenic food labeling and its practice level in food manufacturing company employees. SUBJECTS/METHODS: The survey was administered to food safety employees and food development teams at food companies located in metropolitan areas. A total of 399 (93.8%) valid samples were used in the final analysis. Statistical analyses, including Frequency Analysis, t-test, Anova, PCA (Principal Component Analysis), and Pearson Correlation Analysis using SPSS ver. 21.0, were performed. RESULTS: The correct answer rate in the analysis of allergy-related knowledge level ranged from 15.0% to 89.7%. Analysis of differences in allergy-related perception by knowledge level showed significant differences in introduction of a food recall system, strengthening of relevant laws and regulations, content labeling, description of substitutional food, and differentiated package by age. CONCLUSIONS: It can be concluded that labeling of allergenic foods should be made easier and more convenient for checking by employees, developers, and consumers, and it is necessary to provide contents through the development of publicity, guidelines, or APP along with labeling.

단체급식 안전관리에 대한 영양사 인식 조사(II) - 안전시스템 및 안전교육 현황 - (Dieticians' Perception of Safety Supervision in Institutional Foodservices (II) - Status of Safety System and Safety Education -)

  • The purpose of this study was to investigate the status of the safety system and safety education in institutional foodservices in the Changwon and Masan areas. The survey was conducted from February 1 to March 31, 2009 via questionnaires that were sent to 300 dietitians, and 142 dietitians responded. It was determined that most of the safety managers were 'dietitians (87.1%)', whereas facilities/equipment managers consisted of 'dietitians (45.7%)', 'department of facilities management in the organization (36.4%)' and 'outsourced company of facilities management (17.9%)'. Out of the 11 safety practices, seven safety practices showed less than 50% of total implementation ratio, which meant that the safety systems were not functioning properly. Except for 'non-skid shoes (85.9%)', other safety equipment was seldom used. The survey respondents recognized that safety education was very necessary (4.47 points); however, they responded so-so (3.46 points) to the question of whether or not the actual frequency and time spent on safety education were enough. The average time spent on safety education was 28 minutes 11 seconds. Regarding the difficulties in performing safety education, 'not many safety education materials and media (3.44 points)', 'not many varieties in the subjects and contents for safety education (3.40 points)', and 'not much organizational support on safety education (3.33 points)' showed higher scores than 'lack of education time due to workload (3.20 points)'. The following were cited as education materials that should be developed as it is currently difficult to obtain relevant information and data: 'root causes of musculoskeletal injury and preventive measures (15.8%)', 'healthcare and disease preventive exercises for employees who do simple and repetitive works (14.9%)', and 'instruction on safe handling of chemicals (12.7%)'

임상시험용 의약품의 안전성 정보보고를 위한 평가 등 관리방안 설문조사 연구 (A survey for Management of Drug Safety Evaluation System for Investigational Product)

  • Objective: To gather the opinions of hands-on workers for successful introduction of the Development Safety Update Report (DSUR) according to a five-year comprehensive plan for clinical trial development [Ministry of Food and Drug Safety, 2019]. Methods: We conducted a survey on considerations that industry stakeholders may have related to the enforcement of the DSUR. A questionnaire was distributed among pharmacovigilance specialists from 13 pharmaceutical companies in South Korea on June 4, 2020. The questionnaire comprised two sections: 1) current status of the Drug Safety Data Management System and 2) considerations on the implementation and management of the DSUR. Results: All respondents have agreed the introduction of DSUR is inevitable for regulatory harmonization and safety of trial subject. However, most respondents (85%) felt concern about additional workload with DSUR implementation. They answered that format and operation system of DSUR should be harmonized with those of international standards and authorities need to minimize double burden due to related report. Conclusion: All respondents asserted that domestic DSUR should be harmonized with International Council for Harmonisation of Technical Requirements for Pharmaceuticals for Human Use (ICH) E2F guidelines. Respondents from global companies also suggested regulatory authorities allow DSUR written in English to replace Korean version considering their deadline for submission. Moreover, every respondent agreed regulatory authorities need delicate effort when implementing mandatory submission of DSUR to ensure that even small pharmaceutical companies with no experience in DSUR can comply with the system.

