본 연구에서는 기존에 수행된 식품 중금속 모니터링 데이터를 이용하여 위해평가 및 모니터링을 수행할 때 요구되는 표본 수를 추정하고자 하였다. 중금속 3종 (카드뮴, 납 및 수은)과 17개의 식품을 대상으로 2,400개의 모니터링 데이터를 선정하여 연구에 활용하였다. 기존의 연구에서 수행된 모니터링 데이터의 표준편차와 오차범위 및 신뢰구간 값(95, 99% CI)을 활용하여 표본 수 추정공식에 따라 계산하였다. 표본 수 추정 공식에 따라 표본 크기를 추정한 결과, 95% 신뢰구간에서 카드뮴의 경우 계산된 표본의 크기는 최소 8개에서 최대 90개, 납의 경우 최소 7개에서 최대 1,062개, 수은의 경우 최소 11개에서 최대 238개로 각각 추정되었다. 식품 중 중금속 데이터의 표준 편차와 오차범위가 표본 수를 추정하는데 가장 큰 영향을 주는 것으로 나타났다. 본 연구에서는 모니터링 데이터의 특성을 반영하여 표본 크기를 추정하고자 하였으며, 이는 향후 위해평가 및 모니터링 수행 계획을 수립하기 위한 표본 수를 결정하는 기초연구로 활용될 수 있을 것이다.
수입식품 안전관리 확보와 효율성 제고를 위한 목적으로 국가식품안전관리체계 평가도구를 활용하여 수출국의 국가식품안전관리체계 현황을 평가하고 이를 자국의 수입식품안전관리에 활용하는 방안에 대한 논의가 미국을 중심으로 진행되고 있다. 본 연구는 미국의 평가도구와 도구를 활용한 평가사례를 비교조사하고, 관계 전문가의 의견을 검토하여 시사점을 도출하였다. 미국 FDA가 개발한 식품안전관리체계 평가도구는 외국의 식품안전 전문성을 이용하여 수입식품 안전성을 확보하기 위하여 마련되었으며, 평가도구는 10개 기준으로 구성되어 외국의 전반적인 식품안전관리 수준을 판단할 수 있도록 고안되어 있다. FDA는 평가도구를 활용하여 뉴질랜드와 캐나다를 대상으로 평가를 실시하였으며 두나라 모두 미국의 식품안전관리체계와 동등한 것으로 인정하였다. 전문가 인터뷰에서는 국가식품안전관리체계 평가를 통해 수입 전 위생평가와 수입식품의 국경검사 빈도관리에 활용함으로써 수입식품 안전관리에 있어 국가예산의 효율적인 배분과 대국민 신뢰도 향상에 기여할 것이며, 향후 국가식품안전관리체계 평가에 대한 활용도 제고를 위해서는 국제적인 조화와 전문가 예산의 확보도 중요하다는 의견을 제시하였다. 미국의 평가도구 조사 분석과 전문가 인터뷰를 토대로 도출한 시사점으로는 국가식품안전관리체계 평가 논의의 국제적 흐름에 능동적으로 대응할 필요가 있으며, 국가식품안전관리체계 평가도구를 활용하여 국내 식품안전관리체계를 검토하는 것이 가능할 것이다. 아울러 식품안전관리체계 평가결과는 수출입 안전관리에도 활용할 수 있을 것으로 보이며, 이러한 국제흐름에 따라 향후에는 우리나라 자체 국가식품안전관리체계 평가도구를 개발하는 방안도 고려할 필요가 있다.
