해결대신 프레이밍: 서비스 디자인 연구를 통해음식점 음식물쓰레기라는 난제에 접근 (Framing Instead of Solving: Approaching the Wicked problem of Restaurant Food Waste through Service Design Research)

  • 환대문화에서 비롯한 요식업 부문은 음식 쓰레기를 가장 많이 발생시키는 식품 부문이다. 지속가능한 서비스를 제공하기 위해 외식업계가 음식 낭비에 대한 문제를 이해하고 줄일 필요가 있는데, 이는 대부분 피할 수 있는 일이다. 기존 연구에서 음식물 쓰레기 행동의 동인과 제안된 완화 조치를 조사하였다. 그러나 난제를 해결하기 위해 서비스 디자이너는 혁신적인 솔루션을 고무할 수 있는 실행 가능한 통찰력이 필요하다. 본 연구의 목적은 두 가지이다. 첫 번째 목표는 음식점에서 젊은 소비자들이 음식을 남기는 행동에 영향을 미치는 요인을 파악하는 것이다. 두 번째 목표는 음식물 쓰레기 문제를 서비스 디자이너의 디자인 기회로 프레이밍(Framing) 하는 것이다. 국내 대학생 10명과 함께 사진 일기 (Photo Diary) 연구를 진행하였다. 참가자들은 두끼 식사의 전후 사진을 찍고 설문지를 작성하였다. 질문은 개인적인 배경과 식사 선택 시 고려 사항, 식사에 대한 만족도, 음식을 남기는 이유 등이다. 실험을 바탕으로 정성적 데이터와 정량적 데이터를 모두 수집하고 분석하였다. 그 결과 의식과 통제력 부족이 남은 음식물의 주요 동인이라는 것을 시사하였다. 서비스 디자인을 위한 음식물 쓰레기 문제는 "How Might We" 디자인 기회로 프레이밍 된다. 자신, 식사 파트너, 식당과의 의사소통을 개선하는 데 개입의 초점을 맞춰야 한다. 본 논문은 음식점 음식물 쓰레기의 예를 들어 난제를 프레이밍 하는 서비스 디자인 연구 접근 방식을 입증함으로써 이바지한다.

  • 본 논문에서는 매년 증가하고 있는 음식물 쓰레기를 줄일 수 있는 방안으로 IoT 개념을 이용하여 음식물 쓰레기의 양에 따른 부과 요금을 실시간 조회 가능하도록 하여 경각심을 갖도록 유도하는 시스템을 개발하였다. 또한, 편리성을 위해 종량제 카드 대신 스마트폰의 NFC를 활용할 수 있게하고, 쓰레기 분류, 쓰레기 버리는 날 등의 정보를 제공하며, 쓰레기의 양을 줄인 가구에게는 관리 부서 정책에 따라 쿠폰 등을 제공할 수 있는 기능을 통해서도 음식물을 줄일 수 있는 동기를 부여하였다.

한지를 이용한 전통식품 포장재 디자인에 관한 연구(제1보) - 한과류 포장재 디자인 - (A Study on the Design of Traditional Food Package Under the Use of Hanji(I) - Design of Korean dried confectionary package -)

  • It is necessary to recognize philosophical and scientific depth, contained in traditional culture in a correct fashion, in order to succeed and develop our excellent traditional culture. Some studies on storage, circulation, and package design of traditional food will multiple the added value of traditional culture. So this research was carried out for making packing cases of kinds of Korean dried confectionery using Hanji by traditional manufacturing method, Hanji textile, charcoal Hanji and jade Hanji, and for developing environmental-friendly Korean dried confectionery package as more luxurious packaging papers by putting an exterior design on the surface. The results measured physical properties, air permeability and anti-mold activity of Hanji, and designing Korean dried confectionery are as follows. The physical properties and air permeability used to manufacture Korean dried confectionery package, turned out to be no affection to the food packaging Hanji. In order to avoid the monotonousness of Korean dried confectionery package, it was designed with Hanji textile together with elegant traditional pattern. It is estimated to increase the value of Korean dried food and to make the anti-mold activity of Hanji added charcoal and jade effective. In conclusion, by developing individual properties of traditional food and proper packaging paper as well as packaging design according to circulating situation, it is considered that the taste and the fancy can be maximized. After all, by applying excellent traits contained in our race's culture, it is possible to develop the package cases into competitive ones. And it would be able to increase utilization of Hanji. Namely, production of high quality traditional food package with Hanji is expected for new valuable industry of Hanji.

F&B공간에 나타난 키치적 표현의 감성 요소에 관한 연구 - 키치의 특성 및 디자인 기법과의 상관성을 중심으로 - (Sensitivity Factors of Kitsch Expression in Food and Beverage Space - Focused on The Correlations with Characteristics of Kitsch and Design Methods -)

  • Contemporary design of food and beverage(F&B) space reflects various needs, not only of eating, but also environmental ones. As a way of meeting this conceptual change and the various needs of contemporary consumers, kitsch expression is often utilized actively. Thus, this study intends to analyze the design characteristics and methods of kitsch expression found in contemporary F&B space and their correlations with sensitivity factors, focusing on relevant cases. Specifically, it examined the definition, origin, and changes of kitsch, and identified the sensitive role of kitsch in interior space. Next, it classified the kitsch characteristics and design methods found in interior design, finally analyzing the characteristics of kitsch expressions in contemporary F&B space by sensitivity factors and their correlations with design methods. As a consequence, it was found that the attempts in contemporary F&B space design to differentiate space through active introduction of various kitsch expressions were fulfilling the sensitive needs of changing consumers by providing new cultural experiences. That is, such attempts are considered to have improved the satisfaction of consumers who value sensitivity, by means of wide exchange of sensitivity between designers and consumers. To raise the sensitive satisfaction of consumers more in future, it is necessary to further continuous and in-depth research on the correlation between kitsch expressions and sensitivity factors in interior design.