시판 후 의료기기 임상평가를 위한 체계적 문헌고찰 활용 방안 연구: 안과용전기수술기 사례를 중심으로 (A Study on the Application of Systematic Literature Review for Post-Market Clinical Evaluation of Medical Devices: Focused on the Ophthalmic Electrosurgical system)

  • In this study, we examined whether the systematic literature review method used in the field of evidence-based medicine could be used for post-market clinical evaluation of medical devices by modifying them to fit the regulatory perspective of medical devices in Korea. For this purpose, systematic literature review was modified and applied to conduct a clinical literature survey on the ophthalmic electrosurgical system(Trabectome®, NeoMediX Corp) used for the treatment of glaucoma. A total of six documents were finally selected, and clinical safety and efficacy information on the indications of the ophthalmic electrosurgical system were effectively presented. In addition, general safety information and unexpected safety information could be distinguished through comparison with medical device adverse event reporting cases. The method used in this study is expected to be used in various ways throughout post-market medical device safety management system and for the purpose of regulation improvement, especially in the field of ophthalmic electrosurgical system.

LC-MS/MS를 이용한 농산물 중 Kasugamycin 시험법 개발 (Development of Analytical Method for Kasugamycin in Agricultural Products using LC-MS/MS)

  • 본 연구는 농산물 중 잔류허용기준 신설 예정 농약인 가스가마이신의 안전 관리를 위한 공정 시험법을 개발하기 위하여 수행되었다. 가스가마이신은 단백질 합성과정 중 번역 개시 단계를 저해하여 균의 증식을 억제하는 작용기작을 가지고 있으며 특히 사상균인 Piricularia oryzae에 의해 발병하는 도열병을 예방하는 데 효과적이다. 현재 우리나라에는 농산물 중 가스가마이신의 잔류물의 정의가 설정되어 있지 않고 모화합물 만을 잔류물의 정의로 예정하고 있다. 또한 잔류허용기준이 설정된 농산물이 없기 때문에 모든 국내 재배 농산물 또는 수입 농산물 유통 시 실시하는 잔류농약 검사에서 농약 허용물질목록관리제도(Positive List System; PLS)에 의하여 잔류량이 0.01 mg/kg 이하가 되어야 한다. 이에 농산물 중 잔류농약 분석 및 검사를 위한 공정 시험법 마련이 시급하여 본 연구에서는 대표농산물 5종(현미, 감자, 대두, 감귤, 고추)을 대상으로 시험법을 개발하고자 하였다. 따라서 수용성 유기용매인 메탄올의 적용과 수산화나트륨을 이용한 pH 조절을 통한 추출법 및 HLB 카트리지를 이용한 정제법을 최적화하여 LC-MS/MS에 의한 분석법을 확립하였다. 가스가 마이신의 시험법 정량한계는 0.01 mg/kg이며 5종의 농산물에 0.01, 0.1 및 0.5 mg/kg의 처리농도로 회수율 실험을 한 결과 평균 회수율은 71.2~95.4%이었고, 상대표준 편차는 12.1% 이하로 조사되었다. 이러한 검증 결과는 국제식품규격위원회 가이드라인(CAC/GL 40-1993, 2003)의 잔류농약 분석 기준 및 식품의약품안전평가원의 '식품등 시험법 마련 표준절차에 관한 가이드라인(2016)'에 적합한 수준임을 확인하였다. 따라서 본 연구에서 개발한 시험법은 국내 및 수입 농산물 중 가스가마이신의 안전 관리를 위한 공정시험법으로 활용될 수 있으며 잔류물의 정의 및 잔류허용기준을 설정하는 데 기초자료로써 활용 가능할 것이다.