Bisphenol A (BPA) is widely used in the production of polycarbonate plastics, epoxy resins, and food and beverage containers. In the present study, we aimed to investigate the relationship between urinary concentrations of BPA and waist circumference in Korean adults. A total of 1,030 Korean adults (mean age, $44.3{\pm}14.6$ years) were enrolled in the study on the integrated exposure to hazardous materials for safety control, conducted by the Ministry of Food and Drug Safety from 2010 to 2012. Abdominal obesity was defined as having a waist circumference of at least 90 cm and 85 cm for men and women, respectively. The participants were divided into 4 groups according to the urinary BPA concentration quartile. Waist circumference was significantly higher among subjects with a urinary BPA concentration in the highest quartile relative to those in the lowest quartile (p = 0.0071). Linear regression analysis revealed a significant positive association between urinary BPA concentrations and body mass index, body fat, after adjusting for potential confounders. Moreover, subjects with urinary BPA concentrations in the fourth quartile were more likely to be obese compared to those with urinary BPA concentrations in the first quartile (odds ratio, 1.938; 95% CI: 1.314~2.857; p for trend = 0.0106). These findings provide evidence for a positive association between urinary BPA concentration and waist circumference in Korean adults.
While the ability to develop nanomaterials and incorporate them into products is advancing rapidly worldwide, understanding of the potential health safety effects of nanomaterials has proceeded at a much slower pace. Since 2008, Korea Food and Drug Administration (KFDA) started an investigation to prepare "Strategic Action Plan" to evaluate safety and nano risk management associated with foods, drugs, medical devices and cosmetics using nano-scale materials. Although there are some studies related to potential risk of nanomaterials, physical-chemical characterization of nanomaterials is not clear yet and these do not offer enough information due to their limitations. Their uncertainties make it impossible to determine whether nanomaterials are actually hazardous to human. According to the above mention, we have some problems to conduct the human exposure risk assessment currently. On the other hand, uncertainty about safety may lead to polarized public debate and to businesses unwillingness for further nanotechnology investigation. Therefore, the criteria and methods to assess possible adverse effects of nanomaterials have been vigorously taken into consideration by many international organizations: the World Health Organization, the Organization for Economic and Commercial Development and the European Commission. The object of this study was to develop risk assessment principles for safety management of future nanoproducts and also to identify areas of research to strengthen risk assessment for nanomaterials. The research roadmaps which were proposed in this study will be helpful to fill up the current gaps in knowledge relevant nano risk assessment.
It is difficult for consumers to satisfy high safety request with post-management method such as inspection and surveillance, as various changes in-and-out of the country associated with food safety. Also, analyzing risk's character and amount, demanding an optimal means, and introducing scientific analysis system put much value on the stakeholder's communications are procedure's security which can satisfy both "Efficiency" and "Credibility" simultaneously. Especially, it is emphasized here that Risk Assessment need to be separated from Risk Management. This action is a valid means of credibility security throughout improving transparency. A number of nations and organizations have reformed the method of food management passing through reflection and examination of the prior National Food Safety Management since BSE occurred in Britain, 1996. FSA; Food Standard Agency, AFFSA, EFSA, BfR, and FSC are Risk Assessment Organization functionally separated from Risk Management Organization, JECFA, JMCFA, JMPR, JEMRA in Codex charge Risk Assessment internationally. In case of advanced countries excluding several those such as The U.S. and so forth, though these Risk Assessment Organizations are either separated functionally within Risk Management Organization or operated as apart organ, common factors are in which it has independence as Science Base. While securing independence of Risk Assessment Function, it is a tendency Risk Management should be functionally unified into efficiency as well. Though Germany constructs integral Risk Management System of diverse ways according to social and political conditions of each country such as GFOCP, DVFA, SNFA, CFIS and AQIS, there is a key word in the center, "Securing efficiency of Food Safety Management". However our nation has a representative plural;diversified system with The U.S., we took a step forward for unification as empowering policy's generalization;adjustment and Risk Assessment Function by means of enacting the "Food Safety Fundamental Law" in 2008 and establishing the "Food Safety Policy Commission" with private and governmental sectors in the Prime Minister's office. Even though the unification of Risk Management hereby increased, there is the lack of strengthening function of Risk Assessment and securing independence. It needs to be required for the professional committee in Food Safety Policy Commission to develop as a exclusive office of Risk Assessment by separating from a policy decision. Administrative Branches should reinforce feeble functions such as fundamental investigation;research for carrying out Risk Assessment with securing efficiency throughout reassessment of prior Risk Management Means.