식품 3D-프린팅 기술과 식품 산업적 활용 (Food 3D-printing Technology and Its Application in the Food Industry)

  • Foods are becoming more customized and consumers demand food that provides great taste and appearance and that improves health. Food three-dimensional (3D)-printing technology has a great potential to manufacture food products with customized shape, texture, color, flavor, and even nutrition. Food materials for 3D-printing do not rely on the concentration of the manufacturing processes of a product in a single step, but it is associated with the design of food with textures and potentially enhanced nutritional value. The potential uses of food 3D-printing can be forecasted through the three following levels of industry: consumer-produced foods, small-scale food production, and industrial scale food production. Consumer-produced foods would be made in the kitchen, a traditional setting using a nontraditional tool. Small-scale food production would include shops, restaurants, bakeries, and other institutions which produce food for tens to thousands of individuals. Industrial scale production would be for the mass consumer market of hundreds of thousands of consumers. For this reason, food 3D-printing could make an impact on food for personalized nutrition, on-demand food fabrication, food processing technologies, and process design in food industry in the future. This article review on food materials for 3D-printing, rheology control of food, 3D-printing system for food fabrication, 3D-printing based on molecular cuisine, 3D-printing mobile platform for customized food, and future trends in the food market.

환경유래 식품오염물질의 범부처 통합 저감화 플랫폼 설계 (Design of Integrated Reduction Platform for Food Contaminants Derived from the Environment through Interagency Collaboration in Korea)

  • Objectives: Chemicals derived from various environment media contaminates food across the food supply chain. In Korea, levels of contaminants in food have been sporadically measured by monitoring programs of different government agencies. There is difficulty with data compilation and integrated analysis across media. Therefore, the aim of this study was to propose an overall integrated database and analytical platform design for the 'ECO-FOOD NET (Environmental COntaminant reduction platform for FOOD through an interagency collaboration NETwork)', a tool to support the reduction of environmental contaminants in food. Methods: We developed a new data structure and standardized protocols for the compilation of integrated data. In addition, we conducted subject-oriented logical and physical relational database modeling and created the architecture design of the platform. Results: We established a standardized code system related to exposure media and route, analysis method and food matrix. In addition, we designed the seven software modules of 'About the System', 'Introduction to Interagency Work', 'Media-Chemicals Profiles', 'Method Bank', 'Monitoring Data Base', 'Integrated Media Analysis', and 'Risk-Benefit Analysis'. Conclusions: This study will contribute to decision-making as a tool for executing risk management, such as sustainable reduction policies of contaminants in food.

Statistical Optimization of Medium Composition for Growth of Leuconostoc citreum

  • Leuconostoc citreum is one of the representative strains of Leuconostoc spp. that show fast growth rates in fermented vegetables. Sequential experimental designs including the Plackett-Burman design, fractional factorial design, steepest ascent analysis, central composite design and response surface methodology were introduced tooptimize and improve the medium for Leuconostoc citreum. Fifteen medium ingredients were examined and glucose (20 g/l), yeast extract (12.5 g/l), sodium acetate trihydrate (6.12 g/l), potassium phosphate (42.55 g/l) and dibasic ammonium citrate (4.12 g/l)were chosen as the best components to give a critical and positive effect for cell-growth. The biomass was increased to 2.79 g/l (169%), compared to the 1.65 g/l in MRS medium.

Optimization Studies for the Production of Microbial Transglutaminase from a Newly Isolated Strain of Streptomyces sp.

  • Covalent cross-links between a number of proteins and peptides explain why transglutaminase may be widely used by food processing industries. The objective of this work was optimization of the fermentation process to produce transglutaminase from a new microbial source, the Streptomyces sp. P20. The strategy adopted to modify the usual literature media was: (1) fractional factorial design (FFD) to elucidate the key medium ingredients, (2) central composite design (CCD) to optimise the concentration of the key components. Optimization of the medium resulted in not only an 86% increase in microbial transglutaminase activity as compared to the media cited in the literature, but also a reduction in the production cost. Optimal fermentation conditions - namely temperature and agitation rate - were also studied, using CCD methodology. Usual conditions of $30^{\circ}C$ and 100 rpm were within the optimal area. All other parameters for enzyme production were experimentally proven to be optimum fermentation conditions.

Design and Expression of Recombinant Antihypertensive Peptide Multimer Gene in Escherichia coli BL21

  • The design and expression of an antihypertensive peptide multimer (AHPM), a common precursor of 11 kinds of antihypertensive peptides (AHPs) tandemly linked up according to the restriction sites of gastrointestinal proteases, were explored. The DNA fragment encoding the AHPM was chemically synthesized and cloned into expression vector pGEX-3X. After an optimum induction with IPTG, the recombinant AHPM fused with glutathione S-transferase (GST-AHPM) was expressed mostly as inclusion body in Escherichia coli BL21 and reached the maximal production, 35% of total intracellular protein. The inclusion body was washed, dissolved, and purified by cation-exchange chromatography under denaturing conditions, followed by refolding together with size-exclusion chromatography and gradual dialysis. The resulting yield of the soluble GSTAHPM (34 kDa) with a purity of 95% reached 399 mg/l culture. The release of high active fragments from the AHPM was confirmed by the simulated gastrointestinal digestion. The results suggest that the design strategy and production method of the AHPM will be useful to obtain a large quantity of recombinant AHPs at a low cost.
