미래식품분야에서의 학제 간 융·복합의 필요성과 실행 제안 (Multi-disciplinary convergence and fusion in food science and technology for future needs)

  • Food industry in Korea is one of the most important manufacturing field since the history of this country. Recent days all industries in the world move to $4^{th}$ industrial revolution beginning from 1st revolution. This means that connections between human to human, human to things and things to things should be settled down. food industry in this country should escape from the conventional manufacturing fields until now and accept new or cutting edge technology NT including artificial intelligence robot system and platform system using Internet of Thing. To overcome the saturation condition of domestic food market, it should be extended our market to overseas. To do this Korean food industry should be reformed the processing system to convergence and fusion inner or multi-disciplinary research in not only research field but also manufacturing field. The food industry must introduce new technology and concept of controlling all manufacturing systems. This paper present the fields should be convergence and the field study together and the new techniques, methods and new products be developed in the future.

  • 식품제조업은 다른 제조업종에 비해 상대적으로 남성 대비 여성 재해자의 수가 많은 편이며 그 수는 꾸준히 증가하고 있다. 고령화 사회로 접어듦에 따라 재해연령 또한 높아지고 있다. 이는 식품제조업종에서도 뚜렷이 나타나고 있다. 따라서 본 연구는 식품제조업의 소규모 사업장에서 연령 및 성별에 따른 근로자들의 안전·보건 인식에 대하여 설문조사를 실시하였으며. 그중 고령 여성 근로자들에 초점을 맞추어 재해 특성을 분석해 재해율이 감소할 방안을 제시하고자 한다.

韓菓의 大量生産을 위한 연구 - 제조공정 및 기기설비류를 중심으로 - (A study on Mass Production of Korean Traditional Cookies - Manufacturing process and Machinery -)

  • The purpose of this study is to investigate the manufacturing process for mass production of korean traditional cookies to be supplied to consumers with cheap price. Selected items for mass production is Yoomilkwa such as Yackwa. Maejackwa which preferred by consumers, and Chasookwa which was presented at royal party in YiDynasity. Standard mixing ratio of food material, manufacturing process, and machinery needed in each manufacturing process were suggested by the items of korean traditional cookies. Manufactured goods which is produced in large quantities by machinery are Yackwa model I, II Maejackwa model I, II, III, and Chasookwa model I, II.

산업체에서의 식품 알레르기 관리 (Food Allergen Management in Industry)

  • Food allergy is a chronic disease that is increasing all over the world, and it can even lead to a loss of life. To prevent any incidents resulting from food allergies, most countries keep strengthening their food allergen labeling requirements domestically and internationally, with a constant monitoring system against undeclared allergens and recall of offending products. In order to avoid economic losses to industry and damages to international relations from undeclared allergens, it is necessary to confirm each country's regulatory policy on food allergen labeling prior to exportation. Another required action is to try for a reduction of the cross-contamination risk of the allergens during manufacturing and storage, which should be verified by using an accurate and reliable analysis of food allergens. This paper is intended to provide an introduction to the regulation of food allergen labeling by country, allergen management methods to avoid cross-contamination, and allergen detection methods using ELISA, PCR, and LC/MS. Changes of allergenicity during thermal or nonthermal processing also will be investigated in our review. This review will be helpful for the food industry to better understand patients suffering from food allergies and to manage food allergens in food manufacturing.

식료품 제조업 전기설비의 설치환경에 따른 절연저항 변화 분석 (Analysis of Insulation Resistance Change according to the Installation Environment of Food Manufacturing Electrical Equipment)

  • In this study, S food manufacturing business located in Chungbuk was selected as the subject, and the transition in insulation resistance in major electrical equipment used in this food manufacturing business was analyzed for 4 years (2018-2021). It was confirmed that the insulation resistance decreased over time for all 18 electrical facilities. Insulation resistance changed due to environmental influences such as load characteristics and ambient temperature. Particularly in the case of the food manufacturing industry, it was confirmed that the decrease started after 2 years, although it varied depending on equipment and environmental influences. Furthermore, it was confirmed that management through predicting the management cycle of electrical equipment is possible by deriving a regression equation through regression analysis of insulation resistance measurement values.

IMF전후의 중소제조업의 경영효율성 분석 (An Analysis on the efficiency of Small Manufacturing Industry - before and after IMF -)

  • 효율성 측정은 일반적으로 상장기업을 중심으로 이루어지고 있으며, 중소기업을 중심으로 한 효율성 연구는 미비하다. 따라서 중소기업의 경쟁력을 강화하기 위해서는 우선 중소기업의 현실을 파악할 필요가 있으며, 이를 위해 본 연구에서는 중소기업의 효율성을 측정하여 경쟁력 강화의 기본 자료로 이용되기를 바라는 측면에서 연구되었다. 효율성 측정은 비율분석이나 회귀분석을 통하여 일반적으로 이루어지고 있으나, 본 연구에서는 이러한 분석방법을 이용하지 않고 DEA(data envelopment analysis)모형이라는 새로운 측정수단을 이용하여 효율성을 측정하였다. 국내 상장 중소제조업을 중심으로 1996년부터 1999년까지의 패널자료를 이용하여 IMF전후의 비효율성을 측정하였다. 연구결과에 의하면 상대적 평균효율치는 도매 및 상품중개업이 68.99%, 영상 음향 및 통신장비 제조업이 60.58%, 음식료품제조업이 91.05%, 자동차 및 트레일러제조업이 85.80%, 제1차금속산업이 88.96%, 펄프 종이 및 종이제품제조업이 96.53%, 화합물 및 화학제품제조업이 78.67%로 나타났다. DEA모형은 서비스 및 비영리단체에서 주로 사용되어 온 효율성 평가방법이나 이를 중소제조업에 처음 적용해 보았으며, 추가적으로 IMF 이전과 이후시점의 효율성을 수치적으로 비교하여 우리나라 중소제조업의 경영효율성을 파악하게 해주었다.