Biotechnology has reached the level of giving birth to new forms of life and with this is a growing controversy in the conflict between science and ethics. Especially, GMOs are closely linked to the food products we consume and thus, the majority of the public shows a very sensitive reaction to the safety of GMO food products. Many perspectives arose surrounding the issues of safety on the human body and the ecology. This outlines diverse structural mechanisms to be set up to ensure safety such as risk assessment, risk management etc. Despite the precautionary principle guaranteed in many ways, the problem arises whether and how this principle can be taken in the safety assessment. GMOs due to its uniqueness do not end with just the possession of the technology involved but must also be considered with the prerequisite that they could be cultured again. Therefore the reinforcement of safety assessment system is necessary. That is, the reinforcement of risk assessment including field tests, the consideration of socio-economic effects, the coordinated system of relevant authorities, the development of technology for safety assessment.
With the diversification and internationalization of the food industry and the increased focus on health from a majority of consumers, food safety policies are being implemented based on scientific evidence. Risk analysis represents the most useful scientific approach for making food safety decisions. Total diet study (TDS) is often used as a risk assessment tool to evaluate exposure to hazardous elements. Many countries perform TDSs to screen for chemicals in foods and analyze exposure trends to hazardous elements. TDSs differ from traditional food monitoring in two major aspects: chemicals are analyzed in food in the form in which it will be consumed and it is cost-effective in analyzing composite samples after processing multiple ingredients together. In Korea, TDSs have been conducted to estimate dietary intakes of heavy metals, pesticides, mycotoxins, persistent organic pollutants, and processing contaminants. TDSs need to be carried out periodically to ensure food safety.

Nitrate is a naturally occurring compound in plant and can be converted to nitrite in the nitrogen cycle and vice versa. Therefore, it is easy to find nitrate in plants including vegetables. Especially, it is known that high levels of nitrate found in leafy vegetables. Nitrate itself is relatively non-toxic but its metabolites and reaction products such as nitrite, nitric oxide and N-nitroso compounds, may produce adverse health effects such as methaemoglobinaemia and carcinogenesis. To execute the risk assessment of dietary nitrate and nitrite for the intake of vegetables, it is investigated that the levels of nitrate and nitrite in 23 vegetables (798 samples). The range of concentration were 0-6,719mg/kg for nitrate and 0-1,635mg/kg for nitrite, respectively. The Estimated daily intakes (EDI) were 0.85-1.38 mg/kg body weight/day for nitrate and 0.02-0.03 mg/kg body weight/day for nitrite by ages. We conclude that there are no health concerns for eating various vegetables since the EDI were below the Tolerable Daily Intake (3.7 mg/kg body weight/day for nitrate, 0.06 mg/kg body weight/day for nitrite) level established by WHO.
Cyantraniliprole은 DuPont사에서 개발한 anthranilic diamide계 살충제로 나비목 팔랑나비과(Lepidopera), 딱정벌레목(Coleoptera), 파리목(Diptera)과 흰개미목(Isoptera)과 같은 해충에 효과가 뛰어나다. 국내의 경우 고추, 대파, 복숭아, 사과, 피망 등 15 품목에 잔류허용기준(0.2~2.0 mg/kg)이 설정되어 있어, 본 연구에서는 대파 중에 잔류할 수 있는 cyantraniliprole의 잔류분석시험법을 HPLC-VUD를 이용하여 개발하고자 하였다. Allium속에 포함되는 조미채소인 대파는 함유황 유기화합물을 가지고 있는 대표식물로 이를 제거하기 위한 전처리법 개발이 아주 중요하다. 이를 위해 함유황 유기화합물을 생성하는 allinase 효소를 불활성화시키기 위해 pH 10의 염기상태로 만들어서 효소의 활성을 감소시켜 황화합물의 생성을 감소시켰다. 확립된 시험법 검증을 위해 회수율을 측정한 결과 본 시험법의 회수율은 81.9~83.2%로 나타났으며, 분석오차는 10% 미만으로 코덱스가이드라인에 적합하였다. Cyantraniliprole의 정량한계는 0.05 mg/kg이었으며, 추가적으로 LC-MS를 통한 재확인 과정을 확립하였다. 활용될수 있다고 생각된다.
