Analysis on Food Material Industry in Korea (식재료 산업의 현황 및 발전 방안)

  • In Korea, food material industry encounters the emerging market which results from the growth of food service industry and food processing industry. Food material suppliers think that the total sales in Korean market may be around 20 trillion won. However, very small numbers of studies about Korean food material industry have been conducted. This paper analyzes the current status of food material industry and the market structure in Korea, and presents several suggestions for the development of Korean food material industry as following: building up the function of fresh-cut in production area, improving market structure, settling down the cold-chain system, enforcing the certification program for food safety.

  • With the interest on operational efficiency due to the rapid growth of food material distribution industry and food service industry, the study adopts DEA (Data Envelopment Analysis) model and examines to measure the technological, pure technical and scale efficiency those companies engaging in the food material distribution and food service business. As a result of analysis, the companies operating integrated business have relatively higher efficiency than those operating only food material distribution or food service companies while the result indicates that three efficiencies don't have significant difference depending on whether affiliated companies or not.   • DB Integration website(tentatively named Food Processing Aptitude Information Center, FPAIC) has been designed through a "high-value products development project(2013)". Basically, the project aims to secure connections between food raw materials and processing industry, a variety of information sources, and users's convenience. It also aims to build the industry-university-based mutual growth in the food industry through sharing of processing suitability and material research on food raw materials. FPAIC consists of raw material story, information of sample characteristics, food processing study, preceding research data, food industry trends, and understanding of food processing. The major database of research on Food Processing is provided on information of sample characteristics, and food processing study. Currently the web site has 36 raw material stories, 380 information on sample characteristics and food processing studies, 1,600 preceding research data about 31 food raw materials. The web site also provides information on 70 useful web sites, as well as 77 food industry trends, 27 basic information about food processing.

  • Nanofood is advanced functional food which food industry and food scientist try to develop process foods in near future. To be developed nanofood, nanofood materials are needed, such as biodegradable nanosphere material, biotechnical nanofood material, and protein and nanofood material. There are some food industrial applications with nanotechnology, such as nanoencapsulation, nanomolecule making, nanoparticle and powder making, nano separation, and nano extration. We can find several nanofoods and nanofood materials on the market. In addition, dairy industry is also in the first step for the development of nanofunctional food. However, nanoencapsulations of lactase, iron, vitamin C, isoflavone are developed for functional milk. Dairy industry needs various nanofood materials to be advanced functional dairy products.

  • The object of this study was to investigate the effect of food material supply system on productivity in institutional foodservice. This study was examined by food service companies were enlisted under the influence of domestic enterprises, which used central supply system for the central kitchen operation and efficiency food material circulation system. The main result of this study was as follow: According to the analysis of these data, enlargement of efficiency in food utilization was placed at rising of utilization Processing food materials. And resulted in good expectations such as competitive strengthening, quality capacity strengthening and improvement in sanitary conditions from a productivity point of view.

  • This paper is a study for the computerization program of incoming and outgoing processes of a number of parts and a great amount of material for producing products in flood industry, which was required by a medium-sized company located at Cheon-An. The program consists of four databases, one main form, seventeen subforms, and eight report forms. Concretely speaking, the four databases are prepared for products, semi-products, material, and reports, and the seventeen subforms are those for current inventory, used quantity, safty stock, product specification, etc. With the program, users can be helped and save manpower, time and cost in incoming and outgoing processes of parts and material for producing products and in their real time operation and decision-making.

  • This is a summary of a comparative study of the national policies to foster the agri-food industry implemented by the leading countries of the industry before and after the COVID-19-induced global economic crisis. By comparing the policies of each country, we discovered that key leading countries of the agri-food industry had given up or suspended one-on-one, face-to-face support programs that they had maintained for years, and have started providing financial assistance to companies or self-employed people in relative industries. Korea should implement such decisive policies for the Korean agri-food industry to tackle this unprecedented economic shrink and maintain the competitiveness of the industry. Considering the scale and speed of the spreading of the pandemic, the new policies should be implemented swiftly and boldly. This study can be used as a base material for developing new policies to minimize damage to the agri-food industry and national economy caused by COVID-19.

Analysis of Volatile Compounds using Electronic Nose and its Application in Food Industry (전자코를 이용한 휘발성분의 분석과 식품에의 이용)

  • Detection of specific compounds influencing food flavor quality is not easy. Electronic nose, comprised of electronic chemical sensors with partial specificity and appropriate pattern recognition system, is capable of recognizing simple and complex volatiles. It provides fast analysis with simple and straightforward results and is best suited for quality control and process monitoring of flavor in food industry. This review examines application of electronic nose in food analysis with brief explanation of its principle. Characteristics of different sensors and sensor drift. and solutions to related problems are reviewed. Applications of electronic nose in food industry include monitoring of fermentation process and lipid oxidation, prediction of shelf life, identification of irradiated volatile compounds, discrimination of food material origin, and quality control of food and processing by principal component analysis and neural network analysis. Electronic nose could be useful for quality control in food industry when correlating analytical instrumental data with sensory evaluation results.
